Abstract

Capsaicin is the source of spicy taste in pepper fruits. Capsaicin stimulates nerve endings and reacts with some molecules to produce bioelectric pulses, which trigger the transient receptor potential vanilloid 1 (TRPV1) channal in human nerves, and then transmit the signal to the brain to produce a spicy feeling. It is found that capsaicin synergizes with or inhibits taste, and the interaction between them varies depending on the concentration of capsaicin. Therefore, this paper summarizes the types, chemical properties and applications of capsaicinoids, describes the biological mechanism by which capsaicin causes a spicy sensation, namely activating the capsaicin receptor TRPV1 channel, and discusses the interaction of spiciness with sour, sweet and bitter taste. Next, this review points out the shortcomings of the current research on the interaction between spiciness and taste and the potential underlying mechanism, and provides an outlook on future research directions. It is expected that this review will provide theoretical support for the further development of the spicy foods industry.

206. Production of Furfural Compounds from Dextran under Different Acid Hydrolysis Conditions

Abstract

In this study, a method for the simultaneous detection of 5-hydroxymethyl-2-furfural (HMF), 5-methyl furfural (MF) and furfural (FF) was established by ultra-high performance liquid chromatography (UPLC) after enrichment of furfurals in the acid hydrolysate of dextran by solid phase extraction (SPE) using a hydrophilic-lipophilic balance (HLB) column. The effect of different degrees of acid hydrolysis of dextran on the production of HMF, MF and FF was analyzed. The results showed that the proposed UPLC method was rapid, accurate and sensitive. Under incomplete acid hydrolysis conditions (0.5 mol/L H2SO4, 60 ℃), the recovery of monosaccharides from dextran was low and the three furfural compounds were undetectable in the hydrolysate. Under the optimal hydrolysis conditions (2 mol/L H2SO4, 100 ℃), the content of monosaccharides in dextran hydrolysate increased, the formation rate and content of HMF increased significantly, and FF was detected; however, the formation rate and content of FF were lower than those of HMF. Under excessive hydrolysis conditions (4 mol/L H2SO4, 120 ℃), the recovery of monosaccharides was lower than that under the optimal hydrolysis conditions. Meanwhile, the contents of HMF and FF were higher, and MF was not detected during the whole hydrolysis process. The above results show that during the hydrolysis of dextran, the yield of furfural compounds is closely related to the monosaccharide content in the hydrolysate. In addition, more vigorous acid hydrolysis conditions will promote the formation of HMF and FF in dextran hydrolysate, HMF being the easiest to form, followed by FF. The formation of MF requires more vigorous catalytic conditions.

210. The safety of antipsychotic use during pregnancy

Abstract

Aim: To investigate the patterns of gestational antipsychotics use and whether exposure to antipsychotic medications in pregnancy is associated with gestational diabetes mellitus (GDM) in mothers and seizure, attention deficit/hyperactivity disorder (ADHD), autism spectrum disorder (ASD), preterm birth (PTB) and small for gestational age (SFGA) in subsequent children. Methods: Firstly, a methodological review was conducted to review the methodological characteristics of existing observational studies that investigate the association between prenatal central nervous system (CNS) drugs use and CNS disorders. Secondly, a systematic review and meta-analysis was conducted to evaluate the evidence-based association between gestational antipsychotic use and GDM. Thirdly, a cross-sectional study was conducted to investigate the patterns and trends of antipsychotics use during pregnancy in the United Kingdom (UK) and Hong Kong (HK). Lastly, seven cohort studies were conducted to investigate the association between antipsychotics use in pregnancy and the risk of above-mentioned outcomes, respectively. Results: 4.64% and 0.34% of pregnancies were prescribed at least one prescription of antipsychotic during pregnancy in the UK and HK, respectively. When women who continued using antipsychotics during pregnancy were compared with those who had stopped, there was no evidence to demonstrate an increased risk of GDM. No evidence supported prenatal exposure to antipsychotics can increase the risk of ADHD/ASD/SFGA. Children with prenatal antipsychotics exposure was associated with an increased risk of seizure (HR 1.49, 95% CI 1.11-1.99) and PTB (OR 1.40, 95%CI 1.13-1.75), comparing to those without. However, further sibling-matched analyses and negative control analyses indicated no evidence supported the above-mentioned associations. Conclusion: This PhD project did not suggest an increased risk of GDM in mothers or seizure/ADHD/ASD/PTB/SFGA in children regarding antipsychotics use during pregnancy. Women are not recommended to stop their regular antipsychotic prescription during pregnancy due to the risk of developing GDM or delivering an offspring with seizure/ADHD/ASD/PTB/SFGA.

211. PacketCGAN: Exploratory Study of Class Imbalance for Encrypted Traffic Classification Using CGAN

Abstract

With more and more adoption of Deep Learning (DL) in the field of image processing, computer vision and NLP, researchers have begun to apply DL to tackle with encrypted traffic classification problems. Although these methods can automatically extract traffic features to overcome the difficulty of traditional classification methods like DPI in terms of feature engineering, a large amount of data is needed to learn the characteristics of various types of traffic. Therefore, the performance of classification model always significantly depends on the quality of datasets. Nevertheless, the building of datasets is a time-consuming and costly task, especially encrypted traffic data. Apparently, it is often more difficult to collect a large amount of traffic samples of those unpopular encrypted applications than well-known, which leads to the problem of class imbalance between major and minor encrypted applications in datasets. In this paper, we proposed a novel traffic data augmenting method called PacketCGAN using Conditional GAN. As a generative model, PacketCGAN exploit the benefit of CGAN to generate specified traffic to address the problem of the datasets' imbalance. As a proof of concept, three classical DL models like Convolutional Neural Network (CNN) were adopted and designed to classify four encrypted traffic datasets augmented by Random Over Sampling (ROS), SMOTE(Synthetic Minority Over-sampling Techinique) , vanilla GAN and PacketCGAN respectively based on two public datasets: ISCX2012 and USTC-TFC2016. The experimental evaluation results demonstrate that DL based encrypted traffic classifier over dataset augmented by PacketCGAN can achieve better performance than the others.

Abstract

Two-dimensional (2D) semiconductors are widely recognized as attractive channel materials for low-power electronics. However, an unresolved challenge is the integration of high-quality, ultrathin high-\k{appa} dielectrics that fully meet the roadmap requirements for low-power applications. With a dangling-bond free surface, the deposition of dielectrics by atomic layer deposition (ALD) on 2D materials is usually characterized with non-uniform nucleation and island formation, producing a highly porous dielectric layer with serious leakage particularly at the small equivalent oxide thickness (EOT) limit. Here, we report the robust ALD of highly uniform high-\k{appa} dielectric on 2D semiconductors by using ~0.3 nm-thick exclusively monolayer molecular crystal as seeding layer. Ultrathin dielectrics down to 1 nm EOT is realized on graphene, MoS2 and WSe2, with considerably reduced roughness, density of interface states, leakage current and improved breakdown field compared to prior methods. Taking advantage of the reduced EOT, we demonstrate graphene RF transistors operating at 60 GHz, as well as MoS2 and WSe2 complementary metal-oxide-semiconductor (CMOS) transistors with Vdd =0.8 V and ideal subthreshold swing (SS) of 60 mV/dec, 20 nm-channel-length MoS2 transistors with on/off ratio over 10^7.
