This research aims to identify the phytochemical constituents of 79 different samples of black tea, including varieties from India, Iran (IrT), Turkey (TT), and Sri Lanka. In addition, this study investigates the effect of varying brewing times on the quality characteristics of tea. Therefore, we analyzed the phytochemical content of tea using a novel LC–MS/MS method that we developed, which identifies 53 different phenolic compounds. Furthermore, objective evaluations were conducted on the total phenolic compound, total flavonoid compound, antioxidant activity, and color values at 15, 30, and 60‐min brewing intervals. The prevailing phenolic compounds discovered in the corresponding tea classifications were quantitatively analyzed to be quinic acid, epicatechin gallate, epigallocatechin gallate, epicatechin, epigallocatechin, gallic acid, nicotiflorine, and isoquercitrin. The study found that the TT and IrT groups had the richest phytochemical content and the highest antioxidant activity. The Turkish tea group had the highest measurement for the desired red color, which is considered a sensory property. Infusion color, antioxidant activity, and total phenolic and flavonoid contents showed significant increases with prolonged brewing time. It was important to note that the chemical composition of tea varies according to its origin and brewing conditions. Extending the brewing time improved the quality of the tea. Background: There is no study in the world on the relationship between consuming black and green tea as beverages containing polyphenols and the risk of MS. This study aimed to determine the association between the consumption of green and black tea, coffee, non-alcoholic beer, milk, fruit juices and carbonated beverages with the risk of MS. Methods and materials: This case–control study was performed on 150 patients with MS and 300 healthy individuals as a control group among patients who were referred to the ophthalmology ward of a referral hospital in Ahvaz with the groups matching for age. The data collection tool was a researcher-made questionnaire including demographic information and beverage consumption. Analysis was performed using univariate and multiple logistic regression models. Results: The mean age of patients at the time of diagnosis was 38.55 ± 8.88 years. The results showed that drinking milk (OR = 5.46), natural juice (OR = 2.49), and carbonated beverages (OR = 16.17) were associated with an increased chance of developing MS. However, drinking non-alcoholic beer (OR = 0.48), black tea (OR = 0.20), green tea (OR = 0.29) and coffee (OR = 0.07) were associated with a reduced chance of developing MS. Conclusion: The results show that drinking black and green tea, non-alcoholic beer, and coffee are associated with a decrease in the chance of developing MS. The purpose of this study is to investigate pesticide residues in the imported and domestic tea sold in Turkey and to detect their compliance with maximum residue limits (MRL) and Acceptable Daily Intake (ADI). A total of 79 samples were analyzed by using LC-MS/MS and GC-MS devices with AOAC 2007.01 method to investigate 603 pesticide residues. According to the results, pesticide residues were found in a total of 28 tea samples. Pesticide residues were found in the countries of origin at the rates as follows: Iran (100%), India (33.3%) and Sri Lanka (17.3%). No pesticide residue was detected in the tea produced in Turkey. The compounds such as Diuron, Ethion, Cypermethrin, Thiacloprid, Thiamethoxam, Fenpyroximate, Acetamiprid, Imidacloprid, Flubendiamide, Deltamethrin and Hexythiazox were detected in positive samples. Seven types of pesticide residues exceeded the MRL determined by the Turkish Food Codex for 15 types (53.57%) for 28 samples with pesticide residue detected. Additionally, 4 types of pesticide residues were determined to exceed the ADI determined by the Codex Alimentarius for 13 (46.42%) of 28 samples with pesticide residue detected. These results have showed that the imported tea entering Turkey was not adequately analyzed in the customs control laboratories or the maximum residual limits were not clearly determined. Heavy metal pollution is one of the environmental problems and one of the critical concerns of food hygiene. Consumption of tea as a pleasant drink and food habit is common among Iranians.The presence of these metals in tea can be an essential source of contamination in food.This study aimed to investigate the levels of lead, chromium, nickel, cadmium, aluminium, and arsenic in samples of dry black tea and Infusionsin the market of Neyshabur in 2019.Samples were digested with nitric acid and perchloric acid, and the concentration of the desired metals was read by the spectrometric method.All experiments were performed in 3 replications.Then, the Provisional Tolerable Daily index (PTDI) and Hazard Quotient (HQ) levels of heavy metal intakes were calculated to estimate the health hazard for consumers.The Mean concentrations of Pb, Cr, Ni, As,Al, and Cd in the tea leavesand Infusions were 1.96, 3.05, 3.68, 0.048, 2.195, 0.03 mg/kg and 0.07, 0.17, 0.88, 0.03, 0.53, 0.003 mg/kg, respectively.The results also showed that the target hazard quotient (THQ) for Cr and Alis more than one. In the samples of dry tea and their Infusions, concentrations ofCrand Alwere exceeded from Iran's Ministry of Health and WHO guidelines. The two elements of Ni and Pb are more than the Iranian National Standards Organisation'sinstructions.HQ values for chromium and aluminium obtainedhigher than one, which indicatedadverse effectson tea consumers' health. Purpose: It is argued that COVID-19 patients show various neuropsychiatric symptoms, including fatigue, depression and anxiety. On the other hand, epidemiological and experimental evidence indicated that green tea could potentially have antiviral effects and ameliorate psychiatric disorders. However, there is a lack of clinical evidence. The purpose of this study was to investigate whether drinking green tea can clinically improve psychiatric complications of COVID-19 infection. Design/methodology/approach: This study included 40 patients with laboratory confirmed mild-to-moderate COVID-19 disorder in the current randomized open-label controlled trial. Patients were instructed to include three cups/day of green tea (intervention) or black tea (control) to their usual diet for four weeks immediately after diagnosis of the disease. At the study baseline and after the intervention, the enrolled patients' fatigue, depression and anxiety were assessed by the Chalder Fatigue Scale, Beck Depression Inventory-Fast Screen and State-Trait Anxiety Inventory questionnaires. Findings: A total of 19 COVID-19 cases in the intervention group (mean age = 52 years) and 14 cases (mean age = 50 years) in the control group completed the study. Analysis of covariance adjusted for baseline levels, and confounders revealed that those who consumed three cups/day of green tea compared to the patients who received black tea experienced significantly lower fatigue, depression and state and trait anxiety levels (adjusted means for fatigue = 12.3 vs 16.2 (P = 0.03), depression = 0.53 vs 1.8 (P = 0.01), 37.4 vs 45.5 (P < 0.01) and 37.9 vs 45.2 (P < 0.01)). Research limitations/implications: The open-label design may bias the evaluation of the self-reported status of fatigue, depression or anxiety as the main outcomes assessed. Moreover, as this study did not include patients with severe COVID-19, this might affect the generalizability of the present results. Thus, the recommendation of daily drinking green tea may be limited to the subjects diagnosed with mild-to-moderate type of infection or those with long-term neuropsychiatric complications owing to COVID-19. Besides, considering the ethical issues, this study could not exclude the drug therapy's confounding effects; thereby, this point should be considered when interpreting the current results. Besides, it is worth noting that Guilan province in the north of Iran is recognized as a tea (and particularly green tea) producing region; thereby, it is an available and relatively inexpensive product. Considering this issue, the recommendation to consume this medicinal plant in adjunct to the routine treatment approach among patients with mild-to-moderate COVID-19 based on its beneficial effects may be widely accepted. Practical implications: Green tea consumption could be considered an option to combat COVID-19 associated psychological complications, including fatigue, depression and anxiety among patients suffering from mild-to-moderate type of this viral infection. Background: Influenza A virus (IAV) infection is a continual threat to the health of animals and humans globally. Consumption of the conventional drugs has shown several side effects and drug resistance. This study was aimed to screen some Iranian medicinal plants extracts and their fractions against influenza A virus. Methods: Glycyrrhiza glabra (rhizome), Myrtus commonis (leaves), Melissa officinalis (leaves), Hypericum perforatum (aerial parts), Tilia platyphyllos (flower), Salix alba (bark), and Camellia sinensis (green and fermented leaves) were extracted with 80% methanol and fractionated with chloroform and methanol, respectively. The cytotoxicity of the compounds were determined by MTT colorimetric assay on MDCK cells. The effective concentrations (EC50) of the compounds were calculated from the MTT results compared to the negative control with no significant effects on cell viability. The effects of EC50 of the compounds on viral surface glycoproteins and viral titer were tested by HI and HA virological assays, respectively and compared with oseltamivir and amantadine. Preliminary phytochemical analysis were done for promising anti-IAV extracts and fractions. Results: The most effective samples against IAV titer (P ≤ 0.05) were crude extracts of G. glabra, M. officinalis and S. alba; methanol fractions of M. communis and M. officinalis; and chloroform fractions of M. communis and C. sinensis (fermented) mostly in co- and pre-penetration combined treatments. The potential extracts and fractions were rich in flavonoids, tannins, steroids and triterpenoids. Conclusion: The outcomes confirmed a scientific basis for anti-influenza A virus capacity of the extracts and fractions from the selected plants for the first time, and correlated their effects with their phytochemical constituents. This study aimed to investigate the concentration of 33 pesticide residues in 60 black tea samples collected from Iran, determine their transfer rate, and assess their health risk during brewing. Pesticide extraction and analysis were performed by using a quick, easy, cheap, effective, rugged, and safe (QuEChERS) method and gas chromatography/tandem mass spectrometry (GC-MS/MS), respectively. The limits of detection (LOD) and the limits of quantification (LOQ) of pesticides were ranged 0.1–7.26 and 0.8–24 μg/kg for dried tea leaves and 0.03–3.1 and 0.09–10 μg/L for the tea infusion, respectively. The levels of pesticide residue in 52 (86.67%) out of 60 tea samples were above the LOD (0.1–7.26 μg/kg). Twenty four (40%) of the samples contained pesticides in a concentration higher than the maximum residue limit (MRL) set by the European Commission (EC). Seven out of 33 validated pesticides were detected in dried tea leaf samples that only four of seven, including buprofezin, chlorpyrifos, hexaconazole, and triflumizole, were transferred into tea infusion, demonstrating that the concentrations of pesticides in infusion were raised during brewing. The risk assessment study for detected pesticides in the tea infusion samples indicated that this beverage consumption was safe for consumers, while the mean residue of some pesticides in positive samples was higher than the MRL; therefore, periodic control of these pesticides should be regularly implemented. Background: Tea is the most popular nonalcoholic beverage worldwide. In recent years, some Iranian studies have shown the occurrence of toxic elements in fresh or dried tea leaves as well as in brewed tea. The present study aimed to ascertain the health risks associated with exposure to toxic and essential element through black tea consumption in Iran by systematically reviewing the accredited articles in the fi eld. Methods: In order to obtain the relevant articles and academic databases, the search engines covering the specifi c disciplines were searched for the keywords, including tea, elements, heavy metals and determination. Having provided the complete list of sound articles, being conducted in Iran was considered as the inclusion criteria. Exclusion criteria were established as failure to provide information on the validity parameters and accuracy in the analytical methods. Choosing well conducted, reliable studies, analytical results for the concentration of each element in black tea were utilized in the determination of the hazard quotient (HQ) for the given element and the hazard index (HI) was then determined for all of the elements in each study. Results: Among the total studies, two were considered to be reliable. Aluminum was found to be the most abundant element in black tea marketed in Iran. Although the HQ for manganese was the highest among the studied elements, HQ and HI values for both toxic elements and essential elements were calculated as less than 1. Conclusions: The hazard of excessive element intake through black tea consumption should be considered as negligible in Iran. Background: The aims of this study were to determine the effect of different brewing times and diluting on oxalate content of loose-packed black teas consumed in Tabriz, Iran. Methods: The oxalate content of black teas after brewing for 5, 10, 15, 30, 60 minutes was measured in triplicate by enzymatic assay. In order to attain the most acceptable dilution of tea infusions, tea samples which were brewed for 15, 30 and 60 minutes were diluted two (120 ml), three (80 ml) and four (60 ml) times respectively. Results: There was a stepwise increase in oxalate concentrations associated with increased brewing times (P< 0.001) with oxalate contents ranging from 4.4 mg/240 ml for the 5 min to 6.3 mg/240 ml for 60 min brewing times, respectively. There were significant differences between the mean oxalate content of different dilutions after brewing for 15, 30 and 60 minutes (P< 0.001). Conclusion: The oxalate content of Iranian consumed black tea after different brewing times and different dilution was below the recommended levels. Therefore, it seems that consumption of black tea several times per day would not pose significant health risk in kidney stone patients and susceptible individuals. [ABSTRACT FROM AUTHOR]

Black tea is a popular and widely consumed beverage in Iran. Due to the possibility of transferring heavy metals and mycotoxins to the food chain, its potential hazards should be considered. In this study, forty samples of black tea imported to Bushehr port were collected. The physicochemical and microbial properties and their contamination with heavy metals including copper, lead, mercury, arsenic, and cadmium, as well as Aflatoxin B1 were evaluated. Moreover, to evaluate the health effects of exposure to heavy metals, both Hazard Index (HI) and Hazard Quotient (HQ) values were calculated. The concentration of lead, cadmium, arsenic and copper were: 0.63, 0.061, 0.01, 29.93 mg kg−1 in Sri Lankan, 0.65, 0.063, 0.11, 21.3 mg kg−1 in Indian, 0.61, 0.055, 0.085, 14.82 mg kg−1 in Kenyan and 1.71, 0.06, 0.1, 37.87 mg kg−1 in Vietnamese tea samples, respectively. No Hg contamination was observed. Aflatoxin B1 was only detected in Kenyan and Vietnamese samples (24.33 and 42.66 ng g−1, respectively). The calculation of HQ value for all heavy metals and HI value for all brands, which all were below one, showed that there is no non-carcinogenic adverse health effect through consuming these black teas for the adult consumers. Aflatoxins (AFs) are highly toxic, and carcinogenic secondary fungal metabolites and have been detected in various food commodities. In this regard, 40 black tea samples including domestic and imported black tea were analysed for aflatoxin contamination by high-performance liquid chromatography using a post-column derivatisation procedure (Kobra cell) with fluorescence detection. Samples were randomly collected in 2010 from Tehran markets. The results revealed that 30 among 40 samples were contaminated with aflatoxins (27.5% of the total).
