Emulsions have gained significant importance in many industries including foods, pharmaceuticals, cosmetics, health care formulations, paints, polymer blends and oils. During emulsion generation, collisions can occur between newly-generated droplets, which may lead to coalescence between the droplets. The extent of coalescence is driven by the properties of the dispersed and continuous phases (e.g. density, viscosity, ion strength and pH), and system conditions (e.g. temperature, pressure or any external applied forces). In addition, the diffusion and adsorption behaviors of emulsifiers which govern the dynamic interfacial tension of the forming droplets, the surface potential, and the duration and frequency of the droplet collisions, contribute to the overall rate of coalescence. An understanding of these complex behaviors, particularly those of interfacial tension and droplet coalescence during emulsion generation, is critical for the design of an emulsion with desirable properties, and for the optimization of the processing conditions. However, in many cases, the time scales over which these phenomena occur are extremely short, typically a fraction of a second, which makes their accurate determination by conventional analytical methods extremely challenging. In the past few years, with advances in microfluidic technology, many attempts have demonstrated that microfluidic systems, characterized by micrometer-size channels, can be successfully employed to precisely characterize these properties of emulsions. In this review, current applications of microfluidic devices to determine the equilibrium and dynamic interfacial tension during droplet formation, and to investigate the coalescence stability of dispersed droplets applicable to the processing and storage of emulsions, are discussed., (Copyright © 2021 The Author(s). To develop an understanding of the nature of complex, spatiotemporal interactions between cells and the extracellular matrix (ECM), artificial ECMs formed from hydrogels with a particular spectrum of properties are being developed at a rapid pace. We report the microfluidic generation of small, monodisperse composite agarose-gelatin hydrogel modules (microgel particles) that can be used for cell encapsulation and can serve as instructive cellular microenvironments. The agarose component of the microgels gelled under reduced temperature, while gelatin modified with phenolic hydroxyl groups underwent peroxidase-catalyzed gelation. Microgel composition, structure, morphology, and rigidity were tuned in a high-throughput manner. The results of this work are important for the generation of libraries of cell-laden polymer microgels for single-cell analysis, tissue engineering, and fundamental studies of the role of local microenvironments in cell fate.

A two-time-scale perturbation expansion is used to derive a cross-section-averaged convection–dispersion equation for the particle distribution in the flow of a concentrated suspension of neutrally buoyant, non-colloidal particles through a straight, circular tube. Since the cross-streamline motion of particles is governed by shear-induced migration, the Taylor-dispersion coefficient ${\mathscr{D}}_{eff} $ scales as ${U}^{\prime } {R}^{3} / {a}^{2} $, ${U}^{\prime } $, $R$ and $a$ being the characteristic velocity scale, the tube radius and the particle radius, respectively. Here ${\mathscr{D}}_{eff} $ is found to decrease monotonically with an increase in the particle concentration. The linear dependence of ${\mathscr{D}}_{eff} $ on ${U}^{\prime } $ implies that changes in the cross-section averaged axial concentration profile are dependent only on the total axial strain experienced by the suspension. This stipulates that the spatial evolution of a fluctuation in the concentration of particles in the flowing suspension, or the width of the mixing zone between two regions of different concentrations in the tube will be independent of the suspension velocity in the tube. A second interesting feature in particulate dispersion is that the effective velocity of the particulate phase is concentration-dependent, which, by itself (i.e. without considering Taylor dispersion), can produce either sharpening or relaxation of concentration gradients. In particular, shocks with positive concentration gradients along the flow direction can asymptotically evolve into time-independent distributions in an appropriately chosen frame of reference, and concentration pulses relax asymmetrically. These trends are contrasted with those expected from the classical problem of Taylor dispersion of a passive tracer in the same geometry. Flow of soft matter objects through one-dimensional environments is important in industrial, biological and biomedical systems. Establishing the underlying principles of the behavior of soft matter in confinement can shed light on its performance in many man-made and biological systems. Here, we report an experimental and theoretical study of translocation of micrometer-size hydrogels (microgels) through microfluidic channels with a diameter smaller than an unperturbed microgel size. For microgels with different dimensions and mechanical properties, under a range of applied pressures, we established the universal principles of microgel entrance and passage through microchannels with different geometries, as well as the reduction in microgel volume in confinement. We also show a non-monotonic change in the flow rate of liquid through the constrained microgel, governed by its progressive confinement. The experimental results were in agreement with the theory developed for non-linear biaxial deformation of unentangled polymer gels. Our work has implications for a broad range of phenomena, including occlusion of blood vessels by thrombi and needle-assisted hydrogel injection in tissue engineering. [ABSTRACT FROM AUTHOR]
