El envejecimiento es una realidad global que va acompañada del incremento de la polifarmacia. En esta etapa vital surgen como actores relevantes los cuidadores, pues su intervención impacta en la seguridad del proceso de uso de los medicamentos y en la calidad de vida del paciente al que asisten. Cómo el conocimiento sobre los tratamientos que los cuidadores supervisan para el paciente a su cargo condiciona los resultados en salud de los medicamentos, este estudio tiene como objetivo principal la caracterización de los cuidadores de pacientes usuarios de analgésicos opioides y la identificación de factores que incrementen el riesgo de aparición de Problemas Relacionados con la Medicación (PRM). Los resultados revelan que el perfil del cuidador afecta en resultados en salud de este grupo terapéutico, tanto en la prevalencia como en tipo de PRM. De los 63 pacientes usuarios de analgésicos opiáceos en seguimiento farmacoterapéutico durante este estudio, 17 (27 %) contaban con cuidadores. La figura del cuidador de este estudio se erige como predominantemente femenina (61,1 %). Atendiendo a PRM y parentesco, se observa mayor prevalencia de PRM cuando son hijos o personal externo. Analizando la farmacoterapia de estos cuidadores se detecta que un 4,8 % ha iniciado un tratamiento antidepresivo y 3,2 % tratamiento hipnótico tras convertirse en cuidador de estos pacientes. El Test Zarit revela que 29,4 % de los cuidadores de estos pacientes manifiestan sobrecarga. Concluimos que la Atención Farmacéutica debe considerar la oportunidad y pertinencia de diseñar e implementar protocolos de intervención y educación enfocados en los cuidadores.

Introducción: la Intervención Farmacéutica busca optimizar y racionalizar el uso, la efectividad y la seguridad de los medicamentos dispensados resolviendo problemas relacionados con el medicamento (PRM) y resultados negativos asociados a la medicación (RNM). Objetivo: evaluar las Intervenciones Farmacéuticas realizadas a usuarios de benzodiacepinas durante la pandemia COVID-19 desde una Farmacia Comunitaria. Método: estudio prospectivo observacional, descriptivo y transversal (código AEMPS: DAA-CLO-2020-01) de las Intervenciones Farmacéuticas llevadas a cabo por una farmacia comunitaria tinerfeña entre agosto 2020 y febrero 2021. Resultados: un total de 306 Intervenciones Farmacéuticas fueron realizadas sobre 127 pacientes. La educación sanitaria y la información personalizada sobre el medicamento fueron las Intervenciones Farmacéuticas mayoritarias tras detectar entre los pacientes un alto grado de desconocimiento sobre las benzodiacepinas usadas. Las Intervenciones Farmacéuticas que se acompañan de derivación al médico alcanzan el 37,8 % tras detectar PRM y/o RNM o identificar al paciente como candidato para deprescripción. Estas derivaciones incluyen a los pacientes con un estado de depresión muy alto según el test Euroqol 5D-3L. La Intervención Farmacéutica con derivación al Servicio de Seguimiento Farmacoterapéutico se realiza en el 3,1 % de los pacientes. El grado de aceptación de la Intervención Farmacéutica por parte de los pacientes alcanza el 98,4 %. Conclusiones: el alto porcentaje de aceptación de las Intervenciones Farmacéuticas refuerza el valor de la Farmacia Comunitaria en la optimización y racionalización del uso de benzodiacepinas y fortalece el vínculo farmacéutico-paciente. La pandemia COVID-19 dificultó la colaboración farmacéutico-médico, a pesar de la existencia de protocolos telemáticos de comunicación entre sanitarios.

Abstract Background The eruption of the Tajogaite volcano began on the island of La Palma on September 19, 2021, lasting for 85 days. This study aims to present the design and methodology of the ISVOLCAN (Health Impact on the Population of La Palma due to the Volcanic Eruption) cohort, as well as the preliminary findings from the first 1002 enrolled participants. Methods A prospective cohort study was conducted with random selection of adult participants from the general population, with an estimated sample size of 2600 individuals. The results of the first 857 participants are presented, along with a group of 145 voluntary participants who served as interveners during the eruption. Data on epidemiology and volcano exposure were collected, and participants underwent physical examinations, including anthropometry, blood pressure measurement, spirometry, and venous blood extraction for toxicological assessment. Results In the general population (n = 857), descriptive analysis revealed that the participants were mostly middle-aged individuals (50.8 ± 16.4), with a predominance of females. Before the eruption, the participants resided at a median distance of 6.7 km from the volcano in the Western region and 10.9 km in the Eastern region. Approximately 15.4% of the sample required evacuation, whose 34.8% returning to their homes on average after 3 months. A significant number of participants reported engaging in daily tasks involving cleaning of volcanic ash both indoors and outdoors. The most reported acute symptoms included ocular irritation, insomnia, mood disorders (anxiety-depression), and respiratory symptoms. Multivariate analysis results show that participants in the western region had a higher likelihood of lower respiratory tract symptoms (OR 1.99; 95% CI:1.33–2.99), depression and anxiety (OR 1.95; 95% CI:1.30–2.93), and insomnia (OR 2.03; 95% CI:1.33–3.09), compared to those in the eastern region. Conclusion The ongoing follow-up of the ISVOLCAN cohort will provide valuable insights into the short, medium, and long-term health impact related to the material emitted during the Tajogaite eruption, based on the level of exposure suffered by the affected population.

Dried fruits are one of the most frequently consumed products by the population. Drying fruits prolongs their shelf life and also concentrates more nutrients. However, these products may contain dangerous levels of trace elements that can be harmful to health. The content of trace elements (Al, B, Ba, Cd, Cr, Li, Ni, Pb, Sr, V) in 42 samples of different dried fruits (dates, prunes, sultanas, dried apricot kernels, and dried figs) was determined by inductively coupled plasma spectrometry (ICP-OES). The concentrations of Al found in prunes (12.7 ± 5.13 mg Al/kg) and the concentrations of B found in dried plums (6.26 ± 4.45 mg B/kg) were significantly higher (p < 0.05). Regarding the risk assessment, the percentages of contribution to the maximum recommended intakes by Li in all the dried fruits studied stand out, reaching 35.3% in the case of dried plums. This study concludes that the recommended daily intake of dried fruit (30 g/day) does not pose a toxicological risk about these trace elements.

Coffee is part of our daily lives since it is a drink with a symbolic value, both in our social relationships and as a stimulating drink. The main objective of this paper is to conduct a risk characterization of fluoride overexposure from the consumption of these beverages; for this purpose, in the present study, the fluoride concentration was determined in 80 samples of different brands of coffee commonly consumed in the Canary Islands, and the risk derived from their intake was then evaluated. Significant differences (p < 0.05) were found between the coffee brands soluble Nescafé Classic®, Saimaza®, Auchan®, Tirma® soft blend, and Hacendado® and the other analyzed brands. The brand that recorded the highest mean fluoride levels is “Hacendado descafeinado®” (0.308 mg/L). The problem with coffee is not the fluoride it contains but the fact that, according to the survey results, most coffee drinkers brew their coffee with tap water (over 51% of respondents use tap water). The results of the fluoride content in coffee prepared with tap water from the different areas of Tenerife in the Canary Islands (metropolitan, northern, and southern areas) have reported higher concentrations of fluoride: north (max. concentration found of 16.68 mg/L), south (max. concentration found of 8.47 mg/L) and metropolitan (max. concentration found of 4.73 mg/L). Coffee has not been identified as a risk of dietary overexposure to fluoride; however, the use of tap water for its brewing has been identified as a factor that considerably increases its concentration. Therefore, the use of bottled water is recommended, especially in regions such as the Canary Islands, which have high concentrations of fluoride in their water.

Background: Tolerance and dependence stand out as the most relevant risks observed during benzodiazepine (BZD) treatments. Objectives: To evaluate the degree of dependence of patients on BZD treatments using the Tyrer test; to define a profile of patients at risk of developing BZD dependence; and to discuss the role of the pharmaceutical care offered by the community pharmacy during dispensing. Methods: Prospective cross-sectional descriptive observational study (August 2020–February 2021) involving 127 patients using BZD. They voluntarily answered a questionnaire during the dispensing pharmaceutical care service. The study was evaluated and codified (code: DAA-CLO-2020-01) by the Spanish Agency for Drugs and Health Products (AEMPS), and statistical analysis was performed with SPSS 25.0. Results: 19.05% of patients using BZD were suspected of suffering from BZD tolerance, and 77.88% of all patients were identified as being at a high risk of BZD dependence. The Tyrer test for dependence indicated a mean score of 5.59 out of 13 points. An 18-fold increased risk of developing dependence was detected in the case of coexistence of high anxiety or depression. Conclusions: The community pharmacy, through protocolized care practices and supported by tools such as the Tyrer test, can play a decisive role in the detection, prevention, and resolution of the risks associated with BZD treatments.

Introducción: La fenilcetonuria es el trastorno hereditario más frecuente del metabolismo de los aminoácidos y su abordaje suele centrarse en dietas restringidas en fenilalanina, un aminoácido presente en el edulcorante aspartamo habitualmente usado como excipiente en tecnología farmacéutica. Objetivo: El objetivo principal es la revisión de los medicamentos sin receta comercializados en España hasta marzo de 2023 y que contienen aspartamo en su composición. Método: Se realizó una revisión en la base de datos BOT plus de todos los medicamentos comercializados en España que contienen aspartamo. Se seleccionaron solo los MSR. Se consultaron las fichas técnicas en el Centro de información online de medicamentos de la AEMPS (CIMA), y los datos obtenidos se registraron en una tabla. Resultados: Se obtuvieron 570 medicamentos; 58 eran MSR. Cuando exista petición de MSR con aspartamo en pacientes con fenilcetonuria, en el SIF, tras su evaluación, en el 100% de los casos, el farmacéutico aplicando el Servicio de Indicación Farmacéutica podría indicar un MSR alternativo, con el mismo principio activo pero sin aspartamo como excipiente. Conclusiones: La actuación del farmacéutico comunitario para aplicar el SIF es muy importante en pacientes con fenilcetonuria. Existen medicamentos que no requieren prescripción y se pueden indicar en estos pacientes. El farmacéutico debe tener a su disposición las herramientas necesarias que le faciliten el SIF con este tipo de enfermos.

This study investigates the impact of varying environmental conditions on the metal composition within the tissues of Sparisoma cretense, contributing to the understanding necessary to offer scientifically sound advice regarding the health status of this species. This knowledge extends beyond fishery production, encompassing implications for food security. The data span the years 2022 and 2023, encompassing both cold and warm climatic seasons. The concentrations of various metals, such as Al, Zn, Cd, Pb, Fe, and Cu, exhibited noteworthy variations across the islands, with significant increases recorded in 2023, particularly during the warm season. The intricate interplay between multiple factors shaped the availability of the analyzed elements in S. cretense. Factors such as rising temperatures during the warm season increased biological activity in marine ecosystems, seasonal fluctuations in weather conditions, water quality, and anthropogenic influences, all contributing to the observed variations in metal concentrations. Additionally, the geological composition of each island and the patterns of marine currents and sediment transport play pivotal roles in these differences. Comprehensive scientific research, monitoring, and environmental surveillance are essential for a holistic understanding of this variability and providing valuable insights for the conservation and management of marine ecosystems in the Canary archipelago.

Ocean pollution poses a significant issue in the marine ecosystem. Coastal areas are particularly impacted by this pollution, and consequently, organisms associated with these coasts bear the brunt of its effects. Therefore, the presence of robust bioindicators, such as the shrimp species Palaemon elegans, is critically important. In this study, 20 P. elegans specimens were examined in each of the five areas on Gran Canaria Island. Water samples were collected to assess the potential existence of elevated concentrations. Significant discrepancies were observed in the levels of Al and Li across all zones, except those previously mentioned. The highest concentrations were recorded in Arguineguín (Southern sector), reaching 49.14 ± 4.51 mg/kg (Al) and 47.64 ± 2.86 mg/kg (Li). The authors contend that P. elegans proves to be a reliable bioindicator for tourist and port-related pollution, specifically for the metals Al, Zn, Cd, Pb, Ni, Fe, B, and Li analyzed in this research.

Sports nutrition supplementation is a widespread practice. Whey protein supplements contribute not only to protein intake but also to dietary exposure to minerals. The labelling present provides the percentage of protein and rarely refers to other components, such as potentially toxic elements such as B, Cu, Mo, Zn, and V that present tolerable upper intake levels set by the European Food Safety Authority. The percentage of protein declared on supplement labelling was checked using the Kjeldahl method, and the levels of Ca, Mg, K, Na, Ba, B, Co, Cu, Cr, Sr, Fe, Li, Mn, Mo, Ni, V, Zn, and Al were analyzed by ICP-OES with the aim of characterizing the protein and mineral contents of isolate and concentrate whey protein supplements representative of the European market. The protein content was 70.9% (18–92.3%) and statistically significant differences were observed between the declared and real protein percentages. Among the minerals, K (4689.10 mg/kg) and Ca (3811.27 mg/kg) presented the highest levels, whereas Co (0.07 mg/kg) and V (0.04 mg/kg) showed the lowest levels. It was concluded that the quality and safety of these products needs to be monitored and regulated. A high degree of non-compliance with labelling claims was detected. Furthermore, the contributions to the recommended and tolerable intakes among regular consumers need to be assessed.

The objective of this study was to study whether the metal concentrations in Sparisoma cretense and Serranus atricauda differ between different coastal areas around the island of Tenerife, Canary Islands and to study whether these species are good bioindicators of pollution. Thirty samples of each species were collected from three parts of the coastline around the island, and samples of muscle and liver tissue were taken from the collected specimens. The determination of the metal content (Al, Cd, Pb, Ca, K, Mg, Na, B, Ba, Cr, Cu, Fe, Li, Mn, Mo, Ni, Zn) was performed by inductively coupled plasma optical emission spectrometry (ICP-OES) before conducting a PERMANOVA analysis. The mean metal concentration was significantly higher in the liver tissue than in the muscle tissue of the two species studied. S. atricauda specimens had a larger number of metals with a higher concentration, and the samples from the northern and eastern zones were found to have a higher concentration of elements than those from the southern zone. The northern and eastern zones were found to have a higher concentration of metals and trace elements than the southern zone, which could be explained by the fact that these zones are more polluted due to their higher population density.

Bioaccumulation is the process by which living organisms accumulate substances, such as pesticides, heavy metals, and other pollutants, from their environment. These substances can accumulate in the organism’s tissues over time, leading to potential health risks. Bioaccumulation can occur in both aquatic and terrestrial ecosystems, and can have a significant impact on the health of both humans and wildlife. The objective of this study is to find out if the concentrations of metals in the tuna species of the Canary Islands are suitable for human consumption and if they pose a health risk. Fifteen samples of Acanthocybium solandri, Katsuwonus pelamis, Thunnus albacares, Thunnus obesus and Thunnus thynnus present in canaries were analyzed. Ten grams of muscle were taken from each specimen and the metals Al, Cd, Cr, Cu, Fe, Li, Ni, Pb and Zn were determined by Inductively Coupled Plasma Optical Emission Spectrometry (ICP-OES). The tuna species that presented more metals with a higher concentration compared to the others was T. thynnus, reaching up to 100 times more than the other studied species in Fe content with 137.8 ± 100.9 mg/Kg, which may be due to the fact that it is the largest species that reaches ages of more than fifteen years. The species Thunnus thynnus should not be suitable for commercialization according to the current legislation on the concentrations of Cd in blue fish, since 75% of the specimens studied exceeded the concentration legislated for Cd. A total of 40% of the studied specimens of this this species exceeded the legislated values for the concentration of Pb in oily fish meat, so this species must be monitored to ensure that it does not pose a risk to human health.

The Canary Islands, located in the Atlantic Ocean, are an archipelago of volcanic origin which, for decades, has been affected by natural fluoride contamination in the water supply of some of its islands, mainly the island of Tenerife. In addition, recent volcanic eruptions in the archipelago and the increased demand for water supply have led to an increase in the fluoride content in other areas which, historically, were not affected. Fluoride content was determined in 274 water supply samples from the most populated islands of the Canary Islands (Tenerife and Gran Canaria) collected during the months of June 2021 to May 2022. The samples were analysed by fluoride ion selective potentiometry. The highest concentrations in Tenerife were found in the municipalities of Sauzal (7.00 mg/L) and Tegueste (5.39 mg/L), both water samples are over the parametric value of 1.5 mg/L set in the supply water legislation. In the Gran Canaria Island, the highest fluoride levels were found in Valsequillo and Mogán with 1.44 mg/L in both locations, but under the parametric fluoride value abovementioned. Consumption of just 1 L of water per day in the El Sauzal area would result in a contribution rate of 77% for adults and children over 15 years of age (Upper Level value of 7 mg/day) and 108% for children 9–14 years of age (UL value of 5 mg/day). The contribution rates increase considerably, reaching or exceeding 100% of the reference value (UL) with increasing consumption of 1 to 2 L of water per day. Therefore, it is considered that there is a health risk of overexposure to fluoride on the island of Tenerife. In the case of the island of Gran Canaria, it has been shown that even the consumption of 2 litres of water per day does not confer contribution rates that pose a health risk.

Users of benzodiazepines (BZDs) should have their quality of life monitored to minimize the risks associated with long-term treatments. The aim of this study is to use the EuroQol 5D-3L to analyze the quality of life of 127 patients under treatment with BZDs during the COVID-19 pandemic. The results show that lorazepam comprises 25.49% of all dispensing requests, and that the mean duration of BZDs treatments is four years (range: 0.3–25). When rating their general health status, BZDs users reported 59.29 points out of 100. Thirty-two percent of patients reported mobility problems; 16.5% reported having a lot of pain or discomfort despite being treated with BZDs, and 16.54% used a BZD together with an opioid analgesic. The EuroQol 5D-3L dimension “anxiety/depression” showed that, despite the use of BZDs, 48.2% of the patients reported being moderately anxious or depressed and 13.4% described themselves as very anxious or depressed. Nevertheless, 37.8% of BZDs users were identified as potential candidates to follow a BZD deprescription plan. In conclusion, BZDs users showed a low quality of life during the COVID-19 pandemic. Older patients and females have been identified as groups of patients that could benefit from integrating the use of the EuroQol 5D-3L instrument into the protocols of the pharmaceutical care follow up.

There are a large number of pests which are detrimental to plant production, specifically to banana cultivation, and the use of pesticides is the main method of control of these pests. Therefore, the number of active substances in pesticides has been steadily increasing since before the Second World War. There is growing consumer concern about the health effects of pesticide residues and there is certainly evidence of a link between pesticide exposure and the prevalence of chronic diseases. Therefore, it is of particular interest to study the presence of pesticide residues in bananas and their toxicological, agricultural and legal implications. In this study, the content of pesticide residues in bananas produced in the Canary Islands during a ten-year period from 2008 to 2017 was determined. A total of 733 samples of bananas were analysed during the study period, in which 191 different active substances were investigated, involving 103,641 assessments. The samples analysed were selected in such a way that they are representative of the banana sector in the Canary Islands as a whole, taking into account geographical and climatic factors, cultivation methods and the processing of bananas in packaging, which are the differentiating factors in the use of pesticides. The reference parameter for the residue investigation is the MRL (maximum residue limit).

Introducción: Las Especialidades Farmacéutica Publicitarias (EFP), son especialidades farmacéuticas de libre uso y dispensación sin receta. Los colorantes azoicos son conocidos por su potencial toxicidad en pacientes alérgicos al ácido acetilsalicílico(AAS), por ello, la exposición a éstos debe acompañarse de precauciones, advertencias y contraindicaciones de uso. Objetivos: Diseñar una guía de dispensación para prevenir la inseguridad por reacción cruzada con excipientes azoicos en pacientes alérgicos al AAS. Material y Métodos: Se obtuvo del BOT plus el listado de EFP comercializadas en España y se revisaron las fichas técnicas de la AEMPS y las fichas del BOT plus para la detección de discrepancias entre fichas y buscar alternativas seguras (también EFP) para aquellas con azoicos. Resultados: De las 1194 EFP evaluadas, 110 (9%) contenían algún azoico, AAS o salicilamida. De las 784 de administración oral: 18 contienen AAS, 4 incluyen salicilamida y 78 azoicos. Para las 78 EFP orales con excipientes azoicos, excepto en 2, se encontró una alternativa EFP del mismo grupo terapéutico que respetaba la misma vía de administración, pero en el 28,9% de los casos no la misma forma farmacéutica. Se detectaron 11 discrepancias entre las fichas técnicas de la AEMPS y del BOT plus. Fueron subsanadas comunicándolas al Consejo General de Colegios Oficiales de Farmacéuticos (CGCOF). Conclusiones: Esta guía resultará de gran utilidad para la Atención Farmaceútica(AF) en la dispensación e indicación de EFP con excipientes azoicos en pacientes alérgicos al AAS. Además de prevenir situaciones de inseguridad, enriquece los protocolos de AF disponibles para la práctica asistencial en la Oficina de Farmacia.

Instant soups and noodles are one of the most widely consumed commercial food products. These products are made from ingredients of animal (chicken, meat) and/or vegetable origin, in addition to various food additives that prolong the shelf life of the product. It should be noted that instant soups are a dehydrated product, whose water-removal process can increase the accumulation of contaminants, such as toxic metals (Al, Cd, or Pb), that are harmful to the health of consumers. The content of toxic metals (Al, Cd, and Pb) in a total of 130 samples of instant soups of different types (poultry, meat, and vegetables) was determined by ICP-OES (inductively coupled plasma–optical emission spectrometry). The Al content (32.28 ± 19.26), the Cd content (0.027 ± 0.016), and the Pb content (0.12 ± 0.13) in the vegetable soups were worth mentioning. Considering an intake of twenty grams (recommended by the manufacturer), the dietary intake of Al (19.56% of the TWI set at 1 mg/kg bw/week), the intake of Cd (6.59% of the TWI set at 2.5 µg/kg bw/week), and the Pb intake (16.18% of the BMDL set for nephrotoxic effects at 0.63 µg/kg bw/week and 6.84% of the BMDL set for cardiovascular effects at 1.50 µg/kg bw/week) in the population aged 3–10 years, instant soups are not recommended for the population aged 3–10 years, while their consumption does not pose a health risk for adults. However, it is necessary to consider the cooking water used in the preparation of these products, as it may increase exposure to these toxic metals, in addition to the rest of the diet.

Fluoride is present in various foods ingested daily. It has been demonstrated that the intake of high concentrations of fluoride, both in adults and children, can cause pathologies, among which dental fluorosis, osteoporosis and damage to the central nervous system stand out. The objective of this study was to determine the fluoride concentrations in 60 samples of ready-to-drink cold brewed coffee of different brands and types (expresso, cappuccino, macchiato and decaffeinated) by the fluoride ion-selective potentiometric method. A statistical analysis was also performed to discern the existence of differences between these categories. The highest fluoride concentration (1.465 mg/L) was found in espresso coffee followed by Macchiato (1.254 mg/L). Decaffeinated coffee is the one that presented the lowest fluoride concentration with 0.845 mg/L. The risk assessment was conducted considering different consumption scenarios (250, 500 and 750 mL/day). The UL (upper level) established by the EFSA (European Food Safety Authority) at 7 mg/day was used. The consumption of three servings poses no health risk; however, it confers a significant value of fluoride contribution to the diet.

Baby food from jars is made of meat, vegetables or fruits, and might be a valuable source of essential elements such as Na or K. However, these infant products could also be a source of toxic elements such as Al or Cd, which are dangerous to infants. In total, 45 samples of various kinds of baby food in jars (meat, vegetables, fruit and mixed) were analyzed using inductively coupled plasma spectrometry (ICP OES) with the aim of evaluating the daily intake of essential elements (K, Na, Ca, Mg, Fe, Zn, Cu, Co, Mo, Mn) and dietary exposure to toxic elements (Al, Cd, Pb, B, Ba, V, Sr, Li, Ni). Mixed jars registered the highest concentrations of Na, Ca, Zn, Fe. Al (8.22 ± 8.97 mg/kg wet weight) stands out in vegetable jars. In total, 130 g/day of mixed jars fulfills daily Zn and Ca requirements. These consumption scenarios (130 g/day, 250 g/day) supposed high Mn intakes (40 times higher than the recommended value), which could pose a risk to infants’ health. Pb, Ni, Cd and Al intakes exceed the maximum values. It is recommended to avoid the daily consumption of these products since it can pose a risk to the health of infants. The consumption of vegetable milk as a substitute for cow’s milk has increased in recent years. Of all the vegetable beverages on the market, soy is the most widely consumed. Soy is exposed to contamination by different chemical elements during harvesting. In this study, the concentration of fluoride in soy beverages was analyzed. Fluoride is an element that in high concentrations can be toxic, causing dental and bone fluorosis. The aims of the study were (i) to analyze the fluoride concentration in 30 samples in the most popular brands (A-Brand, B-Brand, C-Brand) of soybean beverages by a fluoride ion selective potentiometer and (ii) to evaluate the toxicological risk derived from its consumption. The fluoride concentrations were 15.5 mg/L (A-Brand), 11.3 mg/L (B-Brand) and 8.5 mg/L (C-Brand). A consumption of 1 to 3 servings/day was established. One serving (200 mL) of soybean beverage offered a contribution percentage over the ADI (acceptable daily intake) for infants and children. Teenagers and adults did not exceed the ADI (10 mg/day). The consumption of soy beverages contributes significantly to the daily intake of fluoride, which could exceed the ADI with a consequent health risk. It is recommended to control the fluoride levels in the raw material and in the final product to assure the safety of these products.

The development and consumption of genetically modified (GM) crops are surrounded by controversy. According to proponents, only molecular biology approaches and genetic engineering tools are realistic food shortage solutions for the world’s ever-growing population. The main purpose of this study is to review the impact of GM products on human, animal, and environmental health. People still reject GM crops not only because of safety concerns, but also for moral reasons. Toxicity, allergies, and possible horizontal gene transfer (HGT) to the environment or to other species have been associated with the marketing of GM products. Moreover, the scarce data available about the long-term implications of using GM crops is another opponent concern. Nevertheless, science has evidenced no harm from GM crops use to date but has, instead, reported several benefits that result from their commercialization, such as economic, environmental, and health benefits for the general public. Legislation and policies about GM product labeling standards are being discussed. To overcome emerging food security challenges, considering quality scientific information is essential rather than leaving the issue and merely moving toward moral discussion. Hence, a risk–benefit analysis is necessary.

Three toxic heavy metals (Cd, Pb, and Hg) were analyzed in the newly found invasive species in the Canary Islands, Cronius ruber. Its high growth rate and its widely varied diet are affecting the Canary marine ecosystem. The study was conducted using electrothermal vaporization atomic absorption spectrometry (GF-AAS) and cold-vapor atomic absorption spectrophotometry (CV-AAS). Significant differences were found in terms of the location and sex of the specimens, with the highest concentrations being found in areas with higher tourism activity and in the female specimens. On the other hand, the conclusion of the study is that human consumption of this species does not pose any toxic risk to public health, as the levels obtained in muscle tissue do not exceed the established limits for these metals. Therefore, its consumption and the fishing of this species can stop the proliferation of the same in the Canary coasts and thus not be harmful for the ecosystem.

Brewer’s yeast, sesame seeds, wheat bran, oat bran, flaxseeds and chia seeds have gained popularity. Twenty metals were determined by ICP-OES for a nutritional and toxicological evaluation of the metal content of these foods. K is the most abundant macroelement in brewer’s yeast (4959 mg/kg), followed by Ca in sesame seeds (4349 mg/kg). Regarding the micronutrients, the Zn level in brewer’s yeast (132 mg/kg) is the highest, followed by Fe in wheat bran (56.8 mg/kg). Al is found in larger quantities in sesame seeds (14.1 mg/kg). These novel foods contribute notably to the dietary intake of Zn and Fe. The intake of Mn and Mo is nearly 100% of the daily reference intake. Regulations on the maximum limits of these elements should be implemented. The analyzed foods seem to offer higher contributions to the RDIs when it comes to micronutrients, rather than macronutrients. The metal contents pose no health risk.

Seaweed is now considered a functional food with a high nutritional value in Western countries, and the consumption of different species of edible algae has grown exponentially in recent decades. However, anthropogenic pressure on the seas has increased the presence of pollutants such as toxic metals and nitrates that can accumulate in algae. It is necessary to know the levels of these contaminants and the dietary exposure from the consumption of edible algae. The content of toxic metals (Cd, Pb, Hg) and nitrates (NO3−) was determined in 72 samples of edible algae marketed in the Canary Islands (Spain). Cd stands out in the Asian algae hijiki (1.196 mg/kg) and nori (1.005 mg/kg). Pb stands out in the Asian wakame seaweed (0.119 mg/kg). The highest mean concentration of Hg was in European arame algae (0.055 mg/kg). Some samples of the nori seaweed had NO3− concentrations of >8000 mg/kg. Considering the consumption recommended by the manufacturer of 4 g/day, the maximum admissible intake values are not exceeded, and, consequently, this does not pose a risk to health. However, in the case of Cd, Pb, Hg, and NO3−, legislation is necessary to regulate their content in edible algae.

The Canary Islands is an archipelago that consumes cereals and derivatives imported from other regions of the world. The increase in contamination with toxic metals makes it necessary to assess the content of toxicological metals of interest to ensure quality and safety. The content of toxic metals (Al, Cd, Cr, Pb, Ni, Sr) was determined in 221 samples of cereals and derivatives (corn, wheat, gofio, corn gofio, barley gofio, roasted corn and flour) marketed in the Canary Islands using ICP-OES (inductively coupled plasma optical emission spectrometry) to assess dietary exposure. Al content recorded in barley gofio (29.5 mg/kg fresh weight) stands out. The estimated daily intake (EDI) of Pb is 52 µg/day if 100 g/day of barley gofio is consumed (121% and 240% of the BMDL nephrotoxicity limit set by the EFSA at 0.63 µg/kg body weight/day for adults and children, respectively). The EDI of PB is 16 µg/day if 30 g barley gofio/day is consumed by adults (36.2% of the abovementioned BMDL nephrotoxicity limit). The EDI of Pb is 7.8 µg/day if 15 g barley gofio/day is consumed by children (32.2% of the abovementioned BMDL nephrotoxicity limit). Gofio is a food of high nutritional value. It is necessary to establish monitoring programs for toxic metals in raw materials and processed products to reduce exposure levels.

Fluoride is a halogen found in soil and water from natural and anthropogenic sources. Foods, such as cereals, fruits, and vegetables, among others, absorb and accumulate fluoride. High intakes of this element produce toxic effects such as dental or skeletal fluorosis. Fluoride content was determined in a total of 144 samples from different food groups (cereals and derivatives, fruits, tree nuts, dry fruits, mushrooms, vegetables, and legumes) using selective fluoride ion potentiometry. The fluoride concentration stood out in almonds (3.70 ± 0.96 mg/kg), walnuts (3.53 ± 0.62 mg/kg), bread (2.54 ± 0.85 mg/kg), and rice (2.28 ± 0.93 mg/kg). Consumption of 236 g/day of bread or 263 g/day of rice represents 100% of the recommended daily intake (DRI) set at 0.6 mg/day for children aged 1–3 years. In the case of rice consumption by children of these ages, it is recommended to use bottled water for rice preparation. The consumption of the analyzed foods by teenagers and adults does not pose a health risk.

In recent years, the generation of sewage sludge has increased worldwide. Correct processing and management of this waste concerns all countries. This work presents a study of metal contents, i.e. of Cd, Pb, Zn, Cr, Cu, and Ni, in sewage sludge from a wastewater treatment plant in the northeastern region of the island of Tenerife. The study aimed at examining the sludge for potential suitability as a farmland fertilizer. Detected metal levels for Pb, Zn, Cr, Cu, and Ni were extremely low (26.44, 544.01, 24.10, 37.05, and 8.04 mg/kg dw [dry weight], respectively). Cadmium levels were under quanti cation limit. Season-dependent, statistically significant differences (p < 0.05) in metal concentrations in sewage sludge were observed for Cu, Ni, Cr, and Pb. Consequently, the application of sewage sludge to fertilize nutrient-deficient agricultural soils and soils degraded by human activity represents a fast and straightforward solution to the lack of such resources, particularly in an oceanic island.

The concentrations of 20 metals (Na, K, Ca, Mg, V, Mn, Fe, Cu, Zn, Cr, Mo, Co, B, Ba, Sr, Ni, Si, Al, Pb, and Cd) in cage-reared hens’ eggs have been determined in this study using inductively coupled plasma atomic emission spectroscopy (ICP-OES). There were significant differences in the metal content depending on the edible part of the egg, with the yolk having the greater concentrations of metals. The daily consumption of eggs (24.3 g/person/day for children and 31.2 g/person/day for adults) contributes to the intake of trace metals, notably Fe (3.8% children, 3.2% women, and 6.5% men) and Zn (4.5% children, 6.6% women, and 4.9% men). In addition, the consumption of eggs does not imply a high contribution of toxic metals.

Cereal industry and its derived products have a big economic and social importance worldwide. Therefore, as wheat flour is a commodity for all bread and bakery industry, it is safety is of high nutrition and toxicological interest. In this investigation we intend to study and determine the content of twelve metals in 50 samples of wheat flour coming from a wheat flour industry. Macro elements sodium, potassium magnesium and calcium, micro elements manganese, iron, copper, zinc, chrome and nickel as well as toxic trace elements cadmium and lead have been analysed. The estimated diary intake of each metal and their contribution in percentage terms to the RDI (macro and micro elements) and to the PTWI (toxic elements) has been determined. Contribution of Cd and Pb to the PTWI was very low, a fact that shows safety in this wheat flour concerning toxic metals.
