This study aimed to describe the behaviour of Podolian breed, a semiwild cattle breed kept in a natural environment (as either a small group of young bulls or cows within a family herd), and the interaction of these animals with the environment in terms of ingestion from natural pastures. Diurnal grazing behavioural pattern was monitored through continuous focal animal recording method. The activity budget of free-ranging animals was characterized by high locomotor and feeding activities. They exhibited a high degree of adaptability to the local phytocoenosis with high levels of ferns' and tree foliage intakes performed by cows and the selection of a diet more nutritious than pasture performed by young bulls. These results along with the low levels of agonistic interactions recorded in the two experiments suggest that extensive systems based on grazing allow social stability and provide a natural environment for the expression of cattle species-specific behaviour. • We used the Life Cycle Assessment approach on 4 sheep dairy farms. • For the first time we applied the ReCiPe End-Point methodology to sheep farming. • The impact of 1 kg of milk in terms of Disability Adjusted Life Years was 7.35 E-06. • The Damage to Ecosystem Diversity of 1 kg of milk was 3.29 E-07 Species*yr. • The value of the Damage to Resource Availability of 1 kg of milk was 0.025 $. Sheep milk production is an important livestock sector for the European Mediterranean countries including the regions of southern Italy. The main objective of this study was to investigate the carbon footprint and the related damages generated by dairy sheep farming by using a simplified LCA approach based on the ReCiPe End-point method. We used 1 kg of Fat and Protein Corrected Milk (FPCM) as functional unit (FU). The average flock size was about 400 animals and the average farm size was about 66 ha. In addition to milk all farms produced meat and wool. Therefore, we performed an economic allocation by dividing all inputs and outputs among milk and the other two co-products (meat and wool), based on farm financial statements. The CF impact determined by 1 kg of FPCM was 3.78 kg CO 2- eq. The highest CF impact was mainly due to the enteric fermentation, producing biogenic CH 4 as the prevalent chemical compound, followed by the production of meadow hay. Based on the ReCiPe End-point method the impact of 1 kg of FPCM from dairy sheep farming was 7.35 E-06 Disability Adjusted Life Years, whereas the Damage to Ecosystem Diversity was 3.29 E-07 Species*year and the value of the Damage to Resource Availability 0.025 $. In conclusion, the environmental management and sustainability of sheep farms should be constantly controlled with the aim of minimizing their impacts without compromising the competitiveness of this productive sector. Despite its importance little is known about the attitudes of different stakeholder categories towards issues that impact the welfare of sheep. This study determined the relevance attributed by various stakeholders to different sheep welfare indicators and assessed which demographic characteristics can influence their scores. Data were collected through a questionnaire presented on paper face-to-face to 15 sheep farmers in Italy during farm visits in June and July 2020 and the same questionnaire was transferred online to a Google Form and an announcement was sent by email and on social platforms to consumers, with a total of 311 respondents completed the questionnaire. The survey was composed of two parts. In the first part respondents were asked to declare their demographic characteristics. In the second part they rated the relevance attributed to eleven indicators of sheep welfare (eight animal-based: leanness, fleece condition, fleece cleanliness, skin lesions, tail docking, lameness, hoof overgrowth, occurrence of mastitis; and three resource-based: insufficient clean drinking water availability, thermal discomfort, access to pasture) using a ten-point Likert scale. An ordinal logistic regression descending function with stepwise selection was used to analyze the effects within demographic data and the distribution of the Likert scale for each indicator. The number of respondents (n = 311) was quite small, nevertheless, the differences that are reported give some guidance on the relative importance accorded to each of these groups of stakeholders to each of the welfare indicators. Female respondents gave higher relevance to most of the indicators compared with male respondents (P < 0.05), whereas respondents with a lower education level gave more relevance to four out of the eleven welfare indicators compared with stakeholders with a higher education level (P < 0.05). As for respondent categories, non-farmer experts attributed more relevance to lameness, whereas farmers gave a lower relevance to tail docking, while expressing a higher level of concern for leanness compared with the other categories (P < 0.05). Finally, more frequent consumers of sheep products considered leanness to be most important (P < 0.05). No significant difference was found based on the nationality or the work declared. This study provides information about how different stakeholder categories perceive different aspects of sheep welfare and whether this perception is affected by demographic characteristics, thus promoting informed dialogue between society and the scientific community about the relevance to be attributed to different sheep welfare indicators. • Attitudes of different stakeholder categories (suppliers; owners; investors; etc.) towards issues that impact the welfare of sheep identified. • Women gave more importance to most sheep welfare indicators than men. • Farmers gave least importance to tail docking. • Animal scientists (investigating problems associated with livestock production and management), attributed most importance to lameness. • Lower education level respondents gave higher importance to most of the sheep welfare indicators. We aimed to investigate whether the sensitivity to capsaicin had an effect on pungency perception of pasta filata cheeses. In addition, we assessed the effect of several individual variables (gender, age, consumer provenance, PROP status and personality traits) on both consumer liking and choice for pasta filata cheeses. Four pasta filata cheeses at two ripening times and 272 subjects from three different Italian locations were used. Based on sensory data, the PCA discriminated sweet (ripened at 2 months) from pungent cheeses (ripened at 12 months). Cheese pungency perception increased with increasing sensitivity to capsaicin (P < 0.001). There was no clear relationship between sensitivity to capsaicin or sensitivity to cheese pungency with cheese liking, whereas a number of other aspects, including sensory attributes and individual consumer characteristics, such as consumer provenance (P < 0.001), gender (P < 0.001) and food neophobia (P < 0.05), affected the liking for different pasta filata cheeses. Consumers who were younger (18-30 y.o.; P < 0.05), female (P < 0.001), unfamiliar with pungent foods (P < 0.0001) and consumers from Potenza (P = 0.001) more often declared to prefer sweet over pungent cheese, whereas in terms of real choice supertasters and neophobic subjects chose the sweet option more often (P = 0.01). In conclusion, sensitivity to capsaicin affected pungency perception in pasta filata cheese, whereas no clear relationship was observed between pungency perception and liking. We assessed the effect of the raw material origin and preservative on the appearance and consumer liking of Soppressata salami to give information concerning the best process conditions to fulfil consumer needs. The effect of visible fat ratio on consumers' acceptability and preference was also evaluated. Image analysis based on Computer Vision System showed that Soppressata cured with nitrites had higher levels of red, yellow, hue and chroma, whereas its fat showed higher levels of lightness, redness, and lower levels of hue. Consumers liked more cured Soppressata, made by using pork cuts and fat from pigs bred on plants using growth-to-finish systems and transformed on site as compared with products obtained by using raw material bought from the market. Most of the consumers considered acceptable the slices with lower visible fat ratio (8.28-17.98%). Animal production system and welfare conditions can influence consumers' acceptance, as meat from animals grazing in natural pasture and labelled with information about high standards of welfare is preferred. In addition, geographical origin of food is recently considered one of the main information influencing the consumers' acceptance. Local products are collectively associated with high quality attributes by the consumers related to shorter transport and good welfare. Lamb meat is considered local and typical food; however, it is common to find in the same market both local and imported lamb meat. The present investigation aimed at understanding the importance of information about geographical origin, transport duration, and welfare condition of lambs for consumers and their actual liking. Moreover, the quality of lamb meat from local and imported animals as affected by short or long transport was assessed. Data demonstrated that both short and long transport did not affect organoleptic quality of meat; this result was corroborated by an absence of both metabolic and immune stressors in long term transport lambs except for haptoglobin, cortisol and glucose. However, the expected and actual acceptability were affected by the information with higher scores for local lamb when information on the geographical origin, transport duration, and welfare condition was provided to the consumers.
