The interest in edible insects as food is growing, both in traditional and non-traditional insect-eating countries given their advantages in terms of sustainability and nutritional content. However, only a few studies have conducted cross-country investigations on the acceptance of including processed or whole insects in the diet. Thus, this study aimed to examine to which extent consumers were accepting (i) whole and visible mealworms, (ii) processed mealworms in their diet and (iii) to explore the factors affecting the acceptance level of consuming mealworms in countries with and without entomophagy tradition. An online survey was applied to collect responses (3,006) from five countries–i.e., Belgium, China, Italy, Mexico, and the US–using a quota sampling method. Moreover, an information treatment was included with about half of the participants receiving information about the advantages of edible insects as food (ingredient) and the presence of food safety regulations. Across countries, gender was the main factor affecting acceptance level as men accepted mealworms more than women. Entomophagy tradition mainly explained the differences among countries. Countries with entomophagy traditions (Mexico and China) showed higher acceptance of including whole or processed mealworms in the diet compared to countries with no entomophagy traditions (i.e., Belgium, Italy, and the US). While information and age did affect differently the acceptance of including processed mealworms in countries with entomophagy traditions showing that consumer acceptance was affected by information in Mexico and by age in China. Whereas it was found that younger people (below 42 years old) in countries without entomophagy tradition were more open to accepting processed mealworms in their diet. Moreover, across countries, the acceptance of including processed mealworms was higher compared to whole mealworms. These findings provide insights into which consumer segments to target and the potential impact of information when introducing new insect-based foods in countries with and without entomophagy traditions. Many herbivorous, granivorous and frugivorous rodents can integrate animal proteins in their diet, still for many of them no information is available on the importance of animal food sources. The crested porcupine, Hystrix cristata, is considered a strictly vegetarian rodent. It may integrate animal proteins through bone-gnawing, while the importance of insects in his diet is poorly known. In this study we assessed the presence of insects in the diet of this rodent in Central Italy by collecting 141 faecal samples along transects in 2016–2020. Hypogeal plant organs were the main component of the diet (absolute frequency = 50.38%; volume = 60.13%). Insects were detected only in 6.8% samples, only in February–March, at the annual birth peak for the crested porcupine. The present paper is a review of the empirical studies on consumer acceptance of novel protein sources in Italy. The authors uncovered the most recent scientific contributions regarding novel plant-based products, and insect-based foodstuffs as well as cultivated meat, in the attempt of framing the main socio-economic drivers and challenges for each product with respect to consumers' perception and acceptance. Novel plant-based foods and edible insects represent the most viable alternatives in the nearest future, as already available (or very close to being) to the Italian consumer and more appealing to vegetarians and vegans. Nevertheless, some intrinsic characteristics of these products have yet to be accepted. The cultivated meat represents an animal source of protein, hence undesirable for some segments of consumers, although described as a good potential substitute for conventional meat. Chitin digestion by humans has generally been questioned or denied. Only recently chitinases have been found in several human tissues and their role has been associated with defense against parasite infections and to some allergic conditions. In this pilot study we tested the gastric juices of 25 Italian subjects on the artificial substrates 4-methylumbelliferyl-β-D-N,N’,diacetylchitobiose or/and fluorescein isothiocyanate (FITC) chitin to demonstrate the presence of a chitinase activity. Since this chitinase activity was demonstrated at acidic pH, it is currently referred to acidic mammalian chitinase (AMCase). AMCase activity was present in gastric juices of twenty of 25 Italian patients in a range of activity from 0.21 to 36.27 nmol/ml/h and from 8,881 to 1,254,782 fluorescence emission (CPS), according to the used methods. In the remaining five of 25 gastric juices, AMCase activity was almost absent in both assay methods. An allosamidine inhibition test and the measurement at different pH values confirmed that this activity was characteristic of AMCase. In Western societies, the unfamiliarity with insect-based food is a hindrance for consumption and market development. This may depend on neophobia and reactions of disgust, individual characteristics and socio-cultural background, and risk-perceptions for health and production technologies. In addition, in many European countries, the sale of insects for human consumption is still illegal, although European Union (EU) and the European Food Safety Authority (EFSA) are developing regulatory frameworks and environmental and quality standards. This research aims to advance the knowledge on entomophagy, providing insights to improve consumer acceptance in Italy. This is done by carrying out the characterization of a sample of consumers according to their willingness to taste several types of insect-based food and taking into account the connections among the consumers' features. Thus, the dominance-based rough set approach is applied using the data collected from 310 Italian consumers. This approach provided 206 certain decision rules characterizing the consumers into five groups, showing the consumers' features determining their specific classification. Although many Italian consumers are willing to accept only insects in the form of feed stuffs or supplements, this choice is a first step towards entomophagy. Studies on consumers' perceptions towards entomophagy have recently gained popularity. However, the use of the general term "insect" represents a limitation of previous research, due to the need for more precise terminology. This study assessed attitudes towards specific insects, their gastronomic preparations, their relationships with human factors and the characteristics of insects as a food source. Using a survey, socio-demographics, personality traits, willingness to eat (WTE) six edible insects and their relative insect-based products or dishes (IBPD) and the emotions associated with entomophagy were collected from 400 Italians. Compared with females, males were found to be more positive towards insects, less influenced by the species and level of processing of insects and more willing to eat insects for reasons of taste. Eating insects evoked adventurous, daring and wild emotions, while disgust and food neophobia represented the main factors in refusal to eat insects. WTE was: crickets > bee larvae and grasshoppers > mealworms and silkworms > giant water bugs. A similar result was obtained considering the respective IBPD. On average, adult insects were preferred over larvae. Three subject groups, namely "In favour of eating insects" (41%), "Picky towards eating insects" (32%) and "Against eating insects" (27%) were found. A sensory evaluation performed on three cricket-based samples with 52 Italians revealed that a low level of insect visibility was preferred.
