Abstract

Objective: To examine the emotional distress situation among hospitality industry workers and their access to and use of health care including telehealth services during the COVID-19 pandemic., Methods: A survey was administered on the Qualtrics platform both in English and Spanish from November 18, 2020, to November 30, 2020, through the Culinary Workers Union in Nevada. A total of 1182 union members participated in the survey, of whom 892 completed the survey. Descriptive and multivariable regression analyses were conducted., Results: Among 892 respondents, 78% were people of color; 71% were laid off or furloughed during the COVID-related shutdown, but most had access to health care. Further, 78.8% experienced at least 2 or more signs of emotional distress during the pandemic. Females and unemployment status were positively associated with experiencing emotional distress. About 43.5% received care through telehealth, although most did not prefer telehealth (74.2%). Only 18.3% of non-telehealth users were interested in telehealth and 15.0% had never heard about telehealth., Conclusions: Health insurance coverage is essential for access to health services regardless of employment status. Strengthening mental health services, including psychological counselling for hospitality workers, is needed in such public health emergency situations as the ongoing COVID-19 pandemic., Competing Interests: Conflict of Interest: No conflicts of interest reported by authors.

Within the hospitality industry, it is common to identify trends of racial/ethnic dominance in certain occupations, particularly in low-wage low-skilled positions. It is not unusual to find a housekeeping staff dominated by Hispanic women. Nor is it uncommon to find their male counterparts serving as prep cooks and other back-of-house assistants in physically demanding positions within the Food and Beverage unit of the industry. This thesis aims to explore both the effects the growing low-wage immigrant population has on organized labor (unions) and the hospitality workplace, as well as the converse dynamic of the unions on the immigrants. Furthermore, this exposition will be outlined within both the Metropolitan Statistical Area of Clark County, Nevada (which is largely dominated by Las Vegas) as well as within the Mexican-origin population of the county and city. Las Vegas, indeed, presents a unique situation in its idiosyncratic being as an icon of successful lodging, food and beverage, gaming, and tourism destinations in a dynamic co-existence. The examination of organized labor is relevant because of the historical importance the Mexican immigrant population has had on social movements, specifically related to labor force participation in the Southwest (re: farm labor studies). In essence, behavioral patterns similar to those of the farm labor movements are occurring in Las Vegas within organized labor of the hospitality industry and a study of this nature thus has justifiable utility for managers, owners, the line workforce itself, and the consuming society at large. Within the hospitality industry, the largest expense is payroll, and it is often considered one of the most controllable. Expense preference theory postulates that managers may focus more on maximizing their own utility by overspending as opposed to firm profit maximization. The purpose of this study is to evaluate if hotel managers in Nevada casinos exhibit expense preference behavior by overstaffing. Results of various regression models show that occupied rooms is positively and significantly related to rooms payroll. In one model, there is a modestly significant relationship between market concentration and rooms payroll. Abstract

Purpose – The purpose of this study is to identify the optimal meetings, incentive travel, conventions, and exhibitions (MICE) capacity for Las Vegas and analyze the over- and under-capacity situation in Las Vegas from 2010 through 2014. The study provides recommendations for Las Vegas's future MICE development based on the capacity analysis. Design/methodology/approach – A single-period inventory model, which involves cost of over-capacity, cost of under-capacity, and forecasted future MICE demand, was used to identify the optimal capacity in terms of MICE square foot days for each year from 2010 through 2014. The model, which identified optimal capacity, was compared to the planned available capacity for each year to determine the magnitude of over- or under-capacity. Findings – The cost of over-capacity was found much greater than the cost of under-capacity. The model that identified optimal capacity indicates that Las Vegas will experience severe over-capacity from 2010 to 2014. Research limitations/ implications – The findings of this study should help researchers and practitioners evaluate the current status of the Las Vegas MICE industry in terms of capacity efficiency. The results suggest that the MICE development in Las Vegas is heading for over-capacity and the industry must downscale its development plan in the near future to avoid severe over-capacity. Originality/value – For the first time in MICE research, this study develops an inventory model for determining the optimal MICE capacity. The article presents a study which evaluates the relationship between psychosocial jobs measured using the effort-reward-imbalance (ERI) and self-rated health (SF) status of female hotel room cleaners in Las Vegas, Nevada through Short-Form-36 Survey. The study employs logistic regression models to control possible confounding factors including physical workload. Results reveal that majority of cleaners have experienced imbalance in efforts and rewards at work associated with poor health.

This study analyzed the websites of major Las Vegas Strip hotels, examined their corporate financial reports, and conducted two in-depth telephone interviews with hotel managers, all with regard to their "green" (pro-environmental) policies. The study found a distinct lack of evidence to support assertions that these properties had truly "gone green" in their daily operations. Thus, although the hotels might actually have been engaged in green procedures, they did not express environmental policy in their corporate websites or financial reports. Purpose - The purpose of this paper is to explore intrinsic and extrinsic factors impacting the job satisfaction of casino hotel chefs, and whether chefs' background characteristics are associated with their overall and specific facets of job satisfaction. Design/methodology/approach - A total of 152 surveys were analyzed using a randomly selected sample of 25 major casinos in Las Vegas, Nevada. The sample selection represented chefs working in various types of foodservice operations within the hotel segments. Findings - Overall, the casino hotel chefs were satisfied with their jobs (M = 3.9). Among intrinsic factors, the chefs were most satisfied with the "work itself" and least satisfied with "growth and recognition" they received. Among extrinsic factors, they were most satisfied with "supervision" and least satisfied with "company policy" pertaining to sick leave and paid vacation. Highest job satisfaction levels were found among chefs who worked in the fine dining kitchens and supervised between 21 and 30 employees. Practical implications - Results reinforce the value of recognition at work and creation of specialized incentive programs. In order to be most effective, these programs should be tailored to chefs working in different kitchen types and with various levels of management and supervisory responsibilities. Originality/value - Job satisfaction of casino hotel chefs has been minimally studied, yet they have significant roles in successful hotel operations. This article provides an analysis of the impacts of the events of September 11, 2001, on certain gaming business volume on the Las Vegas Strip. Almost immediately after these events, management teams commenced with layoffs and project postponements, in anticipation of a long and painful recovery period. The authors' intervention analysis, however, reveals an abrupt decline lasting five months, indicating a relatively rapid recovery. Interestingly, this type of recovery appears to be similar to that which has been observed in other literature examining previous terrorist attacks. In the concluding discussion, the authors highlight the lessons of both history and empirical inquiry in hopes of helping managers understand the dynamics of terrorism impacts on the hospitality industry in general and on the gaming industry in particular. The meeting planner of a particular association is often instrumental in influencing what city will best accommodate the needs of the organization. This study examined how Las Vegas as a convention city meets preferences of association meeting planners by applying Importance-Performance analysis (IPA). Qualitative (open-ended) evaluations were also sought to complement the analysis. The findings showed that Las Vegas effectively met the preferences of association meeting planners in highly important areas such as capacity and quality of facilities, accessibility, and room rate affordability. However, Las Vegas was perceived a relatively low performer in some other highly important areas, a combination of logistics and city image, such as union labor requirements, ease of local transportation, number of hotels within walking distance to the convention center, city reputation, safety and security of destination, and affordable exhibit space. Most of the unfavorable qualitative evaluations were related to the environment.
