Background: Rehydration of grains, such as corn and sorghum, is used to increase nutrient absorption. However, the effect of this practice on meat quality is poorly understood. Objective: To evaluate the effects of type of grain and processing on the meat quality of Nellore steers in a feedlot. Methods: Twenty-four non-castrated Nellore steers (270 ± 53 kg initial body weight) were distributed in a completely randomized 2×2 factorial design, with six replicates. The first factor was cereal type (corn or sorghum), and the second was the grain processing (dry or rehydrated and ensiled). The diets were composed of 28.44% corn silage and 71.56% concentrate. Sixty days before the beginning of the experiment, corn and sorghum grains were rehydrated and ensiled. The animals were slaughtered after 140 days of confinement. Meat quality analyses were determined in samples of fresh and aged meat (7 days) from the Longissimus lumborum muscle. Results: no difference between treatments was observed for carcass pH and L* (lightness), a* (redness), and b* (yellowness) values, shear force, thawing and cooking losses, and chemical composition of meat (p>0.05). The b* (yellowness) value of subcutaneous fat was higher in steers fed corn, regardless of grain processing (p=0.03). Sarcomere length was higher in aged meat of steers fed sorghum, regardless of processing method (p=0.01). Conclusions: the grain processing method does not affect beef quality; however, grain type can affect subcutaneous fat color and sarcomere length of aged beef. [ABSTRACT FROM AUTHOR]

Background: Carcass and sheep meat quality are influenced by several factors, such as race, age, slaughter weight, type of diet, and dietary supplementation. Objective: To evaluate the effect of castration and vitamin E supplementation on performance, carcass characteristics and meat of lambs slaughtered at 45 kg. Methods: Thirty-two male lambs (16 castrated and 16 not castrated) were fed diets with or without the inclusion of vitamin E. The animals had an average age of 180 ± 20 days and a mean weight of 25.1 ± 4.6 kg. Performance was evaluated for 56 days, and the animals were slaughtered when reaching a weight of 45 kg. The experimental design was randomized blocks based on initial weights, and variables were assessed by a 2x2 factorial design (castrated and intact, supplemented or not with vitamin E, with a probability of 5%). Results: Higher proportion (p<0.05) of visceral fat was found in castrated animals (kidney: 2.45%, inguinal: 0.57% and omental: 4.96%) than in intact animals (kidney: 1.25%, inguinal 0.27%. and omental 3.12%). The aged meat samples showed no color differences for any of the treatments, but there were differences in shear force for steaks aged for 7 days, where the castrated animals showed an average of 2.64 kgf and intact animals showed an average 3.29 kgf. The animals supplemented with vitamin E had lower shear forces in non-aged samples. Conclusion: Castration increased deposition of visceral and fat coverage but did not influence the cut yields and total carcass yield. - Abstract
OBJECTIVE: To validate a new strategy to identify food groups that are associated with height. MATERIALS AND METHODS: We conducted a cross-sectional, observational, analytical and exploratory study. Length for Age and Sex [L/A/S] and 24-hour feeding data were collected from 185 healthy children 4.0 to 12.7 months of age. The proportion that each of 7 food groups contributed to total consumption were used as independent variables versus L/A/S as the dependent variable in multiple regression models. Three age groups (1 = 4-6/2 = 7-9/3 = 10-12) were evaluated. RESULTS: One age group (7-9 months) showed association with Meat, indicating that L/A/S increased with increased proportion of Meat. The age group of 10-12 months showed a negative coefficient with Breastfeeding indicating that L/A/S decreased with increased proportions of Breastfeeding. CONCLUSIONS: Our method was able to identify feeding patterns associated to growth in small groups of 47 and 77 children. We believe our approach should be expanded to other ages to gain better understanding on the relationships between feeding patterns and growth in the first years of life. [ABSTRACT FROM AUTHOR]

157. Effect of muscle type and animal category on fatty acid composition of bresaola made from meat of Cinisara cattle: preliminary investigation.

The bresaola could represent an alternative commercial opportunity for autochthonous dairy cattle farms. Therefore, a study was carried out to investigate the fatty acid (FA) composition of bresaola made using Semimembranosus (SMm), Semitendinosus (STm), and Biceps brachii (BBm) muscles from grazing young bulls (GB), housed young bulls (HB) or grazing adult cows (AC) of Cinisara breed. Animal category, fat content, feeding system, and type of muscle influenced the FA composition of bresaola. Fatter products, made from AC and HB meat, or with STm and BBm muscles showed lower polyunsaturated/saturated FA ratio. The bresaola from young bulls fed pasture-based diet showed an increased polyunsaturated FA content, a reduction of n-6/n-3 ratio, and improved health indexes. However, the rumenic acid, isomer of conjugated linoleic acid, did not show differences related to the use of pasture. Bresaola made from lean meat cuts of grazing animals seems to show the best health-related FA profile. [ABSTRACT FROM AUTHOR]

Cavia porcellus is used as a kind of meat supply, it is part of the diet and source of sustenance in some regions of the world. In Mexico guinea pig production systems represent an opportunity to produce meat for self-consumption and even for local sale. The objective of this study was to evaluate sensorially the gastronomic proposal based on C. porcellus meat; which consisted of four stews (in mushroom cream, roasted, sweet and sour marinade and in yellow mole) and were tasted by 40 judges not trained by an acceptability test with a structured scale of hedonic satisfaction, the attributes considered were the appearance, smell, taste, tenderness and juiciness. Data were analysed using an Ascendant Hierarchical Classification and Principal Component Analysis to construct the quadratic mapping model of external preferences. The results indicated that for type 2 consumers there is a significant effect (R2=0.976, p<0.05), determining their general acceptance in common by guinea pig cream mushrooms. It was concluded that the gastronomic proposal of the four guinea pig stews was accepted, but the most widely accepted was the cuy in cream of mushroom soup. [ABSTRACT FROM AUTHOR]

167. Conventional feed-grade or slow-release coated urea as sources of dietary nitrogen for fattening lambs

Producción Científica, Simple Summary: Reducing the environmental impact and the use of plant foods in animal feeding are current challenges of ruminant production systems. The use of non-protein nitrogen, especially urea, allows reducing the use of protein supplements of vegetable origin, which contributes to reducing both the competition for nutritional resources between humans and other animal species and the water and carbon footprints. This article provides new knowledge, comparing feed-grade conventional urea and slow-release urea under the conditions of intensive fattening of lambs, characterized by use of compound feed with a high content of starch-rich feeds. Our results suggest that replacing conventional feed-grade urea with slow-release urea in the diet of Assaf fattening lambs does not improve the feed efficiency, metabolic profile, or carcass or meat characteristics, and increases the feeding costs., Twenty-two Assaf male lambs (29.2 ± 0.9 kg live weight and 89 ± 0.2 days of age), distributed in two experimental groups, were used to evaluate the use of either feed-grade conventional urea (Control diet; n = 11) or slow-release urea (SRU diet; n = 11) as sources of dietary nitrogen on animal performance, ruminal fermentation, blood acid-base status, plasmatic metabolic profile, and carcass and meat quality. Animals were housed individually and fed ad libitum. At the end of the fattening period (day 70), the animals were slaughtered to compare the fermentation patterns in ruminal digesta and to evaluate the carcass and meat characteristics. No statistically significant differences (p > 0.05) were observed between treatments in the dry matter intake, final live weight, average daily gain, and feed conversion rate. Regarding the ruminal fermentation parameters, the molar proportion of propionic acid was higher (p < 0.05) and that of butyric acid was lower (p < 0.05) with the SRU than with the Control diet. There were no significant differences (p > 0.05) between experimental treatments in the blood acid-base status and biochemical profile, except for the concentration of urea in plasma, which was significantly (p < 0. 05) greater in SRU than in Control lambs. No statistically significant differences were observed between treatments (p > 0.05) in the carcass and meat characteristics. In conclusion, the use of slow-release urea as a replacement for feed-grade conventional urea in the diet of Assaf fattening lambs, under the experimental conditions of this study, did not improve animal performance and increased the feeding costs., Junta de Castilla y León y Fondo Europeo de Desarrollo Regional (FEDER) - (project CSI042 P17)

168. Oxidative effects of raw chickpea in reformulated pork patties: level of chickpea, temperature, and use of selected natural antioxidants

Producción Científica, Raw pulses as extenders in meat preparations result in oxidative processes. The oxidative effects of using a raw chickpea paste (CP; 1/2; chickpea/water) in pork patties were evaluated. In a first experiment, patties were prepared with increasing levels of CP (0 to 25%); in a second experiment, patties with CP (25%) and without CP (controls) were kept at 4 °C or 22 °C for 18 h before patty production; in a third experiment, chitosan, garlic, and cumin (from 0.5 to 2%) were added in patties with CP (25%) and controls, and their antioxidant effects were evaluated. Patties were analysed for pH, colour, and thiobarbituric acid reactive substances (TBARS) on days 1, 3, and 7 of refrigerated aerobic storage. Discoloration on day 1 and TBARS levels on days 1 to 7 of storage increased with the CP used. Higher batter temperature after mixing did not activate oxidative processes in the CP patties. Garlic showed pro-oxidant effects in controls and no effects in the CP patties. Chitosan and cumin did not reduce CP patties oxidation on the first day of storage, but they controlled oxidation during subsequent storage. More research is needed to prevent oxidation caused by using raw chickpeas in meat preparations.

La carne es un alimento muy perecedero debido a que contiene microorganismos alterantes que causan olores y sabores desagradables y bacterias patógenas que provocan daños en la salud del consumidor. Con el fin de investigar la actividad antimicrobiana de extractos de Allium sativum fresco y negro, se realizaron ensayos de inhibición en bacterias patógenas; Escherichia coli, Cronobacter sakazakii, Listeria monocytogenes y Salmonella enteritidis y alterantes; Lactobacillus sakei, Leuconostoc mesenteroides, Carnobacterium divergens, Carnobacterium viridans y Brochothrix thermosphacta mediante el método de difusión en agar por pocillos. También se estudió el volumen mínimo inhibitorio de un extracto acuoso de ajo fresco, finalmente se estudiaron los compuestos organosulfurados con poder antimicrobiano presentes en ese extracto mediante cromatografía de gases. Los resultados indicaron el poder inhibitorio del ajo fresco en todas las bacterias, sin embargo, el extracto de ajo negro no mostró inhibición en ninguna de las cepas ensayadas. Asimismo, al analizar el extracto soluble de ajo fresco se observó una amplia variedad de compuestos azufrados con poder antimicrobiano como 3-vinil-2,1-dietilaciclohexano-5-eno y 2-vinil-4H-1,3diitina, dialil sulfuro, dialil trisulfuro entre otros, mientras que en el extracto soluble de ajo negro no.., Grado en Nutrición Humana y Dietética

170. The jews of Castile and the meat trade at the end of the Middle Ages through the case studies of the towns of Piedrahíta and Murcia

This study examines the active intervention of Jews as tax farmers of the municipal butcher shops of Castilian cities and towns at the end of the Middle Ages. This topic will be explored through the analysis of extant fiscal records of the fifteenth century for the towns of Piedrahíta (Guadadalajara) and Murcia. Tax farmers, whether individuals or through the creation of tax companies –some of which were of mixed membership, Christian and Jewish; as well as Jewish butchers were increasingly interested in the management of the meat trade. Besides the interest this lucrative sector could hold for individuals, it was also profitable for the whole of the Jewish community, En este trabajo se aborda el estudio de la activa intervención de los judíos en el arrendamiento de las carnicerías comunes de las ciudades y villas castellanas a fines de la Edad Media, a través del análisis de la documentación hacendística que se conserva para el siglo XV de las localidades de Piedrahíta (Guadalajara) y Murcia. De forma individual o mediante la constitución de compañías, en algunos casos mixtas de cristianos y judíos, arrendadores y carniceros judíos se interesaron de forma muy especial por la gestión del negocio de la carne lo que, además del interés que a título particular tenía esta lucrativa actividad, podía también ser beneficioso para el conjunto de la comunidad judía.

171. Looks do invisível: Carne, ornamento, barroco e zen nos autorretratos de Kimiko Yoshida

Since 2001, the visual artist Kimiko Yoshida (Japan-France) has been producing self-portraits in which her identity disappears under elaborate costumes, body paint and ornaments. Her costumes reconstitute well-known paintings from the History of Euro- American Art and her skin, entirely covered in ink in a quotation of the traditional Japanese geisha make up, blends in with the background before which she poses. In this article, we will look at the artist’s trajectory, focusing on the way in which she herself transforms her flesh into a plastic, inorganic element, taking possession of the cliché into which the image of the Asian woman has been transformed by the Western gaze. We will also pay attention to the tendency of abstraction of the body and erasure of individuality present in her self-portraits according to principles of both Japanese and European spirituality. These reflections will be based on Ainlin Cheng’s theory of Ornamentalism (2018) as well as on the concept of meat proposed by Deleuze in The logic of sensation (1981)., Desde 2001, a artista visual Kimiko Yoshida (Japão-França) tem produzido autorretratos em que a sua identidade desaparece sob trajes elaborados, pintura corporal e ornamentos. Os seus figurinos reconstituem pinturas conhecidas da história da arte euro-americana e a sua pele, integralmente coberta por tinta, numa remissão à pintura tradicional das gueixas japonesas, confunde-se com o fundo diante do qual ela posa. Neste artigo, olharemos para o percurso da artista, focando a forma como ela mesma transforma a sua carne em elemento plástico, inorgânico, apropriando-se do clichê em que foi transformada a imagem da mulher asiática pelo olhar ocidental. Atentaremos também para a tendência de abstração do corpo e de apagamento da individualidade presentes em seus autorretratos segundo princípios tanto da tradição espiritual do Japão como da Europa. How does the notion of Flesh allow us to understand the intellectual relation between Foucault and Merleau-Ponty? Like Merleau-Ponty, Foucault conceives Flesh in a way that could be explained in terms of “chiasmus”. However, Foucault’s conception of Flesh constitutes a non-ontological chiasmus which illustrates the dynamics through which subjectivity is both constituted and constitutes itself in history. Consequently, Flesh becomes a key notion to understand the evolution of Foucault’s critique of Merleau-Ponty’s account of subjectivity since Phénoménologie et psychologie, ¿De qué manera el problema de la carne permite analizar el vínculo que tiene el pensamiento de Foucault con el de Merleau-Ponty? Al igual que Merleau-Ponty, Foucault piensa la carne en un modo susceptible de ser comprendido en términos de “quiasmo”. Sin embargo, a diferencia de Merleau-Ponty, la carne en las investigaciones de Foucault designa más bien un quiasmo no ontológico de la subjetividad que ilustra las dinámicas por las cuales esta es constituida y, al mismo tiempo, se constituye a sí misma en la historia. De este modo, la carne aparece como un motivo o un tema clave que permite repensar la evolución de la crítica de la subjetividad que Foucault le hace a Merleau-Ponty y a la fenomenología desde muy temprano, al menos desde Phénoménologie et psychologie.

173. Bienestar animal y su relación con la calidad de carne en bovinos faenados en el Centro de beneficio de Paute

- Abstract
The aim of this study is to assess the animal welfare of bovine animals prior to slaughter and the influence on the quality of bovine meat by studying qualitative and quantitative animal welfare parameters. The study will be carried out at the Paute Benefit Center, where 385 cattle will be selected at random from different localities. To evaluate the welfare of the animal, 10 parameters combined between the method of Welfare Quality and that of the American Meat Institute created by Grandin (2001) will be considered. The dimensions to be measured will be: Transport time, flow of animals in the farm, type of drinking water, access to water, falls and slips, use of electric picanas, state of health, number of shots used to numb them, degree of insensitivity and time for bleeding. After observing these parameters, the pH and temperature in the semimembranosus muscle will be measured at 45 min and 24 hours post mortem. An univariate analysis and absolute and relative frequency tables will be used to evaluate the variables corresponding to meat quality parameters: PH, temperature and cortisol will be measured with laboratory tests and blood collection prior to fainamiento and post mortem. Something very common that significantly affects the emotional state of the animal to fish is transport since the stress that causes them to come overcrowded, mistreated or in its defect being of transfer for more than 24 hours also considerably affects the increase of cortisol in the blood. Testing of normality and flexibility will be performed. To establish the relationship between the qualitative variables corresponding to animal welfare with respect to pH, a multiple factorial analysis (ANOVA) and Kruskal Wallis tables will be used. The data collected will be analyzed in the SPSS statistical program version 24.

Antecedentes: la búsqueda de alternativas a los aditivos sintéticos en la elaboración de alimentos procesados es una preocupación de la industria alimentaria. Por lo tanto, cada vez es más común y valiosa la investigación de nuevas fuentes de compuestos con alta actividad biológica. La sustitución de nitritos artificiales por fuentes naturales ha sido un sendero hasta el momento prometedor y una alternativa para la reducción de la cantidad residual en cada uno de los productos cárnicos procesados. Objetivo: evaluar el efecto de nitritos naturales provenientes de la remolacha (Beta vulgaris) como sustituto de conservante usado en la elaboración de un producto cárnico denominado jamón curado cocido. Métodos: mediante la técnica de curado húmedo se realizaron dos muestras comparativas denominadas T1 y T2, en donde el componente principal de la salmuera del T1 fue el jugo de remolacha y para el T2 los nitritos sintéticos, con la misma formulación en ambos tratamientos, con la finalidad de determinar la vida útil y la concentración residual durante 30 días de conservación. Resultados: se determinó la concentración de nitratos/nitritos presentes en el jugo de remolacha, con 1910 mg/kg y 80 mg/ kg, respectivamente. Para el valor de nitritos residuales a los 30 días de control se obtuvo una concentración de 40 mg/kg en el T1, en comparación del T2 con 24,3 mg/kg, ambos por debajo del parámetro máximo permitido de 200 mg/kg. Para el control microbiológico los dos tratamientos estuvieron dentro de los rangos aceptados según normatividad para los microorganismos mesófilos, coliformes totales, coliformes fecales, estafilococo coagulasa positivo, esporas sulfito reductor y Salmonella spp. Conclusiones: a partir de los resultados se pudo observar que el producto cárnico elaborado con el jugo de remolacha como fuente de nitritos, obtuvo concentraciones residuales por debajo de la dosis permitida y el efecto conservador fue positivo, manteniendo las propiedades microbiológicas dentro de los límites. En esta investigación se pudo evidenciar el efecto conservador de una fuente natural nitritos, comparado con una fuente sintética o comercial usada en la industria cárnica. [ABSTRACT FROM AUTHOR]

El objetivo del presente estudio fue evaluar la inuencia del tipo de nacimiento (TN) de los corderos y el número de parto (NP) de las ovejas sobre el crecimiento predestete, rendimiento de la canal (RC), composición corporal de los corderos y el comportamiento productivo de las ovejas. Se estudiaron 25 ovejas Blackbelly x Pelibuey y sus corderos, bajo un diseño factorial, los factores fueron TN (sencillo y múltiple) y NP (primípara y multípara). Los corderos se sacricaron a los 56 d de edad. Las variables evaluadas fueron: peso vivo al nacimiento (PN) y al destete (PD), ganancia diaria de peso (GDP), peso de la canal y RC, peso y rendimiento de los cortes primarios. En las ovejas, se evaluó el peso al parto y al nalizar la lactancia, cambio de peso (CP), peso de la camada al nacimiento (PCN) y al destete (PCD). El TN afectó (p < 0.05) la GDP, PD, peso y RC de los corderos. En las ovejas, el tipo de parto (TP) y NP inuyeron (p < 0.05) sobre el CP. El TP afectó (p < 0.05) el PCN y PCD. El TN afectó el crecimiento predestete, RC y composición corporal de los corderos, siendo los de nacimiento sencillo los que tuvieron mayor GDP, peso y RC. Mientras que las ovejas multíparas y ovejas con parto múltiple experimentaron el mayor CP negativo. En tanto que las ovejas con parto múltiple mostraron la mayor eciencia productiva.

Este estudo de história da cidade de São Paulo aborda as transformações no abastecimento de carne na última década do regime imperial, no bojo dos processos de expansão e modernização urbanas desencadeados pela economia cafeeira. Por meio da pesquisa em atas da Câmara, jornais, abaixo-assinados e relatórios oficiais, reconstituiu-se a mobilização dos comerciantes de carne em defesa de seus interesses, no processo de transferência do matadouro da cidade, no ano de 1886. Desse modo, apreendemos a participação desse segmento social na urbanização da Capital, assim como de que modo estes processos modificaram a sua rotina de trabalho e a organização do abastecimento de carnes na cidade, em um contexto de transformação do espaço urbano e de seus usos.

A qualidade da carne é influenciada por vários aspectos, dentre eles destacam-se abscessos vacinais e hematomas, pois são considerados fatores primordiais para a condenação de carcaças. Todavia, a perda econômica resultante de práticas errôneas de manejo poderá comprometer severamente a lucratividade tanto do frigorífico, como do produtor. Objetivou-se com o presente estudo estimar a frequência de ocorrência de abscessos e hematomas em carcaças de animais abatidos em um matadouro-frigorífico e analisar suas perdas econômicas. A quantidade de animais examinados foi determinada de acordo com o fluxo de abate do matadouro-frigorífico (10 - 20% de animais/dia). Foram coletados dados referentes à região e número de hematomas, localização do abscesso, peso das porções excisadas e a distância dos municípios de origem dos animais. Os dados foram analisados utilizando o método de estatística descritiva. Foi observado que a ocorrência das lesões foi 78% de natureza traumática e 45% de natureza abscedativa. A presença dessas lesões culminou em prejuízos econômicos, especialmente representando a depreciação no lucro do pecuarista de R$ 2,99 / animal. As análises de comparação entre as classes sexuais e as lesões, constataram que as fêmeas apresentaram maior ocorrência e distribuição de hematomas e abscessos em relação aos machos inteiros e castrados. Os hematomas foram mais frequentes na parte traseira dos animais, independente da distância, enquanto os abscessos restringiram-se ao quarto dianteiro. O peso dos tecidos descartados foi maior em fazendas com distâncias inferiores a 200 km do matadouro-frigorífico, contudo esses resultados foram influenciados pelo número de animais avaliados no grupo.

En el Altiplano boliviano la ganadería de llamas es fundamental para la seguridad y soberanía alimentaria de las poblaciones rurales, pues proporciona carne, fibra, pieles y estiércol, asimismo, las poblaciones de llamas fueron denominadas como razas primarias, por no existir razas bien definidas que no han sido caracterizadas. Por tal razón, la presente investigación persigue clasificar poblaciones de llamas de las principales regiones ganaderas del Altiplano, en base a caracteres relacionados a la producción de carne y fibra, establecer subtipos de llamas según características fenotípicas y morfológicas y determinar la variabilidad fenotípica en función a la caracterización de llamas por patrones pigmentarios de color y mancha. Se seleccionaron ocho comunidades y se colectó información en base a la cobertura de fibra corporal, ocho patrones pigmentarios de color, cuatro tipos de mancha y caracteres de calificación cualitativa de peso vivo (PV), ancho de ancas (AA) y perímetro torácico (PT) en 485 llamas adultas. En base a las variables consideradas se ha realizado el análisis estadístico por correspondencias múltiples y análisis jerárquico que clasificaron a la muestra en seis clases. Las calificaciones de “muy bueno” para PV, AA y PT están relacionados positivamente con animales de la clase 3, las calificaciones de “bueno” para las mismas variables se relacionan con la clase 6, la mayoría de estos animales pertenecen a llamas tipo intermedias y en segundo lugar Q'aras. El patrón pigmentario silvestre “guanaco” presenta una relación con el peso vivo calificado como “bueno”. El ACM divide a la muestra poblacional de llamas tipo T'amphullis, en dos clases, en el cual la clase 2 no presenta una cobertura de fibra tan extendida en la cara y patas como la clase 4. Los patrones cara negra patas claras, raya de mula, cara negra patas semiclaras y silvestre no presentan manchas, sin embargo, los tres primeros presentan características de mayor cobertura de fibra corporal, estrechamente relacionados a las clases 2 y 4. Las llamas de Cocapata-Ayopaya y Sud Lipez presentan una coloración homogenea sin manchas en comparación al resto.

The fattening of cattle in feedlots is an option to add value to cattle reared on pastures, where an accelerated fattening of the animals is achieved in a short period of time, improving the characteristics of the carcass and the meat, while allowing the recovery of pastures during the dry season by reducing the stocking rate preserving the grassland ecosystem. However, it is necessary to have clear knowledge of the implications that influence these characteristics such as age, breed, sex, temperament, feeding, use of additives, disease prevention and control, animal welfare, buller steer syndrome and facilities in corrals. Likewise, maintain the system sustainability by reducing methane emissions from animals without affecting the quality of the meat produced. Therefore, the objective of this literature review is to present the implications that influence the productive performance, characteristics of the carcass and the meat of cattle fattened in feedlots., La engorda de ganado bovino en corral es una opción de agregación de valor al ganado proveniente del destete y del repasto, en donde se logra un engorde acelerado de los animales por un periodo corto de tiempo mejorando las características de la canal y de la carne, a la vez que permite la recuperación de las pasturas durante la época de seca al disminuir la carga animal, preservando el ecosistema de los pastizales. No obstante, se requiere tener conocimientos claros de las implicaciones que influyen en estas características como la edad, raza o grupo racial, sexo, temperamento, alimentación, uso de aditivos, prevención y control de enfermedades, bienestar animal, vicio de monta e instalaciones. Asimismo, se busca la sostenibilidad del sistema disminuyendo las emisiones de metano de los animales sin afectar la calidad de la carne producida. Por lo tanto, el objetivo de esta revisión bibliográfica es dar a conocer las implicaciones que influyen en el desempeño productivo, características de la canal y de la carne de gana-do bovino engordado en corral.

A pesquisa foi realizada entre março e maio de 2023, onde considerou-se material literário dos últimos 10 anos, concluindo-se que o emprego do método APPCC (Análise de Perigos e Pontos Críticos de Controle) e a capacitação em boas práticas de higiene são ferramentas essenciais que atuam de forma preventiva e pode ser aplicado a qualquer indústria no ramo alimentar, e servem, portanto, como garantia de qualidade e segurança do produto final.

The effect of sugar cane molasses, as a partial replacement to corn in the diet, on blood parameters and composition of the M. longissimus thoracis (LT) in growing pigs was explored in this study. Twenty female pigs aged 63 days, and weighing 28.98 ± 3.56 kg, were randomly assigned to either the control or sugar cane molasses treatments. Molasses was included at the 3% level to partially replace corn in their diet. Blood samples were collected at the beginning and end of the experiments. The animals were slaughtered at 110 days of age after 47 days in the experiment, weighing 67.9 ± 5.58 kg, and an LT muscle sample was extracted and evaluated. Each animal was considered an experimental unit. The treatment had no effect on the length and area of the LT muscle. Backfat thickness was reduced when using the sugar cane molasses treatment (5.80 mm) compared to the control treatment (8.90 mm) (P < 0.05). Higher enzyme gamma-glutamyl transferase (GGT) levels were observed in animals of the control treatment (67.10 IU/L) compared to animals treated with the sugar cane molasses treatment (49.90 IU/L) (P < 0.05). Moreover, the proximal composition, fatty acid profile, and quality were not influenced by treatment. Sugar cane molasses, used as an energy source to partially replace corn in the diet of growing pigs at a level of 3%, reduced the backfat thickness of the pig carcass and improved the serum concentration of the enzyme gamma-glutamyl transferase in pigs. Resumo Neste estudo foi explorado o efeito do melaço de cana-de-açúcar em substituição parcial ao milho na dieta sobre os parâmetros sanguíneos e a composição do músculo longissimus thoracis (LT) de suínos em crescimento. Vinte leitoas com 63 dias de idade, pesando 28,98 ± 3,56 kg foram aleatoriamente distribuídas nos tratamentos controle ou melaço de canade-açúcar. O melaço foi incluído ao nível de 3% em substituição parcial ao milho na dieta. Ao início e ao final do experimento foram coletadas amostras de sangue dos animais. Os animais foram abatidos aos 110 dias de idade após 47 dias de experimento pesando 67,9 ± 5,58 kg e uma amostra do músculo LT foi extraída e avaliada. Cada animal foi considerado uma unidade experimental. Não houve diferença entre os tratamentos sobre o comprimento e a área do músculo LT. A espessura de toucinho foi reduzida ao utilizar o tratamento melaço de cana-de-açúcar (5,80 mm) em relação ao tratamento controle (8,90 mm) (P < 0,05). Níveis mais elevados da enzima gama-glutamil transferase (GGT) foram observados nos animais do tratamento controle (67,10 UI/L) em comparação aos animais do tratamento melaço de cana-de-açucar (49,90 UI/L) (P < 0,05). A composição proximal e o perfil e qualidade dos ácidos graxos não foram influenciados pelo tratamento. O melaço de cana-de-açúcar utilizado como fonte energética em substituição parcial ao milho na dieta de suínos em crescimento ao nível de 3% reduziu a espessura de toucinho da carcaça de suínos e melhorou a concentração sérica da enzima gama-glutamil transferase de suínos.

Pour aider à voir s’il s’agit de coincidences ou de co-incidences, l’article utilise les ressources de la cartographie, les cartes ont été produites à partir des base de données FaoStat de la FAO et de l’OMS, en utilisant le logiciel Cartes et Données (Articque) puis un traitement graphique complémentaire sur Adobe Illustrator Consumption of meat, especially beef, is often questioned for its effects on human health, particularly because of the growing prevalence of obesity with which it is associated by some. Objective: To evaluate the effect of biotype on the productive performance and beef quality of bulls under silvopastoral system of Leucaena leucocephala (Lam.) de Witt variety Perú. Materials and Methods: Fifteen animals were used per treatment during 195 days of the dry season (October-May). Two treatments were designed: 1) genetic group Zebu under grazing ad libitum + energy complementation, 2) genetic group Siboney de Cuba under grazing ad libitum + energy complementation. A mixed linear model was applied, in which the biotype was included as fixed effect, and the system and residual error as random effects. The live weight, average daily gain, weight increase and yield per hectare were determined. On the samples taken from the Longissimus dorsis muscle, the beef color, as well as water holding capacity and acidity, were measured. Results: Differences were found (p < 0,05) for the weight at slaughter, mean daily gain, weight increase and yield per hectare, in favor of the Zebu biotype. The acidity, luminosity, red and yellow pigmentation of the beef did not differ from one group to the other. Differences were found (p < 0,001) in the concentration of acids C18:0 and C18:1, with the highest values in the Zebu biotype. Significant differences were also observed (p < 0,001) in the concentration of myristic and palmitic acid (C14:0 and C16:0, respectively). However, the highest amount was obtained in Siboney de Cuba. Conclusions: The Zebu group, under the conditions of this research, showed better productive performance, although between both groups there were instrumental values of beef quality which were close; nevertheless, in both genotypes, the percentage values of saturated, unsaturated and polyunsaturated fatty acids were similar. Objective: to isolate enterobacteria, especially the thermotolerant, present on the surfaces of knives, trays and cutting boards used in the handling of meat in butchers. Method: cross-sectional study, conducted from April to October 2017 in nine establishments that sell meat products in Cuiabá - Mato Grosso, Brasil. Surface samples were collected from three different utensils: knife, board and tray. Results: Among utensils used on handling poultry meat, the knife got greater growth of enterobacteria (4,36x104 UFC/cm²). The cutting board intended for pork also reported higher 7,44x104 UFC/cm². For beef, the tray and the board respectively, had scores of 2,5x105 UFC/cm² and 2,41x105 UFC/cm². The high growth of enterobacteria is justified by the grooves contained in these tools, poor maintenance and hygiene. It was also observed the presence of 27% of fecal coliforms and 73% of total coliforms. Conclusion: from the data obtained it is inferred that the hygienic and sanitary conditions are not in accordance with the RDC No. 216/2004. [ABSTRACT FROM AUTHOR]

The article considers in its first part the problems underlined by D. Franck regarding the role of the flesh in the constitution of time. It offers a presentation of his views on the constitution of bodilihood (Leiblichkeit) and corporeity (Körperlichkeit), the role of intersubjectivity, and the Husserlian characterization of the flow of time. The second part examines Husserl's late manuscripts on the constitution of time in order to show a new way of considering these problems. The role of the flesh in constitution and its relationship with intersubjectivity and the flow of time are stressed. The third part is concerned with the "double origin" (Franck) of time. This duality is associated with Husserl's twofold primality (Urtümlichkeit) according to which time can be referred back to the living and permanent present in which we are always placed and to a previous stage of time which emerges from a genesis in the past and is linked to flesh and intersubjectivity. It is argued that a twofold relationship of non-derivation and conditioning between consciousness and flesh (E. Ströker) can be associated with this approach. [ABSTRACT FROM AUTHOR]

Animal breeding is a predictive science which is carried out on the basis of the genetic variability in the herd and uses selection as an important tool, whose efficiency is assessed by the heritability of the traits of interest, which is a specific parameter of each herd. Due to its good ability to indicate the consequences of the genetic management in production systems, heritability has attracted attention of researchers and received contribution of the evolution of computational resources and statistical methods for the estimation of variance components. This has resulted in higher precision estimates, initially by the Least Squares Method, later by Maximum Likelihood and Bayesian statistics. The Brazilian Nellore herd has undergone these stages in its genetic improvement process, which has been guided by the selection of growth traits (weights at standard ages) as phenotypes of economic interest, which showed moderate to high heritability. Heritability has been estimated by different approaches, but the estimation of variance components by Restricted Maximum Likelihood (REML) has been the favorite. However, limitations such as computational demand and big amount of data have favored the use of Bayesian Inference. Based on these assumptions, the objective of this review is to discuss heritability of growth traits in Nellore cattle, using Maximum Likelihood and Bayesian Inference. [ABSTRACT FROM AUTHOR]

On the Internet, the reader can participate in journalistic information through comments, which have become an interesting source of data to analyze the opinion of the audiences on current scientific and health. The present work carries out a content analysis of a sample of 2,394 news comments about the relationship between red and processed meats and cancer in elpais.com. The comments do not contribute to a more complete version of the journalistic report. The debate is distorted towards other issues. Introduction: Introduction: different diets during pregnancy might have an impact on the health as reflected by the birth weight of the newborn. The consumption of meat and meat products during pregnancy and its relationship with the newborn health status have been studied by several authors. The studies carried out show inconsistent results. Objective: to analyse the association between maternal dietary intake of meat and meat products and the risk of small for gestational age (SGA) newborn. Methods: a matched case-control study of 518 cases and controls of pregnant women was performed in Spain. Cases were women with a SGA newborn. Data about demographic characteristics and diet were collected. Meat consumption was gathered through a validated food frequency questionnaire. Meat and meat products intakes were categorized in quintiles (Q1-Q5).The association between maternal meat and meat product intakes and SGA was assessed by logistic regression models with adjustment for confounding factors. Results: an intake of meat products above 6.8 g/day was associated with a lower risk of SGA delivery (OR = 0.7; 95% CI, 0.53-0.93) after adjusting for smoking, body mass index, previous preterm-low birth weight, newborn gender and adherence to Mediterranean diet. Conclusions: meat consumption was not associated with SGA, whereas meat products showed a moderate protective relationship. [ABSTRACT FROM AUTHOR]- Published
