Dynamic headspace-thermal desorption/gas chromatography-mass spectrometry was employed to characterize the volatile profile of extra virgin olive oils before and after the process of sedimentation plus racking. Several oils produced in the provinces of Ourense (San Cibrao das Viñas) and Lugo (Quiroga) (northwestern Spain) and in that of Córdoba (southwestern Spain) were selected for such a purpose. There are no data on the effect of racking on the headspace composition of EVOOs. The volatile components were identified, and the differences found were highlighted in terms of the process but also in terms of different varieties and origins. The results suggest that besides the genetic factor, environmental conditions and process treatments influence the volatile formation. After racking, there is an increase of fruity vs. green notes (C6 alcohols vs. C6 aldehydes) and an apple-like character vs. a banana-like nuance (C6 linoleic acid route vs. C6 linolenic acid route) but also a more bitter character (C5 vs. C6 volatiles), with whiskey, spicy and malty nuances (by the slight increase of minor alcohols and aldehydes). Abstract: Galicia (the north-western corner of Spain) is a Spanish region with several old-traditional winegrowing areas. Vitis vinifera L. cv. Mencía is one of the most often used to produce quality red wines but the tendency of the world wine-making market is to reward the production of wines that have particular and differentiated characteristics. In Galicia, there are other red cultivars such as Gran Negro which were not exploited for their potential to produce quality red wines. Dynamics of anthocyanin and flavonol accumulation in Gran Negro berries were studied separately in two different positions within the cluster (tips and shoulders) during 30days before harvest to assess the existence of different polyphenol quality in both positions and as a consequence, red wines with different qualities. Dynamics of anthocyanins over ripening confirmed that anthocyanins presented upward trends (from 1510 to 1727mg/kg in tips; and from 1532 to 1728mg/kg in shoulders) but dynamics of flavonols confirmed that maximum values were reached and stabilised thirty days before harvest (from 45 to 39mg/kg in tips; and from 49 to 45mg/kg in shoulders). No differences were observed in anthocyanin and flavonol contents collected from tips and shoulders which indicates that is not necessary to harvest them separately. Hydrothermic features in Galicia (northwest Spain) have been used since ancient times for therapeutic purposes. A characterization of these thermal waters was carried out in order to understand their behaviour based on inorganic pattern and water-rock interaction mechanisms. In this way 15 thermal water samples were collected in the same hydrographical system. The selected thermal water samples were classified using principal component analysis (PCA) and partial least squares (PLS) regression analysis in two groups according to their chemical composition: group I with the young water samples and group II with the samples with longest water-rock contact time. This classification agreed with the results obtained by the use of geothermometers and hydrogeochemical modelling, where the samples were classified into two categories according their residence time in the reservoir and their water-rock interaction. This article discusses a study which elucidated the dynamics of atrazine sorption and desorption in acid-surface soils obtained from the plough layer of corn fields in Galicia, Spain. Organic carbon, nitrogen and sulphur contents were examined. Atrazine adsorption by the soils was found to decrease with increasing hydrogen-ion concentration. Copper slightly increased atrazine adsorption. Meanwhile, zinc slightly reduced atrazine adsorption. The adsorption of copper and zinc was severely reduced by the presence of atrazine in the soils.

Systematic studies of physico-chemical and stability-related properties, and chemical composition, of extra virgin olive oils (EVOOs) obtained from drupes cropped in specific regions are of special agricultural interest. This is particularly so with new production areas, where careful selection of the most suitable olive varieties for EVOO production is required. This paper reports the first comprehensive chemical characterisation of EVOOs obtained from three different olive varieties (viz., Picual, Morisca and Manzanilla de Sevilla) grown in a new cultivation area in Galicia (NW Spain). The Morisca variety was that providing the highest industrial oil yield (21%). However, the three types of EVOO exhibited no statistically significant differences in standard quality-related indices other than acidity. Morisca EVOO was that with the lowest content in oleic acid (mean = 68%) and highest content in linoleic acid (mean = 13%). Also, Morisca EVOO exhibited the highest sterol levels (mean = 1616 mg/kg) and Picual EVOO the lowest (mean = 1160 mg/kg). Picual EVOO contained greater amounts of the phenolic compounds luteolin and pinoresinol than both Morisca and Manzanilla de Sevilla EVOOs. Finally, Manzanilla de Sevilla EVOO exhibited differential attributes, with banana and olive fruit aromatic series prevailing predominantly over bitter-like, pungent-like and leaf series. Abstract: The aim of the present study was to evaluate the profile of the phenolic constituents of Morus nigra fruits and their antioxidant activity (DPPH) and to compare their contents before and after fermentation. Antioxidant phenolics of black mulberry (M. nigra L.) samples grown in Galicia (NW Spain) were extracted with methanol/formic acid/water (MFW) and determined by high performance liquid chromatography (HPLC). Two major anthocyanins (cyanidin 3-glucoside and cyanidin 3-rutinoside) and two flavonols (quercetin 3-glucoside and rutin) were isolated, together with caffeic acid and other hydroxycinnamic and ellagic acid derivatives. Their chemical structures were identified by spectral analyses with diode array detection (DAD), but also with alkaline saponification and acid hydrolysis of the mulberry phenolics. Good correlations (r 2 = 0.6229) were observed among total flavonols contents and the IC50 radical scavenging capacities of mulberry fruits. Anthocyanins are the major flavonoids present in mulberry. It would be expected that anthocyanins contribute significantly to their antioxidant activity; nevertheless, alcohol generated during fermentation may also contribute to antioxidant activity. Abstract: Ría de Vigo is a river valley flooded by the sea, with a bay (San Simón Bay) at its innermost part. The accumulation of Holocene sediment in San Simón Bay has been studied by the integration of 1) large scale high resolution seismic data, and 2) detailed geochemical analysis of a gravity core. In San Simón Bay the majority of the seismic records are obscured by acoustic turbidity which represents gassy sediments, but on records from Rande Strait it is possible to distinguish two Quaternary seismic sequences; an Upper Pleistocene sequence (SQ1) and a Holocene sequence (SQ2). Only SQ2 is recognized in San Simón Bay where it is comprised of two seismic units; the upper unit represents the HST sediment, i.e. the period of highest sea level. A gravity core taken within the gassy zone at 10 m water depth provided 3.55 m of fine-grained sediments (muds) from the youngest seismic unit (4 m thick). Geochemical analysis show high values (4 to 10%) of TOC. Sediment and porewater analyses indicate a distinct sulphate–methane transition zone (SMTZ) between 60 and 80 cm where sulphate is depleted (to <1.7 mM) and methane increases (to >0.4 mM). The top of the acoustic turbidity (the gas front) at 80 cm corresponds to the lower limit of the SMTZ. The methane cannot have been derived from the underlying metamorphic and granitic rocks, but was probably derived by microbial degradation of the organic matter in the Holocene sediments. We estimate that the sediments of the Bay contain approximately 1.8 × 106 m3 of organic carbon and 275 ton of methane. [ABSTRACT FROM AUTHOR]

Summary: Thermal waters are certainly a substantial asset of the Galicia region of Spain. They can be regarded as worth developing because of their human health implications and, if thermal tourism is promoted, their importance to the local economy. In this paper the chemistry of major and trace inorganic elements in about 45 thermal springs and wells discharging in the same hydrographical system are presented and discussed. For handling the results of all measurements, graphical representations of B/Li vs. /Cl− ratios, Hill–Piper diagram, discriminant analysis (DA) and principal component analysis (PCA) were employed. All this with the intention to classify, based on their inorganic pattern, both thermal springs and wells waters, but also waters circulating through adamellite and granodiorite rocks. The results of the hydrogeochemistry analysis showed three main water families: sulphated, chlorinated and bicarbonated waters. The results show also the presence of saline materials with chloride influence in the deeper aquifer, allowing its classification in deeper and younger/shallow waters. [Copyright &y& Elsevier]

Thermal waters can be regarded as worth developing because of their human health implications and, if thermal tourism is promoted, their importance to the local economy. Galicia, in the North-West of Spain, has numerous sources of thermal waters spread all over the region. They have been used for therapeutic purposes since Roman times. Ourense, with 82 sources (9 spas), is becoming one of the richest Spanish provinces in hydromineral and thermal resources. In this work, the most representative springs of thermal waters from the city of Ourense – Outariz, Chavasqueira, Tinteiro and As Burgas – were analysed in order to identify the presence of several chemical classes of soluble organic compounds responsible for their biological activity. The waters studied are hyperthermal, with temperatures ranged between 45 and 66°C. Different extraction techniques, liquid–liquid extraction (LLE), solid phase extraction (SPE) and solid phase micro-extraction (SPME), combined with gas chromatography–electron impact ion trap mass spectrometry (GC–(EI)ITMS) were used to cover a wide variety of compounds. The most characteristic chemical families of extractable organic compounds detected are thoroughly discussed. Most of the substances belonging to phenol, aldehyde, esther, ketone, and elemental sulphur groups occur in all samples. Large amounts of elemental sulphur were found in Tinteiro spring, providing to this water of numerous beneficial clinical effects. [Copyright &y& Elsevier]

The acid soils of Ourense province riverland (Galicia, NW Spain) produce about 50,000 tons of grapes for winemaking. As part of ongoing investigations into fungicide transport in Ourense vineyard soils, the occurrence of several fungicides in such soils was investigated. Soil samples were collected from the inter-row topsoil of a vineyard adjacent to the River Alongos, approximately 15km SW of the main city of Ourense. The vines were grown in sandy loam with moderate organic carbon (OC) content (1–2%). Fungicide residues were measured in vineyard soils and river sediments by solid–liquid extraction followed by gas chromatography with mass spectrometric detection (GC–MSD). Procymidone and cyprodinil occurred at higher levels in river sediments than in the case of fludioxonil, metalaxyl and penconazole. The highest concentrations of procymidone in sediments were still low (29–57μg/kg or ppb) suggesting that no accumulation of these compounds occur. All of them were found at higher concentrations in soil; maxima concentrations were about 1000μg/kg for procymidone and metalaxyl, and about 400μg/kg for cyprodinil, fludioxonil and penconazole. Folpet was never detected (detection limit lower than 2μg/kg) in soil and sediments, suggesting that this fungicide was unstable in such samples. The frequency of fungicide detections in soils can be related to their applications in vineyards and the effect of washing off through vineyard canopy by rainfalls. The results found suggest that the vineyard soils of this region are unlikely to be prone to transport of fungicides, and therefore water supplies in this area are unlikely to be at any significant risk of contamination through viticultural use of these compounds. Abstract: This study was aimed to evaluate the diet of the population of rural Galicia (NW Spain) to detect groups at risk and thereby aid the development of nutritional and dietary education policy. Design was cross-sectional assessment of diet from representative sample of rural Galician population, using triple 24-h dietary recall questionnaires (in three visits on non-consecutive days). Three inland municipalities (Arzúa, Melide and O Pino) and three coastal municipalities (Carnota, Muxía and Camariñas) were studied, all of which belong to the province of A Coruña. Personel were 981 healthy subjects of either sex aged 20–64years (482 belonging to three inland municipalities and 499 from three coastal municipalities) evaluated over one year, from spring 1994 and winter 1995. Food patterns found were compared with the Spanish Society of Community Nutrition (SSCN) Food Guide Pyramid recommendations. Also studied were the influence of the dietary patterns for each sex, age group, season and geographical area. In all the population groups evaluated, the main findings were a low intake of carbohydrate foods, vegetables, fruits and dairy products, and a high intake of foods rich in animal protein and saturated fatty acids. According to other authors, the major health problems related to the dietary pattern found in the population studied are cardiovascular diseases. Government institutions combined with sanitation should promote healthier dietary habits by designing and leading dietary educational programmes, including simple messages to initiate a change in food habits. A large portion of organic pollutants (OPs) represent a potential hazard to humans and living beings due to their toxic properties. For several years, birds have been used as biomonitor species of environmental pollution. Polychlorinated biphenyls (PCBs), organochlorine pesticides (OCPs), polybrominated biphenyl ethers (PBDEs), organophosphate pesticides (OPPs), polycyclic aromatic hydrocarbons (PAHs) and pyrethroids (PYRs) were assessed in body feather samples of 71 feral pigeons (Columba livia domestica) collected from Asturias and Galicia (NW Spain). The percentage of detection for all chemical groups were above 90% in studied birds. The general pattern was dominated by PAHs (mean value ± standard deviation (SD) 32 ± 15 ng/g) followed by OCPs (3.8 ± 1.1 ng/g), PYRs (3.4 ± 3.8 ng/g), PCBs (1.6 ± 1.0 ng/g), OPPs (1.3 ± 0.70 ng/g) and PBDEs (0.80 ± 0.30 ng/g). Human exposure to environmental organic pollutants (OPs) begins in the uterine life period by trans-placental transfer. Epidemiological studies have consistently demonstrated the vulnerability of human fetuses and infants to the effects of OPs because of their rapid growth and organ development, cell differentiation, and immaturity of metabolism. The aim of the present study was to evaluate the prenatal exposure to OPs characterized by different physicochemical properties using non-invasive biological samples (meconium and placenta). A total of 88 placenta and 53 meconium samples were collected in Ourense, a city located in northwestern Spain, at the delivery and after birth from mothers and their infants from the University Hospital of Ourense, respectively. Selective pressurized liquid extraction (SPLE) methodologies were used to determine the targeted OPs in the selected biological samples. Cleanup of extracts was performed by solid-phase extraction (SPE) using EZ-POP cartridges and detection by gas chromatography (GC) coupled to tandem mass spectrometry (QqQ-MS/MS). The targeted OPs were detected with the following mean level total concentration order polycyclic aromatic hydrocarbons (PAHs) > organophosphorus pesticides (OPPs) > non-dioxin like polychlorinated biphenyls (NDLPCBs) > pyrethroids (PYRs) > polybrominated diphenyl ethers (PBDEs) > dioxin like polychlorinated biphenyls (DLPCBs) > organochlorine pesticides (OCPs) for placenta and ΣNDLPCBs > ΣPAHs > ΣOCPs > ΣPYRs > ΣOPPs > ΣDLPCBs > ΣPBDEs for meconium, respectively. Significant correlations (p < .050) between the socio-demographic characteristics of the selected population (mother's parity, age, weight increase during pregnancy, place of living and smoking habits) and log transformed concentration of some of the targeted OPs (OCPs, PBDEs, PYRs, OPPs and PAHs) were detected. The results obtained shown the complementary information given by both biological samples selected. 'Brava' and 'Mansa de Figueiredo' extra-virgin olive oils (EVOOs) are two varieties identified from north-western Spain. A systematic phenolic characterization of the studied oils was undertaken by LC-ESI-IT-MS. In addition, the role of dietary polyphenols from these EVOOs has been evaluated against the inhibition of key enzymes (α-glucosidase and α-amylase) in the management of diabetes mellitus (DM). Oleuropein and ligstroside derivatives comprised 83% and 67% of the total phenolic compounds in 'Brava' and 'Mansa de Figueiredo' EVOOs, respectively. The main secoiridoids from oleuropein were DOA (3,4-DHPEA-EDA, 59 and 22 mg kg -1 , respectively) and the main isomer of OlAgl (3,4-DHPEA-EA, 74 and 23 mg kg -1 ). The main secoiridoids from ligstroside were D-LigAgl (p-HPEA-EDA or oleocanthal, 23 and 167 mg kg -1 ) and the main isomer of LigAgl (p-HPEA-EA, 214 and 114 mg kg -1 ). For α-glucosidase, both EVOO extracts displayed stronger inhibitory activity (IC 50 values of 60 ± 8 and 118 ± 9 μg mL -1 , respectively) than the commercial inhibitor acarbose (IC 50  = 356 ± 21 μg mL -1 ). Nevertheless, for α-amylase, only 'Brava' extracts showed anti-α-amylase capacity. A daily VOO intake lower than the requirements of EFSA seem to be enough to reach both 50% for α-glucosidase and 25% for α-amylase inhibition. These findings support the potential health benefits derived from Galician EVOOs that might be probably linked to the outstanding high concentration levels of phenolic acids and flavonoids., (Copyright © 2018. The availability of biomarkers that allow the estimation of the intake of specific foods and dietary components, as an alternative or addition to self-reported dietary questionnaires, could greatly enhance the effectiveness of nutritional research. The aim of the present study was to assess tartaric acid, one of the major components of red and white wines, as a potential biomarker of wine consumption. A total of twenty-one healthy men participated in a randomised cross-over feeding trial. They consumed a single dose of 100, 200 or 300 ml wine at dinner. Before each intervention, the participants followed a 7 d washout period during which they avoided consuming wine or grape-based products. Morning urine was collected and analysed by liquid chromatography coupled to electrospray ionisation tandem MS. A strong significant correlation was found between wine intake and urinary tartaric acid (r(s) = 0·9220; P <0·001). Using a cut-off value of 8·84 μg/mg creatinine, tartaric acid allowed wine consumers to be differentiated from non-wine consumers. The results suggest that urinary tartaric acid may be a sensitive and specific dietary biomarker of wine consumption.

In this work, a new method for the determination of ethylenethiourea (ETU) and propylenethiourea (PTU) in fruits and vegetables is presented. Different extraction and purification techniques, including matrix solid phase dispersion (MSPD) and solid-liquid extraction (SLE), followed by a clean-up step by solid phase extraction (SPE), were compared. The determination of ETU and PTU was performed by high performance liquid chromatography with diode array detection (HPLC/DAD) or by gas chromatography with mass spectrometry detection (GC/MS). The effect of several parameters on the extraction, separation and detection was studied. The proposed method based on solid-liquid extraction with acetonitrile, clean-up with Envicarb II/PSA cartridges and subsequent analysis by HPLC/DAD was characterised and applied to the analysis of fruits and vegetables from different countries. Analytes recoveries were between 71% and 94% with relative standard deviations (RSDs) ranging from 8% to 9.5%. Quantification limits obtained for ETU and PTU with the HPLC/DAD method were 7 and 16 μg kg⁻¹ in strawberries (fresh weight), respectively. The effect of winemaking procedures on the sensory modification of sweet wines was investigated. Garnacha Tintorera-based sweet wines were obtained by two different processes: by using raisins for vinification to obtain a naturally sweet wine and by using freshly harvested grapes with the stoppage of the fermentation by the addition of alcohol. Eight international sweet wines were also subjected to sensory analysis for comparative description purposes. Wines were described with a sensory profile by 12 trained panellists on 70 sensory attributes by employing the frequency of citation method. Analysis of variance of the descriptive data confirmed the existence of subtle sensory differences among Garnacha Tintorera-based sweet wines depending on the procedure used for their production. Cluster analysis emphasised discriminated attributes between the Garnacha Tintorera-based and the commercial groups of sweet wines for both those obtained by raisining and by fortification. Several kinds of discriminant functions were used to separate groups of sweet wines--obtained by botrytisation, raisining and fortification--to show the key descriptors that contribute to their separation and define the sensory perception of each type of wine., (Copyright © 2013 Elsevier Ltd. Sweet wines are traditionally elaborated in Galicia (the N.W. corner of Spain). The denomination of origin (DO) Valdeorras, one of the five DOs in Galicia, wants to promote the production and marketing of new sweets wines. The first one is made with dried red grapes Vitis vinifera L. Garnacha Tintorera (GNSW); this cultivar is a teinturier cultivar which has excellent potential to produce wines from raisined grapes. The second one, a fortified sweet wine aged in oak barrels (GFSW). Additionally a dry young wine (GBW) was produced from the same variety. Their aroma profiles and chromatic characteristics (determined by simple spectrophotometric methods) have been previously established. Now, proanthocyanidins, flava-3-ol monomers, anthocyanins, phenolic acids, flavonols and resveratrol were determined by HPLC, for the same three wines. The highest concentration of total proanthocyanidins (PAs) was evaluated in the GBW (525mgL(-1)), which was about 2-fold the concentration in the GNSW (236mgL(-1)) and about more 10-fold the concentration in the GFSW (44mgL(-1)). No apparent difference in the aDP (mean degree of polymerisation) was observed for the GBW (1.9) and the GNSW (2.1), whereas a slightly lower value was obtained for the GFSW (1.5). Total anthocyanin concentration was described as follow as GBW: 390mgL(-1)≫GNSW: 57mgL(-1)>GFSW: 25mgL(-1), which indicates that sweet wines were polymerised in great extent. Only vitisin A and B were found the main concentration in GFSW when compared to GBW by the ageing process. Fish oil has been identified as one of the most important contributors to the levels of polychlorinated biphenyls (PCBs) in food and feed products. In this study, PCB adsorption from fish oil onto activated carbon (AC), other sustainable adsorbents (mussel shell and wood waste ashes) and organic solvent such as ethanol were compared and optimized. Regarding to adsorbents, PCBs were extracted from fish oil by a 2.0% adsorbent material dose, during 6.0 h at 25 °C. Solvent extraction was carried out using 2 × 5.0 mL ethanol by manually stirring for 3.0 min, and then by Ultrasound-Assisted Solvent Extraction (UASE) for 5.0 min. The results showed that removal rates obtained by using adsorbent materials ranged from 0.0 to 10% for marker PCBs, from 0.0 to 37% for mono-ortho-PCBs, from 0.0 to 74% for PCB11 and from 0.0 to 95% for non-ortho-PCBs. Regarding to solvent extraction, ethanol was used by manually stirring and then by Ultrasound-Assisted Solvent Extraction (UASE). The samples were then centrifuged (2000 rpm/10 min) and the alcoholic phase was removed. With this method, removal efficiencies were much better (85-116%); nevertheless, high eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) removal rates (70-78 and 71-79%, respectively) were detected. We can conclude that adsorption with adsorbents depends on the geometry of PCB congeners, as well as both type of adsorption material and their origin, and that several sorption cycles are needed. Valdeorras (the N.W. corner of Spain) wants to promote the production and marketing of new sweet wines. The present work represents the first study on sweet wines manufactured with red grapes Vitis vinifera L. Garnacha Tintorera, a teinturier cultivar. Two different red sweet wines were elaborated: the first one was made with dried grapes; Vitis vinifera L. Garnacha Tintorera has excellent potential to produce wines from raisined grapes; the second one, a fortified sweet wine aged in oak barrels. Different red Garnacha Tintorera-based wines (a dry base wine, GBW; a naturally sweet wine, GNSW; and a fortified sweet wine, GFSW) were characterized. Chromatic characteristics and phenolic compounds were established by spectrophotometric methods in order to assess the technology of Garnacha Tintorera-based sweet wines. High molecular weight brown polymers, produced during the grape drying process and isolated from sweet wines by the dialysis process, were responsible for the brown colour of sweet wines. As a consequence, yellowness of sweet wines was also higher which was confirmed by colorimetric indexes. With respect to phenolic content, GFSW presented the lowest content because the maceration-alcoholic fermentation was stopped through the addition of alcohol before the diffusion of red pigments from skins to must was complete. GNSW presented the highest phenolic content due to the concentration effect resulting from evaporation of water from the grapes. Anthocyanins of sweet wines were polymerised in great extent. Galicia (N.W. Spain) is a Spanish region with several old-traditional winegrowing areas. There are autochthonous grapevine varieties, such as Vitis vinifera L. cv. Mouratón, considered a biodiversity resource in viticulture and an opportunity for Galician sustainable wine production. Therefore, it is necessary to assess the potential of traditional cultivars to produce quality red wines. In this work, anthocyanin and flavonol evolution was followed in red berries from V. vinifera L. cv. Mouratón. The novelty of this study is that grapes were separately collected from two different positions (tips and shoulders) within the cluster, over ripening to examine the effects of berry position within the fruit cluster on the flavonoid compounds. Derivatives of five anthocyanins (malvidin, peonidin, petunidin, delphinidin and cyanidin) and derivatives of six flavonols (quercetin, myricetin, kaempherol, laricitrin isorhamnetin and syringetin) were detected in both positions within the cluster. Dynamic of anthocyanins (from 819 mg/kg to 1206 mg/kg in tips; and from 786 mg/kg to 1077 mg/kg in shoulders) and dynamic of flavonols (from 25mg/kg to 41 mg/kg in tips; and from 18 mg/kg to 21 mg/kg in shoulders) confirmed their upward trends over ripening. Grapes located inside the shoulder bunch receive less sunlight radiation than those located inside the tip bunch and this fact could explain the different accumulation observed for both positions. Contaminated stream sediments are a serious problem because contaminant residues will be persistent for a long time. Organochlorine pesticides (OCPs) were screened in stream sediments collected along stream flows close to an industrial area in northwestern Spain. Analyses were performed by extraction with organic solvents followed by gas chromatography-mass spectrometry detection. OCPs such as hexachlorobenzene, hexachlorocyclohexane (alpha and beta isomers) and DDT were detected at levels ranging between 29 and 392 microg/kg indicating there is a moderate to severe pollution in the area even though they were banned a few decades ago.
