Abstract

International audience; Fouling of plate heat exchangers (PHEs) is a recurring problem when pasteurizing whey protein solutions. As Ca2+ is involved in denaturation/aggregation mechanisms of whey proteins, the use of calcium chelators seems to be a way to reduce the fouling of PHEs. Unfortunately, in depth studies investigating the changes of the whey protein fouling mechanism in the presence of calcium chelators are scarce. To improve our knowledge, reconstituted whey protein isolate (WPI) solutions were prepared with increasing amounts of phosphate, expressed in phosphorus (P). The fouling experiments were performed on a pilot-scale PHE, while monitoring the evolution of the pressure drop and heat transfer coefficient. The final deposit mass distribution and structure of the fouling layers were investigated, as well as the whey protein denaturation kinetics. Results suggest the existence of two different fouling mechanisms taking place, depending on the added P concentration in WPI solutions. For added P concentrations lower or equal to 20 mg/L, a spongy fouling layer consists of unfolded protein strands bound by available Ca2+. When the added P concentration is higher than 20 mg/L, a heterogeneously distributed fouling layer formed of calcium phosphate clusters covered by proteins in an arborescence structure is observed.

Abstract

The aim of this work was to prepare a non-woven Polypropylene (PP) textile functionalized with bioactive molecules to improve simultaneously its anticoagulation and antibacterial properties. The immobilization of either heparin (anticoagulation agent) or gentamicin (aminoglycoside antibiotic) was already proven to be effective on non-woven PP textiles. This work details how we managed to immobilize both gentamicin and heparin on the textile [1]. The immobilization times were studied in order to determine the best compromise between cytocompatibility, anticoagulant effect and antimicrobial activity. Cetté étude décrit le procédé de fonctionnalisation d'un textile polypropylène (PP) non-tissé afin d'améliorer à la fois ses propriétés antibactériennes et anticoagulantes. Dans des précédents travaux, l'immobilisation soit de l'héparine (agent anticoagulant), soit de la gentamicine (agent antibiotique aminoglycoside) a déjà été reportée. Des effets respectivement anticoagulants et antibactériens ont été obtenus. Cette étude décrit la faç on d'immobiliser ces deux principes actifs sur un même textile. L'effet des temps d'imprégnation sur les propriétés antibactériennes et anticoagulantes a été étudié afin d'obtenir le meilleur compromis possible en termes de cytocompatibilité, effet anticoagulant et activité antimicrobienne.

Abstract

International audience; Soot is a degradation product of material burning, having the multi-scale fingerprints of the conditions in which it is formed. Micron sized aggregate morphology is dependent on residence times and burning rates, whereas particle size and nanoscale order reflects the burning source and temperature rates. In this work, we will present comparison of techniques for ex-situ analysis of soot probed in-flame from flaming combustion of natural and synthetic polymers, by means of SEM/STEM (Scanning electron microscope in transmission mode) and TEM.

Indeed, when heated, milk and its derivatives generate mineral and proteinaceous deposits on stainless steel walls. This heat-induced fouling impairs the process through the addition of an increasing thermal resistance to the system. Deposits are also a threat to food safety as they provide micro-organisms with good settlement opportunities. As a consequence, fouling mitigating strategies are needed. Biomimetic surfaces in particular, inspired from the surface morphology of lotus leaf could be considered for their self-cleaning abilities. Its dual-scale roughness (i.e. a micro roughness supporpsed by nanoscale roughness) allows for the composite Cassie-Baxter wetting state due to air remaining trapped between the liquid and the solid surface. As a result, those surfaces possess very high contact angles (typically higher than 150o) and very low contact angle hysteresis (typically less than 10°). However, a major limitation of this type of surface is the difficulty to maintain a stable Cassie-Baxter state over time: depending on the experimental conditions (pressure, vibration, evaporation, surface defect) the liquid penetrates sooner or later into the structures degrading their anti-biofouling properties. To overcome this limitation, it has been proposed to impregnate the textured surface by a liquid of low surface tension (usually an inert oil not miscible with water). This led to SLIPS surfaces (Slippery Liquid-Infused Porous Surfaces). Even if these surfaces present low contact angle, their hysteresis is also almost null whatever the experimental conditions leading to antifouling properties [1]. This work aims at designing Cassie-Baxter and SLIPS surfaces and test them in dairy processing conditions to assess their antifouling properties. To this end, 316L stainless steel surfaces were texturized via femtosecond laser irradiation to generate dual-scale (cauliflower-like) structures [2]. Some of the fabricated surfaces underwent further modifications: (i) silanization with perfluorodecyltrichloro-silane or (ii) silanization followed by impregnation with a fluorinated oil to create Slippery Liquid Infused Porous Surfaces (SLIPS) [3]. All surfaces were tested for their fouling properties in a pilot pasteurization equipement (UMET-PIHM, Institut National de la Recherche Agronomique, Villeneuve d'Ascq) [4] allowing to mimick industrial conditions of the pasteurization process. Thorough characterizations were performed on the surfaces before and after fouling, to (i) establish clearly their surface properties (wettability, surface energy, roughness) and (ii) to investigate the impact of the different surface properties on heat-induced dairy fouling compared to a native stainless steel as reference. A wide range of analytical tools such as Goniometry, cross-section Electron Probe Micro-Analysis X-ray mappings, and Scanning Electron Microscopy were implemented to this end. Abstract

International audience; The electron probe microanalyzer is a device often used in the field of geology or in the glass and steel industries. However, it is barely known or used in the polymer field. Thus, in this paper, we investigate the use of electron probe microanalyzer for polymer microanalyses and compared it with a scanning electron microscope equipped with an energy dispersive spectrometer. To show the unique potential of this technique only develop in our lab for polymer application, three different samples were studied: (i) a fire protective epoxy-based coating submitted to aging in salt water, (ii) the distribution of organometallic catalysts into a thermal isolative silicone polymer, and (iii) the fouling growth of milk protein (biopolymer) on a stainless steel surface. Compared to an energy dispersive spectrometer, with an electron probe microanalyzer it is possible to quickly create X-ray mappings of low concentration elements at a good resolution, as well as allowing the interpretation of the mechanism of action for the three samples which was impossible using only an energy dispersive spectrometer because of its too low detection resolution.
