1. Implementing EPortfolio Tools within Curricula: A Guide for Faculty. IDEA Paper #78

Abstract

EPortfolios can showcase students' learning progression, achievements, and abilities through the purposeful collection of their work. The implementation of ePortfolios within curricula can also demonstrate institutional accountability and serve as primary evidence for accreditation. The authors explore the current available ePortfolio platforms that are utilized in academic settings. They developed a set of evaluation matrices to review current ePortfolio platforms, consisting of (a) learning activities/goals, (b) competency tracking, (c) collaboration ability, (d) access, (e) user-friendliness, (f) customization, and (g) retrospection/concept mapping. Although no ePortfolio platform satisfies all these criteria completely, each possesses individual advantages that make it uniquely useful in particular academic situations. The authors provide a rubric to guide faculty or administrators when choosing an ePortfolio platform, which considers the platform's purpose and how it will be integrated into existing curricula. 3. A Narrative Review of Toxic Heavy Metal Content of Infant and Toddler Foods and Evaluation of United States Policy

Abstract

Excessive exposure to inorganic contaminants through ingestion of foods, such as those commonly referred to as heavy metals may cause cancer and other non-cancerous adverse effects. Infants and young children are especially vulnerable to these toxic effects due to their immature development and high ’food intake/ body weight' ratio. Concerns have been raised by multiple independent studies that heavy metals have been found to be present in many foods in the infant and child food sector. Most recently, reports from the U.S. House of Representatives Subcommittee on Economic and Consumer Policy suggest subpar testing practices, lenient or absent standards, and limited oversight of food manufacturers perpetuate the presence of these contaminants in infant and toddler foods. The aim of this narrative review is to evaluate the current state of policies in the United States designed to safe-guard against excessive heavy metal exposure and to discuss what is presently known about the presence of the so-called heavy metals; arsenic, lead, mercury and cadmium found in infant and toddler foods. PubMed was used to search for studies published between 1999 and 2022 using a combination of search terms including: “heavy metal,” “contamination,” “infant,” “toddler,” and “complementary food”.

5. Introduction of soy-free plant-based pediatric formula in infants with FPIES: A case report

Abstract

Background:Standard practice for management of food protein-induced enterocolitis syndrome (FPIES) frequently requires the use of hypoallergenic semi-elemental or elemental formulas. For some patients, there is poor tolerance of these formulas and no improvement of gastrointestinal symptoms. For others, especially those over 4 months of age, the introduction of these formulas is difficult due to their scientifically demonstrated poor palatability. Case presentation:This case report features an 18-month-old child diagnosed with FPIES at 4 months who failed to tolerate standard hypoallergenic semi-elemental and elemental formulas to supplement maternal breast milk feedings resulting in suboptimal growth. After failing to tolerate all standard options, the patient was introduced off-label to a plant-based pediatric formula, Else Toddler, at 6 months-of-age. Outcomes and implications:In this case, Else Toddler was tolerated as a source of supplemental nutrition without triggering FPIES symptoms. Recommendations:This case demonstrates the successful use of Else Toddler, a pediatric formula sourced from almond butter, buckwheat flour, and tapioca maltodextrin, as a possible alternative to the standard use of hydrolysate or elemental amino-acid formulas. It is free of some of the most common FPIES triggers – dairy, soy, rice, and pea proteins and there for a possible acceptable alternative approach to FPIES management.

Abstract

The article presents the author's view on traveling. One can travel the world on vacations to every country in the world and never experience another culture. The only way, he believes, one can truly experience another culture is to walk around like the commoner and get to know the natives. A country may be defined in books by the landscapes or museums, but a country is defined in real life by the way the average citizen lives. Having a cross-cultural experience requires that one gets a glimpse of everyday life for the citizens, the workers of the country. Finding out how people live and what their homes look like, not only on the outside, but on the inside as well leads, leads to experiencing their way of life.
