The objective of thisstudy was to determine further-processing characteristics and share of valuablecuts in Holstein carcasses marketed in South Marmara Region of Turkey. Thedata-set collected from a commercial slaughterhouse included observations of311 purebred Holstein bulls. The mean values were determined 510.27±5.11 kg forpre-slaughter weight, 273.07±2.75 kg for hot carcass weight and 53.57±0.15 %for hot carcass dressing. Mean cold-carcass weight was 266.34±2.67 kg and meancarcass bone content was 19.05±0.09 %. In addition, the means for valuable cutsincluding rib, roast, sirloin, cutlet and strip loin were 17.17±0.19 kg,3.35±0.05, 2.74±0.04 kg, 8.74±0.11 kg and 4.65±0.06 kg, respectively. Totalyield of valuable retail cuts were 36.66±0.42 kg with the percentage of13.74±0.06 % and the processing loss was 8.19±0.11 kg with the percentage of3.11±0.04 %. Statistical analysis revealed that highly significant differenceswere observed between slaughter age groups. Moreover, significant correlationswere found between pre-slaughter / carcass weights and all carcass traitsanalyzed. The present results may be useful for an effective evaluation ofcarcass characteristics in beef market of Turkey., Bu çalışmanın amacı,Türkiye’nin Güney Marmara bölgesinde piyasaya sunulan Holstein karkaslarındaileri-işlem özellikleri ve değerli et oranlarının belirlenmesidir. Veri setiözel bir mezbahadan elde edilen 311 baş saf Holstein erkek sığıra ait verilerikapsamaktadır. Toplam değerli et verimi 36.66±0.42 kg, değerli et oranı % 13.74±0.06,ileri-işlem firesi 8.19±0.11 kg ve ileri işlem fire oranı % 3.11±0.04’tür.İstatistiksel analizler, kesim yaşı grupları arasında önemli farklılıklarınbulunduğunu göstermiştir. Ayrıca, kesim öncesi ve karkas ağırlıkları ileincelenen tüm özellikler arasında anlamlı korelasyonlar bulunmuştur. Buçalışmadan elde verilerin Türkiye sığır eti sektöründe karkasdeğerlendirmesinin etkili bir biçimde yapılabilmesi konusunda yararlı olacağıdüşünülmektedir.

The aim of this study was to investigate the effects of single nucleotide polymorphisms (SNPs) at six candidate genes (LEP, CAST, CAPN1, GHR, FABP4 and DGAT1) on fattening performance and carcass traits of Simmental bulls in Turkey. The analysis covered a total of 81 Simmental bulls grown on a private farm that were randomly selected for their fattening period for use in this study. Genotyping was performed using the PCR-RFLP method. The S20T polymorphism at the CAST gene and the G316A polymorphism at the CAPN1 gene were associated with variation in final weight, fattening period, weight gain and average daily gain (P LEP A80V had a significant effect on hot and chilled carcass weight and dressing percentage (P GHR S555G, FABP4 V110M and DGAT1 K232A markers with the traits analysed. These results suggested that focusing on the novel effects of LEP, CAST and CAPN1 gene polymorphisms on meat production traits might be useful for marker-assisted selection in Simmental cattle.

This study was carried out to investigate the effects of hatching egg weight and length of egg storage period on hatchability and subsequent laying performance of quails. Eggs were collected from a quail flock (Coturnix coturnix Pharaoh) aged 17 weeks and classified into 4 groups on the basis of storage period 1, 3, 5, or 7 d. Prior to egg storage, the eggs in each group were further divided into egg weight treatment (small: 12.51 g). Hatchability of total and fertile eggs was affected significantly by hatching egg weight (P < 0.05) but was not affected significantly by the length of egg storage period. There was a decrease in egg production associated with increase in hatching egg weight. Egg production of quails hatched from stored eggs for 3 days was greater than the other groups. There was a significant interaction between hatching egg weight and length of egg storage for egg production. It was concluded that medium eggs can be hatched satisfactorily after 3 days storage for optimum egg production in quails.

This experiment was carried out to evaluate the effect of different slaughter weights on the fattening performance, slaughter and carcass characteristics of male Karayaka lambs at approximately 4 months of age. Thirty-six lambs, the initial liveweights of which were around 26.5 kg, were divided into 3 groups according to slaughter weight [(Group 1: 35 kg, n = 12), (Group 2: 40 kg, n = 12) and (Group 3: 45 kg, n = 12)] at the beginning of the fattening period. The average daily gain was 203.1, 214.5 and 195.0 g/day, feed conversion efficiency was 7.3, 8.6 and 8.8 kg, and the fattening period was 42.00, 64.67 and 95.08 day in Groups 1-3, respectively. There were significant differences among the groups for average feed conversion efficiency, metabolizable energy, crude protein, and the weight of the head, skin, feet, lung, liver, kidney, internal fat, gastro-intestinal tract and testes (P < 0.05, P < 0.01). The lean, bone and fat weight, backfat thickness and musculus longissumus dorsi area in the carcass increased with increasing slaughter weight. Değişik orijindeki Holştayn’ların verim performanslarının ortaya konması Türkiye’de Holştayn sığır yetiştiriciliğine yön vermesi bakımından önemlidir. Bu çalışma, Polonya orijinli Holştayn erkek danaların besi performansını ve karkas özelliklerini incelemek amacıyla yapılmıştır. Besi süresince ortalama günlük canlı ağırlık artışı ve 1 kg canlı ağırlık artışı için tüketilen yem kuru madde miktarı sırasıyla 1.172 kg ve 8.68 kg bulunmuştur. Soğuk karkas randımanı, soğuk karkas ağırlığına göre kemik oranı, değerli etlerin oranı ve toplam et oranı sırasıyla % 55.23, % 17.18, % 20.68 ve 76.69 tespit edilmiştir. Araştırma sonuçlarına göre Polonya Holştayn danaların arzu edilmeyen yağlanma olmaksızın 550 kg ağırlıkta kesilebileceği ve Türkiye’de besi sığırı olarak kullanılabileceği ortaya çıkmıştır., Detection of yield performances of Holstein breed from various origin is important from the point of directing to Halstein breeding in Turkey. The aim of this study was to investigate the fattening performances and carcass characteristics of Polish Holstein bulls. During the fattening period, the average daily live weight gain and intakes of dry matter for per kg of live weight gain were found as 1.172 kg and 8.68 kg respectively. Cold dressing percentage, bone, first quality meat and meat rates in cold carvass were determined as 55.23 %, 17.18 %, 20.68 % and 79.69 % respectively. It was concluded that Polish Holstein bulls could be slaughtered at 550 kg live weight without over fattening and could be used as fattening cattle in Turkey

Bu çalışma Karacabey Tarım İşletmesinde yetiştirilen Esmer ve Holştayn ırkı dişi buzağıların büyüme ve yaşama gücüne etki eden bazı çevresel faktörlerin incelenmesi amacıyla yapılmıştır. Esmer ve Holştayn dişi buzağıların düzeltilmiş ortalama doğum ağırlıkları, sırasıyla 38.83 ve 39.51 kg bulunmuştur. Doğum ağırlığına genotipin, doğum mevsiminin, ana yaşının ve gebelik süresinin etkileri istatistiki önemde bulunmuştur (P< 0.05, P< 0.01). Bu faktörlerin doğum ağırlığını belirleme dereceleri sırasıyla % 2, % 2, % 11 ve % 5 bulunmuştur. ÖZET Bu çalışma,Eskişehir- Anadolu Tarım İşletmesi Esmer sığırlarının dölverimi, süt verimi ve büyüme özelliklerinin düzeylerini belirlemek ve bu verim özelliklerine çevre faktörlerinin etkilerini incelemek amacıyla yapılmıştır. Araştırma süresince (1992-1995) gebelik, doğum, ölü doğum ve yavru atma oranlan sırasıyla % 90.06, 97.25, 3.22 ve 2.76 saptanmıştır.Esmer düvelerin ilk tohumlama yaşı, ilk tohumlama-gebelik aralığı, servis sayısı ve ilk buzağılama yaşı ortalamaları sırasıyla 555.90 gün, 50.58 gün, 2.19 ve 878.42 gün belirlenmiştir.İneklerde doğum sonrası ilk tohumlama aralığı, ilk tohumlama-gebelik aralığı, servis periyodu, şems sayısı, buzağılama aralığı ve gebelik süresi ortalamaları sırasıyla 55.31 gün, 39.68 gün, 94.40 gün, 2.15, 374.98 gün ve 287.65 gün bulunmuştur. Esmer ineklerin laktasyon süresi, gerçek ve 2 x 305 gün süt verimleri sırasıyla 302.95 gün, 3617.8 kg ve 3491.1 kg; gerçek ve 305 gün süt yağı verimleri sırasıyla 133.02 kg ve 132.32 kg, yağ oranlan % 3.79 saptanmıştır. Buzağılann doğum, 3, 6, 9 ve 12 ay canlı ağırlıkları sırasıyla 41.36 kg, 95.64 kg, 150.15 kg, 218.09 kg ve 279.63 kg; dişilerin 20 aylık yaşta canlı ağırlıkları 322.11 kg, 24 aylık yaştan büyük ineklerin sıfat dönemindeki canlı ağırlıkları 547.2 kg belirlenmiştir. The purpose of this study was to investigate the effect of starch sources with different degradability rates on chewing activities, milk production and composition of lactating dairy cows. Twelve lactating Holstein cows were used in a 4 x 4 Latin square design and fed with diets containing different rates of corn and wheat. The diets were: 1) 26.20% corn based diet (CBD), 2) 16.10% corn and 7.09% wheat based diet (CWBD), 3) 16.51% wheat and 7.26% corn based diet (WCBD), or 4) 25.88% wheat based diet (WBD).
