Food waste significantly impacts the environment and nutrient availability. In Sweden, public meals generate 33,000 tonnes of food waste annually, with elementary schools contributing 9,200 tonnes. A composition analysis of plate waste from 4913 meals in two elementary schools in Uppsala, Sweden identified the wasted food components and quantities. This assessment aimed to gauge the embedded climate impact and nutrient loss. Findings revealed a carbon footprint of 1.0 kg CO2e/kg plate waste. Despite staple foods (potatoes, pasta, rice) being wasted the most (59 %), meat waste constituted the largest portion of the carbon footprint (61 %), despite being wasted the least (10 %). Plate waste was nutrient-dense, containing 4.8 MJ energy/kg and significant levels of protein (57 g/kg), and fiber (19 g/kg). To enhance the sustainability of school meal programs, tailored food waste prevention strategies in Swedish school canteens are recommended to mitigate their environmental impact and preserve valuable nutrients for children's nourishment. Automated tools for waste quantification hold promise in providing preciser understanding of food waste. This study evaluated a tool to quantify plate waste in primary school canteens. It encompassed data from 421,015 instances of food wastage. The evaluation revealed high accuracy, with the tool's plate waste detection falling within ±10% of manual recordings. However, the tool estimated 40% fewer individual guests compared to manual entry due to not all students wasting food. As a result, the automatically collected data indicated a 35% higher waste-to-guest ratio. The findings showed that a minority of students (20%) accounted for a majority (60%) of plate waste. Halving the waste generated by this group would reduce overall plate waste by 31%, emphasizing the importance of tailored interventions for high-profile wasters rather than applying general measures to all students. Since food waste valorisation measures, like energy recovery, have limited possibilities to fully recover the resources invested in food production, there is a need to prevent food waste. Prevention is most important at the end of the value chain, where most sub-processes have already taken place, like in catering facilities. In Sweden, the public catering sector serves a large number of meals through municipal organisations, including schools, preschools and elderly care homes. Many of these organisations quantify food waste, but since Sweden has 290 municipalities with a high degree of independence, the possible variation is significant. This study therefore investigated how food waste is quantified, in order to help formulate a national standard for food waste quantification. Mapping of food waste quantification practices was conducted using a questionnaire and follow-up telephone calls, achieving a response rate of 93%. Of the 290 Swedish municipalities, 55% replied that they quantify food waste on central level. The most common practice at present is to quantify plate- and serving waste from school lunches during two weeks per year, and to compile waste data in spreadsheets and compare the values against the number of plates used, giving a result in grams per portion served. There are many similarities between municipalities, so there is great potential to implement a common standard that many municipalities already fulfil. This is important in order to gain acceptance and fast implementation, thereby speeding up the process of establishing a benchmark for food waste in the Swedish public sector catering sector. Global food waste reductions are difficult to evaluate. The global ambition is to halve food waste by 2030. In this study, eight years of food waste quantification data from Swedish public catering were used to monitor changes and evaluate progress towards global reduction targets. A 15–30% reduction was observed and the current trend was a declining level of food waste within the sector. The goal of halving food waste by 2030 appears to be achievable, provided that all canteens perform in line with those studied. However, the canteens studied may represent the best-performing, so the actual change or current levels of food waste may have been underestimated. The present situation (2020) is that approximately 19,000–21,000 tonnes of food waste are generated annually in Swedish preschools and schools. Therefore, canteens in these establishments need appropriate tools to monitor waste levels and progress, and incentives encouraging them to continue reducing food waste. Reducing food waste is necessary for achieving healthy diets and sustainable food systems due to its negative impacts on resource conservation, food security, and environmental, social and economic costs. This paper aim is to quantify the amount and types of food that is wasted by the consumers in different restaurant configurations. The second aim is to understand the reasons which lead them to waste food and the greenhouse gas emissions associated with the waste. To fulfil the aims, a mixed methodology was used, including primary data collection in restaurants for the quantification of food waste, interviewing consumers and staff, along with calculating the environmental impact from the waste using life cycle assessment. The results show that different incentives and levels of interaction in consumer's choice of food types exert influence on plate food waste. When incentive and interaction are low, the amount of food waste is larger. It is the case of a la carte restaurants. The best performance in the restaurant categories was when both incentive and level of interaction were higher. Buffet where the consumers pay by weight, therefore, is the configuration that generates less food waste on the consumer's plate. The main wasted products are rice and beans, followed by beef, and then other carbohydrates. The life cycle assessment indicated a carbon footprint varying from 128 to 324 g CO 2 eq./plate from the wasted food. The result of the interviews showed that the food waste on the plate is not visible to consumers, since in the majority of cases, they believe that their food waste on the plate in the day of the observation was an exception. There is a large potential to reduce food waste by giving consumers the possibility to influence the serving to get the right portion size. Public sector food service is a major contributor to food waste generation in Sweden, with schools, pre-schools, elderly care homes, hospitals etc., producing approximately 70,000 tons of food waste each year. Sweden has appropriate infrastructure for handling food waste in place, recycling nutrients and energy, but there is still great potential to move upwards in the waste hierarchy and prevent waste. An important step in designing waste reduction measures is to identify and quantify the importance of different risk factors, in order to start by solving the problems with the greatest potential benefit and the lowest cost. This study sought to identify and quantify risk factors for food waste generation in public sector canteens by correlation analyses and statistical modelling. The empirical material comprised food waste quantification data for 177 kitchens in the Swedish municipalities of Falun, Malmö, Sala, Uppsala and Örebro, supplemented with quantifiable information about the kitchens obtained using a questionnaire. According to the findings, plate waste in schools and pre-schools increases with children's age. Schools with older children could potentially reduce plate waste by introducing more structured lunch breaks. Plate waste also increases with dining hall capacity, potentially due to rising stress and noise levels. Both plate waste and serving waste increase with greater overproduction, as indicated by calculated portion size, and could be reduced by schools and pre-schools estimating their daily number of diners and their diners’ food intake more accurately. As serving waste was significantly higher in satellite units (which bring in cooked food), due to lack of cooling and storage possibilities, than in production units (which cook, serve and sometimes deliver hot food), satellite units in particular would benefit from more accurate quantification of the food required on a daily basis. These findings were confirmed by multiple linear regression models, which explained >85% of the variation in plate, serving and total waste per portion. When used for quantification after changing the value of different factors, these models confirmed that the main factors influencing serving waste and total waste per portion were type of kitchen and rate of overproduction, while plate waste was mainly influenced by children’s age and factors indicating a stressful dining environment.
