The potential of microalgae Chlorella vulgaris as a carotenoid source was explored using a novel class of solvents known as Natural Hydrophobic Deep Eutectic Solvents (NaHDESs). Seven low-viscosity NaHDESs, composed exclusively of fatty acids that act as hydrogen bond donors (HBDs) and hydrogen bond acceptors (HBAs) simultaneously, were characterized and assessed for their ability to extract carotenoids from Chlorella vulgaris. Through screening, nonanoic/dodecanoic acid (3:1) was identified as the most effective NaHDES. Its HBA:HBD molar ratio was optimized using Box-Behnken Design. Additionally, the optimization process considered solvent:sample ratio and extraction time, evaluating their impact on carotenoid recovery, specifically focusing on lutein, zeaxanthin, and β-carotene, and antioxidant activity, through ABTS, and DPPH assays.Under the optimized extraction conditions, the recovered amounts of total carotenoids, lutein, zeaxanthin, and β-carotene were 2.00 ± 0.31, 1.42 ± 0.01, 0.16 ± 0.01, 0.70 ± 0.01 mg/mL of extract, respectively. The extract also demonstrated significant antioxidant capability, with an inhibition level of 9.13 ± 0.18 % per mL of extract. These findings highlight the superior performance of nonanoic acid/dodecanoic acid (1:1) over acetone and underscore the potential of NaHDESs as a promising alternative to traditional solvents for extracting bioactive compounds from microalgae such as Chlorella vulgaris.

Understanding the correlation between straightforward analytical methods and sensory attributes is pivotal for transitioning to sustainable packaging while improving product quality. In this context, the viability of eco-sustainable packaging alternatives for single-packaged croissants has been investigated through examining the correlations between analytical methods, sensory attributes, employing quantitative descriptive analysis (QDA), and consumer survival analysis. The performance of biaxially oriented polypropylene (BOPP), a petrochemical plastic film, against paper-based, compostable, and biodegradable films over a 150-day croissant storage period was compared in this study, examining both physiochemical and sensory perspectives. The results showed a correlation between a lower water vapour barrier in packaging materials and increased moisture migration and croissant hardness, as assessed by the Avrami kinetic model. Notably, given its reduced barrier properties, the compostable film accelerated sensory profile deterioration, as evidenced by QDA results. Shelf-life estimation, assessed by consumer rejection, underscored the viability of the biodegradable film for up to 185 days, surpassing BOPP, paper-based, and other biodegradable alternatives. Using linear regression, physiochemical parameters associated with predicted shelf-life were elucidated. Overall, croissants were rejected by 50% of consumers when they reached humidity levels below 18%, water activity below 0.81, firmness exceeding 1064 N, pH above 4.4, and acidity below 4.5. Based on the results of this study, biodegradable packaging emerges as a promising alternative to traditional BOPP, offering a sustainable opportunity to extend the shelf-life of croissants.

In recent years, there has been a growing interest in a diet low in fermentable oligosaccharides, disaccharides, monosaccharides, and polyols (FODMAPs) as a promising therapeutic approach to reduce the symptoms associated with irritable bowel syndrome (IBS). Hence, the development of low FODMAPs products is an important challenge for the food industry, and among the various foodstuffs associated with the intake of FODMAPs, cereal-based products represent an issue. In fact, even if their content in FODMAPs is limited, their large use in diet can be an important factor in developing IBS symptoms. Several useful approaches have been developed to reduce the FODMAPs content in processed food products. Accurate ingredient selection, the use of enzymes or selected yeasts, and the use of fermentation steps carried out by specific lactic bacteria associated with the use of sourdough represent the technical approaches that have been investigated, alone or in combination, to reduce the FODMAPs content in cereal-based products. This review aims to give an overview of the technological and biotechnological strategies applicable to the formulation of low-FODMAPs products, specifically formulated for consumers affected by IBS. In particular, bread has been the foodstuff mainly investigated throughout the years, but information on other raw or processed products has also been reported. Furthermore, taking into account the required holistic approach for IBS symptoms management, in this review, the use of bioactive compounds that have a positive impact on reducing IBS symptoms as added ingredients in low-FODMAPs products is also discussed.

The development of fortified healthy pleasant foods, in which saturated fats are replaced with unsaturated ones, poses a challenge for the food industry due to their susceptibility to oxidative rancidity, which decreases product shelf-life, causes the destruction of health-promoting molecules, and forms potentially toxic compounds. A comparative study applying the Arrhenius model was carried out to investigate the oxidative stability and predict the shelf-life of a newly developed no added sugar chocolate spread formulated with sunflower oil, and fortified with vitamin D, Mg, and Ca checked against two commercially available spreads: No Palm and a well-known commercially available product (RB). The results obtained from the accelerated shelf-life testing for peroxide value (PV) showed relatively higher activation energy (Ea, 14.48 kJ/mol K) for RB, whereas lower Ea (11.31–12.78 kJ/mol K) was obtained for No Palm and all the experimental spread chocolates. Q10 values were comparable (1.202–1.154), indicating a similar catalytic effect of the temperature upon the oxidation rate across all the investigated samples. The positive Gibbs free energies ranged from 75.014 to 83.550 kJ/mol and pointed out that the lipid oxidation reaction in the chocolate spread was an endergonic process. The predicted shelf-life at 293.15 K was 8.57 months (RB), 7 months (No Palm), and 6.8 months for all the experimental spreadable chocolate. However, the higher production of hydroperoxides was observed in chocolate fortified with magnesium-calcium carbonate nanoparticles and stored at 313.15 and 323.15 K, suggesting these particles may enhance lipid oxidation.

The ability to dominate conspecifics and thereby gain access to resources depends on a number of traits and skills. Experience of dominance relationships during development is a potential source of learning such skills. We here study the importance of social experience, aggressiveness and morphological traits for competitiveness in social interactions (contest success) in male domestic fowl (Gallus gallus domesticus). We let males grow up either as a single (dominant) male or as an intermediately ranked male in a group of males, and measured their success in duels against different opponents. We found that single-raised males had lower contest success than group-raised males, and that aggression and comb size correlated positively with contest success. This indicates that experience of dominance interactions with other males increases future success in duels. We similarly studied the consequences of growing up as a dominant or subordinate in a pair of males, finding no statistically significant effect of the dominance position on contest success. Finally, we found that males were consistent over time in contest success. We conclude that social experience increases contest success in male domestic fowl, but that certain behavioural and morphological characteristics have an equal or even stronger covariation with contest success.

Background: A fair amount of microcalcifications sent for biopsy are false positives. The study investigates whether quantitative radiomic features extracted from digital breast tomosynthesis (DBT) can be an additional and useful tool to discriminate between benign and malignant BI-RADS category 4 microcalcification. Methods: This retrospective study included 252 female patients with BI-RADS category 4 microcalcifications. The patients were divided into two groups according to micro-histopathology: 126 patients with benign lesions and 126 patients with certain or possible malignancies. A total of 91 radiomic features were extracted for each patient, and the 12 most representative features were selected by using the agglomerative hierarchical clustering method. The binary classification task of the two groups was carried out by using four different machine-learning algorithms (i.e., linear support vector machine (SVM), radial basis function (RBF) SVM, logistic regression (LR), and random forest (RF)). Accuracy, sensitivity, sensibility, and the area under the curve (AUC) were calculated for each of them. Results: The best performance was achieved using the RF classifier (AUC = 0.59, 95% confidence interval 0.57–0.60; sensitivity = 0.56, 95% CI 0.54–0.58; specificity = 0.61, 95% CI 0.59–0.63; accuracy = 0.58, 95% CI 0.57–0.59). Conclusions: DBT-based radiomic analysis seems to have only limited potential in discriminating benign from malignant microcalcifications.

Frequency analysis is often used to investigate the structure of systems representing multi-scale real-world phenomena. In many different environments, functional relationships characterized by a power law have been recognized, but, in many cases this simple model has turned out to be absolutely inadequate and other models have been proposed. In this paper, we propose a general abstract model which constitutes a unifying framework, including many models found in literature, like the mixed model, the exponential cut-off and the log-normal. It is based on a discrete-time stochastic process, which leads to a recurrence relation describing the temporal evolution of the system. The steady state solution of the system highlights the probability distribution, which underlies the frequency behavior. A particular instance of the general model, called cubic-cut-off, was analyzed and tested in a number of experiments, producing good answers in difficult cases, even in the presence of peculiar behaviors.

In this study, fortified pasta was prepared by replacing semolina with 0, 5, and 10 g/100 g of grape pomace (GP), a food industry by-product, rich in fiber and phenols. GP inclusion in pasta significantly reduced its optimum cooking time and the swelling index, while also increasing the cooking loss (p < 0.05). Furthermore, pasta firmness and adhesiveness were enhanced by the GP addition, as well as the total phenol content and the antioxidant activity, evaluated through ABTS and FRAP assays (p < 0.05). From a nutritional point of view, increasing amounts of GP resulted in a significative decrease in the rapidly digestible starch and an increase in the slowly digestible starch, while the predicted in vitro glycemic index was also reduced (p < 0.05). Sensory analysis showed that fortified spaghetti had good overall acceptability, and the results suggest that GP-fortified pasta could represent a healthy product with good technological and sensory properties.

The problem of clustering, that is, the partitioning of data into groups of similar objects, is a key step for many data-mining problems. The algorithm we propose for clustering is based on the symmetric nonnegative matrix factorization (SymNMF) of a similarity matrix. The algorithm is first presented for the case of a prescribed number k of clusters, then it is extended to the case of a not a priori given k. A heuristic approach improving the standard multistart strategy is proposed and validated by the experimentation.

The paper deals with the problem of global minimization of a polynomial function expressed through the Frobenius norm of two-dimensional or three-dimensional matrices. An adaptive procedure is proposed which applies a Multistart algorithm according to a heuristic approach. The basic step of the procedure consists of splitting the runs of different initial points in segments of fixed length and to interlace the processing order of the various segments, discarding those which appear less promising. A priority queue is suggested to implement this strategy. Various parameters contribute to the handling of the queue, whose length shrinks during the computation, allowing a considerable saving of the computational time with respect to classical procedures. To verify the validity of the approach, a large experimentation has been performed on both nonnegatively constrained and unconstrained problems.
