Један од начина на који могу dа се добију подаци о потрошњи меса су и анкете, а резултати на такве анкете односе се на потрошњу меса у домаћинствима у Бањалучкој регији. Месо свиња у исхрани испитаници користе једном до два пута недељно у 38,3% случајева, месо говеда 32,2% испитаника. Месо јагњади никад не користи 43,3% испитаника. Месо живине три пута недељно користи у исхрани 43,7% испитаника. Учесници у анкети су у 3,9% случајева одговорили да не користе месо живине, 8,4 % не користи месо свиња, а 25,6% не користи месо говеда. Преко половине испитаника (55,2%) месо купује два пута недељно и више. Више од једне петине (21,6%) купује месо 1-2 пута недељно. Исто учешће испитаника (9,3% и 9,0%) месо купује мање од једном недељно, али више од једном месечно, односно мање од једном месечно. На куповину меса приближно исти број анкетираних лица (43,0% , односно 43,5%) троши недељно 10 до 20 КМ, односно више од 20 КМ, а 13,5% је оних који троше мање од 10 КМ. Из одговора на питање које се односи на „Месо је важан саставни део исхране моје породице“ више од две трећине испитаника (71,7%) је сагласно са наведеном констатацијом, 11,0% је неутрално, а 17,3% се не слаже са наведеном констатацијом. Основни разлози конзумирања меса према наводима испитаника су то што има: добар укус (71,6%), хранљиво је (70,9%), прикладно је за званичне прославе (67,9%), лако се уклапа са остатком оброка (71,7%), лако се припрема (64,2%), добар је начин да поторшач покаже своје кулинарске вештине (52%), неопходно је у исхрани деце (71,4%) и део је наше кулинарске традиције (67,5%). За понуђени одговор „Јефтино је у односу на квалитет“ најчешћи одговор је „Не слажем се“(40,1%), затим „Неутралан сам“ (31,9%) и „Слажем се“ (28,0%). Резултати указују на чињеницу да се у исхрани испитаника из ове анкете најчешће користи месо живине, а затим месо свиња. На трећем месту по потрошњи је месо говеда, док се најмање користи месо јагњади.

Hilly-mountainous region of our country extends over 14 areas and 52 municipalities in the two regions of central Serbiawith more than 1.200.000 inhabitants what makes 17% of total number of inhabitants in the Republic of Serbia. Livestock breeding and processing of animal products are organised in 204.659 households which use 784.701 arable land on which they raise 251.245 cattle and 616.660 sheep and goats. Out of this number (204.659) 147.133 farms or 72% out of total number have meadows and pastures at their disposal, 2.84 hectares per farm and total surface of 4.77 ha on average. Majority of these households are engaged in making smaller quantities of brined cheese in a traditional way mostly for their own needs but also for a local market and beyond (Sjenica, Zlatar, Zlatibor, Homolje, Svrljig, etc.), some households are engaged in production of hard cheese - kachkaval (Pirot, Bela Palanka, Dimitrovgrad) and in processing the sheep and beef meat (Sjenica, Zlatibor, Pirot). Th ese households have preserved a tradition of raising cattle and sheep and traditional way of making special kinds of white brined cheese and kajmak, as well as special dried meat the products which are nowadays regarded as real treasure of our country. Organised goods production in the next period of development can be run by 45.117 agricultural households whichnow raise 231.535 heads of cattle, 462.082 sheep and goats in total what accounts for 92% and 76% in total number of animals in these regions, respectively. Th ese households raise about 5 farmanimalson average, that is, 0.9 farmanimals per hectare of land surface. By improved technology of utilisation of meadows and pastures and by better organisation of production and processing of animal products and by linking production and trade these households could off er to market about 1.2 billion kg of milk annually, 270.000.000 kg of brined cheese and about 72.600.000 kg of beef meat in halves and lambs in trunks for export. Annual value of livestock production from hilly-mountainous region may reach about one billion euros (about 912 million euros). What should immediately be done in order that this pre-calculation be successfully realised. In the fi rst place, a farm land should be extended along with the number of animals per farm and then the households should acquire a new equipment both for production and native processing of products, then hygiene of raw material and fi nal product should be improved while the producers should educate themselves and improve their knowledge on animal production. Secondly, an original principles of technology for all the products (brined cheese, dried meat products, fattening bullcalves and young lambs) should be improved while the information on the region of making and processing these products should be stated visibly on wrapping material along with the information on raw material. Moreover, a whole technological process should be equalised at all stages of production and wrapping of product should also be paid a due attention to, etc. Th irdly, for all the products originating from autochthonous technology it is necessary to establish general norms of classifi cation and standardisation according to the international standards and regulations on autochthonous production, geographical region and basic parameters of quality for each kind of product. It means that these products must have good marketing, promotion and distribution in order to attain competitive price and win new markets and fi nally to make profi t. Th e state government should support this programme of development of our hilly-mountainous region which is rich in natural resources while the people there live in poverty. Задатак овог рада је био да испита утицај различитог односа органског и неорганског селена на производне резултате и квалитет меса бројлера. Као извор неорганског селена користио се натријум-селенит, а органског селена, селенизирани квасац. У експеримент је било укључено 600 пилића провинијенце Cobb 500, подељених у шест група. Сем у контролној групи где селен није додаван, у осталим огледним групама концентрација додатог селена износила је 0,6 mg/kg хране. Поред контролне групе, експеримент је имао још пет група које су имале различит однос неорганског и органског селена. Испитивани су следећи производни параметри : телесна маса пилића, дневни прираст, конзумација хране и конверзија хране. Прва мерења су урађена по доласку пилића на фарму и понављана су сваких 7 дана до краја огледа (42 дана). На крају това утврђена је статистички значајна разлика у телесној маси између контролне и експерименталних група, које су међу собом биле врло хомогене. Пилићи контролне групе су имали и нижи просечни дневни прираст од експерименталних група, док су оствариле већу конзумацију хране од огледних група. Конверзија хране је најбоља код групе која је имала имплементиран само неоргански селен, а најслабија код контролне групе. Завршетком това, после 42 дана, на кланицу је послато по 12 пилића из сваке групе. Циљ је био утврдити мере конформације трупа пилића, мере кланичне обраде трупова, као и конфекцијске мере. Добијени резултати мера конформације трупа указују да постоји значајна разлика између контролне и огледних група само код дужине кобилице, где је ова мера значајно мања код контролне групе. Код осталих мера конформације трупа (грудни угао, дужина груди и обим батака) нису утврђене статистички значајне разлике. Резултати кланичне обраде трупа указују да је класична обрада трупа имала најмању масу код контролне групе али статистички исте важности као и обраде код треће и четврте групе, а различите од осталих експерименталних група... The task of this study was to investigate the effect of different relations of organic and inorganic selenium in diet on production performance and meat quality of broilers. As a source of inorganic selenium used to sodium selenite, and organic selenium selenized yeast. The experiment included 600 chickens of Cobb 500 broilers were divided into six groups. Except in the control group where selenium is not added in the other experimental groups added selenium concentration was 0.6 mg / kg food. In addition to the control group, experiment had five groups with a different ratio of inorganic and organic selenium. We studied the following production parameters: body mass of chicks, daily gain, feed intake and feed conversion. The first measurements were taken after the arrival of chickens on the farm and were repeated every 7 days until the end of the experiment (42 days). At the end of the fattening period, a statistically significant difference in body weight between the control and experimental groups, which were among them were very homogeneous. Chickens control group had a lower average daily gain of the experimental group, while the realized higher feed intake of the experimental groups. Feed conversion ratio was best in the group that had implemented only inorganic selenium, and weakest in the control group. Upon completion of addition, after 42 days, the slaughter is on 12 chickens from each group. The aim was to determine the extent testom, measures slaughter carcasses, as well as ready-made measures. The results carcass conformation measures indicate that there is a significant difference between the control and experimental groups only in the length of the keel, where the measure is significantly lower in the control group. For other measures of carcass (breast angle, length of breast and thigh girth) showed no statistically significant differences. Results slaughter processing of the hull indicate that the classic treatment of the hull had the lowest weight in the control group but statistically the same importance as the treatment at the third and fourth groups, a variety of other experimental groups...

Предмет докторске дисертације је развој јестивих, биоразградивих, активних филмова на бази скроба са додатком есенцијалних уља зачинског биља и њихова примена за паковање одабраног прехрамбеног производа. Глобални допринос овог рада иде у прилог развоју области биоразградивих, јестивих, активних амбалажних материјала. Основно истраживање се базира на испитивању могућности добијања скробних филмова влажним поступком ("casting" метода), модификацији врста и количина додатих компонената које улазе у састав филмогене смеше и карактеризацији добијених филмова ради побољшања особина формираног филма. Својства значајна за примену добијених материјала су физичко-хемијске особине (садржај влаге, способност бубрења), механичке особине (дебљина, затезна јачина и издужење при кидању), баријерне особине (пропустљивост водене паре), структурне (АТР-ФТИР спектрометрија и дифракција X зрака), термалне, оптичке и биолошке особине (антимикробна и антиоксидативна активност). Обзиром на велики број параметара који утичу на формирање филма, као и на особине формираних филмова, испитано је међусобно деловање више фактора на могућност продукције и особине добијеног филма. Избор и оптимизација процесних параметара и моделовање продукције филмова изведено је имплементирањем компјутерске и аналитичке методологије. На основу приказаних резултата, може се закључити да је синтетисан активан јестиви скробни филм оптимизованих физичко-хемијских, механичких, баријерних, термалних и биолошких карактеристика. Синтетисаном скробном филму смањена је способност бубрења, унапредјене су механичке особине (вредности затезних јачина опадају, уз истовремено повећање вредности издужења при кидању). Значајан је утицај додатка есенцијалних уља на вредности пропустљивости водене паре, а њиховим додатком постигнута је и изражена биолошка активност. На основу детаљне карактеризације, одабрани су филмови оптимизованих својстава за примену у заштити осмотски дехидрираног свињског меса током периода складиштења. Осмотски дехидрирано месо је упаковано у комерцијалан високо-баријеран амбалажни материјал у атмосферским условима и у условима модификоване атмосфере, док је други део узорака претходно заштићен скробним премазом са оптимизованим особинама, а затим упакован на исти начин. Утицај оптимизоване скробне превлаке на осмотски дехидрирано месо испитан је праћењем промена параметара квалитета током складиштења. Резултати су показали да јестиви, активни скробни премаз значајно доприноси стабилности упакованог осмотски дехидрираног меса и то у погледу оксидације липида, микробиолошке стабилности и позитивног утицаја на сензорне карактеристике осмотски дехидрираног меса током периода складиштења. Predmet doktorske disertacije je razvoj jestivih, biorazgradivih, aktivnih filmova na bazi skroba sa dodatkom esencijalnih ulja začinskog bilja i njihova primena za pakovanje odabranog prehrambenog proizvoda. Globalni doprinos ovog rada ide u prilog razvoju oblasti biorazgradivih, jestivih, aktivnih ambalažnih materijala. Osnovno istraživanje se bazira na ispitivanju mogućnosti dobijanja skrobnih filmova vlažnim postupkom ("casting" metoda), modifikaciji vrsta i količina dodatih komponenata koje ulaze u sastav filmogene smeše i karakterizaciji dobijenih filmova radi poboljšanja osobina formiranog filma. Svojstva značajna za primenu dobijenih materijala su fizičko-hemijske osobine (sadržaj vlage, sposobnost bubrenja), mehaničke osobine (debljina, zatezna jačina i izduženje pri kidanju), barijerne osobine (propustljivost vodene pare), strukturne (ATR-FTIR spektrometrija i difrakcija X zraka), termalne, optičke i biološke osobine (antimikrobna i antioksidativna aktivnost). Obzirom na veliki broj parametara koji utiču na formiranje filma, kao i na osobine formiranih filmova, ispitano je međusobno delovanje više faktora na mogućnost produkcije i osobine dobijenog filma. Izbor i optimizacija procesnih parametara i modelovanje produkcije filmova izvedeno je implementiranjem kompjuterske i analitičke metodologije. Na osnovu prikazanih rezultata, može se zaključiti da je sintetisan aktivan jestivi skrobni film optimizovanih fizičko-hemijskih, mehaničkih, barijernih, termalnih i bioloških karakteristika. Sintetisanom skrobnom filmu smanjena je sposobnost bubrenja, unapredjene su mehaničke osobine (vrednosti zateznih jačina opadaju, uz istovremeno povećanje vrednosti izduženja pri kidanju). Značajan je uticaj dodatka esencijalnih ulja na vrednosti propustljivosti vodene pare, a njihovim dodatkom postignuta je i izražena biološka aktivnost. Na osnovu detaljne karakterizacije, odabrani su filmovi optimizovanih svojstava za primenu u zaštiti osmotski dehidriranog svinjskog mesa tokom perioda skladištenja. Osmotski dehidrirano meso je upakovano u komercijalan visoko-barijeran ambalažni materijal u atmosferskim uslovima i u uslovima modifikovane atmosfere, dok je drugi deo uzoraka prethodno zaštićen skrobnim premazom sa optimizovanim osobinama, a zatim upakovan na isti način. Uticaj optimizovane skrobne prevlake na osmotski dehidrirano meso ispitan je praćenjem promena parametara kvaliteta tokom skladištenja. Rezultati su pokazali da jestivi, aktivni skrobni premaz značajno doprinosi stabilnosti upakovanog osmotski dehidriranog mesa i to u pogledu oksidacije lipida, mikrobiološke stabilnosti i pozitivnog uticaja na senzorne karakteristike osmotski dehidriranog mesa tokom perioda skladištenja. The subject of the doctoral thesis is the development of edible biodegradable active films based on starch with the addition of herbal essential oils and their application in packaging of selected food products. Basic research is examination of the possibility of obtaining starch films by wet method ("casting" method), modification of the types and amounts of added components that constitute the film forming mixture and characterization of films in order to improve the characteristics. Characteristics important for the implementation of the obtained materials include the physico-chemical properties (moisture content, solubility), mechanical properties (thickness, tensile strength and elongation at break), barrier properties (water vapor permeability), structural (ATRFTIR spectroscopy and X ray diffraction), thermal, optical and biological properties (antimicrobial and antioxidant activity). Considering the large number of parameters that affect the film formation, as well as the properties of the films, interactions of multiple factors on the possibility of production and properties of the produced film were examined. Selection and optimization of process parameters and modeling of film production were performed by implementing computer and analytical methodology. Based on these results, it can be concluded that it were synthesized active edible starch films with optimized physico-chemical, mechanical, barrier, thermal and biological characteristics. Synthesized starch film had reduced solubility, improved mechanical properties (tensile strength values declined, while elongation at break increased). There is a significant influence of the addition of essential oils on the water vapor permeability value with expressed biological activity. The global contribution of this investigation favors the development of the biodegradable edible active packaging materials scientific field. Based on the detailed characterization, film with optimized characteristics was selected for protection of osmotically dehydrated pork during storage. Osmotically dehydrated meat is wrapped in commercial high-barrier packaging material in atmospheric conditions and in conditions of modified atmosphere, while the second part of the sample is packaged in the same way, but previously protected with optimized starch edible coating. Influence of optimized starch coating on the osmotic dehydrated meat was examined by monitoring the quality change during storage in order to preserve the quality and shelf life of packed meat. The results showed that an edible starch based active coating contributes significantly to the stability of the packaged osmotically dehydrated meat during the storage period in terms of lipid oxidation, microbiological stability and positive influence on the sensory characteristics of the osmotically dehydrated meat during the storage period.

A study was conducted for the meat production potential of two-summer mirror common carp, grown under conditions of autochthonous (based only on natural feed in ponds) and allochthonous (with additional feeding with concentrated fodder) production ecosystems. The highest carcass yield and fillet content were reported for the allochthonous variant carps. The highest content of water and proteins (as in fresh sample as well as an absolute dry matter) had had fishes, reared on natural feed only. They had had lower quantity of fat in the meat. With highest energy values was the meat of the fishes, grown with concentrated fodder additional feeding. While the tendency for the energy at the expense of proteins was opposite – the highest value was reported for fishes from natural feeding variant.
