This study evaluated the solubility profiles of quinoa grain proteins and applied a complete process for the isolation of its main protein fractions, namely: albumins, globulins, prolamins and glutelins, which corresponded to 26.96%, 41.3%, 1.7% and 23.16% of the total protein content, respectively. When these fractions were digested with pepsin followed by pancreatin, the degrees of hydrolysis achieved varied between 26.62% (for unheated globulin fraction) and 38.97% (for unheated glutelin), with casein reached 33.73% hydrolysis. After heating, the globulin hydrolysis degree increased to 34.7%, not significantly differing from casein. These results reflect its good susceptibility to hydrolysis by digestive enzymes, and this observation is reinforced with assays with pepsin, trypsin and chymotrypsin tested separately. Globulins, the largest protein fraction, showed promising results in additional assays regarding the amino acid profile, with limitation only for lysine in relation to the FAO standard, and the potential for releasing bioactive peptides after digestion. Although pepsin-digested globulin inhibited only 5% of ACE activity under the conditions tested, after 24h with the addition of pancreatin, the inhibition was 100%. Antioxidant activity (DPPH assay) also indicated very similar results, when hydrolysis with pepsin was inefficient in releasing antioxidant peptides, while hydrolysis by pancreatin led to 35 times greater results.

Em função de sua versatilidade e indicativos de alto valor nutritivo, a quinoa tem despertado crescente interesse dos pesquisadores das áreas de ciências nutricionais e de alimentos, bem como dos consumidores, que visam cada vez mais ao consumo de produtos associados à promoção da saúde ou alternativos para aqueles com necessidades específicas, como os celíacos, que encontram na quinoa uma possibilidade de consumo. Neste trabalho, avaliaram-se alterações relativas à qualidade proteica dos grãos, nos seguintes aspectos: a atividade de inibição de proteases e a digestibilidade proteica in vitro, em função de modificações sofridas por processo de germinação de 2, 4 e 6 dias, além de diferentes tipos de processamentos térmicos, incluindo-se aquecimentos brandos, a 40 ºC e 45 ºC, e cozimento sob fervura. O processo de germinação não proporcionou melhorias na digestibilidade proteica dos grãos de quinoa, embora tenha sido possível verificar uma redução na atividade de inibição de tripsina ao longo da germinação. Diversamente, os processos envolvendo tratamento térmico se mostraram efetivos em melhorar a qualidade proteica dos grãos, ainda quando as temperaturas de 40 ºC e 45 ºC foram utilizadas. Utilizando-se temperatura de apenas 45 ºC para tratamento dos grãos, seus valores de digestibilidade proteica foram aumentados a ponto de serem equivalentes ao observado para o cozimento tradicional dos grãos, realizado sob fervura, o que pode ser uma observação positiva aos que optam por consumo de grãos minimamente processados.Due its versatility and indications concerning its high nutritive value, quinoa has attracted growing interest from food and nutrition researchers, as also from consumers who seek healthier or alternative food products. These foods are of particular relevance for people with specific needs such as those suffering from celiac disease. In this study changes occurring in some of the nutritional characteristics of the quinoa seed proteins, such as protease inhibition and in vitro protein digestibility, were evaluated during the germination process (2, 4 and 6 days) and after different heat treatments, including mild heating at 40 ºC and 45 ºC, and boiling. The germination processes evaluated here caused a significant decrease in the trypsin inhibition activity, but did not increase protein digestibility. However all the heat treatments used caused improvements in protein digestibility, even at low temperatures. The heat treatment at 45 ºC for 30 minutes was sufficient to increase the protein digestibility to the same level as that produced by boiling, which could be a positive observation for those who consume minimally processed grains.

O objetivo deste trabalho foi conhecer o perfil socioeconômico e o estado nutricional de alunos beneficiários do Programa Nacional de Alimentação Escolar inseridos em famílias cadastradas em programas de transferência de renda e a situação de segurança alimentar dos domicílios. Trata-se de um estudo transversal realizado com 425 alunos matriculados em escolas públicas municipais de Guariba, São Paulo. Para a avaliação nutricional foram consideradas as variáveis antropométricas, peso e altura, e o Índice de Massa Corporal (IMC). Para a investigação da situação de Segurança Alimentar utilizou-se a Escala Brasileira de Medida da Insegurança Alimentar - EBIA. Os resultados indicaram que 37,65% das famílias estavam inscritas em algum programa de transferência de renda. Dos alunos vinculados a estes tipos de programas, 61,25% foram classificados como eutróficos. O excesso de peso foi prevalente naqueles em que os rendimentos eram inferiores a R$600,00 (38,96%). Entre as famílias classificadas em situação de Segurança Alimentar, 28,17% estavam vinculadas a programas de transferência de renda e apenas 5% das famílias com este tipo de vínculo eram atingidas pela Insegurança Alimentar grave. Os resultados indicam que existe uma tendência de adequação tanto do estado nutricional quanto da Segurança Alimentar entre aqueles que recebem benefício monetário vinculado aos programas de transferência direta de renda.

Introduction: Data on safety and efficacy of endovascular thrombectomy (EVT) for acute ischemic stroke in older patients are limited and controversial, and people aged 80 or older were under-represented in randomized trials. Our aim was to assess EVT effect for ischemic stroke patients aged ⩾80 at a nationwide level., Patients and Methods: The cohort included stroke patients undergoing EVT from the Italian Registry of Endovascular Treatment in Acute Stroke (IRETAS). Patients were a priori divided into younger and older groups (<80 vs ⩾80). Primary outcome was good functional outcome (modified Rankin scale, mRS, 0-2 at 90 days). Secondary outcomes were symptomatic intracranial hemorrhage (sICH), successful reperfusion, EVT abortion. Propensity score matching (PSM) was performed between age groups for baseline features, functional status, stroke severity and neuroradiological features. Logistic regression was implemented to test the weight of age group on the predefined outcomes., Results: Overall, 5872 individuals (1:1 matching, n  = 2936 aged ⩾80 vs n  = 2936 < 80) were matched from 13,922 records. In ⩾80 group 34.1% had good functional outcome, vs 51.2% in <80 group (absolute difference = -17.1%, p  < 0.001), with a 4.4% excess in EVT abortion. Age ⩾80 was a negative independent predictor of good functional outcome (aOR = 0.4, 95% CI = 0.3-0.5), but had no impact on sICH., Discussion and Conclusion: Age ⩾80 years represents a consistent predictor of worse functional outcome, independently from successful reperfusion and sICH.
