Abstract This work concerns how crosslinker amount (N, N′ -methylene-bisacrylamide) affects the microstructural, absorbent and rheological features of one-step prepared starch-based superabsorbent polymers at a high starch concentration (0.27:1 w/w starch-water). The increased crosslinker amount evidently altered the microstructure and the absorbent and rheological features. Then, the variations in starch-based superabsorbent polymer properties were discussed from a microstructure viewpoint. Particularly, the higher crosslinker quantity rose the crosslinking density and the ratio (GR) of grafted anhydroglucose unit on starch backbone (from 27% to 52%), but short the average polyacrylamide (PAM) chain length (L PAM). These structural features suppressed the chain stretch within starch-based superabsorbent polymer fractal gels (confirmed by smaller R g value) and promoted the formation of smaller chain networks, thus weakening the water absorption to the starch-based superabsorbent polymer chain networks. Also, the increased GR and reduced L PAM , with lowered chain extension and elevated crosslinking density, probably decreased the flexibility and mobility of chain segments in starch-based superabsorbent polymer gel matrixes. This caused the enhanced robustness and storage modulus of the gels with reduced chain energy dissipation ability. From a microstructural view, the focus of this work was on the water absorption rate of starch-based superabsorbent polymers (starch-SAPs) prepared under high starch concentration (0.27:1 w/w starch:water). The effects of starch amylose/amylopectin ratio were disclosed. The increase in amylopectin reduced the amount ( C PAM ) of polyacrylamide (PAM) in starch-SAPs but increased the ratio of starch carbons grafted with PAM, which eventually decreased the average length ( L PAM ) of PAM chains. The shorter PAM chains could reduce starch-SAP chain flexibility, thus inducing larger mass fractal gels in swollen starch-SAPs. In general, the increases in C PAM and L PAM were preferable for a higher water absorbent capacity ( WAC ), whereas the denser fractal gels reduced WAC . Interestingly, all starch-SAPs had a dual-phase absorption process with the first stage showing a higher rate than the second phase ( k 1 > k 2 ). The effects of starch structures, in particular amylose content, on grafting reactions were investigated using thermal gravimetric analysis (TGA), nuclear magnetic resonance, X-ray diffraction (XRD). As a model system, corn starches with different amylose contents (0, 26, 50 and 80 %) were grafted onto acrylamide to produce superabsorbent polymers (SAPs). The weight loss measured by TGA at different temperature was used to analyze the grafting ratio in quantity. In general, the grafting ratio increased (about 10 %) with increasing starch amylose content, and graft chain segment lengths were much lower for the amylopectin-rich (waxy) starch. The high molecular weight and branched structure of the amylopectin reduced the mobility of the polymer chains and increased viscosity, which resulted in resistance to chain growth. The water absorption capability was increased with increasing amylose content for the starch-based SAPs. XRD detection showed that the crystalline structure of all starches was destroyed after grafting reactions. The thermal stability of the polyacrylamide grafted onto the starches increased by about 10 °C, which could be explained by the strong bonding between the grafted polymer chains and the starch matrices. Different characterization methods spanning length scales from molecular to micron scale were applied to inspect the microstructures and mechanical/hydrophilic features of agar/konjac glucomannan (KGM) films prepared under different drying temperatures (40 and 60 °C). Note that the lower preparation temperature (40 °C) could increase the strength and elongation of agar/KGM films at high KGM levels (18:82 wt/wt KGM-agar, or higher). This was related to the variations in the film multi-scale structures with the increment of KGM content: the reduced crystallinity, the increased perfection of nanoscale orders at some KGM amounts, and the negligibly-changed morphology and molecular chemical structure under 40 °C preparation temperature. These structural changes initially decreased the film tensile strength, and subsequently increased the film strength and elongation with increasing KGM content. Moreover, under the higher drying temperature (60 °C), the increased KGM content could concurrently reduce the strength and elongation for the films, associated with probable phase separations on nano and smaller scales. In addition, the increased KGM amount tended to make the film more hydrophilic, whereas the changes in the film structures did not dominantly affect the changing trend of hydrophilicity. While brown rice (BR) has numerous nutritional properties, the consumption potential of which is seriously restricted since the poor cooking quality and undesirable flavor. Here, edible oils (pork lard and corn oil, 1–5 wt%) were incorporated during the cooking of BR following heat moisture treatment. Incorporating corn oil rather than lard significantly ameliorated the texture properties (e.g. hardness, cohesiveness, and chewiness) and sensory properties of cooked BR. Both lard- and corn oil-incorporated cooked BR showed obvious structural changes accompanied by the formation of amylose-lipid complexes during cooking. It was confirmed that the incorporation of lard and corn oil allowed a higher degree of short-range molecular order, more V-type starch crystallites, and elevated nano-structural arrangements. Additionally, a decreased hardness (from 559.04 g to 424.18 g and 385.91 g, respectively) and enriched resistant starch (RS) were also observed, the highest RS content (15.95 % and 16.32 %, respectively) was observed when 1 wt% of lard and corn oil were incorporated. Controlling the digestion features of starch-based food matrices following thermal processing plays vital roles in reducing risks of metabolic diseases such as obesity and type II diabetes. To date, it remains largely unclear how regulating the pH during thermal processing alters the microstructure and digestion features of starch-based matrix including protein hydrolysates. Considering this, corn starch (CS) and soybean protein isolate (SPI) (or its hydrolysates (SPIH)) were used to prepare thermally-processed CS-SPI and CS-SPIH binary matrices under different pH values (3 to 9), followed by inspection of changes in the structures and digestibility using combined methods. It was found that including SPI (especially SPIH) caused structural changes of those binary systems, such as reduced network sizes, increased V-crystals and reduced nanoscale structures, which could allow more resistant starch (RS). This phenomenon was especially true when including SPIH with regulated pH value. For instance, SPIH inclusion at pH 5 caused the highest RS content (about 20.30%), presumably linked to the reduced molecule size of SPIH with strengthened aggregation at pH 5. In contrast, the acidic (pH 3) and alkaline (pH 9) conditions allowed reduced short-range orders and tailored porous networks and thus less RS (ca. 17.46% at pH 3 and 16.74% at pH 9). Kudzu is usually consumed at different growth years, yet the influences of growth years on its multi-scale structures and physicochemical features have not been fully disclosed. In this study, those influences occurred on kudzu starches (KS2, KS10, KS30 and KS50, isolated using precipitation method) were investigated. The granules size, crystallinity, short-range ordered structure, amylose content, intermediate and longer amylose chains reduced but the average thickness of crystalline lamella increased as the rise of growth years. KS2 had lower content of defective crystal structure and higher content of near-perfect crystal structure. Those signified that bulk density of molecules packing into starch substrate was higher for KS2, which was not beneficial for water molecules and enzymes entering into starch granules and thus elevated pasting temperature and reduced digestion rate. Besides, reduced proportions of defective ordered structures and enhanced lipid-amylose complex also reduced digestion rate. Both the peak and breakdown viscosity were in order of KS2 > KS10 > KS30 ≈ KS50. And KS2, KS10, and KS30 exhibited enhanced retrogradation tendency during cooling than KS50 as evidenced by the relative higher setback viscosity.
