Wood is one of the most highly valued materials in enology since the chemical composition and sensorial properties of wine change significantly when in contact with it. The need for wood in cooperage and the concern of enologists in their search for new materials to endow their wines with a special personality has generated interest in the use of other Quercus genus materials different from the traditional ones ( Q. petraea , Q. robur and Q. alba ) and even other wood genera. Thereby, species from same genera such as Q. pyrenaica Willd. , Q. faginea Lam. , Q. humboldtti Bonpl. , Q. oocarpa Liebm. , Q. stellata Wangenh, Q. frainetto Ten., Q. lyrata Walt., Q. bicolor Willd. and other genera such as Castanea sativa Mill. (chestnut), Robinia pseudoacacia L. (false acacia), Prunus avium L. and P. cereaus L. (cherry), Fraxinus excelsior L. (European ash) and F. americana L. (American ash) have been studied with the aim of discovering whether they could be a new reservoir of wood for cooperage. This review aims to summarize the characterization of tannin and low molecular weight phenol compositions of these alternative woods for enology in their different cooperage stages and compare them to traditional oak woods, as both are essential to proposing their use in cooperage for aging wine., Competing Interests: The authors declare no conflict of interest.

Seasoning and toasting treatments carried out in cooperage influence the chemical composition of the oak, and these treatments affect different oak species in different ways. For this reason, numerous studies have focused on the evaluation of both the oak wood materials and the resulting aged wines in order to optimize the different cooperage processes. Seasoning involves immobilizing the wood for long periods of time, leading to an increase in the price of the final product. When using alternative products instead of barrels, in addition to the seasoning and toasting of the wood, the size of the wood pieces is a determining factor in the characteristics of the final wine. Therefore, the objective of this work was to evaluate the polyphenolic composition of the same red wine aged with different alternative products and a small amount of oxygen for 120 days. Specifically, the effect of 2 types of seasoning and 3 types of toasting of chips and staves made from the wood of Q. pyrenaica Willd. was studied. Non-aromatic vine-shoot extracts (Airén) has been recently proposed as "viticultural biostimulants" when applied to grapevine. In this paper, the application of extracts from non-toasted (MVS) and toasted (MVS Toasted ) vine-shoots from the well-known aromatic variety such Moscatel were applied on Airén grapevine leaves, observing an increased for grape yield and wines with a lower alcohol degree. All wines at the end of the alcoholic fermentation were characterized by their fruity and floral descriptors, especially MVS wines; and 4 months later, MSV and MVS Toasted wines surprised by their higher spicy notes, which correspond with the highest OAVs values for compounds such as norisoprenoids (β-damascenone), vanillin derivatives (vanillin, acetovanillone) and volatile phenols (guaiacol, syringol), compared to control wine. Wine phenolic composition was affected positively over all by MVS in case of phenolic acids. These results confirm that Moscatel vine-shoot extracts foliar application into Airén non-aromatic grapevines produce an interesting enhance on wine quality., (Copyright © 2017 Elsevier Ltd. Low molecular weight phenolic compounds (LMWPC), including non-volatile and volatile, of Airén and Moscatel vine-shoot cultivars waste submitted to different toasting conditions (light, 180°/15min; medium, 180°/30min; high 180°/45min) were studied in order to exploit them with oenological purposes. The LMWPC differences were mainly due to the toasting times rather than vine-shoot variety. In non-volatile LMWPC fraction, flavanols and almost all phenolic acids decreased by toasting. The presence of trans-resveratrol has a special relevance at light toasting: 14 times more concentrated in Airén and 6 times in Moscatel vine-shoots, than their respective non-toasted samples. The volatile LMWPC showed a significant increment with toasting, being vanillin the one with the highest difference respect to non-toasted samples at high conditions: more than 15 times in Airén and 11 in Moscatel. Vine-shoots are an important waste in all viticulture areas that should be re-used with innovative applications. The aim of this work was to produce Airén waste vine-shoot aqueous extracts by four solid-liquid extraction techniques such as conventional solid-liquid extraction (CSLE), solid-liquid dynamic extraction (SLDE-Naviglio), microwave extraction (ME), and pressurized solvent extraction (PSE). Their chemical composition was studied in terms of phenolic, volatile, and mineral compounds. The highest concentrated extracts corresponded to CSLE and SLDE-Naviglio, independent of the conditions tested. The CSLE extracts had the highest flavanols, phenolic acids, and stilbenes contents. The volatile composition, quantified for first time in this work, shows that furanic compounds were the most abundant. All extracts showed an interesting mineral content, which may be assimilated by plants. These results show the agricultural potential of Airén vine-shoot waste aqueous extracts to be used as grape biostimulants and/or foliar fertilizer.

One of the biggest challenges for wine producing regions is to create alternatives to increase the added value of the large amount of vine-shoot wastes generated. The antioxidant, antifeedant and phytotoxic activities of vine-shoot aqueous extracts obtained by different extraction methods (Conventional Solid-Liquid Extraction, CSLE; Solid-Liquid Dynamic Extraction, SLDE-Naviglio; Microwave Extraction, ME) have been studied. Because of their higher content of phenolic compounds, CSLE and ME extracts showed a higher DPPH radical-scavenging activities compared with SLDE-Naviglio extracts. Significant antifeedant effects against Leptinotarsa decemlineata were observed for CSLE and ME. None of the extracts had phytotoxic effect against Lactuca sativa germination and radicle growth, but SLDE-Naviglio extracts stimulated the radicule elongation. ME extracts were the most active inhibitors of Lolium perenne germination. These results suggest some potential applications of vine-shoot extracts including cosmetics, nutraceuticals or pharmaceuticals linked to their antioxidant effects, or in organic agriculture because of their antifeedant and allelopathic activities.
