Background: 'Cempedak' (Artocarpus integer) is an aromatic fruit which is similar to jackfruit. Although it is rich in vitamin A and is consumed fresh, the fruit has a short shelf life. Hence, it can be converted through a spray-drying process, to form powder, which is more stable. Powder flow properties are important when considering storage, while its reconstitution characteristics are critical for the consumer to make juice from the product., Methods: The parameters of spray-dried 'cempedak' fruit powder under study include inlet air temperature (140-180°C) and maltodextrin (DE 10) concentrations (5-15% w/w). Response surface methodology involving 14 runs was used to assess the effects of inlet temperature and maltodextrin on the powder flow properties and reconstitution properties of the spray-dried 'cempedak' powder., Results: Out of the tested responses, only bulk density, change in cake height ratio, and water solubility index had a high coefficient of determination value. Inlet air temperature was found to be the main parameter to affect the bulk density, caking and water solubility index, when compared to maltodextrin concentration. By setting minimization of caking and maximization of water solubility index as the main determinants, the optimal parameters of 160°C inlet temperature and 15% (w/w) maltodextrin DE10 were generated, with a desirability of 0.697., Conclusions: The powder produced under optimal conditions (160°C and 15% w/w maltodextrin) had a low bulk density (480.01 kg/m3), low caking properties (0.17 change in cake height ratio), and a high solubility index (88.69). This indicates that the powder is stable to be stored (without caking) and will have good reconstitution when added to water.

'Cempedak' fruit, an aromatic fruit that has a short shelf life can be converted into powder through spray-drying process. However, the spray-dried powder that was obtained had a high tendency to cake. Hence, three different anti-caking agents (calcium silicate, silicon dioxide, and calcium phosphate) were added separately at a concentration of 1.5% (w/w). It was found that calcium phosphate (1.5% w/w) yielded 'cempedak' fruit powder with lowest moisture content, water activity, hygroscopicity, and caking (change in cake height ratio), with minimal color changes in its reconstituted form and low viscosity. Different calcium phosphate concentration (0-2.00% w/w) was then applied in the production of 'spray-dried' powder. With increase of calcium phosphate addition from 0 to 0.66%, the moisture content, water activity, hygroscopicity, cake height ratio of 'cempedak' powder decreased, with no significant decrease with further addition. Calcium phosphate (0.66 % w/w) yielded powder with the best properties: lowest moisture content (4.65%), water activity (0.18), hygroscopicity (22.0), and change in cake height ratio (0.17). Mangifera odorata fruit, the hybrid forms between M. indica (mango) and M. foetida (bacang), has been shown to exhibit potential antioxidant activity, and the fruit waste could demonstrate functional and nutritional potential. In the present study, the nutritional composition (proximate, sugars, vitamins and minerals analyses), the anti-diabetic activities and phytochemical profile of M. odorata peel and seed kernel were investigated for the first time. The results indicated that seed kernel rich in fat, protein, carbohydrate, and ash while peel contained significantly greater amount of fiber, minerals, β-Carotene and ascorbic acid compared to seed kernel. The samples were then extracted using different solvents (acetone, ethanol, methanol at 60%, v/v and pure deionized water) and their anti-diabetic activities (α-amylase and α-glucosidase inhibition assay) were determined. Seed kernel had the lowest IC50 values for α-amylase and α-glucosidase inhibition assay in 60% ethanol and 60% acetone, respectively. Due to the toxic effect and high volatility of acetone, the ethanolic extracts of samples were further analyses for their phytochemical profile using high performance liquid chromatography-mass spectrometry (LC-MS) and ultra-high-performance liquid chromatography electrospray ionization orbitrap tandem mass spectrometry (UHPLC-ESI-Orbitrap-MS/MS). The most abundant compounds identified were phenolic acid, ellagic acid, and flavonoid. The objective of this study was to investigate the effects of edible coatings combined with repetitive pulsed light (RPL) treatment on microbiological stability, quality and physicochemical changes of fresh-cut cantaloupes during storage at 4 ± 1 °C. Fresh-cut cantaloupes were coated with various coating materials. The coated fresh-cut cantaloupes were packed in polypropylene bag and exposed to RPL treatment with a fluence of 0.9 J cm −2 every 48 h up to 28 d of storage at 4 ± 1 °C. The microbiological quality, headspace gas composition, physical quality (firmness, fluid loss and colour), chemical quality (pH, titratable acidity, total soluble solids, total phenolic content and ascorbic acid content) and coating homogeneity and adherence of these fresh-cut cantaloupes were determined. The combination of pectin, alginate and gellan coatings with RPL treatment was effective to reduce fluid loss and retain firmness of fresh-cut cantaloupes compared to control samples while maintaining the desired headspace gas composition for fresh-cut cantaloupe throughout storage. Chitosan-based coating enhanced the microbiological quality of fresh-cut cantaloupes but increased its fluid loss and reduction of ascorbic acid content. Colour, pH, titratable acidity, total soluble solids and total phenolic content were maintained throughout the storage for coated fresh-cut cantaloupes treated with RPL. In conclusion, a combination of alginate and RPL treatment was the most effective treatment condition to extend the shelf life of fresh-cut cantaloupes by maintaining microbiological quality up to 28 d with significantly reduced fluid loss and enhanced firmness compared to samples treated with RPL alone. Alginate coating adhered well to the surfaces of fresh-cut cantaloupes and retained its physicochemical and nutritional quality when combined with RPL. [ABSTRACT FROM AUTHOR]
