食品のテクスチャーは、食品製造の工業装置の設計計算、プロセス制御に対して重要なパラメー夕である。前報33)において、液状食品の流動方程式の設定に関する研究を行ってきた。本研究では、個体状食品のレオロジー的特性測定に対して有用となる簡便な圧縮破断特性装置の利用に関する研究を行った。寒天、寒天-砂糖および寒天-食塩ゲルのレオロジー的特性の測定を行った。圧縮破断における応力、ひずみおよびエネルレギーの値を測定した。圧縮破断応力は、寒天の濃度の上昇と圧縮速度の上昇に伴って増加する結果が得られた。砂糖と食塩の添加の影響は、本研究における添加量に対してはほとんど影響がみられなかった。, Thc texture o f foods is an important physical property for designing equipment for controlling various food processes and for product quality control. In previous papers33) we studied the properties of liquid foods with particular reference to their flow and to their related equations. In this investigation, a simple and reliable apparatus was assernbled and used for studying the rheological properties of solid foods, paying particular attention to compression properties. The rheological properties of agar, agar-sugar, and agar-salt gels were invesigated. The results show an increase of compressive breaking stress with agar concentration and crosshead speed. In the limited ranges of our study, addition of salt and sugar has little significance, if any, for the properties of agar gels.

各種食品の蒸煮装置を設計し,制御化などを行なっていくためには,蒸煮速度を測定し,簡単な速度式を設定していくことが必要である。既報1)において,低含水率の食品である米,うどんおよびきしめんの蒸煮速度を重量法により求め,蒸煮速度式の設定に関する研究を行なってきた。 本研究は,ジャガイモおよびサツマイモを例として,高含水率の食品の場合の蒸煮速度の測定法ならびに速度式の設定に関する研究を行なったものである。 (1) 高含水率の食品の蒸煮速度の測定に有用な衝撃貫通試験法を提案した。 (2) S型形状係数を含む簡単な速度式として提出した次に示す蒸煮速度式が,ジャガイモおよびサツマイモ簿片の蒸煮に対して利用できた。dx/dθ=kn, α(1－x)n(x+α)ここで,x(－)は蒸煮率,θ(min)は蒸煮時間であり,n(－), α(－)およびkn,α(min－1)は定数である。上式においてn=1.0とした場合のαの値は,本実験試料に対してほぼ0.1となった。, In order to design and to control various cooking apparatuses, it is necessary to measure the cooking rate and to determine the cooking-rate equations. In a previous paper 1), we studied the cooking-rate equations of rice, udon and kishimen which are low water content foods using the weighing method for measuring the cooking rates. In the present paper, we studied the measuring methods of the cooking rate and the cooking-rate equations of potato and sweet potato slices which are high water content foods. The results of this investigations are as follows. (1) The impact-penetration method which is simple and useful for measurement the cooking-rate equations of high water content foods was used. (2) The following cooking-rate equation postulated as simple rate equation with a S-shape constant α(－) was adopted with satisfaction for the cooking of potato and sweet potato slices: dx/dθ= kn, α( 1－x)n(x+α) where, x(－) is the cooking-ratio, θ(min) is the cooking time, and n(－), α(－) and kn, α(min) are the constants. The values ofαin the equation fixed n=1.0 showed about 0.1 for the used samples.

振動流動層を用いた新しい形の真空乾燥法の開発を試みた。本研究ではその予備試験として,真空乾燥における最も重要な問題である装置の熱効率について考察を加えた。実験には2種類の試料を用いた。一つはイオン交換樹脂球(Amberlite,IR-120B)であり,他の一つはおから(卯の花)である。 層に空気を吹き込まず,真空状態にしても層を適当な振動強度で振動させれば,層内の材料は移動,混合した。それ故,そのような真空下であっても,層全体にわたり均一含水率で乾燥を行うことができた。ヒーターに加えた熱量はまだ非常に少ない範囲であるが,得られた熱効率はほぼ100%であった。振動強度が一定の場合には,ヒーターに加える熱量が増加するにつれて熱効率は減少した。 本研究の結果,振動流動層を用いた真空乾燥の可能性が認められた。, We tried to develop a new system for vacuum drying by using a vibro-fluidized bed. The thermal efficiency of the apparatus which is the most important factor of the vacuum drying was investigated in this paper. Two kinds of samples were examined. One was ion exchange resin particle (Amberlite, IR-120B), and the other was okara. When the bed was vibrated under suitable vibrational intensities, the materials in the bed were circulated and mixed even though the air was not flowed into the bed, and the bed was in vacuum state. Thus, the drying processes were able to be carried out at uniform bed moisture content even in such conditions. The thermal efficiencies obtained were nearly equal to 100 % for both samples under suitable conditions of vibration, although the heat energies supplied to the heater were very low. When the vibrational intensities were constant, the thermal efficiencies decreased as the heat energies supplied to the heater increased. As a result of this study, the possibility of the vacuum drying in a vibro-fluidized bed was recognized.

既報1)において，殻状乾燥モデルに基づく乾燥速度式の設定および速度パラメータの算出方法について報告した。本報では，含水スポンジを仮想食品として考えて，乾燥実験を行ない，速度パラメータの算出をした。含水スポンジは，表面収縮をしなく殻状乾燥をするので，既報の各種の乾燥速度式を検討するのに都合のよい簡単なモデル体である。球，長い円柱および無限平板状の試料について検討した結果，つぎに示すような結論が得られた。 (1) ガス境膜および乾燥殻状部拡散律速をそれぞれ仮定して誘導された積分形1)から求められた速度パラメータhm (cm3-void/cm2・min)およびkm (cm3-void/cm・min)を用いた計算結果は，試料の重さω(g)対乾燥時間θ(min)の関係で得られた実験データを満足しなかった。この原因は，速度パラメータの相関性によるものであり，非線形最小二乗法を用いた同時計算が必要であることが分った。 (2) 本研究で使用した含水スポンジは，細孔径が大きく，長い円柱および無限平板状の試料においては，未乾燥核が水の凝集力によりそれぞれ楕円体および円盤体となり，殻状乾燥モデルを満足する実験データが得られなかった。このような試料の場合に対しては，球状についての実験が必要であることが分った。 (3) 球状の試料については，実験データをよく満足する速度パラメータhmおよびkmが得られた。従来の関係式から求められる各種の推算値と比較検討を行なった。理論的により意味のある速度パラメータを得て従来の値と比較検討をしていくためには，未乾燥核の温度変化を測定する実験などを行なっていくことが必要である。 本研究で示した方法で得られる乾燥速度式は，速度パラメータの意味が究明されていかない限り半理論式的なものであるが，当面する各種の乾燥装置の設計などに対しては簡単な取り扱いをしており有用なものである。, In a previous paper, we studied the drying-rate equations based on the drying-shell models and the calculation methods of the rate parameters in the rate equations. In present paper, the rate parameters of the water-absorbing sponges which are considered as imagined fiber-foods, were determined for the sphere, the long-cylinder and the infinite-slab using a non-linear least square method. The imagined fiver-foods are simple samples which have no shrinkage of surface. The calculated values using the rate parameters obtained independently from the integrated equations did not agree with the observed values. Simulate calculations of the rate parameters using a non-linear least square method were necessary. The pore diameters of the sponges used in this study were not small and the water cores of the long-cylinder and the infinite-slab were transformed into ellipsoids and the disks. The calculated results for the long-cylinder and the infinite-slab did not agree with the observed values, but in the case of the sphere the results agreed. The rate parameters in this paper are merely experimental ones, but can be adopted satisfactorily for the design of various drying apparatuses.

大量連続の炊飯装置など各種食品のクッキング装置を設計し,制御化などを行なっていくためには,クッキング速度式を設定し,それに含まれている速度パラメータを求めていくことが必要である。 一般に食品のクッキング現象は複雑で,厳密な意味でのクッキング速度式を得ることは困難である。しかし,例えば炊飯などのように,クッキング現象を殻状吸水現象などによって近似的に置きかえができるような場合には,概括的にはなるがクッキング速度式を設定することが可能である。 本研究は,当面する炊飯装置設計などに対応するために,殻状吸水モデルに基づいたクッキング速度式を設定する研究を行ない,米飯などの実験データを例として,シミュレーションを行なった結果を示した。 (1) クッキング速度が,水の吸水殻状部拡散律速と水と固体食品との反応律速とによって支配されるものと考えて,クッキング速度式を球,長い円柱および薄い平板形について設定した。 (2) クッキング速度式に含まれる速度パラメータを求めるための非線形最小二乗法を使用した電子計算機プログラムを作成した。また,この計算のパラメータ初期値を求めるために,何れか一つの律速を仮定して,速度パラメータを陽関数的に求める積分式を誘導した。 (3) 米,うどんおよびきしめんを,近似的に殻状吸水モデルが適用できる球,長い円柱および薄い平板形の食品例として考えて,速度パラメータの算出例を示した。理論的により意味のある速度パラメータを得て検討していくためには,未吸水核の消失現象を仔細に研究する実験などを行なっていくことが必要である。 本研究で示したクッキング速度式は,吸水殻と未吸水核が現われる食品に適用できる。速度パラメータの意味が究明されない限り半理論式的なものであるが,当面する各種のクッキング装置の設計などに対しては簡単な取り扱いをしており有用なものである。, In order to design and to control automatically various cooking apparatuses, it is necessary to determine the cooking-rate equations and to obtain the rate parameters for the equations. In this study, we postulated the cooking-rate equations based on the water-soaking-shell models, and reported on the calculation methods of the rate parameters using a non-linear least square method. The rate parameters in the cooking-rate equations of rice, udon and kishimen (round and flat noodles of wheat flour, respectively) were determined at 92.5 °C, assuming the sphere, the long-cylinder and the infinite-slab. The lengths of udon and kishimen increased by the cooking, then the calculated values of these rate parameters did not give the exact theoretical values. The rate parameters in this paper are semi-theoretical or merely experimental ones, but may be adopted with satisfaction for the design of various cooking apparatuses.

液状食品に関する流動方程式は,各種装置を設計,制御をしていく場合に必要となる。本研究では,低濃度の脱脂粉乳水溶液の流動特性に関する研究を温度を変えて行なった。流動特性の測定には圧力を変化させて操作ができる毛管形粘度計を使用した。 低流速域において,ニュートン流動方程式が適用できた。得られた粘性パラメータを次に示す。 γ=(1/K)(gcτ－gcτy)^n n=1.0,τy=0.0 K=10^0.0241S-4.94 exp(3.96×10^3/RgT)(g/cm・sec) t=30～60℃, S=0～25.3wt% ここで,(sec^-1):せん断速度, τ(gf/cm^2): せん断応力, gc=980.7g・cm/gf・sec^2: 重力換算係数, Rg=1.987cal/g-mol・°K: 気体定数である。, The flow equations of liquid foods are important for the designing and controlling of various apparatuses. In this paper, we studied the flow behavior of skim milk solutions under low concentration at various temperatures. For measuring the flow behavior, we used a capillary tube viscometer operated under various pressures. For the low flow region, a Newtonian flow equation was applied. The viscometric parameters are shown as follow: γ= (1/K)(gcτ－gcτy)n, n=1.0, τy=0.0, K=10^0. 0241s-4.94 exp(3. 96×10^3'/ RgT) (g/cm・sec) t =30～60°C, S=0～25. 3 wt% where, γ(sec^-1): shear rate, τ(gf/cm^2): shear stress, gc=980.7g·cm/gf·sec^2: gravitational conversion factor and Rg=1.982 cal/g-mol·°K: gas constant.

The effective drying surface area of cellulous foodstuffs was investigated in this study. Onion epidermis was used as a sample. It was dried in an air dryer, and the changes in shape of the epidermis cells in the drying process were microscopically observed and photographed. The results showed that the volume of the cell decreased or collapsed and its surface rumpled gradually as the drying process proceeded. But the projection area of the cells did not vary so much. Thus it was considered that the change in net surface area of the epidermis might be little, though the volume change of the cells was of an appreciable amount. This assumption was verified by calculating the net surface area from the replica images of onion epidermis. The net surface area was proved to be about 1.8 times as large as the apparent surface area. However, the drying rates per unit apparent area of agar gel plate with a smooth surface were nearly equal to those of onion epidermis. Therefore, we concluded that the effective drying surface area of cellulous foodstuffs might be approximated to the apparent surface area.

液状食品に関する各種装置の設計ならびに操作に関する研究を行なっていくたあには,液状食品の密度,粘度などの物性値を温度,濃度などの条件関係式として表わしておくことが必要である。本研究では,砂糖,食塩,脱脂粉乳およびこれらの混合水溶液についての密度,粘度の測定値を例として,関係式の設定について検討した。 密度関係式は,条係範囲が広い場合には,温度,濃度についてそれぞれ2～3次多項式として表わす必要があるが,条件範囲が狭い場合には,次式を近似式として利用できる結果が得られた。 ρ=aT+bS+c ここで,ρ(g/cm3):密度,T(°K):温度,S(wt%):濃度である。混合水溶液に対しては,重量混合率を用いた加成性が得られる結果となった。 粘度関係式は,次式を近似式として利用できる結果が得られた。 μ=a exp(b/T^n) ここで,μ(g/cm3・sec):粘度である。水に近いもので,条件範囲が広いものでは,n=3として表わす必要があるが,条件範囲が広くない場合には,n=1としたAndradeの式が利用できる結果が得られた。aとbは,濃度範囲が広くない範囲で,次式が適用できる結果になった。 a=10^αsn+β b=α'S^m+β', The values of the density and the viscosity are important for designing and controlling various apparatuses. In this paper, we studied the equations regarding the temperature and the concentration of the density and the viscosity of sugar, salt and skim milk solutions. For the density, the following equations were approximately obtained. p =aT+ bS+c (g/cm3) For sugar solution (T=283.2~323.2°K, S=0~30 wt%): a=-3.49×10^-4, b=4.26×10^-3, c=1.098 For salt solution (T=283.2~323.2°K, S=0~24 wt%): a=-4.11×l0^-4, b=7.46×10^-3, c=1.118 For skim milk solution (T=283.2~323.2°K, S=0~25.3 wt%): a=-3.39×10^-4 , b=3.88×10^-3 , c=1.096 For the mixed solutions: p=kSXS+kNXN+kMXM where, X(-) is weight fractions of the solid matters in the solutions and ks, kN and kM (g/cm3) are the values of the density of the solutions of solid matters S, N and M (sugar, salt and skim milk) for the concentration of St=SS + SN + SM (wt%), respectively. For the viscosity, the following equations were approximately obtained at T=283.2~323.2 °K. µ=a exp(b/T^n) (g/cm • sec) For sugar solution (S=0~30 wt%): a=10^4.58×10^-3s1.15 -3.05 b=9.90×10^4 S^1.51+6.10×10^7 n=3 For salt solution (S=0~24 wt%): a=10^3.59×10^-3s1.33 -2.00 b=5.79×10^7 n=3 For skim milk solution (S=0~15 wt%): The previous results1,2) used Andrade equation are more useful. For the mixed solutions (St=0~15 wt%): The previous results2) can be used.

各種食品を加熱、冷却操作するクッキング装置などを設計するためには、食品の熱拡散率を求めておくことが必要となる。前報3)において、球状食品の熱拡散率の測定に関する研究を根菜類食品を例として行ってきた。本報では、平板状食品の熱拡散率の測定に関する研究をジャガイモを例として行った。ジャガイモの熱拡散率の値は、温度10～50℃において0.08cm²/minとなった。伝熱方程式を差分法で解いて、非線形最小二乗法を用いて熱拡散率を算出する本報で用いた方法5)は、従来からよく利用されている図表使用などによる方法よりも精度がよい値が得られることなどから優れているといえる。伝熱方程式を、前報で示したように解析法で解いて用いる場合には、初期、境界条件が固定される欠点があったが、本報で示したように差分法で解いていくと、任意の条件下に対応できるものとなる。試料表面に保護用の板などをつけると、試料表面温度が変化していき、非等温境界条件下での実験になると考えられるが、このような場合に対しても利用できるものとなる。参考のためとして、熱拡散率の概算磁を得るのに便利な中心温度変化曲線を前報と同様の形式に従って示した。本報で得られた各様条件下での測定結果ならびに熱拡散率の算出法に関する知見は、球状成型が困難な魚肉類のような軟質状食品を平板状成型をして、熱拡散率を求める場合に有用になると考えられる。, In order to design various food heating or cooling processes such as cooking apparatuses and so on, it is necessary to measure the thermal diffusivity of the food materials. In a former paper3), we studied the thermal diffusivity for the spherical root vegetables. In this paper, we studied the same for the slab potatoes. The values of thermal diffusivity of potatoes are considered to be in average 0.08 cm² /min at a temperature range from 10 to 50°C. The results of the slab shape experiments are usuful for the softish foods such as fish and meat materials and so on which can not be cut in to spherical shape. The central temperature history in slab material is shown. This figure can be used in order to obtain the approximate thermal diffusivity from the experimental data. In this paper, we investigated a method which used the digital computer program in order to determine the thermal diffusivity. This method is more acculate and usuful than the other previous methods which used figures or tables.

回分槽型、連続ベルト槽型、連続管型などの各種クッキング装置を、設計、制御化していくために44)、レオロジー特性の測定、クッキング速度式の設定および最適操作時間を得ることなどの研究が必要となる。前報1-10)において、液状食品のレオロジー特性について研究してきた。本報では、ペースト状食品のレオロジー特性の測定とクッキング速度式の設定に対して有用となる管型装置を製作し、小麦粉ペースト(ドウ)のレオロジー特性を求めることができた。また、前報16-18)において、重量測定法によってめん類のクッキング速度式の設定に関する研究を行ってきた。本報では、レオロジー特性測定法によって最適操作時間を求める方法について検討を行った。, In order to design and to control automatically various cooking apparatuses44) such as a batch tank, a continuous belt containing tank, a continuous tube apparatuses and so on, it is necessary to measure the rheological properties, to determine the cooking-rate equation and to obtain the optimal operating time. In previous papers1-10), we have studied the rheological properties of liquid foods. In this paper, we studied a tubular type instrument for paste foods, an instrument that can be used for measuring the rheological properties and for determining the cooking-rate equation. We could define the rheological equation of wheat flour paste (dough). In previous papers16-18), we have studied the cooking-rate equation of noodles by the weighing method. Now, in this paper, we could determine the optimal operating time in the rheological method.

前報1, 2)において、薄片および球状のジャガイモの熱湯中クッキングにおけるクッキング速度式の設定に関する研究を行ってきた。本報では、薄片ジャガイモのマイクロ波加熱クッキングにおけるクッキング速度式の設定に関する研究を行った。温度非定常系となる速度式におけるパラメータを、非線形最小二乗法3)によって求めた。次に示すクッキング速度式が得られた。 dx/dθ = k (1-x) k = 5.09 × 10^4 exp [-9.90 × 10^3/R_g(t+273.2)] または、 dx/dθ = k (1-X)^2.0 (x+5.37) k = 7.78 × 10^12 cxp [-2.42 × 10^4/R_g(t+273.2)] ここで、 x(--): クッキング率、 θ(s) : クッキング時間、 t(℃): クッキング温度、 R_g = 1.987 cal/mol・°K: 気体定数である。上式は、マイクロ波加熱クッキングの速度が、熱湯中のそれよりも大変に大きいという結果を示している。, In previous paper1,2), we have studied the cooking-rate equatiosls by the hot water dipped cooking of sliced and spllerical potatoes. In this paper, we stuclied the cooking-rate equations by microwave heated cooking of potato slices. The values of the parameters in the rate equations by the temperature unsteady-state systesn were calculated by using a non-linear laera square method3). The cooking-rate equation were obtained as follows: dx/dθ = k (1-X) k = 5.09 x 10^4 exp [-9.90 x 10^3/R_g(t+273.2)] or dx/dθ = k (1-X)^2.0 (x+5.37) k = 7.78 x 10^12 cxp [-2.42 x 10^4/R_g(t+273.2)] where, x(--): cooking ratio, θ(s) : cooking time, t(℃): cooking temperature, R_g = 1.987 cal/mol・°K: gas constant. The calculated results show that the values of cooking rate for microwave heated cooking are very much higher than those for hot water dipped cooking.

各種食品の各種乾燥装置を設計するためには、各種乾燥における乾燥速度式を設定しておくことが必要となる。前報1～3)において、熱風乾燥における食品の総括乾燥速度式の設定に関する研究を根菜類食品を例として行なってきた。食品乾燥工程における熱効率向上を進めることを目的として、試料の前処理方法とか加熱方法とかを検討していくことは、熱エネルギー資源を有効利用し、食糧資源を保存利用していくのに役立つ研究と考えられる。本報では、ジャガイモを例とし、マイクロ波利用と試料に穴あけする方法で乾燥速度を増大させる試みをする実験を行ない、それぞれに対し総括乾燥速度式の設定を行なった。マイクロ波利用の乾燥は、試料の褐変化などのために低乾燥域の実験しか行なうことができなかった。また、熱風乾燥において、試料に穴あけする方法による熱効率向上の試みに対しては、本実験条件下では期待した結果が得られないことがわかった。本研究成果を参考とし、マイクロ波利用における均一化加熱の検討を進めるなどし、マイクロ波加熱による組織破壊の前処理試料を作製し、それを熱風乾燥していく研究を進めていくことによって、熱効率向上ができる結果が得られるのではないかと期待できる。, In order to design various drying equipments of food materials, it is necessary to determine the drying-rate equations. In a former paper1～3), we studied the over-all drying-rate equations of root vegetables under the heated air-flow dryer. To improve the process, a faster dehydration method by using various heating methods or pre-treatment methods of samples is required. In this paper, we studied the over-all drying-rate equations on the drying of potatoes by microwave energy and of bored ones by heated flowing air. In the drying-rate equation on the drying by microwave enegy, we obtained it in the initial drying region only. The values of the orders in the rate equation are much larger on the drying by microwave energy than the ones obtained by heated flowing air. The results for the unbored and bored potatoes on the drying by heated flowing air did not differ from each other in these experimental conditions. The results of the microwave drying obtained are usuful for later promising experiments of the pre-treatment of potato using microwave energy.

前報1)において,大豆の浸漬,蒸煮速度式に関する研究を行なった。本報では,前報に引続き,小豆の浸煮,蒸煮について研究をした。 浸漬,蒸煮速度を,温度20～97℃において重量法により求めた。小豆の浸漬,蒸煮では,大豆の浸漬,蒸煮において使用できた簡単なn次速度式が利用できないことが分った。小豆の浸漬,蒸煮速度式はS型形状係数αを含んだ次式で表わされた。 dx/dθ=kn, α(1‐x)^n(x+α) kn, α=9.46×10^4exp(-9.70×10^3/RgT)(min^-1) n=1.0(‐), α=0.01(‐) Rg=1.987cal/g‐mol・°K ここで,x(‐),θ(min)およびT(°K)は,それぞれ浸漬,蒸煮率,時間および温度である。, In a former paper1), the rate equations on the soaking and cooking of soybean have been investigated. In the present paper, we took up the soaking and cooking of red bean. The soaking and cooking rates were measured by a weighing method at temperature ranges of 20～97℃. For the soaking and cooking of red bean, the simple nth-order rate equation, which had been used for the soaking and cooking of soybean, could not apply. The rate equation of red bean was postulated as the following equation with a S-shape's constant α. dX/dθ= kn, α(1 -X)^ n (X+α) kn, α= 9.46×10^4exp (-9.70×10^3/RgT) (min-1), n=1.0(-),α=0.01(-), Rg=1.987 cal/g-mol•゜K where, x(-), θ(min) and T (゜K) are the soaking or cooking ratio, time and temperature, respectively.

液状食品に関する各種装置の設計ならびに操作を行なっていくためには,流動方程式を設定し,それに含まれる各種粘性パラメータを算出していくことが必要である。本研究は,加熱処理したデンプン水溶液の流動特性を,毛管形粘度計を作製して30,50および70℃において求め,流動方程式における各種粘性パラメータ算出に関する研究を行なったものである。加熱処理した3および5wt%の小麦,トウモロコシ,ジャガイモおよびサツマイモデンプン水溶液を試料とした。 流動方程式γ＝(1/K)(gcτ－gcτy)nに含まれる粘性パラメータn, τyおよびKを,非線形最小二乗法を使用して算出する電子計算機プログラムを作成した。 加熱処理した3および5wt%の各種デンプン水溶液について,n, τyおよびKの値を計算した結果,n=1.2～1.4, τy≒0となり,擬塑性流体として取り扱えることが分った。n=1.3, τy=0と固定して求めたKの値は,温度の上昇ならびに濃度の減少で小さく変わり,K=Aexp(E/RgT)として表わすことができた。試料とした各種デンプン水溶液に対して,E=3～7kcal/g‐molとなる結果が得られた。 本研究成果は,流動特性が複雑な食品などの流動方程式を実験データよりシミュレーションによって得る場合に有用である。, The flow equations of liquid foods are important bases to design various apparatuses and to control various plants. The viscometric behavior of heated starch solutions was measured at 30, 50 and 70°C. The capillary tube viscometer was used in these studies. Heated starch solutions of 3 and 5 wt% wheat, corn, potato and sweet potato starches were used as samples. An empirical flow equation γ= (1/K) (gcτ－gcτy)n was assumed, and the viscometric constants n, τy and K were calculated using the non-linear least square method. The yield stress τy (gf/cm2) could be overlooked for the heated starch solutions studied, and a power-law flow equation was applied. The values of flow behavior index n(－) in the power-law flow equation were about 1.2 to 1.4 for all samples studied. Values of K(gn/cmn•sec^2n-i) which fixed n=1.3 were obtained, and they were expressed by an equation of the Arrhenius from K=A exp(E/RgT). The values of E were 3 to 7 kcal/g-mol for studied samples.

前報1)において,食品の各種処理における簡単な経験的速度式の設定について研究した。 dx/dθ=kn,α (1－x)^n(x+α) ここで,x(－),θ(min)は,それぞれ処理率,処理時間,また,kn,α, nおよびαは,実験データから得られる速度パラメータである。 本報では,この簡単な経験的速度式を用いて,擬似処理機構を推察する研究を行なった。速度パラメータα対nの関係を利用して,各種食品のクッキングの擬似機構の推察を試みた。本研究で推察して得られる擬似処理機構は,真の機構を見出していくのに役立つものと考えられる。, In a former paper1), we studied the determination of the following simple empirical rate equation for the various transformations of foods. dx/dθ=kn,α(1－x )^n (x+α) where, x(－) and θ(min) are the transforming ratio and time, respectively, and kn,α, α and n are the rate parameters which can be obtained from experimental data. This time, we took up the inference of the pseudo transforming mechanisms using this simple empirical rate equation. The relationships between the rate parameters α and n have been shown on the assumed various mechanisms, and by using these relationships we attempted to infer the cooking pseudo mechanisms of various foods. The pseudo mechanisms infered in this paper is very helpful to find real mechanisms.

前報l,2)において、ジャガイモ薄片のマイクロ波加熱クッキングにおけるクッキング速度式の設定に関する研究を行ってきた。各種のマイクロ波加熱装置を設計するためには、マイクロ波加熱をした食品の吸収エネルギーと温度上昇の測定が必要となってくる。本研究では、電子レンジを用いて、液状試料のマイクロ波加熱における温度上界の値を測定し、吸収効率の値を簡単な熱関係式を設定することによって計算する研究を行った。小容器に水を入れたものを、大容器に油を入れた中に入れる時に、油の吸収効率が低下しても、内部の水の吸収効率は低下しないで加熱できるという興味深い結果が得られることがわかった。この結果は、食品のマイクロ波加熱によるフライング操作が効率よく行えることを示唆している。, In previous papers1,2), we have studied the cooking-rate equations on the microwave heated cooking of potato slices. In order to design various microwave heating apparatuses, it is necessary to measure the absorbed energy and the increased temperature of microwave heated foodstuffs. In this paper, the values of the increased temperature of liquid samples during microwave heating in an electronic range were observed, and the values of the absorption efficiency were calculated by using a simple energy equation formed by authors. The temperature of water in a small vessel in a large vessel contained salad oil was measured. The value was very large same as a small vessel contained water was set up only in the electronic range. This phenomena observed are very interesting for the microwave frying of foodstuffs.
