A module for the digestive and metabolic use of lipids and fatty acids (FA) was coupled to the InraPorc simulation model. The later was used to predict the lipid mass by adjusting some parameters to approximate the best performance (feed intake, growth rate) achieved by the animals during the trials. Then, the lipid mass is used as an input to the FA module to estimate their growth and establish the FA composition in the whole animal at slaughter. Data from 5 studies and twenty experimental diets were used to validate the module. Although many FAs can be identified, palmitic, stearic, oleic, and linoleic acids account for over 95% of the total FAs obtained during chemical analysis of pork samples. Their content on the studies used in this work ranged from 18.2 to 28.7, 9.8 to 17.8, 33.1 to 51.0 and 5.3 to 27.1 % for palmitic, stearic, oleic, and linoleic, respectively. Predictions ranged from 14.9 to 27.0, 8.8 to 16.4, 28.9 to 56.4 and 6.2 to 35.0% for palmitic (r = 0.89; P < 0.001), stearic (r = 0.66; P = 0.001), oleic (r = 0.87; P < 0.001) and linoleic (r = 0.85; P < 0.001), respectively. Even if adjustments can always be done to ameliorate predictions, these results already showed that the FA module predicted quite well the deposition of total FA along growth (r = 0.93; P < 0.001), as well as that of individual FAs at different slaughter weights. From these results, it can be concluded about the interest of the development of the FA module coupled to the InraPorc model to study the influence of feeding strategies and to predict the quality of pork., Un module d’utilisation digestive et métabolique des lipides et acides gras (AG) a été couplé au modèle InraPorc de simulation de la croissance du porc. Les résultats ont montré que le module prédit assez bien les dépôts d’AG individuels au cours de la croissance, ainsi que le total d’AG observé lors de l’abattage (r = 0,93 ; P < 0,001). Les prédictions ont varié, respectivement, de 14,9 à 27,0, de 8,8 à 16,4, de 28,9 à 56,4 et 6,2 à 35,0% pour les AG palmitique (r = 0,89; P < 0,001), stéarique (r = 0,66; P = 0,001), oléique (r = 0,87; P < 0,001) et linoléique (r = 0,85; P < 0,001). D’après ces résultats, il est possible de conclure sur l’intérêt de l’utilisation du module de composition en AG couplé au modèle InraPorc afin d’étudier l’influence des stratégies alimentaires et prédire la qualité du gras du porc.

This study tested the capacity of a novel consensus bacterial 6-phytase variant (PhyG) to totally replace dietary supplemental inorganic phosphate (Pi) in broilers from one day of age, using a phased dosing strategy for the phytase and a phased reduction in phytate content of the diet. A 2x2 factorial arrangement including two treatments and two genders was used. 2. A total of 1,248, one-day-old Ross 308 broilers were assigned to 24 floor pens (52 birds/pen). L'efecte del tipus de font grassa sobre la digestibilitat del mateix greix i dels àcids grassos fou estudiat en el porc en edat de creixement. La digestibilitat fecal i ileal foren mesurades, utilitzant diòxid de titani com a marcador inert de digestibilitat, en porcs sencers o bé amb anastomosi ileorectal, respectivament. Les dietes experimentals consistiren en cinc fonts grasses diferents afegides al 10 % a una dieta a base d'ordi: sèu vacum, oli de gira-sol alt oleic, oli de gira-sol, oli de llinosa i una mescla de greixos (5,5 % de sèu, 3,5 % d'oli de gira-sol i 1 % d'oli de llinosa). Excepte en el cas de les dietes basal i sèu, les digestibilitats aparents fecal i ileal foren relativament similars entre dietes i lloc de mesura, i el mateix fou observat per a la digestibilitat fecal aparent de la suma d'àcids grassos. En el cas de la digestibilitat aparent ileal del greix i suma d'àcids grassos, aquesta varià en funció de la composició en àcids grassos i fou inversament proporcional al contingut en àcids grassos saturats, a causa del fet que l'àcid palmític i l'esteàric presenten una menor digestibilitat ileal aparent. Five different fat sources, added at 10 % to a barley based diet, were tested: tallow, high oleic sunflower oil, sunflower oil, linseed oil and a fat blend (5.5 % tallow, 3.5 % sunflower oil and 1 % linseed oil of diet). Except for basal diet and tallow, fat apparent faecal digestibility and apparent ileal digestibility were relatively similar among diets and site of measurements and the same was observed when it was obtained from the sum of fatty acids apparent faecal digestibility.However fat and sum of fatty acid apparent ileal digestibility varied according to dietary fatty acid composition and it was inversely related with the saturated fatty acid content, due to the lower apparent ileal digestibility of palmitic acid and stearic acid. Apparent ileal digestibility of linoleic acid in sunflower oil diet and linolenic acid in linseed oil diet were higher than the respective fatty acids of the other diets and no differences were observed for oleic acid. The apparent faecal digestibility of the unsaturated fatty acids was higher than the corresponding apparent ileal digestibility values, despite similar fat apparent ileal and faecal digestibilities. This together with the lower (in some cases negative) apparent faecal digestibility of stearic acid suggests that there is biohydrogenation of unsaturated fatty acids in the hindgut.Measurement at the end of the ileum should give a better estimation of digestibility of fat and fatty acids than at the faecal level.

La incorporació de matèries grasses és una pràctica habitual en la formulació de pinsos per a porcs i pollastres. Els olis àcids són subproductes de la indústria de refinació d’olis, donant lloc a matèries primeres sostenibles i interessants des del punt de vista econòmic. Ara bé, el seu elevat contingut en àcids grassos (AG) lliures, fa que el seu valor nutritiu sigui inferior al del seu corresponent oli natiu. Podem neutralitzar els AG lliures dels olis àcids a través de la seva esterificació amb glicerol (subproducte de la indústria del biodièsel), obtenint, com a producte final d’aquest procés, els olis re-esterificats. La diferent estructura molecular dels olis re-esterificats pot millorar el seu valor nutritiu i, en particular, l’absorció dels AG saturats. Per tot plegat, l’objectiu global d’aquesta tesi va ser investigar l’ús potencial dels olis re-esterificats en l’alimentació de porcs i pollastres. La caracterització dels greixos (Capítol 3, 4 i 5) va mostrar que els olis re-esterificats presentaven la mateixa composició en AG que la dels seus corresponents olis natius, però una major proporció d’AG saturats situats a la posició sn-2 de les molècules d’acilglicerols, i una major quantitat de mono- i diglicèrids (amb els AG principalment esterificats a les posicions sn-1,3), el que va donar lloc a un menor contingut en energia bruta. Als tres primers experiments (Capítol 3, 4 i 5), es va comparar l’ús de dos olis re-esterificats de palma (amb baix i alt contingut en mono- i diglicèrids) amb el del seu corresponent oli àcid (control negatiu) i oli natiu (control positiu). D’una banda, no es van observar diferències en els coeficients d’absorció dels AG entre els animals alimentats amb l’oli natiu i els alimentats amb l’oli àcid de palma (excepte en pollets de primera edat). Per tant, els olis àcids de palma poden considerar-se una font de greix alternativa en l’alimentació d’animals monogàstrics, sempre que tinguin < 60% d’AG lliures i < 3% d’humitat, impureses i fracció insaponificable. D’altra banda, els animals alimentats amb olis re-esterificats de palma van assolir coeficients d’absorció similars o inclús superiors als dels animals alimentats amb el seu corresponent oli natiu, encara que es van observar algunes peculiaritats en funció de l’espècie i de l’estat fisiològic dels animals. En pollastres (Capítol 5), el grau de saturació del greix va exercir un major impacte en l’absorció aparent dels AG que l’estructura molecular del greix. Per aquest motiu, en l’últim experiment (Capítol 6) es va investigar quina seria la millor estratègia nutricional (olis re-esterificats purs o mescles) per obtenir la millor eficiència en termes d’absorció aparent dels AG. La substitució de l’oli re-esterificat de palma per oli re-esterificat de soja va millorar l’absorció aparent dels AG totals, encara que no es va observar sinergisme entre els dos olis re-esterificats. Una altra troballa interessant va ser que, independentment de la font de greix, de l’espècie i de l’estat fisiològic dels animals, la fracció lipídica eliminada per les femtes i les excretes estava principalment constituïda per AG lliures, el que suggereix que el factor limitant del procés d’absorció del greix de la dieta no és el procés d’hidròlisi lipídica, sinó el procés de solubilització micel·lar. Per tot això, podem considerar que, des d’un punt de vista nutricional, els olis re-esterificats són una bona font de greix alternativa per ser utilitzats en l’alimentació d’animals monogàstrics. The different molecular structure of re-esterified oils may enhance the apparent absorption of saturated FA and, consequently, their overall nutritive value. Therefore, the global aim of this thesis was to investigate the potential use of re-esterified oils in pig and broiler-chicken diets. Fat characterization (Chapter 3, 4 and 5) showed how re-esterified oils had the same FA composition as their corresponding native oils, but a greater proportion of saturated FA located at the acylglycerol sn-2 position and a greater amount of mono- and diacylglycerols (with FA mainly esterified at the sn-1,3 positions), which resulted in a lower gross energy content. In the first three experiments (Chapter 3, 4 and 5), the use of two re-esterified oils (with a low and a high mono- and diacylglycerol content) was compared with that of their corresponding acid (negative control) and native (positive control) oils. On one hand, no differences in FA apparent absorption coefficients were observed between animals fed native or acid palm oils (except in young broiler chickens). Thus, acid palm oils can be considered interesting alternative fat sources to be used in monogastric-animal diets, provided they have < 60% of free FA and < 3% of moisture, impurities, and unsaponifiable matter. On the other hand, animals fed re-esterified palm oils achieved similar or even better apparent absorption coefficients than those fed their corresponding native oil, although some peculiarities were observed according to the species and the physiological state of the animals. In broiler chickens (Chapter 5), the fat degree of saturation exerted a greater impact on FA apparent absorption than did the fat molecular structure. For this reason, in the last experiment (Chapter 6), the best nutritional strategy (pure re-esterified oils or blends of re-esterified oils) was investigated, in order to obtain the best efficiency in terms of FA apparent absorption. The addition of re-esterified soybean oil in replacement of re-esterified palm oil in broiler chicken diets improved the total FA apparent absorption, although no synergism was observed between re-esterified oils. Another interesting finding was that, regardless of the dietary fat source, the species, and the physiological sate of the animals, fat lost in feces or excreta was mainly composed of free FA, which suggests that micelle formation, and not fat hydrolysis, is the rate-limiting step of fat absorption. Taken together, from a nutritional point of view, re-esterified oils are good, alternative fat sources to be used in monogastric-animal diets. However, considering that the esterification process represents an additional cost, the economic viability of re-esterified oils will depend on the price differential between native and acid oils.

El objetivo de esta tesis es: (1) determinar si el consumidor español asocia la grasa intramuscular (GIM) a la aceptabilidad de la carne de cerdo; (2) incrementar la GIM a través de estrategias nutricionales (adición de acido linoleico conjugado, reducción de vitamina A, reducción de proteína, lisina, suplementación con arginina y leucina). Los resultados mostraron que desde el punto de vista gustativo el consumidor prefiere la carne con un mayor contenido de GIM. Se obtuvo un incremento de la GIM al reducir el nivel de proteína (sin modificar la lisina) o al reducir el nivel de lisina (sin modificar la proteína) y al utilizar una línea genética grasa y no en una línea genética más magra. Se puede concluir que la modificación de la GIM a través de la dieta depende del genotipo, y que las modificaciones de los niveles de proteína y lisina son las más eficaces., The objective of this thesis was: (1) to test if Spanish consumers associate intramuscular fat (IMF) content with acceptability of pork meat; (2) to increase IMF through nutritional strategies (supplementation with conjugated linoleic acid, reduction of vitamin A, reduction of protein, lysine, supplementation with arginine and leucine). Results showed that from the point of view of taste, consumers prefer the meat with a high IMF content. An increase of IMF was observed when dietary protein or lysine were reduced (without modifying lysine or protein content, respectively) in a fatter but not in a leaner genotype. It can be concluded that modification of IMF content through the diet depends on the genotype, and that changes in dietary protein and lysine levels elicit the greatest response.

Els objectius de la present tesis foren estudiar l'efecte de la composició lipídica de la dieta sobre la deposició de greix i àcids grassos en el porc en relació amb el metabolisme lipídic.Setanta femelles foren alimentades una de la les set dietes: una dieta sense greix i sis dietes amb un contingut de greix del 10%. Els greixos utilitzats foren sèu vacu, oli de gira-sol alt oleic, oli de gira-sol, oli de llinosa, mescla i una dieta amb oli de peix.El contingut en greix de la canal dels animals alimentats amb oli de gira-sol alt oleic (26.7%) i oli de gira-sol (26.7%) fou superior al dels animals alimentats amb sèu (22.9%). Igualment, els animals alimentats amb sèu tingueren un menor contingut en greix dissecat i greix dorsal. En paral·lel, l'expressió dels enzims lipogènics i els continguts en hormones tiroidees foren inferiors en els animals alimentats amb sèu., The objectives of this thesis were to study the effect of dietary fat composition on whole-pig fat and fatty acid composition related pig lipid metabolism.Seventy gilts were divided in 10 animals per treatment. Pigs were fed one of seven treatments: a diet with a very low level of fat and six fat supplemented diets (10%). Whole-body fat content of high-oleic sunflower oil (26.7%) and sunflower oil (26.7%) fed animals was higher than tallow (22.9%) fed animals. Así, mientras que en los años 50 eran necesarios unos 85 días para que un pollo de carne alcanzara un peso de 1.800 gramos, actualmente este periodo se reduce a 36 días, y además se acompaña de una mejora en el índice de conversión de más de un 50%. Sin embargo, paralelamente a esta mayor velocidad de crecimiento se ha producido un mayor engrasamiento de la canal.En el procesado industrial, la grasa de la carcasa constituye una pérdida económica importante. Si además consideramos la mayor aceptación de los productos con bajo contenido en grasa, por parte de los consumidores se justifica el interés por conseguir una reducción en la deposición de grasa corporal en el pollo de carne.Numerosos trabajos realizados en mamíferos y algunos realizados en pollos sugieren que la sustitución de grasa saturada por poliinsaturada en la dieta del pollo podría producir un menor engrasamiento de la canal. En la presente tesis se estudió el efecto de dietas con diferentes perfiles de ácidos grasos sobre la deposición de grasa y el metabolismo lipídico del pollo de carne o Broiler. Se utilizaron 4 tipos de grasa con diferente grado de insaturación a un nivel de inclusión en el pienso del 10%: sebo (rico en ácidos grasos saturados), aceite de oliva (rico en ácidos grasos monoinsaturados), aceite de girasol (rico en ácidos grasos poliinsaturados de la serie n-6) y aceite de linaza (rico en ácidos grasos poliinsaturados de la serie n-3). Los objetivos principales fueron determinar el efecto de los diferentes tipos de grasa en la dieta sobre:  Los parámetros productivos del pollo La deposición de grasa corporal, abdominal y en otros depósitos lipídicos definidos La retención de energía, proteína, grasa y ácidos grasos La síntesis hepática de ácidos grasos Determinados parámetros bioquímicos relacionados con la deposición de grasa en el pollo (VLDL, glucosa e insulina). Los resultados obtenidos demostraron que las dietas ricas en ácidos grasos poliinsaturados mejoran el índice de conversión en el pollo Broiler hasta un 10%. El porcentaje de grasa abdominal y de otros depósitos lipídicos definidos disminuyó de forma significativa (aproximadamente 30g) con las dietas ricas en ácidos grasos poliinsaturados. Por otro lado se observó una mayor beta-oxidación de ácidos grasos en los pollos alimentados con las dietas ricas en ácidos grasos poliinsaturados dando lugar a una menor eficiencia energética de estas raciones. Sin embargo, al determinar la síntesis de ácidos grasos hepáticos, se observó que la dieta con linaza producía un mayor grado de lipogénesis que el resto de dietas estudiadas. Por tanto, se concluye que las dietas ricas en ácidos grasos poliinsaturados reducen la deposición de grasa en el pollo de carne. Sin embargo, los resultados indican que no es la modificación de la actividad lipogénica la principal causa de la reducción de la deposición de grasa por los AGPI de la dieta, sino que sería la mayor actividad oxidativa de ácidos grasos y por tanto, la menor eficiencia energética de las dietas suplementadas con dichos ácidos grasos para la deposición de energía. Teniendo en cuenta la escasa contribución de la síntesis endógena de ácidos grasos a la deposición de grasa en pollos alimentados con dietas con un alto porcentaje de inclusión de grasa cualquier modificación en dicha actividad no habría de suponer una modificación detectable en la deposición de grasa corporal ya que podría ser totalmente compensada por la deposición directa de grasa dietética que se produce con estas raciones., Reduction of abdominal fat deposition in Broiler chicken by dietary fatty acid profile modification.Nieves Crespo AlcarriaGenetic selection and use of energetic rations has led to an increase in broiler growth. Four types of fat with different saturation level were used at 10% inclusion level. Tallow was added as a source of saturated fatty acid, olive oil as a source of monounsaturated fatty acids, sunflower oil as a source of polyunsaturated fatty acids of n-6 series and linseed oil as a source of polyunsaturated fatty acids of n-3 series.Main objectives were to determine the effect of different dietary fats on: Performance parameters of broiler chickens. Body and abdominal fat deposition and fat deposition in other separable fat depots. Energy, protein, fat and fatty acid deposition. Hepatic lipid synthesis. Biochemical parameters related with fat deposition in broiler chicken (VLDL, glucose and insulin).Obtained results show that diets rich in polyunsaturated fatty acids improve feed conversion ratio in about 10%.Percentage of abdominal fat and other separable fat depots was significantly reduced with diets rich in polyunsaturated fatty acids. This reduction reached values of about 30g of adipose tissue.On the other hand, higher fatty acid beta-oxidation was obtained in broilers fed diets rich in polyunsaturated fatty acids which could lead to lower energetic efficiency of feed. Results of hepatic fatty acid synthesis showed higher levels in broilers fed diet with added linseed oil, respect to the rest of the diets.It was concluded that diets rich in polyunsaturated fatty acids reduce fat deposition in broiler chicken. Results suggest that the main cause of fat reduction by polyunsaturated fatty acids is not a modification in lipogenesis level but also the higher fatty acid beta-oxidation observed with these diets, that would lead to lower energetic efficiency of the diet to fat deposition. Taking into account the low contribution of endogenous fatty acid synthesis to fat deposition in broilers fed high fat diets, any modification in this endogenous activity would not lead to a modification in body fat deposition as it would be compensate by direct dietary fat deposition.
