U ovom izlaganju biće predstavljeni naši dosadašnji rezultati na temu antimikrobnih antitela kod profesionalnih sportista, odraslih osoba koje se ne bave profesionalno sportom; promene nivoa antibakterijskih antitela pri starenju; poređenje specifičnosti serumskih i salivarnih IgA antitela kod mladih odraslih osoba, kao i nivoi ukupnih i antibakterijskih antitela u Covid-19 virusnoj infekciji i u sepsi. Nivoi i titri antimikrobnih antitela različitih klasa i potklasa određivani su ELISA testom iz uzoraka seruma, plazme ili salive. Ispitivano je vezivanje za izolovane antigene mikroorganizama (lipopolisaharid, peptidoglikan i zimozan) i za cele mikroorganizme, različitih vrsta i sojeva. Vezivanje prečišćenog salivarnog IgA za mikroorganizme praćeno je i protočnom citometrijom. Od rezultata izdvajamo da izlaganje fizičkom naporu visokog intenziteta dovodi do promena na nivou antibakterijskih antitela, i to u pravcu sveobuhvatnijeg prepoznavanja lipopolisaharida1. Suplementacija profesionalnih sportista određenim probioticima dovodi do održanja nivoa ukupnih salivarnih i serumskih IgA antitela, kao i IgG antitela specifičnih prema Enterococcus faecalis, koja su u ovoj populaciji pokazala sezonsku varijaciju. Pri starenju dolazi do smanjenja nivoa antipneumokoknih antitela i to zavisno od pola, pa su stariji mukarci naročito pogođeni ovim smanjenjem3. Salivarna IgA antitela razlikuju se po specifičnosti od serumskih IgA antitela i pružaju nespecifičnu zaštitu. Poređenje pacijenata sa sepsom, hospitalizovanih Covid-19 pacijenta i starosnih kontrola pokazalo je brojne razlike u nivoima kako ukupnih, tako i antibakterijskih antitela. Nivoi antibakterijskih antitela kod pacijentata koji nisu preživeli bili su niži nego kod onih koji su preživeli, što potvrđuje značaj ovih anititela za preživljavanje sepse.

Background: Recent literature data highlights metabolic changes in amyotrophic lateral sclerosis (ALS). To explore possible early metabolic changes, we aimed to analyse the fatty acids (FA) composition of erythrocytes in newly diagnosed als patients and to see whether fatty acid levels correlate with the ALSFRS-R score or disease duration. Methods: The severity of motor function involvement was assessed by the ALSFRS-R scale at the initial evaluation. The fatty acid profile of erythrocyte membranes was analysed by gas-liquid chromatography. The study comprised 26 clinically diagnosed als patients, with mean ALSFRS-R 38±8. The control group included 26 healthy volunteers. Results: Significantly higher levels of palmitic acid and total saturated FAs were detected in als patients. In als patients, total monounsaturated FA, palmitoleic, vaccenic, and oleic acid were also significantly increased. The levels of eicosapentaenoic acid, docosapentaenoic acid, total polyunsaturated FA (PUFA) and n-6 PUFA were significantly lower in als patients. Additionally, a-linolenic acid, the precursor of the n-3 PUFA family, was not detected in als patients. We found no significant correlation between the ALSFRS-R score and the abundance of individual FAs analysed. A moderate negative correlation was found between disease duration and DHA level, and a positive correlation was detected with MUFA. Conclusion: Experimental evidence presented may contribute to shaping a beneficial nutritional intervention.

Natural active principles are present in the fruit and during its processing pass into the final products. Among many natural active principles it is important to emphasize those which exhibit beneficial health effect on human organism. Beneficial health effect of those compounds is result of antioxidant properties. Wine is fruit derived product which is rich source of those compounds. The aim of this study was to investigate the influence of technological process on the phenolic profile, antioxidant properties and activity of antioxidant protection enzymes in vitro. Fruit wines were produced in controlled conditions during microvinifications. Phenolic profile of fruit wines were obtained by UPLC MS/MS, while antioxidant properties and enzymatic activity determined by spectrophotometric methods. The content of phenolic compounds in fruit wines was significant. It is important to highlight that different applied technology during the production, influenced on the content of above mentioned compounds. Flavonoids and phenolic acids were the most important. Also fruit wines showed ability to activate enzymes of antioxidant protection, which could be used in the protection against free radicals and prevention of oxidative stress.

OBJECTIVE: The aim of this study was to determine any differences in ox- idative stress and inflammation parameters in COPD patients treated with either N-acetyl cys- teine (NAC) alone or with NAC in combination with propolis (NACP). PATIENTS AND METHODS: Forty COPD pa- tients in the exacerbation phase were enrolled into the study and were treated with either NAC (NAC group; n=20) or NACP (NACP group; n=20) twice daily for one month. Redox status was de - termined by measuring superoxide anion (O 2 .– ), advanced oxidation protein products (AOPP), total oxidative status (TOS), prooxidative-anti- oxidant balance (PAB), malondialdehyde (MDA), ischemia modified albumin (IMA) and sever- al other antioxidant markers: superoxide dis- mutase (SOD), paraoxonase 1 (PON1), total sulf- hydryl groups (SHG) and total antioxidant status (TAS). Interleukins 6, 8 and 17 were measured as markers of inflammatory status. RESULTS: Both groups had similar socio-de - mographic and clinical characteristics. Af- ter treatment significantly higher SHG [0.446 (0.395-0.516) vs. 0.292 (0.270-0.325), p<0.001] and significantly lower TOS – 50.6 [49.7-53.4 vs. 73.2 (50.9-84.6), p<0.05] – and IMA [0.650 (0.629-0.682) vs. 0.709 (0.667-0.756), p<0.05] – were found in the NACP group compared to the NAC group. Factorial analysis indicated a larger oxidative stress-inflammatory load in the NAC group after treatment. CONCLUSIONS: From an oxidative stress and inflammatory status perspective, treatment with NACP was more successful than with NAC. The inclusion of propolis into therapy for COPD patients, especially those in the exacerbation phase, could prove beneficial.

After a 10-days intervention period supplementation with powder/granulate containing Mg oxide led to an increase in both ionized Mg concentration and % in total Mg in comparison with the baseline. Supplementation with Mg citrate was associated with the significant increase in % of ionized fraction and decrease in serum total Mg concentration. By contrast, among participants consuming Mg carbonate in the form of effervescent tablets ionized Mg concentration and % in total Mg decreased, without detectable changes in serum total Mg. In conclusion, after the short-term supplementation period, Mg oxide demonstrated superior bioavailability compared to the other examined Mg supplements without affecting other minerals’ levels.

Increased interest in microbiota calls for the thorough analysis of antibody reactivity to different microorganisms. As salivary IgA represents the first line of defence against microorganisms contacting mucosal surfaces, we explored the binding and specificity of salivary IgA by testing the binding of purified, FITC-labelled salivary IgA to different microorganisms in flow cytometry and conclude that this kind of analysis enables the differentiation of species/strains with high IgA binding capacity, which should be corroborated on a larger sample size. Further we compare, with in-house ELISA, the binding of polyclonal salivary IgA with the binding of polyclonal serum IgA from the same individuals to whole microbial cells and to purified microbial components. High correlations were obtained in total salivary IgA binding to Lactobacillus rhamnosus and Escherichia coli, very distant bacterial species, as well as to isolated bacterial components (r =.70–.97). The binding of total salivary IgA resembled the binding of both salivary IgA1 and IgA2, with IgA2 predominating. For serum polyclonal IgA repertoire, substantially higher specificity was obtained. Serum IgA binding to E. coli correlated best with serum IgA binding to lipopolysaccharide (r =.86), and serum IgA against L. rhamnosus correlated best with the anti-peptidoglycan IgA levels (r =.88). We have also detected that total serum IgA response is governed by either IgA1 or IgA2 response, depending on the nature of the antigen/s. We conclude that steady state salivary IgA repertoire, unlike serum IgA repertoire, consists of polyreactive antibodies with innate specificity, questioning its capacity to select resident microbiota.

Fruit and derived product represent a rich source of biologically active compounds which exhibit beneficial health effect on human organism. Among fruit especially berries it is important to highlight blueberries. One of derived products with added value from this fruit is wine. The aim of this study was to investigate in vitro activity of blueberry wine by monitoring activities of antioxidant protection enzymes and lipid peroxidation (malondialdehyde level) in isolated rat synaptosomes. Fruit wines were produced in controlled conditions of different microvinifications in which pure culture of selected wine yeast was used. Synaptosomes were isolated from the brain of Wistar albino rats. Analyzed wine samples influenced on the activity of antioxidant protection enzymes. Wine samples also showed ability to decrease malondialdehyde level. Activity for superoxide dismutase in synaptosomes was in range (6.47–7.21 U/mg) while catalase activity was (0.045–0.061 U/mg). Glutathione peroxidase activity was in range (0.0212– 0.0232 U/mg), as well as malondialdehyde level (2.17–2.35 nmol/mg). Obtained results indicate that blueberry wines possess antioxidant properties and abilities to protect against free radicals generated during oxidative stress.

Background: Literature data indicate the benefit of magnesium (Mg) supplementation. The aim of this study was to examine the effect of short-term Mg supplementation on iron status in healthy female participants. Methods: One hundred healthy female students of the University of Belgrade - Faculty of Pharmacy participated the study during eleven intervention days. Students ingested Mg preparations with the same dose of the active substance. The analysis included the measurement of serum iron, unsaturated iron binding capacity (UIBC), total iron binding capacity (TIBC), total Mg (tMg), ionized Mg (iMg), complete blood count, met-, carboxy- and oxy-haemoglobin (metHgb, COHgb, O2Hgb). Transferrin concentrations and percentage of transferrin saturation (SAT) were calculated manually. The association among the analyzed biochemical parameters was examined using polynomial regression. A principal component analysis (PCA) was used for the evaluation of interdependence between the analyzed parameters. Results: A statistically significant trend for change in O2Hgb (%) by tertiles of iMg concentrations was found (P = 0.029). Serum tMg reached significant positive correlation with the SAT at concentration levels greater than 0.9 mmol/L, after 11 days of intervention (R2=0.116). Ionized Mg in a concentration higher than 0.6 mmol/L is positively correlated with SAT and serum Fe (R2=0.214; 0.199, respectively). PCA revealed variability of 64.7% for two axes after 11 days. Conclusions: Mg supplementation leads to an improvement in the certain iron status parameters even in individuals with optimal levels of these indices. However, caution should be exercised when supplementing Mg, and laboratory monitoring of the interaction is required., Uvod: Literaturni podaci ukazuju na benefit suplementacije magnezijumom (Mg). Cilj ove studije bio je da se ispita uticaj kratkotrajne suplementacije Mg na status gvožđa kod zdravih žena. Metode: Sto zdravih studentkinja Univerzitet u Beogradu - Farmaceutskog fakulteta je učestvovalo u istraživanju tokom jedanaest dana intervencije. Studenti su uzimali preparate Mg sa istom dozom aktivne supstance. U serumu je određivano gvožđe, nezasićen kapacitet vezivanja gvožđa (UIBC), ukupan kapacitet vezivanja gvožđa (TIBC), ukupan Mg (tMg), jonizovni Mg (iMg), kompletna krvna slika, met-, karboksiioksihemoglobin (metHgb, COHgb, O2Hgb). Transferin i saturacija transferina (SAT) su izračunati ručno. Povezanost analiziranih biohemijskih parametara je ispitana pomoću polinomalne regresije. Za procenu međuzavisnosti između analiziranih parametara korišćena je analiza glavnih komponenti (PCA). Rezultati: Utvrđen je statistički značajan trend promene O2Hgb (%) po tertilima koncentracija iMg (P = 0,029). Ukupan Mg je dostigao značajnu pozitivnu korelaciju sa SAT pri koncentracijama većim od 0,9 mmol/L, nakon 11 dana intervencije (R2 = 0,116). Jonizovani Mg u koncentraciji većoj od 0,6 mmol/L pozitivno korelira sa SAT i gvožđem (R2 = 0,214; 0,199, redom). PCA analizom je pokazana varijabilnost od 64,7% za dve ose nakon 11 dana. Zaključak: Suplementacija Mg dovodi do poboljšanja određenih parametara statusa gvožđa čak i kod pojedinaca sa optimalnim nivoima ovih parametara. Međutim treba biti oprezan pri suplementaciji Mg, a dodatno je neophodno i laboratorijsko praćenje ovih interakcija.

Dietary supplementation with sugar cane derivates may modulate low-density lipoproteincholesterol (LDL-C) and proprotein convertase subtilisin/kexin type 9 (PCSK9) levels. The purposeof this study was to determine if dietary supplement (DS), containing Octacosanol (20 mg) andvitamin K2 (45μg), could restore the disrupted physiologic relation between LDL-C and serumPCSK9. Double-blind, randomized, placebo-controlled, single-center study including 87 patients onchronic atorvastatin therapy was conducted. Eighty-seven patients were randomized to receive DS(n= 42) or placebo (n= 45), and followed for 13 weeks. Serum PCSK9 levels, lipid parameters andtheir relationship were the main efficacy endpoints. The absolute levels of PCSK9 and LDL-C werenot significantly different from baseline to 13 weeks. However, physiologic correlation between %change of PCSK9 and % change of LDL-C levels was normalized only in the group of patients treatedwith DS (r= 0.409,p= 0.012). This study shows that DS can restore statin disrupted physiologicpositive correlation between PCSK9 and LDL-C. Elevated PCSK9 level is an independent risk factorso controlling its rise by statins may be important in prevention of cardiovascular events.

Uvod. Vrlo intenzivna i učestala fizička aktivnost dovodi do povećanja permeabilnosti gastrointestinalne barijere, pa je samim tim i uzrok intolerancije na hranu. Cilj ovog istraživanja je bio da se ispita uticaj tromesečne eliminacione dijete na nivo specifičnih IgG antitela u serumu, intenzitet gastrointestinalnih tegoba, telesnu kompoziciju i sportske sposobnosti profesionalnih sportista. Materijal i metode. U studiji je učestvovalo 32 profesionalnih sportista: 18 muškaraca (uzrasta 25 ± 7 godina) i 14 žena (uzrasta 25 ± 4 godina). Ispitanici su odabrani na osnovu AQUA (Allergy Questionnaire for Athletes) i GSRS (Gastrointestinal Symptom Rating Scale) upitnika, kao i alergen-specifičnog IgG testa intolerancije na hranu. Svi sportisti su bili na tromesečnoj eliminacionoj dijeti kreiranoj prema rezultatima alergen-specifičnog IgG testa intolerancije. Pored navedenih upitnika i testa intolerancije na hranu, na početku studije su svi ispitanicima bili podvrgnuti osnovnom sportsko-medicinskom ispitivanju i kardiopulmonalnom testu fizičkim opterećenjem. Sve navedene procedure, uključujući i upitnike, su urađene i nakon tromesečne eliminacione dijete. Rezultati. Vrednosti skorova AQUA upitnika su bili značajno niži. Takođe je vrednost skora ukupnog GSRS upitnika bila značajno niža, kao i vrednost skora za sindrom ingestije. Nivo specifičnih IgG antitela se značajno smanjio kod svih sportista i za sve namirnice na koje je postojala intolerancija. Procenat telesnih masti sportista se značajno smanjio, bez značajne promene u njihovoj telesnoj masi. Srčana frekvencija u drugom i trećem minutu oporavka nakon kardiopulmonalnog testa se značajno smanjila, dok se fleksibilnost sportista značajno povećala nakon tromesečne dijete. Rezultati ove studije ukazuju na pozitivan efekat tromesečne eliminacione dijete kreirane na osnovu IgG antitela na gastrointestinalne tegobe sportista, u smislu smanjenja njihovog intenziteta, kao i poboljšanje njihove telesne kompozicije i sportskih s, Background: Intensive and frequent physical activity causes increase of the gastrointestinal (GI) barrier permeability leading to food intolerance. The aim was to examine the impact of 3-month elimination diet on specific IgG antibodies level, GI discomfort intensity, body composition and sports performance of the athletes. Methods: in this study participated 32 professional athletes: 18 males (mean age 25±7 years) and 14 females (mean age 25±4 years). The participants were chosen on results of The Allergy Questionnaire for Athletes (AQUA) and Gastrointestinal Symptom Rating Scale (GSRS) questionnaires, as well as on results of specific IgG food intolerance blood test. All athletes were on a 3-month elimination diet based on the results of specific IgG food intolerance blood test. In addition to the above questionnaries and specific IgG food intolerance blood test, basic medical examination and cardiopulmonary testing were assessed prior to and after the study. Results: AQUA scores were significantly lowered. There was a significant reduction in total GSRS score and indigestion syndrome score. The level of the specific IgG antibodies was significantly decreased for all athletes and all foods they were intolerant to. Fat percent (FAT%) of the athletes decreased significantly without change in weight. Heart rate (HR) at the second and the third minute recovery phase was significantly lower. The flexibility of athletes significantly increased. The results of this study indicate a positive effect of a 3-month elimination diet based on IgG food intolerance blood test on GI discomfort, in terms of significant decrease of its intensity and a significant improvement on athletes’ body composition and their sports performance.

In recent decades, probiotic products have been increasingly used to prevent certain gastrointestinal and urogenital disorders, to improve the general condition of the body and as a supplement to pharmacological therapy. They are most often registered as dietary supplements, and less often as drugs in the form of capsules, powders, and solutions. Optimization of technological processes of production and packaging of these products aims to maintain probiotic characteristics while adhering to all criteria during production that ensure quality, bioavailability and optimal therapeutic effects. In this paper, the importance of choosing primary and secondary packaging materials was explored with the aim of preserving the viability of probiotic cells in capsules for two years, i.e. during the shelf life. By comparing the applications of polyvinyl chloride (PVC) and PVC/polyvinylidene chloride/polyethylene blister foils, better protection of probiotic cells was observed by applying the multilayer foil. In addition, in this research, further improvements of probiotic cell protection were achieved by applying a secondary packing-flow pack bag with inert gas for storing multilayered blisters., Probiotski proizvodi se poslednjih decenija sve više koriste za prevenciju određenih gastrointestinalnih i urogenitalnih poremećaja, za poboljšanje opšteg stanja organi-zma i kao dopuna farmakološke terapije. Najčešće su registrovani kao dijetetski suple-menti, a ređe kao lekovi u obliku kapsula, praškova i rastvora. Optimizacija tehnoloških procesa proizvodnje i pakovanje ovih proizvoda ima za cilj održavanje probiotskih karakteristika uz istovremeno pridržavanje svih kriterijuma u toku proizvodnje koji osiguravaju kvalitet, biološku raspoloživost i optimalno terapijsko dejstvo U ovom radu razmatran je značaj izbora primarnog i sekundarnog materijala za pakovanje sa ciljem očuvanja vijabilnost probiotskih ćelija u kapsulama tokom dve godine tj. tokom roka upotrebe. Poređenjem primene PVC (polivinil hlorid) i PVC/poliviniliden hlorid/poli-etilen (PVC/PVdC/PE) blister folija uočena je bolja zaštita probotskih ćelija od kiseonika i vlage primenom višeslojene folije. Dodatne efekte zaštite probiotskih ćelija u ovom radu potvrdjene su primenom dodatne zaštite blistera upotrebom sekundarnog pakovanja (engl. flow pack) kesice sa inertni gasom.

The impact of diet and fibre fractions on adipocytokines in obese subjects with a risk of diabetes has not been investigated in detail yet. The purpose of the study is to evaluate the effects of a 12-month lifestyle intervention with different fibre profiles (resistant starch (RS)—rich fibre, or ordinary food fibre profiles) on adipocytokine levels. Fifty participants are divided into two groups (RS group and Fibre group). The groups differ only in the percentage of the recommended level of the RS consumed as a fraction of the same total fibre amount. The applied dietary intervention includes intake of 7531 KJ/daywith a total fibre portion of 25–35 g/dayfor both groups that includes 15 g/day of RS for the RS group only. The levels of leptin, adiponectin, apelin, resistin, tumor necrosis factor (TNF)-alpha and C-reactive protein (CRP) are measured, and their relationship to anthropometric and biochemical parameters is estimated. Along with significant body weight loss, only leptin is significantly reduced by 13% in the RS group while in the Fibre group, apelin levels are significant (−21%). Polynomial regression shows a negative correlation between RS intake and adiponectin (R2 = 0.145) and resistin level (R2 = 0.461) in the RS group. This study indicates the possibility that fibre fractions differently influence the outcome of lifestyle interventions, as well as their adipocytokine levels, in obese prediabetic adults.

This study aimed to evaluate, in vitro, the antioxidative potential of fruit wines produced from berry fruits (i.e., black chokeberry, blueberry, blackberry, and raspberry), cherry, and apple by different technological processes. For this purpose, the activities of antioxidant enzymes (catalase, glutathione peroxidase (GPx), and superoxide dismutase (SOD)) and malondialdehyde (MDA) content as a marker of membrane damage were determined in wine-treated synaptosomes with hydrogen peroxide-induced oxidative stress. All studied wines induced increased antioxidant enzyme activities and decreased MDA levels compared to hydrogen peroxide-treated synaptosomes (i.e., control). The highest SOD activity was observed in synaptosomes treated with blackberry wine (6.81 U/mg), whereas blueberry wine induced the highest catalase and glutathione peroxidase activities (0.058 U/mg and 0.017 U/mg, respectively). Black chokeberry proved to be the best in lipid peroxidation protection with the lowest MDA value (1.42 nmol/mg). Finally, principal component analysis and hierarchical cluster analysis additionally highlighted a higher antioxidant capacity of wines produced from dark-skinned fruits (i.e., blackberry, black chokeberry, and blueberry). The results suggest protective effects of the fruit wines against oxidative damage, and, accordingly, their promising application as functional food.

Воћна вина испитивана у оквиру ове докторске дисертације произведена су од аутохтоних и успешно интродукованих сорти воћа, углавном поеклом из Србије. У производњи вина коришћено је бобичасто(аронија, боровница,малина, купина), јагодичастo(јагода), коштичаво(вишња, трешња, шљива, брескав, кајсија) и јабучасто воћe(јабука). Дата вина добијена су контролисаним поступком микровинификације-чиста култура одговарајућег квасца додата је да се започне алкохолно врење. Сем тога шећер и ензимски препарат гликозидаза (ЕПГ) додати су у половину узорака пре почетка алкохолног врења. Праћено је како поступак производње поменутих воћних вина утиче на њихов хемијски састав (полифеноли) и биолошку активност (антиоксидативнипотенцијал и анти α-глукозидазну активност). Поред тога одреёени су и основни парметри квалитета воћних вина. Добијени експериментални подаци указују да додатак шећера и ЕПГ (појединачно и заједно) доводи до повећања садржаја,како квантификованихполифенола, тако и антиоксидативног потенцијала узорака воћних вина. Са другестране,употреба различитих квасаца није условила статистички значајну разлику. По садржају квантификованих полифенола истакла су се вина од боровнице и ароније. Узорци вина од аронијеи вишње предњачили су по садржају укупних полифенола. Бољу анти α-глукозидазну активност показала су вина са додатком шећера и ЕПГ-а. Као најактивнији истакли су се узорци вина од боровницеи ароније,измеёу осталог,због садржаја хлорогене, кафеинске и протокатехуинске киселине. Молекуларном докинг студијом потврёена је дата био-активност одабраних појединачних полифенола. Коначно,иста група узорака вина (са додатком шећeрaи ЕПГ), активирала је ензиме антиоксидативне заштите. Узорци вина од купине и боровнице највише су активирали дате ензиме, док се вино од ароније истакло по степену снижења липидне пероксидације. Свеукупно посматрано, дата вина могу се посматрати као потенцијално нова функционалнанамирица., Fruit wines analyzed in this doctoral dissertation were produced from autochthonous and successfully introduced fruit species mainly originating from Serbia. For wine production were used berry (black chokeberry, blueberry, raspberry, blackberry, strawberry), drupe (cherry, sweet cherry, plum, peach, apricot) and pome (apple) fruit. The wines were obtained by the controlled process of microvinification -pure culture of selected yeasts was added to start alcoholic fermentation. Beside it in the half of the samples before the start of the fermentation were added sugar and enzymatic preparation glycosidase (EPG). It was followed in which way the production process of the above mentioned fruit wines influence on chemical composition (polyphenols) and biological activity (antioxidant potential and antiα-glucosidase activity). Beside it the basic parameters of the wine quality have also been determined. Obtained experimental data indicated that the addition of sugar and EPG (individually and together) lead to the increased content of quantified polyphenols and antioxidant potential of fruit wine samples. The usage of different yeasts did not show any significant statistical difference. By the content of quantified polyphenols blueberry and black chokeberry wines were highlighted. The wine samples of black chokeberry and cherry can be emphasized by the total phenolic content. Betteranti α-glucosidase activity have shown wines with addition of sugar and EPG. The most active were blueberry and black chokeberry wine samples due to its content of chlorogenic, caffeic and protocatehuic acids. Molecular docking study confirmed bioactivityof selected polyphenols. Finally,the same group of wine samples (with sugar and EPG addition) activated the enzymes of antioxidant protection. Blackberry and blueberry wine samples activated the most of those enzymes, while black chokeberry wine stood out by the lowering of lipid peroxidation degree.
