The article presents the findings from a study evaluating the morphological, biological and technological characteristics of various table and technical grape varieties cultivated in the Republic of Azerbaijan. The research adhered to the descriptors of the International Organization of Vine and Wine (OIV). The study reveals a wide range in the size of grape bunches, with medium, large and small bunches being predominant. Notably, the local and introduced varieties Arna-grna, Khindogny, Hamashara, Shirvanshahy and Moldova exhibited superior morphological traits such as mass, volume and size of bunches. Juice yield, a key indicator of technological suitability, ranged from 45.5% to 80.0%. The Shiraz variety had the lowest juice yield (45.8%), whereas the Moldova (76.8%) and Uni Blanc (80.0%) varieties had the highest. Most varieties had small berries, but Arna-grna (481 g), Gyanjavi (341 g) and Moldova (317 g) were considered medium. The sugar content in the berries was categorized as average, high or very high, with Shirvanshahy having the highest sugar content (25.0 g/100 cm³). On January 1, 2023, a "reformed" Common Agricultural Policy (CAP) will come into force, which is innovative by nature in structural terms, and focused on environmental and social sustainability issues, aimed at a comprehensive digitizationbased modernization of the agri-food sector. The new CAP keeps the current structure based on expenditure and regulatory measures, but includes a new planning tool, the national CAP Strategic Plan, a new CAP management model, and the new delivery model (NDM). Concerning EU wine policy, the new regulations foresee a number of specific amendments to existing rules, including changes that will apply to financial support for the wine sector with a reduced budget and to the regulatory measures. Among the latter, the most globally impacting are labelling rules, which require more information to consumers and allow the use of an e-label, the use of hybrid grape varieties for the production of appellation wines, and the inclusion among CAP regulated products of partially or totally de-alcoholised wines. Excedentary, deficient or untimely reaching of the optimal thermal, insolation and water thresholds influences the passage of the vegetation phenophases of the varieties, always with negative implications in the quantitative and qualitative grape production. Our research team conducted studies on the main climatic elements recorded in the Murfatlar wine center during 1989-2018 and created a database on the succession of vegetation phenophases, in relation to climate change and the specificity of wine and table grapevine cultivars, between the years 2000-2019. Due to climate change, significant effects may be seen on grapevines, due to the interaction between climatic conditions specific to the Murfatlar vineyard, the effect of increased CO2 on photosynthesis, and the genetic resistance of plants. The analysis of the climatic elements carried out over a period of 30 years (1989-2018) shows an increase in temperatures during the winter and during the vegetation period, the four seasons being no longer very well defined. By analyzing the development of the vegetation phenophases in the Murfatlar Wine Center during the 20 studied years, the following can be observed: budburst takes place throughout April for all the studied cultivars; flowering begins in the last decade of May and early June, depending on the cultivar and the recorded temperatures; harvest for the early ripening varieties begins in the second half of July, for the medium ripening varieties in August, and for the late ripening varieties in September; full maturity is usually achieved one month after harvest, depending on the characteristics of each variety; harvesting takes place when the grapes have reached the sugar concentration and acidity necessary to obtain quality wines. This article seeks to contribute to the debate around the legality of the Prosecco geographical indication (GI). The article's main point is to demonstrate that the term Prosecco does satisfy the conditions laid down in Article 22 of the Agreement on Trade-Related Aspects of Intellectual Property Rights (TRIPS), and that its protection as a GI in both the European Union (EU) and other countries does not run counter to TRIPS. Through a review of the relevant literature, the article shows that this term has been used for many centuries in the northeastern part of the Italian peninsula to refer to a high-quality wine, including in the territory around the village of Prosecco in the Friuli Venezia Giulia region of Italy. This suggests a strong link between that area and the quality and reputation of the famous Italian sparkling wine and strengthens the EU and Italy's claims for the protection of the term Prosecco as GI in both the EU and other countries that sign trade agreements with the EU. The growing demand in recent years for sustainable wine production has led to the management of waste and by-products. Among them, vine-shoots could be used as additives comparable to the oak fragments widely employed in enology. This work analyzes the feasibility of applying vine-shoot chips during winemaking and the aging of Malbec and Bonarda wines from Mendoza (Argentina) and evaluates their chemical and sensory impact. Toasted (CHT) and untoasted (CHWT) vine-shoot chips obtained from a Bonarda vineyard were added in Malbec and Bonarda grapes during winemaking (Experiment A): C, control; CHWT, 12 g/L; CHT, 12 g/L. Furthermore, the same treatments were applied during aging (1M, 30 days; 2M, 60 days; 4M, 120 days) to the finished wines under controlled conditions (Experiment B). The impact of vine-shoot chips during winemaking was different between varieties. For Malbec alone, CHT caused a significant decrease in tannins, anthocyanins, and polymeric pigments, and a modification of wine color. During aging, CHWT and CHT had an impact mainly at the sensory level, increasing the wine’s complexity in terms of aromatic attributes and mouthfeel. In Croatian viticultural sub-region of Middle and South Dalmatia, several high-quality white wines, mainly using the native grape varieties, are being produced and one of them is Vugava from the island of Vis. The aim of this two-year study was to investigate the effect of cold maceration conditions on aromatic and sensory properties of Vugava wines in comparison to the control wine produced without maceration. The GC/MS method was used for the determination of higher alcohols, methanol, ethyl acetate, and acetaldehyde concentrations. Aromatic profile was obtained by odor activity values and sensory evaluation. The significant difference in concentrations of total higher alcohols and isoamyl alcohol was determined in both vintages unlike the differences in basic wine composition. There was no visible difference or significant increase of methanol and ethyl acetate concentration what is positive from the health and sensory point of view. Sensory evaluation of Vugava wines showed that treatment of cold maceration (20 h/10 °C) resulted in increased complexity and better rated wine. [ABSTRACT FROM AUTHOR]

BACKGROUND Today, many agricultural products claiming a link to their origin and typicity receive a warm welcome on the market. Nevertheless, the notion of typicity is blurred for consumers and needs to be objectified for communication purposes. This study aims at formalizing a methodology for studying typicity of terroirs, with PDO wines as an example, using a participatory approach with professionals of the wine sector from terroirs, using focus group and tasting. The vision of typicity of terroirs by professionals outside of these terroirs has been studied by a free word association task. RESULTS: This study allowed a clear distinguishing of the typicity of the studied terroirs. Professionals from terroirs identified the global conceptual typicity of their terroirs using various factors, mainly soil, geography and grape variety, whereas professionals outside terroirs expressed their visions of terroirs by reputation or sensory characteristics of wines. Tasting results showed a discrimination of wines based on their typicity and highlighted descriptors involved in sensory perceptual typicity for each studied terroir. CONCLUSIONS: Professionals from terroirs share a common vision of their typicity and identify more typicity factors than professionals outside terroirs. Sensory typicity has been highlighted for five of the six terroirs studied, according to the various descriptors. The aim of this work was to determine the amounts of different classes of phenolic compounds in ethanolic extracts from red grape marc and its components, peels and seeds, and to compare with wine musts, and red wine of the same variety of grapes. The results showed that the red grape marc was rich in polyphenolic compounds. The management of the alcoholic fermentation (AF) in wine is crucial to shaping product quality. Numerous variables (e.g., grape varieties, yeast species/strains, technological parameters) can affect the performances of this fermentative bioprocess. The fact that these variables are often interdependent, with a high degree of interaction, leads to a huge ‘oenological space’ associated with AF that scientists and professionals have explored to obtain the desired quality standards in wine and to promote innovation. This challenge explains the high interest in approaches tested to monitor this bioprocess including those using volatile organic compounds (VOCs) as target molecules. Among direct injection mass spectrometry approaches, no study has proposed an untargeted online investigation of the diversity of volatiles associated with the wine headspace. This communication proposed the first application of proton-transfer reaction-mass spectrometry coupled to a time-of-flight mass analyzer (PTR-ToF-MS) to follow the progress of AF and evaluate the impact of the different variables of wine quality. As a case study, the assessment of VOC variability associated with different combinations of Saccharomyces/non-Saccharomyces was selected. The different combinations of microbial resources in wine are among the main factors susceptible to influencing the content of VOCs associated with the wine headspaces. In particular, this investigation explored the effect of multiple combinations of two Saccharomyces strains and two non-Saccharomyces strains (belonging to the species Metschnikowia pulcherrima and Torulaspora delbrueckii) on the content of VOCs in wine, inoculated both in commercial grape juice and fresh grape must. The results demonstrated the possible exploitation of non-invasive PTR-ToF-MS monitoring to explore, using VOCs as biomarkers, (i) the huge number of variables influencing AF in wine, and (ii) applications of single/mixed starter cultures in wine. Reported preliminary findings underlined the presence of different behaviors on grape juice and on must, respectively, and confirmed differences among the single yeast strains ‘volatomes’. It was one of the first studies to include the simultaneous inoculation on two non-Saccharomyces species together with a S. cerevisiae strain in terms of VOC contribution. Among the other outcomes, evidence suggests that the addition of M. pulcherrima to the coupled S. cerevisiae/T. delbrueckii can modify the global release of volatiles as a function of the characteristics of the fermented matrix. Introduction: The complex interactions of vine cultivars, and localised regional climate associated with specific vineyard sites are important attributes to the concept of terroir and significant contributors to grape maturity and wine sensory profiles. An improved understanding of the influence of each factor and their interactions is a challenging conundrum, and will enable more efficient production targeting specific wine styles. Objectives: To characterise the metabolic flux of grape berries and resulting wines to characterise the relative impact of site specific climate, cultivar, and grape maturity based upon berry sugar accumulation models that consistently target specific wine styles. Methods: A spatial and temporal study of grape and wine composition was undertaken for two important cultivars in two distinct regions of New South Wales. Measures of composition and wine sensory ratings were simultaneously analysed using a multiblock algorithm taking advantage of the ANOVA framework to identify important contributions to wine style arising from grape maturity, vineyard site and cultivar. Results: A consistent flux of grape and wine constituents is evident for wine made from sequentially harvested grapes from the same vineyard with increasing levels of grape maturity. Contributions of region and vineyard site to wine style could also be elucidated. Differences in metabolite flux in grapes and resulting wines between cultivars growing in similar conditions are evident. Conclusions: The combination of a metabolomics and multiblock data decomposition approach may be successfully used to profile and elucidate the contribution of abiotic factors to grape and wine composition and provide improved understanding of the terroir concept. Vitis vinifera L. is adapted to a very variable range of climates but it mostly grows in the temperate regions of continental Europe. In the Slovak Republic, the Tokaj wine region is one of the territories, where wine production is concentrated. Grape is a popular fruit and when processed, it is used as musts, juices or wine. Some people may suffer from allergic reactions to grapes. Up to now, endochitinases, lipid-transfer protein, and thaumatin were identified as grape allergens. In this study, expression of chitinase and thaumatin allergen was analysed in the grapes of Tokaj region varieties – Hachat Lovelin, Tokay and Muskat Blanc. Expression changes were calculated by the delta delta Ct method. Expression differences of chitinase were found to be similar in these varieties. The reaction of wine grapevine cultivars grown in the region of Kyustendil to low winter temperatures in controlled (laboratory) conditions was studied. Тhe results for the three controlled freezing levels (-15,0ºС; -20,0ºС; -25,0ºС), show that the highest hardness to low winter temperatures have the cultivars with interspecific origin - Slava and Kaylaskish rubin, and the lowest - standard cultivars of Vitis vinifera L. - Tamyanka and Pamid. Statistically proven interspecies cultivars have superior to standards in terms of their cold hardness. The differences between the cultivars are most affected by temperatures of -20,0°C and -25,0°C. Study on the content of trans-resveratrol in grapes and wine from red varieties grown in the region of Pleven was carried out. Three consecutive harvests - 2016, 2017, 2018 were investigated. The hybrid varieties Storgozia, Kaylashki rubin, Trapezitsa, Rubin and Bouquet, selected in the IVE –Pleven were the subject of the study. The Pinot noir variety of Vitis vinifera was used for control. The average anthocyanin content of the wines of the experimental hybrid grapevines varieties (191.30 mg/dm3 - 441.07 mg/dm3) was found to be two to four times higher than that of the control variety (92.44 mg/dm3). The experimental grapevine varieties studied shown the ability toThe highest content of trans-resveratrol of the experimental wines from the studied hybrid varieties distinguished the wine from Bouquet (2.70 mg/dm3), followed by Kaylashki rubin (2.21 mg/dm3). According to the results of the organoleptic evaluation, the wines obtained from the Rubin, Kaylashki rubin and Bouquet varieties had the best organoleptic qualities. Wine sensory experience includes flavor, aroma, color, and (for some) even acoustic traits, which impact consumer acceptance. The quality of the wine can be negatively impacted by the presence of off-flavors and aromas, or dubious colors, or sediments present in the bottle or glass, after pouring (coloring matter that precipitates or calcium bitartrate crystals). Flavor profiles of wines are the result of a vast number of variations in vineyard and winery production, including grape selection, winemaker's knowledge and technique, and tools used to produce wines with a specific flavor. Wine color, besides being provided by the grape varieties, can also be manipulated during the winemaking. One of the most important "tools" for modulating flavor and color in wines is the choice of the yeasts. During alcoholic fermentation, the wine yeasts extract and metabolize compounds from the grape must by modifying grape-derived molecules, producing flavor-active compounds, and promoting the formation of stable pigments by the production and release of fermentative metabolites that affect the formation of vitisin A and B type pyranoanthocyanins. This review covers the role of Saccharomyces and non-Saccharomyces yeasts, as well as lactic acid bacteria, on the perceived flavor and color of wines and the choice that winemakers can make by choosing to perform co-inoculation or sequential inoculation, a choice that will help them to achieve the best performance in enhancing these wine sensory qualities, avoiding spoilage and the production of defective flavor or color compounds. Sulfur dioxide (SO2) is the most common additive used in winemaking for many years. This compound is important for wine producers and consumers due to its antiseptic and antioxidant properties. However, excessive sulfites caused some symptoms such as a headache, nausea, stomach irritation and respiratory distress in asthmatic patients. Additionally, excessive SO2 in winemaking process leads to organoleptic changes of final product. For these reasons, the maximum SO2 concentrations allowed in wines were gradually reduced. In the wine industry it is essential to reduce or even eliminate SO2 especially in the production of organic wines. These obstacles lead to requirements of new healthier and safety strategies for reduction of SO2. Up to know have been discussed the priorities of SO2 used in wine making. Recently some authors evaluated studies with chemical and non-thermal alternatives of SO2. Some other authors reviewed the side effects of SO2 used in wines, but none of them have comprised the effects of new techniques in grape, must, wine and pomace. This review discussed effects of different alternatives (thermal, non-thermal, chemical and natural additives) techniques demonstrated in grape, must, wine and pomace as possible alternative to SO2 in comprehensive manner. The antioxidant, antimicrobial and sensory properties of tannin, oak and vine shoot extracts are also discussed as new alternatives of SO2. In contrast with the general trend of producing wine from the most famous grapevine varieties, associated with the French paradigm, such as Cabernet‐Sauvignon, Merlot, Pinot Noir, Syrah, Sauvignon Blanc, and Chardonnay, there is a tendency to revalorize and preserve minority or autochthonous grapevine varieties worldwide. The South American wine region, where most of the varieties derived from varieties brought after European colonization, is not exempt from this. This has allowed new wines to be provided with distinctive identities that are markedly different from the current homogeneous wine production. Moreover, varietal homogenization increases vineyard genetic vulnerability in relation to the emergence of grapevine diseases, to which the commonly cultivated varieties are not resistant. The Viticulture and Enology Research Center at California State University, Fresno, is a current and historic driver of grape and wine research, with much of this research captured in internal reports rather than published articles. This case study details the method by which the V.E. Petrucci Library described and digitized this research grey literature collection. In addition to providing a workflow for other specialized commodity collections, this study discusses challenges encountered, including description of non-standardized documents and intellectual property concerns of grey literature. Aims: The work investigates the impact of grapes processing at the beginning of winemaking on the composition of microbiota during the oenological fermentations and on the composition of obtained wines. Methods and Results: The experiments were conducted in a biodynamic winery to exclude interference due to microbial starters. Three winemaking protocols, with different pre‐fermentative management of grapes, were followed by plate count and next generation sequencing on 16S for bacteria and internal transcribed spacer sequencing (ITS) for yeast. Chemical and sensory characterization of wine was performed. The grape processing influenced the evolution of microbiota (especially lactic and acetic acid bacteria) and the fermentation rate. The highest biodiversity was observed in the experiment carried out with whole grapes and carbonic maceration, with the presence of bacterial groups not usually found in winemaking (Bacteroidales, Clostridiales, Oscillospira). The different microbiotas influenced the organic acid profile of wines, the content of biogenic ammines and the perception of organoleptic descriptors linked to the vine cultivar (Syrah). Conclusions: Carbonic maceration impacts on the evolution of the microbiota and the wine features. The absence of addition of starters and sulphur dioxide would seem to be correlated with the high microbial biodiversity. Significance and Impact of the Study: Carbonic maceration is a traditional winemaking practice, today there are difficulties in its managing because the anaerobiosis stimulates spoilage micro‐organisms. The work elucidates the reasons of these difficulties and identified some microbial groups rarely associated with winemaking. The ratio of ethanol accumulation along with physical management of grapes and the supply of oxygen during the early stages of winemaking are powerful instruments of oenological variability, able to offer new possibilities to winemakers in order to defining the quality of red wines. The agricultural sector in the Republic of Northern Macedonia seeks to attract increased foreign direct investment (FDI) as a potential important contributor to filling the investment gap and providing development benefits. The whiskey sector could benefit from FDI, which is mainly derived from inflows of funds, increased investment in fixed and infrastructure capital, technological overflow, increased human capital investment, more job opportunities, knowledge transfer, managerial, organizational and institutional capital, new business opportunities for local companies through service contracts, exploitation of viticulture and winemaking opportunities, and promotion of new value chains, integration into the world economy and productivity growth. Implementation of agricultural policies that contribute to the development and greater competitiveness of agriculture, including in viticulture, means providing favorable access to credit, covering some of the costs of raising vineyards and subsidizing grape production. Implementing an agrarian policy that results in the development and enhancement of the competitiveness of Macedonian wine should make our wine recognizable and the world should recognize grape and wine producers as serious and quality agribusiness partners. The presented study is focused on the determination of the content of terpenic substances in grapes and subsequently produced a wine of Czech variety Pálava (the Czech Republic, wine region Morava), which is a protected landscape with long-term tradition and culture. The aim of this study was the analysis of the aromatic profile of the cultivar Pálava, which was fermented by the original yeast strains from the Moravian wine region. Larger amounts of flavoring substances occur in grapes as bound flavoring substances, most often in the form of glycosides. One of the basic groups of aromatic substances is monoterpenes. The content of twelve free and bound terpenic substances was measured by the GC-MS method, namely linalool, ho-trineol, a-terpeniol, β-citronellol, nerol, geraniol, furan linalool oxide 1, furan linalool oxide 2, nerol oxide, epoxylinalol 1, epoxylinalol 2 and 2,6-dimethyl-3,7-octadiene-2,6-diol. The results were statistically compared by using a simple descriptive statistical method and ANOVA method. We noted a difference between the content of free and bound terpenes was very significant (p ≤0.05). We found that using uncommercial yeasts could have an effect on the content of the volatile and terpenic compounds in wines. An important finding was that in fresh berry extracts there was a higher proportion of bound terpenes than free terpenes. Grapes are an important global horticultural product, and are mainly used for winemaking. Typically, grapes and wines are rich in various phytochemicals, including phenolics, terpenes, pyrazines, and benzenoids, with different compounds responsible for different nutritional and sensory properties. Among these compounds, sesquiterpenes, a subcategory of the terpenes, are attracting increasing interest as they affect aroma and have potential health benefits. The characteristics of sesquiterpenes in grapes and wines in terms of classification, biosynthesis pathway, and active functions have not been extensively reviewed. This paper summarizes 97 different sesquiterpenes reported in grapes and wines and reviews their biosynthesis pathways and relevant bio‐regulation mechanisms. This review further discusses the functionalities of these sesquiterpenes including their aroma contribution to grapes and wines and potential health benefits, as well as how winemaking processes affect sesquiterpene concentrations. This work present the results of the study of the complexation of Al3+ with anthocyanins of red wines (cyanidin-3-O-glucoside and delphinidin-3-O-glucoside). By using the examples of delphinidin-3-O-glucoside and pelargonidine-3-O-glucoside, it is shown that only dihydroxylated forms of anthocyanins are capable of forming a complex with Al3+, while non-hydroxylated anthocyanins form no similar complexes. In the selected conditions, the total contents of dihydroxylated anthocyanins in wines made from different grape varieties (calculated for cyanidin-3-O-glucoside) are determined, which vary for red wines from 8.7 mg/dm3 for Cabernet (Kuban Vine) to 27.1 mg/dm3 for wine made from the Saperavi grape variety. The highest contents of these forms of anthocyanins have been obtained for wines made from the grape varieties of Saperavi, Krasnostop, and Cabernet. To determine the relationship between dihydroxylated anthocyanins and monomeric forms, the total content of monomeric forms of anthocyanins in the studied wines is determined by pH-differential spectrophotometry. It has been found that the share of these forms of anthocyanins in the total content of monomeric forms was 9–14%. A high degree of correlation between the total contents of dihydroxylated and monomeric forms of anthocyanins has been obtained (rc = 0.98; rt = 0.63 for n = 10; α = 0.05). The relationships between the total contents of anthocyanins (both monomeric and dihydroxylated) and spectral characteristics (color intensity and nuance) have been determined as is recommended by the OIV (International Organization of Vine and Wine) to estimate the quality of wines. The winemaking industry produces huge quantities of different types of waste, such as bunch stems, grape skins and grape seeds. Knowledge of the composition of these wastes is essential if their disposal is to be appropriate. However, they can contain compounds such as flavanols that are beneficial to human health and of interest to the pharmaceutical and cosmetics industries. The aim of this work was to establish whether flavanols are present, and in what concentration, in the above-mentioned wastes, as well as in the musts and final wines derived from the internationally known 'Albariño' (white) and 'Mencía' (red) grapevine varieties. Extractions were performed using appropriate solvents, and the compounds obtained identified by HPLC-MS QTOF. All three 'Albariño' wastes had higher concentrations of flavanols than did the 'Mencía' wastes. Flavanols were in very low concentration in the 'Albariño' must, but virtually absent from the 'Mencía' must. The 'Mencía' wine, however, had much higher concentrations of these compounds than did the 'Albariño' wine. This is explained in that these compounds are passed to the final wine in 'Mencía' (and likely in other red wines). The present results suggest that red winemaking wastes are poorer in these compounds, while white winemaking wastes—certainly 'Albariño' wastes—provide a potential source useful to industry. The aim of this work was to evaluate the content of glutathione in the grape, must and wine of nine white varieties authorized in the Qualified Designation of Origin Rioja (Spain): 'Chardonnay', 'Garnacha Blanca', 'Malvasía', 'Maturana Blanca', 'Tempranillo Blanco', 'Turruntés', 'Sauvignon Blanc', 'Verdejo' and 'Viura'. The results obtained showed important varietal differences in the concentration of GSH. 'Sauvignon' and 'Tempranillo Blanco' presented high levels of this compound in grape, must and wine. 'Verdejo' and 'Turruntés' registered high values in grape, which decreased notably in must and wine. In general, the GSH content decreased in musts due to oxidative processes. In 'Chardonnay', 'Garnacha Blanca', 'Maturana Blanca' and 'Viura' an increase was observed in wines, which could be caused by the inoculated yeast. The 'Malvasía' and 'Maturana Blanca' varieties registered the lowest level of this compound. The ratio of hydroxycinnamic acids to glutathione, indicator of the susceptibility of oxidation of musts, showed significant varietal differences, was lower in 'Sauvignon Blanc' and higher in 'Garnacha Blanca'. One of the most important problems of the modern wine technology is the production of high quality and competitive products. It is commonly known that the quality of a wine largely depends on the yeast race. The main requirement for yeast is completeness of fermentation, which depends on the amount of yeast involved, aeration, initial content of various substances in the must, temperature, pH of the environment. Using imported materials in the specific conditions of national winemaking requires laboratory and industrial research to rationalize the use of local and foreign pure yeast cultures and to accelerate the process of grape must fermentation. So, this study considers how the yeast origin and additional nutrition effect on grape must fermentation and influence the physicochemical and organoleptic characteristics of wine materials obtained from the white grape varieties Aromatny and Zagrei of the generative breeding by the National Scientific Centre Tairov Viticulture and Winemaking Institute. Besides, it has been concluded whether using additional nutrition is practical. It has been established that the fermentation process was complete in both the control and the experimental samples. There were no facts of underfermentation. When supplementary nitrogenous nutrition was used, the fermentation activity of yeast increased and the fermentation process ended faster. The dynamics of the total number of cells of the Aromatic and Zagrei varieties was the same during the years 2015-2017 and did not depend on the fermentation scheme. It has been found that the fermentation process does not depend on supplementary nutrition, but the yeast race effects on the physicochemical parameters, namely on the volatile acids content. The results obtained have shown the effect of a yeast race and supplementary nutrition on the organoleptic characteristics of these varieties. In Southern Ukraine, to control the quality characteristics of wine materials, using active dry yeast Saccharomyces cerevisiae with a two-stage nutrition complex has a positive effect on the physicochemical parameters of the corresponding grape variety and allows revealing its varietal characteristics. Glutathione (GSH, γ-L-Glutamyl-L-Cysteinyl Glycine) is a tripeptide of L-glutamate, L-cysteine and glycine. GSH in wine is derived from either grapes or yeast, during alcoholic fermentation. The GSH concentration in wine is very variable and depends on the environmental conditions as well as viticultural practices. During winemaking GSH has a significant role in oxidation prevention due to its unique redox and nucleophilic properties. Since GSH is very reactive it is highly important to prepare samples immediately and under inert conditions just prior to the determination of the GSH concentration. Therefore the aim of this research was to implement a method for the quantitative determination of GSH levels in grape juices (musts) made from different Austrian grape varieties and to investigate the influence of yeast on the GSH content in wine after aging. The results of this research have shown that monitoring with nitrogen gas, sulphur dioxide and freezing process at −25 ºC led to a good protective effect on the free glutathione amount in wine and grape samples. The GSH concentration in the samples was variable. Levels were ranging from non-detectable to up to 23.10 mg/l, and it showed that grape variety has no impact on GSH concentration in the must. The primary objective of this study was to assess the changes on phenolic composition and AC (antioxidant capacity) of white grape and its winemaking product, during in vitro gastrointestinal (GI) digestion. Phenolic compounds were evaluated by HPLC-MS/MS. The AC was measured by in vitro (FRAP, ABTS and DPPH) and cellular (Caco-2 cells) assays. Digestion had a reducing effect on phenolic content, being only 31% and 67% of native polyphenols from grapes and wines, respectively, potentially bioaccessible. At same polyphenol concentration, cellular AC of nondigested and digested foods was the same, indicating that changes in phenolic profile did not modify the bioactivity. Phenolic acids, in addition to quercetin, were the most resistant polyphenols to digestion, and would be the most relevant to explain the biological activity of digested foods. Results indicate that the changes occurred in the native phenolic profile of foods as a consequence of GI digestion, do not modify the bioactivity of white grapes and wines. The geographical recognition of wines has been extensively attempted based on chemical parameters. However, few studies have used wine sensory properties to characterize wines according to their geographical origin. This paper presents a machine learning study to classify and to find the most important sensory descriptors of Cabernet Sauvignon, Syrah, Tannat, and Merlot wines from Argentina, Brazil, Chile and Uruguay. Four feature selection methods (F score, relief, χ 2 , and random forest importance) were used to generate the order of importance of the sensory descriptors. The feature subsets were generated based on the feature selection ranking order to use as input features for the support vector machines classifier. Very good results with 85–100% accuracy were achieved, and the results showed that few sensory descriptors discriminate the origin of wines better than when using all the descriptors and that there is a specific subset of most important features to each wine variety. As far as we know, this is the first study to analyze South American wines based solely on sensory descriptors and support vector machines along with feature selection methods. Wine astringency is important for quality and consumer acceptance. Perception of this mouthfeel is temporal and can be separated further into unique textural sub-qualities. Quantitative data on these astringent sub-qualities in wine however are poorly understood. The aim of this study was to characterize the dynamic astringency profiles of 13 Australian commercial red wines and 2 rosés made from 11 grape varieties using modified progressive profiling by a trained sensory panel (n = 8). Seven attributes generated and defined by the panel (overall astringent intensity and 6 sub-qualities: pucker, mouth coat, dry, grippy, adhesive and graininess) were scored at six time periods (each lasting 10 s), with 20 s gap between each time period. Attributes were rated on 15 cm scales with anchors at 10 and 90% and samples were evaluated in duplicate. The wine composition as well as phenolic profiles were determined. Intensities of astringent sub-qualities were correlated with overall intensity, but the sub-quality profiles at a specific evaluation period and the progression of an attribute varied differently depending on the wine. The discrimination of wines at each time interval was dependent on attribute, and the relative importance of each astringent sub-quality varied at different evaluation periods. Correlations between mouthfeel attributes and chemical measures were established. This study demonstrated the utilisation of modified progressive profiling for wine astringency evaluation, providing a tool to capture quantitative data on astringent sub-qualities in wine. A brief ampelographic characterization of the new table grapes varieties Miro, Nayden and Yoana approved in 2019 is presented. They are typically table grapes with excellent agrobiological and organoleptic features. The approved Muscat Ottonel N 46 clone exceeds the population with its better agrobiological and technological qualities. Wines have a higher tasting score compared to the controls. The vine breeding of varieties resistant to two major pathogens (mildew and powdery mildew) underpins the promise of a pesticide-free viticulture. Numerous questions appear while professionals try to plant these varietal innovations in their vineyard: what is a good grape variety? Can we produce good wines with these 'new' varieties that fit our expectations for taste, quality, their capacity to adapt to our terroirs, etc.? Going faster is a challenge for growers who want to test new production methods associated with new markets. In that context, testing these varieties is a necessity. This paper focuses on one of these specific tests conducted in the Languedoc Wine Region (France). Technicians, scientists and economic players in this sector all together organise the testing in order to distribute the first experimental plants through regional winegrowers. To analyse what qualifies a good experimentation, I follow how actors formulate their concerns and what they take into account in such situations. Using a theoretical framework derived from the Science and Technology Studies (STS), I describe how relations between professionals and objects are transformed as they face uncertainties in their efforts to achieve the promise of a more sustainable viticulture. The identification of cyclic B-type procyanidins in grape and wine was recently disclosed. Some of these were also found in berries of totally different vegetal species (eg, Vaccinium sp.). However, presence of a wider class of these cyclic condensed tannin compounds with variably substituted monomers has never been addressed so far. Here, an extended list of oligomeric cyclic proanthocyanidins (PAC) bearing variable substitution patterns on the main flavan-3-ol unit has been searched in wines. Nearly 7600 theoretical structures were calculated and searched in red and white wine samples made from different grape varieties. Moreover, a hydrogen/deuterium exchange approach (already applied to a cyclic tetrameric procyanidin) coupled to high-resolution mass spectrometry was applied to confirm their cyclic B-type structure rather than a non cyclic A-type structure, otherwise isomeric and undistinguishable by LC-MS alone. Vinho Verde is the biggest DOC of Portugal, and it produces wines distinguished by their high acidity and flavor. In this Portuguese wine-region, three grape varieties, Alvarinho, Loureiro, and Arinto, are used to produce monovarietal wines of great quality. Sensory characterization of wines has the aim of detecting unique qualities in wines, and the most common measurement for the sensory aspects of wines sensory profile is descriptive sensory analysis, typically performed by trained sensory panels. To a list of attributes that can characterize a wine, we call a “sensory lexicon” that can be used by marketers allowing the articulation of flavor perceptions to consumers. So, the aim of this work was to recruit and train a sensory panel able to describe the sensory aspects associated with the monovarietal wines from Loureiro, Arinto and Alvarinho grape-varieties. Furthermore, a second order factor analysis statistical model was developed for each grape-variety wine, based on the data-set of sensory attributes, allowing a new perspective in the sensory characterization of these wines. We discover that there are some similarities between the sensory lexicons that can be used to better describe the wines. However, there are descriptors that specify each monovarietal wine. Loureiro wines present “Loureiro and mineral aromas”; Alvarinho wines are described by having “citrus” aroma and freshness in the mouth and Arinto wines possess a distinctive fruity aroma (peach and pineapple) with an alcoholic, acid and fresh flavor. The potential of ultra-fast gas chromatography (GC) combined with chemometric analysis for classification of wine originating from Poland according to the variety of grape used for production was investigated. A total of 44 Polish wine samples differing in the type of grape (and grape growth region) used for the production as well as parameters of the fermentation process, alcohol content, sweetness, and others which characterize wine samples were analysed. The selected features coming from ultra-fast GC analysis were subsequently used as inputs for both principal component analysis (PCA) and supervised machine learning. Using the proposed classification algorithm, it was possible to classify white and red wines according to the variety of grape used for production with a 98.7 and 98.2% accuracy, respectively. The model was characterized by good recall and area under receiver operating characteristic which was 1.000 for white wines and 0.992 for red wines. Cuveé wines (made from various types of grapes) were also successfully classified which leads to the conclusion that the proposed classification method can be used not only to differentiate between wines made from different grapes but also to detect possible adulterations, provided known; non-adulterated samples are available as a reference. The model was also used to classify wine samples based on other features, such as the geographic region in which the vineyard is situated, type of yeast used, the temperature of fermentation, sweetness, etc. In all cases, a high classification accuracy (in most cases > 90%) was achieved. The objective of this study was to evaluate the effects of pre- and post-veraison cluster thinning on the physicochemical characteristics of Montepulciano and Cabernet Franc grape varieties grown in regions 900 m above sea level (ASL) in Santa Catarina, southern region of Brazil. The experiment was conducted in two commercial vineyards, Montepulciano vineyard located at 28º12'58''S, 50º06'45''W, 1,185 m ASL during the 2007, 2008 and 2009 vintages; and Cabernet Franc vineyard located at 28°15'20"S, 49°56'60"W, 1,284 m ASL, during the 2010 and 2011 vintages. Treatments consisted on cluster thinning at three distinct moments for both varieties: during veraison, about 15 days pre-veraison and 15 days postveraison. For Montepulciano, when cluster thinning is performed post-veraison, there is a reduction in cluster mass and a slight reduction on the acidity of grapes. For Cabernet Franc, when cluster thinning is performed during veraison, there is an increase in total soluble solids of grapes. In general, cluster thinning is recommended two weeks pre- or post-veraison for Montepulciano and Cabernet Franc wine grapes produced in southern Brazilian highlands. [ABSTRACT FROM AUTHOR]

Highlands are a new frontier to produce fine wines in the Southern region of Brazil (27º 12' 24" S, 51º 06' 96" W, 1211 m altitude) and has presented specific oenological characteristics with a good adaptation of some varieties, among them, Canaiolo nero. To characterize the wines of this region, during the 2012 and 2014 harvests the volatile compounds were determined through the MHS-SPME-GC-MS technique. The grapes were harvested, and samples analyzed in triplicate. The positive identification of the volatile compounds was performed by comparing the experimentally obtained mass spectrum and retention index with the reference spectra and retention indices available in the literature. Four consecutive extractions were used for quantitative evaluation to avoid a matrix effect. Odor activity value was calculated from the perception threshold for each evaluated compound. The mean soluble solids content was 21.55o Brix, and total acid content was 81.0 meq L-1; the mean weight of the clusters was 176 g, and the productivity was 2.2 tons per hectare (espalier – 1.5 m × 3.0 m). Thirty-one volatile compounds were identified and quantified in the analyzed samples. The major components were the aromatic alcohol 2-phenylethanol (38.364 μg L-1), and the esters diethyl succinate (6.357 μg L-1) and ethyl acetate (2.005 μg L-1); and the compound of class C6, 1-hexanol (3.2 μg L-1). Odor activity values showed the compounds that contribute the most to the aroma of the analyzed wines, highlighting ethyl isovalerate (OAV 394.38), ethyl hexanoate (OAV 9.22), ethyl cinnamate (OAV 8.62) ethyl isobutanoate (OAV 5.59), β-damascenone (OAV 2.44), hexanoic acid (OAV 4.03), octanoic acid (OAV 3.64) and isoamyl acetate (OAV 3.01). These results showed the aroma characteristics of Santa Catarina wines of the Canaiolo nero variety, especially fruity aromas of apple, green apple, strawberry, plum and banana; and floral aroma of violet and roses. This paper explores the emergence of the terroirist social movement in Spain and the controversies arising from it. We assess its role in transforming the Spanish wine scene and wine regions from the combined perspective of rural and social movement studies. Spain boasts the largest surface area of vineyards and the largest volume of wine exports of any country, yet it also sells the cheapest wine and lacks wine zoning policies, which makes Spain unique among traditional wine-producing countries. Considering this situation, a group of terroir -driven winemakers are challenging the Spanish industrial wine establishment. They have built networks in rural areas throughout the country and are actively involved in local grassroots movements, aiming to produce quality wines with added value, recover neglected wine regions and grape varieties, and reinstate traditional wine culture. While the movement displays certain elite and populist tendencies, it remains radical in its attempt to challenge a deep-seated economic model dominated by large companies with a powerful lobby that influences the government. This paper reports the composition of previously uncharacterized oils from seeds of the white grape varieties Albariño, Caíño Blanco and Loureira ( Vitis vinifera L.). All three oils were obtained by cold extraction from bagasse-derived seeds collected at a white winemaking plant in northwestern Spain. These oils met the Codex Alimentarius criteria for edible vegetable oils. All had high linoleic acid contents and contained long chain fatty acids such as linolenic and eicosenoic acids. The majority phytosterols were β-sitosterol and apparent β-sitosterol. Among the vitamin E-associated molecules, γ- and α-tocotrienol were the most common. Organoleptically, the three oils were very different. The oil from the variety Loureira in particular stood out in terms of its aromatic richness and high sensorial quality. The present results show that the seeds of these varieties, which are available in large quantities in white winemaking bagasse (which unlike in red winemaking is removed before must fermentation and thus retains its natural qualities), can be used to produce high quality oils with properties beneficial to human health. Verdicchio, Passerina and Pecorino are native grape cultivars of the Marche region, cultivated in winemaking area of Ascoli Piceno, in central Italy. In particular, Passerina and Pecorino varieties have been abandoned and forgotten for a long time and only in recent years are rediscovered and appreciated. Here, two indigenous yeasts, isolated from grapes of Verdicchio and Pecorino varieties and identified as Saccharomyces cerevisiae, were evaluated and compared with commercial starters cultures widely used for the vinification of Piceno DOC (Denominazione Origine Controllata) area at industrial scale. A polyphasic approach, including yeast genotyping, phenotypic traits evaluation and fermentative performance in natural grape juice, was applied to evaluate the fitness of strains. Using interdelta primers, the two selected cultures showed a unique profile while the results of microvinifications showed that both indigenous strains exhibited good enological parameters and fermentative aptitude comparable with that shown by commercial strains used as controls. The profile of volatile compounds of wines of indigenous strains was characterized by a significant high production of isoamyl acetate and ethyl esters at 22 °C and phenyl ethyl acetate at 16 °C. Overall results indicate that the two indigenous selected yeasts showed a genetic and phenotypic specificity and they could be profitably used to characterize the Piceno DOC area wines. The current scientific research is focused on the grape seeds - a waste product retrieved after alcoholic fermentation of wine, in the form of grape seeds flakes. Recently, the grape residue has been considerated as a functional food product, a source of bioactive compounds (BAC) including antioxidants. The present study presents data about the antioxidant activity of grape seeds flakes of different grape varieties of Bulgarian origin, analysed via four analytical methods differ in mechanism and reaction conditions, namely DPPH, ABTS, FRAP and CUPRAC. The obtained results were expressed as mM TE/g extract (842.50 ± 34.75; 959.63 ± 65.05; 94.73 ± 10.42 and 200.24 ± 48.60, respectively) and mM TE/g flakes (as follows 141.40 ± 5.83; 161.06 ± 10.92; 94.89 ± 10.44 and 200.56 ± 48.68). The grape seeds flakes were stored at room temperature - 25°? and relative air humidity of 75%. The storage regime was optimized to one month by means of packaging the product in a co-extruded barrier film with copolymer covering for heat sealing. Grape skins or their by-products from wine production are rich sources of anthocyanins and various colorless phenolics, depending on the grape variety. Phenolics have strong antioxidant and anthocyanin stabilizing properties and help to produce functional anthocyanin colorants with improved stability. This study aimed to assess differences in color expression and stability of anthocyanin colorants from red grape varieties naturally copigmented and with different levels of purity and to compare them to synthetic FD&C Red No. 3. Model juice systems were prepared at pH 3.5 with anthocyanins and phenolic copigments extracted from four Vitis vinifera grape varieties (‘Tempranillo’, ‘Syrah’, ‘C. Sauvignon’, and ‘Graciano’) both crude and purified by C18 solid phase extraction. Attention was focused on differential colorimetry and phenolic composition related to the color. Degradation kinetics of total color were also studied during storage of 17 days in darkness at 25 °C. Grape variety significantly influenced pigment yield, proportion of acylation, and proportion of copigments:pigments ratios in crude extracts; purification modulated the copigment:pigment ratios. This proportion was related to perceptible color variability among colorants and to different stabilities. With the same pigment content, grape varieties richer in skin copigments and higher copigment/pigment ratios (‘Syrah’ and ‘Tempranillo’) produced more intensely colored crude extracts whose tonalities ranged from reddish (‘Graciano’) to red-bluish (‘Syrah’), depending on the proportion of acylation. Increasing the purity of the pigments diminished the color variability due to variety, making them less vivid and visually more similar to one another and also to the synthetic colorant. Degradation kinetic studies showed that unpurified grape colorants had higher color stability over time, with the greatest stabilizing effects achieved with varieties richer in skin flavonols (‘Tempranillo’ and ‘Syrah’). Koshu is indigenous to Japan and considered the most important wine grape in Japan. Koshu grape berry possesses characteristics that make it unique from European V. vinifera as wine grape. However, the physiological characteristics of Koshu leaf and internode remain unknown. An understanding of those characteristics would contribute to improvements in Koshu cultivation, thereby enhancing grape berry and wine quality. To identify the genes responsible for the physiological characteristics of Koshu, we comprehensively analyzed leaf and internode differences at the transcriptome level between Koshu and Pinot Noir by RNA sequencing. A total of 248 and 131 differentially expressed genes (DEGs) were detected in leaves and internodes, respectively. Gene Ontology (GO) and Kyoto Encyclopedia of Genes and Genomes (KEGG) pathway enrichment analyses of these DEGs revealed that “flavonoid biosynthesis” and “glutathione metabolism” pathways were significantly enriched in Koshu leaves. On the other hand, when internodes were compared, “flavonoid”-related GO terms were specifically detected in Koshu. KEGG pathway enrichment analysis suggested that the expression of such genes as leucoanthocyanidin reductase and flavonol synthase in the flavonoid biosynthesis pathway was higher in Koshu than Pinot Noir. Measurement of the relative expression levels of these genes by RT-qPCR validated the results obtained by RNA sequencing. The characteristics of Koshu leaf and internode, which are expected to produce flavonoids with antibacterial activity and UV protection function, would suit Japanese climate as a survival strategy. Hydroxytyrosol (HT) is a phenolic compound of recognized bioactivity that has been described in wines but little is known about its origin. This work demonstrates that yeast involved in wine making, i.e. Saccharomyces cerevisiae strains and the non- Saccharomyces Torulaspora delbrueckii , can synthesise HT, as this compound was identified in the intracellular media of three strains by means of a developed and validated UHPLC–HRMS method with LOQ and LOD of 0.108 and 0.035 ng mL −1 respectively. Controlled fermentations were performed with different varieties of grapes ( Corredera , Moscatel , Chardonnay , Palomino fino , Sauvignon Blanc , Vijiriega , and Tempranillo ) and synthetic must. The Saccharomyces cerevisiae strain QA23 was the most efficient producer of HT from tested yeasts. On the other hand, the grape variety influences HT wine concentrations. Furthermore, the maximum concentration of HT is reached between the fourth and sixth day of fermentation. This work reveals that yeasts have a great potential for the production of HT. Samples from the vintages of 2008 and 2009 were analysed by gas chromatography-mass spectrometry-solid phase microextraction (GC-MS-SPME). Higher alcohols, terpenes, C13-norisoprenoids, esters, aldehydes and ketones were quantified. The calculation of the odour activity values (OAVs) revealed that β-damascenone, α-ionone, β-linalool, geraniol, ethyl butanoate, hexanoate and octanoate were the most prevalent aroma-active compounds of the grape variety. However, the remaining 42 aromatic compounds that registered OAVs less than 1 could potentially contribute to the flavour of Pedro Giménez grapes. The measured monoterpene levels indicate that the Pedro Giménez grape can be considered a neutral variety. Grape juice from two local grape cultivars viz. Punjab MACS purple and H-144 was subjected to prefermentation skin treatment. Ethanol fermentation w.r.t agitation rate, temperature, inoculum size, and nutrient supplementation were optimized using Triple M medium following response surface methodology (RSM). RSM results were numerically optimized keeping temperature 'in range' for red wine and 'low' for white wine which showed agitation rate of 80 ± 1 rpm for 24 hr, diammonium hydrogen orthophosphate supplementation @ 150 mg/100 ml, inoculum size of 6.1 and 6.5% (vol/vol), and fermentation temperature of 24.6 and 21 °C as optimum for ethanol fermentation of red and white wines, respectively. Optimized results were validated on grape juice of Punjab MACS purple and H-144 cultivars that lead to 12.0 and 11.2 (%vol/vol) ethanol production, respectively. Gas chromatography mass spectrometry analysis revealed the presence of 41 volatile compounds in the form of phenols, alcohols, terpenes, esters, ketones, and amines that add to the nutraceutical and antioxidant value of the wines. Practical applications Present study provides the statistical optimized fermentation parameters for red and white wine production separately. Optimization of an efficient processing technology to produce local grape wines will help to reduce the price of wines so that they are available to common masses at affordable costs besides improving the economic status of grape growers in the state and providing valuable information to wine makers to establish winery under North Indian conditions.
