181. Effect of Garlic and Turmeric Powders on In Vitro Digestibility of the Cooked Rice

Abstract

Consumers nowadays are interested in foods with low glycemic index (GI) and high indigestible carbohydrate content. In Asia, white rice is the staple food and is generally considered as a readily digestible and high GI food. Occasionally, white rice is cooked by mixing with other ingredients such as herbs and spices. This study is carried out to determine the total phenolic content and the effect of in vitro digestibility on cooked white rice with added garlic and turmeric powders. Rice cooked with addition of turmeric powder (3 % w/w) showed the highest total phenolic content (92.02 mg GAE/100 g) among all the cooked rice samples. The effect of incorporating garlic powder (3 % w/w) and turmeric powder (3 % w/w) into the rice preparation was determined using an in vitro digestion protocol. Results show that by incorporating either garlic or turmeric powder into the rice, starch digestibility was significantly reduced. Rice with added turmeric powder showed a greater reduction in digestibility with significantly lower fraction of rapidly digestible starch (41.5 %; white rice 57.6 %) beside higher fraction of slowly digestible starch (36.1 %; white rice 28.4 %) and resistant starch fraction (22.6 %; white rice 14%). Overall, both spices were able to inhibit starch digestion which can be considered as a potential ingredient in lowering starch digestibility in the cooked rice.

Exclusion: 1) pregnant or lactating patients, 2) patients with severe immune deficiency, 3) patients that expired within 14 days after the diagnosis of sepsis.Results: A total of 169 participants were included. After propensity score matching, PICS patients were found to have higher intensive care unit (ICU) mortality (32.4% vs 12.4%, p=0.046), 90-day mortality (32.4% vs 9.1%, p=0.006), and ICU-acquired infection rate (44.1% vs 12.7%, p< 0.001), and longer ICU stays (29 vs 11 days, p< 0.001) comparing to non-PICS patients. In multivariate logistic regression, it demonstrated that the SOFA score, Charlson co-morbidity index (CCI), albumin level on the ICU day 1, and lymphocyte count on the ICU day 3 were statistically significant. 193. Crystalline microporous small molecule semiconductors based on porphyrin for high-performance chemiresistive gas sensing.

Abstract

Organic small molecule semiconductor (OSMS) microporous crystals with strong π–π interactions are rare but have great potential in applications requiring both excellent mass and charge transport. To obtain such a microporous structure, effective molecule design and control over the packing of the OSMS are necessary but still challenging. Herein, we report three meso-tetrakis (4-carboxyphenyl) porphyrin (TCPP) based porous OSMS materials, 1, 2 and 3, whose porosity and π–π interactions among TCPPs were modulated by varying the H-bonding linkage nodes. The relationship among the hydrogen bonding structure, packing mode and sensing performances has been carefully studied. With the largest overlap between porphyrin rings and strongest face-to-face π–π interactions in the prepared compound, 1 showed the best performances. Moreover, it also represents the first RT NO2 chemiresistive sensing material that simultaneously achieved an experimental limit of detection as low as 20 ppb and a time of recovery as short as 0.6 min. This work revealed the key role of H-bonding linkage node in constructing a microporous OSMS and provides a new type of high-performance rt chemiresistive gas sensing material.
