- Abstract
The main purpose of the experiment carried out was to study the effects of immunological castration of gilts on the histological indicators of the muscle tissue of m. Longissimus thoracis muscle tissue compared to non-castrated animals. For the study, 440 pigs were collected, which were initially divided into two groups of 220 animals each, one of which was immunologically castrated and the other not castrated. At the end of fattening, the group of immunocastrated and non-castrated gilts was divided by weight into groups of 110 and 130 kg, resulting in four groups: noncastrated gilts with a live weight of 110 kg, non-castrated gilts with a live weight of 130 kg, immunocastrated gilts with a live weight of 110 kg and immunocastrated gilts of 130 kg. After slaughter, histological sections of the longest dorsal muscle were taken and light-optical and morphometric examinations, luminescence microscopy with microphotography of m. Longissimus thoracis muscle were carried out. As a result of the experiments, it was found that as a result of immunological castration of gilts with the Improvak vaccine, the muscle fibre diameter decreased by 15 μm and the muscle fibres absorbed a larger amount of sarcoplasm, which, against the background of an increase in the content of the parenchymal component (by 14%), indicates an increase in the juiciness and tenderness of the meat.
