Extragalactic plasma jets are some of the few astrophysical environments able to confine ultra-high-energy cosmic rays, but whether they are capable of accelerating these particles is unknown. In this work, we revisit particle acceleration at relativistic magnetized shocks beyond the local uniform field approximation, by considering the global transverse structure of the jet. Using large two-dimensional particle-in-cell simulations of a relativistic electron-ion plasma jet, we show that the termination shock forming at the interface with the ambient medium accelerates particles up to the confinement limit. The radial structure of the jet magnetic field leads to a relativistic velocity shear that excites a von K\'arm\'an vortex street in the downstream medium trailing behind an over-pressured bubble filled with cosmic rays. Particles are efficiently accelerated at each crossing of the shear flow boundary layers. These findings support the idea that extragalactic plasma jets may be capable of producing ultra-high-energy cosmic rays. The High-Altitude Water Cherenkov (HAWC) observatory is a second-generation continuously operated, wide field-of-view, TeV gamma-ray observatory. The HAWC observatory and its analysis techniques build on experience of the Milagro experiment in using ground-based water Cherenkov detectors for gamma-ray astronomy. HAWC is located on the Sierra Negra volcano in M\'exico at an elevation of 4100 meters above sea level. The completed HAWC observatory principal detector (HAWC) consists of 300 closely spaced water Cherenkov detectors, each equipped with four photomultiplier tubes to provide timing and charge information to reconstruct the extensive air shower energy and arrival direction. The HAWC observatory has been optimized to observe transient and steady emission from sources of gamma rays within an energy range from several hundred GeV to several hundred TeV. However, most of the air showers detected are initiated by cosmic rays, allowing studies of cosmic rays also to be performed. We report TeV gamma-ray observations of the ultra-high-energy source MGRO J1908+06 using data from the High Altitude Water Cherenkov (HAWC) Observatory. This source is one of the highest-energy known gamma-ray sources, with emission extending past 200 TeV. Modeling suggests that the bulk of the TeV gamma-ray emission is leptonic in nature, driven by the energetic radio-faint pulsar PSR J1907+0602. Depending on what assumptions are included in the model, a hadronic component may also be allowed. Type II-P supernov\ae~(SNe), the most common core-collapse SNe type, result from the explosions of red supergiant stars. Their detection in the radio domain testifies of the presence of relativistic electrons, and shows that they are potentially efficient energetic particle accelerators. If hadrons can also be accelerated, these energetic particles are expected to interact with the surrounding medium to produce a gamma-ray signal even in the multi--TeV range. The intensity of this signal depends on various factors, but an essential one is the density of the circumstellar medium. Such a signal should however be limited by electron-positron pair production arising from the interaction of the gamma-ray photons with optical photons emitted by the supernova photosphere, which can potentially degrade the gamma-ray signal by over ten orders of magnitude in the first days/weeks following the explosion. We calculate the gamma-gamma opacity from a detailed modelling of the time evolution of the forward shock and supernova photosphere, taking a full account of the non-isotropy of the photon interactions. We discuss the time-dependent gamma-ray TeV emission from type II-P SNe as a function of the stellar progenitor radius and mass-loss rate, as well as the explosion energy and mass of the ejected material. We evaluate the detectability of the SNe with the next generation of Cherenkov telescopes. We find that, while most extragalactic events may be undetectable, type II-P SNe exploding in our Galaxy or in the Magellanic Clouds should be detected by gamma-ray observatories such as the upcoming Cherenkov Telescope Array., Comment: 9 pages, 8 figures, Accepted for publication in MNRAS

The Tibet AS$\gamma$ collaboration has reported a diffuse $\gamma$-ray emission signal from the Galactic Plane. We consider the possibility that the diffuse emission from the outer Galactic Plane at the highest energies is produced by cosmic rays spreading from a single supernova-type source either in the Local or Perseus arm of the Milky Way. We show that anisotropic diffusion of multi-PeV cosmic rays along the Galactic magnetic field can produce an extended source spanning ten(s) of degrees on the sky, with a flux-per-unit-solid-angle consistent with Tibet AS$\gamma$ measurements. Observations of this new type of very extended sources, and measurements of their morphologies, can be used to characterize the anisotropic diffusion of PeV cosmic rays in the Galactic magnetic field, and to constrain the locations and properties of past PeVatrons., Comment: 7 pages, 3 figures

It is generally held that >100 TeV emission from astrophysical objects unambiguously demonstrates the presence of PeV protons or nuclei, due to the unavoidable Klein-Nishina suppression of inverse Compton emission from electrons. However, in the presence of inverse Compton dominated cooling, hard high-energy electron spectra are possible. We show that the environmental requirements for such spectra can naturally be met in spiral arms, and in particular in regions of enhanced star formation activity, the natural locations for the most promising electron accelerators: powerful young pulsars. Our scenario suggests a population of hard ultra-high energy sources is likely to be revealed in future searches, and may also provide a natural explanation for the 100 TeV sources recently reported by HAWC., Accepted for publication in ApJL

The incidence of mastitis increases with parity in dairy cattle and multiparous cows are often treated at drying off to limit the risk of udder health issues and support mammary gland tissues recovery. Milk somatic cells count (SCC, cells/mL) comprises different white blood cells fractions and is worldwide used to monitor and genetically improve udder health. Nevertheless, only certain SCC fractions increase when an udder inflammation occurs. Considering that antibiotic use for preventive purposes will be forbidden in 2022, we compared two different dry therapy protocols, blanket (BDCT) and selective (SDCT), on different SCC fractions in healthy quarters milk. Multiparous Holstein cows were enrolled in a randomized controlled trial and SCC, neutrophils, macrophages, lymphocytes, polymorphonuclear cells (PMN) and differential somatic cell count (DSCC) recorded after the experimental drying off were available. Significant differences were observed between the two protocols, with more favorable parameters in BDCT than SDCT cows. Results showed that moving from BDCT to SDCT is expected to significantly increase some SCC fractions, such as PMN, in healthy quarters. The baseline SCC level at the onset of lactation was greater in cows under SDCT than BDCT. Although not significant, clinical mastitis prevalence was numerically lower in BDCT (7.32%) than SDCT (8.62%). In this study we referred to a limited number of cows, but still findings will be useful to improve the knowledge on the impact of SDCT on milk SCC fractions in healthy quarters.

The study was aimed at assessing heat load-related risk of clinical mastitis (CM) in dairy cows. Records of CM for the years 2014 and 2015 were obtained from a large conventional dairy farm milking about 1,200 Holstein cows in central Italy. A case of CM was defined by the presence of clinical signs and veterinary confirmation. Quarter milk samples were collected and bacteriological investigated for each CM. Etiological agents were identified and classified as environmental or contagious pathogens. Hourly weather data from the nearest weather station were used to calculate heat load index (HLI). Upper and lower thresholds of HLI, at which the animal accumulates or dissipates heat, were settled and used to measure heat load balance through the accumulated heat load (AHL) model. Zero and positive values of AHL indicate periods of thermo-neutral and heat accumulation, respectively. Each case of CM was associated with HLI-AHL values recorded 5 d before the event. The risk of CM was evaluated using a case-crossover design. A conditional logistic regression model was used to calculate the odds ratio and 95% confidence intervals of CM recorded in thermo-neutral (AHL = 0) or heat load (AHL0) days, pooled or stratified for pathogen type (environmental or contagious). Classes of AHL as low (6.5), medium (6.6-34.9), and high (35) were included in the model. Other variables included in the model were milk yield as liters (20, 20-30, and30), days in milk (60, 60-150, and150), and parity (1, 2-3, and3). A total of 1,086 CM cases were identified from 677 cows. Escherichia coli, Streptococcus spp., and Streptococcus uberis were the environmental pathogens isolated with the highest frequency; Staphylococcus aureus prevailed within contagious species. The analysis of pooled data indicated a significant effect of heat load on the occurrence of CM in the contagious pathogen stratum. Higher milk yield, middle and late stage of lactation, and older parity increased the risk of CM under heat load conditions. However, the association between pathogen type and these factors was not clear because the model provided significant odds ratios within all pathogen categories. The present study provided the first evidence of an association between HLI and CM in dairy cattle and suggested the ability of the AHL model to assess the risk of mastitis associated with heat load.

International audience; Bio-refining of algal biomass is currently considered as a key strategy to cut down the cost and improve the overall feasibility of algal-derived biodiesel. With that aim, in this study it was implemented a three-stage biorefinery process for the recovery of five differentiated bio-products from heterotrophically Chlorella protothecoides biomass. In the first stage, which was conducted at pilot scale from 14 kg of wet biomass, direct saponification converted 40% of dry algal biomass into free fatty acids. The obtained fatty acids were successfully turned into high quality biodiesel, whereas the analysis of unsaponifiables revealed the presence of interesting high-value biomolecules such as sterols (62%), squalene and carotenoids (1.7% each). The de-oiled biomass underwent an enzymatic hydrolysis process. This second process led to the valorization of 9% (0.09 kg/kg) of the remaining algal components which were recovered in a liquid hydrolysate mainly composed of soluble amino acids (15 g/L) and sugars (27.9 g/L). In the last biorefinery stage, the leftover solid fraction after enzymatic hydrolysis (0.36 kg/kg) was used as substrate in an anaerobic digestion process which yielded biogas at 196 ± 4 NL CH4/kg VS. The digestate co-produced in this stage was chemically characterized and assessed as fertilizer (at a dose of 170kg N/ha) for wheat and tomato plant growth, with comparable effect to that of industrial fertilizers. This use allowed a closed-loop system through the recycling of nutrients for primary production. The exposed cascade-processing, which was demonstrated technically feasible, could potentially improve the value of algal biomass through the production of multiple products.

Between January and May 2012, a total of 286 bulk tank milk samples from dairy sheep farms located in central Italy were tested for the presence of Staphylococcus aureus. One hundred fifty-three samples were positive for S. aureus (53.5%), with an average count of 2.53 log cfu/mL. A total of 679 S. aureus colonies were screened for methicillin resistance by the cefoxitin disk diffusion test, and 104 selected cefoxitin-susceptible isolates were also tested for their susceptibility to other antimicrobials representative of the most relevant classes active against Staphylococcus spp. by using the Kirby-Bauer disk diffusion method. Two methicillin-resistant Staphylococcus aureus (MRSA) isolates, carrying respectively the mecA and the mecC genes, were detected in 2 samples from 2 different farms (prevalence 0.7%). The mecA-positive MRSA isolate was blaZ positive, belonged to spa type t127, sequence type (ST)1, clonal complex (CC)1, carried a staphylococcal cassette chromosome mec (SCCmec) type IVa, and was phenotypically resistant to all the β-lactams tested and to erythromycin, streptomycin, kanamycin, and tetracycline. The mecC-positive MRSA isolate was negative for the chromosomally or plasmid-associated blaZ gene but positive for the blaZ allotype associated with SCCmec XI (blaZ-SCCmecXI), belonged to spa type 843, ST(CC)130, carried a SCCmec type XI, and was resistant only to β-lactams. Both MRSA were negative for the presence of specific immune-evasion and virulence genes such as those coding for the Panton-Valentine leucocidin, the toxic shock syndrome toxin 1, and the immune evasion cluster genes. Regarding the presence of the major S. aureus enterotoxin genes, the mecC-positive MRSA tested negative, whereas the ST (CC)1 mecA-positive MRSA harbored the seh gene. Among the 104 methicillin-susceptible S. aureus isolates examined for antimicrobial susceptibility, 63 (60.58%) were susceptible to all the antimicrobials tested, and 41 (39.42%) were resistant to at least 1 antimicrobial. In particular, 23 isolates (22.12%) were resistant to tetracycline, 16 (15.38%) to sulfonomides, 14 (13.46%) to trimethoprim and sulfamethoxazole, and 9 (8.65%) to ampicillin, whereas only 1 isolate was resistant to both fluoroquinolones and aminoglycosides. The high prevalence of S. aureus found in bulk tank milk samples and the isolation of MRSA, although at a low prevalence, underlines the importance of adopting control measures against S. aureus in dairy sheep farms to minimize the risks for animal and public health. Moreover, this study represents the first report of mecC-positive MRSA isolation in Italy and would confirm that, among livestock animals, sheep might act as a mecC-MRSA reservoir. Although this lineage seems to be rare in dairy sheep (0.35% of farms tested), because mecC-positive MRSA are difficult to detect by diagnostic routine methods employed for mecA-positive livestock-associated MRSA, diagnostic laboratories should be aware of the importance of searching for the mecC gene in all the mecA-negative S. aureus isolates displaying resistance to oxacillin, cefoxitin, or both.

Staphylococcus aureus is involved in a wide variety of diseases in humans and animals, and it is considered one of the most significant etiological agents of intramammary infection in dairy ruminants, causing both clinical and subclinical infections. In this study, the intra-farm prevalence and circulation of methicillin-resistant S. aureus (MRSA) and methicillin-susceptible S. aureus (MSSA) were investigated on an Italian dairy sheep farm previously identified as MRSA-positive by testing bulk tank milk (first isolation in 2012). Human samples (nasal swabs, hand skin samples, and oropharyngeal swabs) from 3 persons working in close contact with the animals were also collected, and the genetic characteristics and relatedness of the MRSA isolates from human and animal sources within the farm were investigated. After 2yr from the first isolation, we confirmed the presence of the same multidrug-resistant strain of MRSA sequence type (ST)1, clonal complex (CC)1, spa type t127, staphylococcal cassette chromosome mec (SCCmec) type IVa, showing identical pulsed field gel electrophoresis (PFGE) and resistance profiles at the farm level in bulk tank milk. Methicillin-resistant S. aureus isolates were detected in 2 out of 556 (0.34%) individual milk samples, whereas MSSA isolates were detected in 10 samples (1.8%). The MRSA were further isolated from udder skin samples from the 2 animals that were MRSA-positive in milk and in 2 of the 3 examined farm personnel. All MRSA isolates from both ovine and human samples belonged to ST(CC)1, spa type t127, SCCmec type IVa, with some isolates from animals harboring genes considered markers of human adaptation. In contrast, all MSSA isolates belonged to ruminant-associated CC130, ST700, spa type t528. Analysis by PFGE performed on selected MRSA isolates of human and animal origin identified 2 closely related (96.3% similarity) pulsotypes, displaying only minimal differences in gene profiles (e.g., presence of the immune evasion cluster genes). Although we observed low MRSA intra-farm prevalence, our findings highlight the importance of considering the possible zoonotic potential of CC1 livestock-associated MRSA, in view of the ability to persist over years at the farm level. Biosecurity measures and good hygiene practices could be useful to prevent MRSA spread at the farm level and to minimize exposure in the community and in categories related to farm animal industry (e.g., veterinarians, farmers, and farm workers).

A total of 227 Staphylococcus aureus colonies, isolated from 54 samples of raw milk and dairy products of bovine, ovine, caprine and bubaline origin were tested for the presence of genes coding for staphylococcal enterotoxins (SEs/SEls) and for methicillin resistance. Ninety-three colonies, from 31 of the 54 samples (57.4%) and from 18 (69.2%) of the 26 farms of origin tested positive for SEs/SEls genes. Most isolates harboured more than one toxin gene and 15 different toxinotypes were recorded. The most frequent were “sec” gene alone (28.6%), “sea, sed, ser, selj” (20%), “seg, sei” and “seh” (8.6%). The 77 colonies harbouring “classical enterotoxins” genes (sea-sed) were further tested for enterotoxin production, which was assessed for 59.2% of the colonies. Three methicillin-resistant S. aureus (MRSA) isolates were detected in three different ovine milk/dairy product samples (1.3%). All isolates belonged to spa type t127, sequence type 1, clonal complex 1, SCCmec type IVa.

Staphylococcus aureus is a major cause of clinical infections in humans and its enterotoxins cause foodborne disease. In the present study, we tested a total of 51 isolates of S. aureus from small-ruminant dairy farms with artisan dairy facilities, all located in Latium, Italy. The farms have a known history of a high prevalence of methicillin-resistant S. aureus (MRSA). Most of the MRSA isolates (27 of 51) belonged to spa-type t127 (43.1%), followed by t2678 (3.9%), t044 (2%), t1166 (2%), and t1773 (2%). PFGE performed on mecA positive strains identified one cluster (≥ 80% of similarity), comprising 22 MRSA. Nine of twenty-two MRSA isolates were assigned human host origin, and 13 isolates did not belong to a specific host. During the characterization study, one strain isolated from bulk tank milk samples harbored the pvl gene; the strain was not enterotoxigenic with a non-specific host according to the biotyping scheme, highlighting the possible emerging risk of transmission of bacterial virulence factors by foods, the environment, and foodhandlers. These findings stress the importance of hygienic measures at all processing steps of the food production chain and underline that monitoring for the presence of MRSA throughout the food chain is essential for public health.

We calculate the diffusion coefficients of charged cosmic rays (CR) propagating in regular and turbulent magnetic fields. If the magnetic field is dominated by an isotropic turbulent component, we find that CRs reside too long in the Galactic disc. As a result, CRs overproduce secondary nuclei like boron for any reasonable values of the strength and the coherence length of an isotropic turbulent field. We conclude therefore that the propagation of Galactic CRs has to be strongly anisotropic because of a sufficiently strong regular field and/or of an anisotropy in the turbulent field. We investigate how the extragalactic proton component derived within the "escape model" can be explained by astrophysical sources. We consider as possible cosmic ray (CR) sources normal/starburst galaxies and radio-loud active galactic nuclei (AGN). We find that the contribution to the total extragalactic proton flux from normal and starburst galaxies is only subdominant and does not fit the spectral shape deduced in the escape model. In the case of radio-loud AGN, we show that the complete extragalactic proton spectrum can be explained by a single source population, BL Lac/FR I, for any of the potential acceleration sites in these sources. We calculate the diffuse neutrino and $\gamma$-ray fluxes produced by these CR protons interacting with gas inside their sources. For a spectral slope of CRs close to $\alpha=2.1-2.2$ as suggested by shock acceleration, we find that these UHECR sources contribute the dominant fraction of both the isotropic $\gamma$-ray background and of the extragalactic part of the astrophysical neutrino signal observed by IceCube.

International audience; We show that the cosmic ray (CR) knee can be entirely explained by energy-dependent CR leakage from the Milky Way, with an excellent fit to all existing data. We test this hypothesis calculating the trajectories of individual CRs in the Galactic magnetic field. We find that the CR escape time τesc(E) exhibits a knee-like structure around E/Z = few × 1015 eV for small coherence lengths and strengths of the turbulent magnetic field. The resulting intensities for different groups of nuclei are consistent with the ones determined by KASCADE and KASCADE-Grande, using simple power-laws as injection spectra. The transition from Galactic to extragalactic CRs is terminated at ≈ 2×1018 eV, while extragalactic CRs contribute significantly to the subdominant proton flux already for >∼ 2×1016 eV. The natural source of extragalactic CRs in the intermediate energy region up to the ankle are in this model normal and starburst galaxies. The escape model provides a good fit to ln(A) data; it predicts that the phase of the CR dipole varies strongly in the energy range between 1×1017 and 3×1018 eV, while our estimate for the dipole magnitude is consistent with observations. above E > 1014 eV. Adding a single nearby source to this model explains moreover the dipole anisotropy below 1014 eV, the specific slope of the locally measured proton flux as well as of the antiproton and positron fluxes.

During a supernova explosion, a radiation-dominated shock (RDS) travels through its progenitor. A collisionless shock (CS) is usually assumed to replace it during shock breakout (SB). We demonstrate here that for some realistic progenitors enshrouded in optically thick winds, such as possibly SN 2008D, a CS forms deep inside the wind, soon after the RDS leaves the core, and therefore significantly before SB. The RDS does not survive the transition from the core to the thick wind when the wind close to the core is not sufficiently dense to compensate for the $r^{-2}$ dilution of photons due to shock curvature. This typically happens when the shock velocity is $\lesssim 0.1 {\rm c} \, (\frac{u_{\rm w}}{10\,{\rm km/s}}) (\frac{\dot{M}}{5 \cdot 10^{-4} \, {\rm M}_\odot {\rm /yr}})^{-1} (\frac{r_\ast}{10^{13}\,{\rm cm}})$, where $u_{\rm w}$, $\dot{M}$ and $r_\ast$ are respectively the wind velocity, mass-loss rate and radius of the progenitor star. The radiative CS results in a hard spectrum of the photon flash at breakout, which would produce an X-ray flash. Cosmic ray acceleration would start before SB, for such progenitors. A fraction of secondary TeV neutrinos can reach the observer up to more than ten hours before the first photons from breakout, providing information on the invisible layers of the progenitor., 8 pages (2 columns), 2 figures. Essential oils (EOs) are aromatic oily liquids extracted from different parts of specific plants, well known especially for their aromatic and antibacterial properties. Nowadays, EOs are exploited in the food sector mainly for their aromatic properties. Thanks to their antimicrobial activity, however, they could also be used as additives to increase the safety and the shelf-life of food products. Aim of this study was to assess the antimicrobial activity of Thymus vulgaris L. oil and of Origanum vulgare L. oil against Staphylococcus aureus both in vitro and on fresh cheese, and to determine whether the use of EOs can modify the microbiological and/or chemical-physical properties of the products. The antimicrobial activity against S. aureus in vitro was assessed by preparation of the aromatogram (diffusion in agar test), minimum inhibitory concentration test and minimum bactericidal concentration assessment. Raw sheep milk was experimentally contaminated with a strain of S. aureus ATCC 25922 and was used to produce three types of fresh cheese: without EOs, with thyme and oregano EOs (both EOs at a concentration of 1:1000). The samples were analysed on the day of production, after three and seven days. The results obtained from the tests showed that the concentration of S. aureus and the counts of lactic flora remained unchanged for all types of cheese. Even the chemical-physical parameters were constant. The results of inhibition tests on the cheese disagree with those relating to the in vitro tests. Most likely this is due to the ability of EOs to disperse in the lipids the food: the higher the fat content is, the lower the oil fraction will be able to exert the antimicrobial activity.

Aim of this work was to analyse some microbiological, chemico-physical and organoleptic parameters of sheep milk yogurt during and after its declared shelf-life. Five samples of a sheep’s milk yogurt of the same lot, collected from a short supply chain ovine dairy farm of the Roman province, were analysed. Declared shelf-life of the product was 30 days. The products were examined at 2, 14, 30, 35 and 40 days from the production date, performing the following microbiological analyses: enumeration of i) colony-forming units characteristic of the yogurt, ii) Enterobacteriaceae, iii) yeasts and/or moulds at 25°C. Microbiological identification was performed by miniature biochemical tests and for the lactic acid bacteria also by PCR. At every test interval, evaluation of organoleptic parameters and pH was also performed. The analysed product maintained an almost constant amount of lactic acid bacteria until the end of the declared shelf-life. Concerning lactic acid bacteria, a 100% concordance of the results observed by using biochemical identification methods and PCR assays was obtained. After 14 days from the production, the presence of yeasts (Candida famata) was revealed, while the presence of moulds was detected after 30 days. Ralstonia picketii, an environmental microorganism, was also isolated. The results obtained in this study indicate that yogurt spoilage is mainly due to the growth of specific microorganisms of spoilage, such as yeasts and moulds.

We investigate the possibility that the cosmic ray (CR) knee is entirely explained by the energy-dependent CR leakage from the Milky Way. We test this hypothesis calculating the trajectories of individual CRs with energies between $E/Z=10^{14}$ eV and $10^{17}$ eV propagating them in the regular and turbulent Galactic magnetic field. We find a knee-like structure of the CR escape time $\tau_{\rm esc}(E)$ around $E/Z={\rm few}\times 10^{15}$ eV for a coherence length $l_{\rm c} \simeq 2$ pc of the turbulent field, while the decrease of $\tau_{\rm esc}(E)$ slows down around $E/Z\simeq 10^{16}$ eV in models with a weak turbulent magnetic field. Assuming that the injection spectra of CR nuclei are power-laws, the resulting CR intensities in such a turbulence are consistent with the energy spectra of CR nuclei determined by KASCADE and KASCADE-Grande. Analyses of TeV-PeV cosmic ray (CR) diffusion around their sources usually assume either isotropic diffusion or anisotropic diffusion due to the regular Galactic magnetic field. We show that none of them are adequate on distances smaller than the maximal scale Lmax ~ 100 pc of fluctuations in the turbulent interstellar magnetic field. As a result, we predict anisotropic gamma-ray emissions around CR proton and electron sources, even for uniform densities of target gas. The centers of extended emission regions may have non-negligible offsets from their sources, leading to risks of misidentification. Gamma-rays from CR filaments have steeper energy spectra than those from surrounding regions. We point out that gamma-ray telescopes can be used in the future as a new way to probe and deduce the parameters of the interstellar magnetic field., Comment: 13 pages (2 columns), 9 figures. Yoghurt is one of very popular flavorful and healthful dairy product obtained by fermentation of lactic acid bacteria including Lactobacillus delbrueckii bulgaricus and Streptococcus thermophilus. Its production and consumption is growing continuously due to its therapeutic properties beside its high nutritive value. Thirty samples of yoghurt from short supply chain produced in 2 factory localized in Lazio region were analyzed with the aim of determining how certain microbiological and physicochemical characteristics change during their shelf life. Different types of yoghurt were studied: plain (12), fruit (14) and cereal yoghurt (4) produced with cow (8) and goat milk (22).The obtained results show: no presence of Enterobacteria, occasional presence of moulds and a considerable presence of yeasts. On the other hand, all the products analyzed have shown an almost constant amount of lactic acid bacteria during their shelf life. Lactic acid bacteria were identified by a biochemical and polymerase chain reaction assay. The presence of undesired microorganisms like yeasts was found. However, the quality of products was satisfying for the concentration of lactic acid bacteria detected in their shelf life.

Galactic cosmic ray (CR) acceleration to the knee in the spectrum at a few PeV is only possible if the magnetic field ahead of a supernova remnant (SNR) shock is strongly amplified by CR escaping the SNR. A model formulated in terms of the electric charge carried by escaping CR predicts the maximum CR energy and the energy spectrum of CR released into the surrounding medium. We find that historical SNR such as Cas A, Tycho and Kepler may be expanding too slowly to accelerate CR to the knee at the present time., 17 pages, 5 figures, accepted for publication in the Monthly Notices of the Royal Astronomical Society

In this work we study how the turbulent component of the Galactic magnetic field (GMF) affects the propagation of ultrahigh energy heavy nuclei. We investigate first how the images of individual sources and of the supergalactic plane depend on the properties of the turbulent GMF. Then we present a quantitative study of the impact of the turbulent field on (de-) magnification of source fluxes, due to magnetic lensing effects. We also show that it is impossible to explain the Pierre Auger data assuming that all ultrahigh energy nuclei are coming from Cen A, even in the most favorable case of a strong, extended turbulent field in the Galactic halo., Comment: 10 pages (2 columns), 8 figures. We propose a new method to search for heavy nuclei sources, on top of background, in the Ultra-High Energy Cosmic Ray data. We apply this method to the 69 events recently published by the Pierre Auger Collaboration and find a tail of events for which it reconstructs the source at a few degrees from the Virgo galaxy cluster. The reconstructed source is located at ~ 8.5 degrees from M87. The probability to have such a cluster of events in some random background and reconstruct the source position in any direction of the sky is about 7 x 10^(-3). The probability to reconstruct the source at less than 10 degrees from M87 in a data set already containing such a cluster of events is about 4 x 10^(-3). This may be a hint at the Virgo cluster as a bright ultra-high energy nuclei source. We investigate the ability of current and future experiments to validate or rule out this possibility, and discuss several alternative solutions which could explain the existing anisotropy in the Auger data., 12 pages (2 columns), 10 figures. We constrain the energy at which the transition from Galactic to extragalactic cosmic rays occurs by computing the anisotropy at Earth of cosmic rays emitted by Galactic sources. Since the diffusion approximation starts to loose its validity for E/Z >~ 10^(16-17) eV, we propagate individual cosmic rays (CRs) using Galactic magnetic field models and taking into account both their regular and turbulent components. The turbulent field is generated on a nested grid which allows spatial resolution down to fractions of a parsec. Assuming sufficiently frequent Galactic CR sources, the dipole amplitude computed for a mostly light or intermediate primary composition exceeds the dipole bounds measured by the Auger collaboration around E ~ 10^18 eV. Therefore, a transition at the ankle or above would require a heavy composition or a rather extreme Galactic magnetic field with strength >~ 10 muG. Moreover, the fast rising proton contribution suggested by KASCADE-Grande data between 10^17 eV and 10^18 eV should be of extragalactic origin. In case heavy nuclei dominate the flux at E >~ 10^18 eV, the transition energy can be close to the ankle, if Galactic CRs are produced by sufficiently frequent transients as e.g. magnetars., 22 pages, 10 figures. Observations are consistent with a significant fraction of heavy nuclei in the cosmic ray flux above a few times 10^19 eV. Such nuclei can be deflected considerably in the Galactic magnetic field, with important implications for the search of their sources. We perform detailed simulations of heavy nuclei propagation within recent Galactic magnetic field models. While such models are not yet sufficiently constrained to predict deflection maps in detail, we find general features of the distribution of (de-) magnified flux from sources. Since in most theoretical models sources of heavy nuclei are located in the local large scale structure of galaxies, we show examples of images of several nearby galaxy clusters and of the supergalactic plane. Such general features may be useful to develop efficient methods for source reconstruction from observed ultrahigh energy cosmic ray arrival directions., Comment: 17 pages, 11 figures. In this paper, we suggest a new way to identify single bright sources of Ultra High Energy Cosmic Rays (UHECR) on the sky, on top of background. We look for doublets of events at the highest energies, E > 6 x 10^19 eV, and identify low energy tails, which are deflected by the Galactic Magnetic Field (GMF). For the sources which are detected, we can recover their angular positions on the sky within one degree from the real ones in 68% of cases. The reconstruction of the deflection power of the regular GMF is strongly affected by the value of the turbulent GMF. For typical values of 4 microG near the Earth, one can reconstruct the deflection power with 25% precision in 68% of cases., 20 pages, 10 figures. Corresponds to the version published in JCAP

The escape model explains the cosmic ray (CR) knee by energy-dependent CR leakage from the Milky Way, with an excellent fit to all existing data. We test this model calculating the trajectories of individual CRs in the Galactic magnetic field. We find that the CR escape time τesc(E) exhibits a knee-like structure around E/Z = few × 1015 eV for small coherence lengths and strengths of the turbulent magnetic field. The resulting intensities for different groups of nuclei are consistent with the ones determined by KASCADE and KASCADE-Grande, using simple power-laws as injection spectra. The transition from Galactic to extragalactic CRs happens in this model at low energies and is terminated below ≈ 3 × 1018 eV. The intermediate energy region up to the ankle is populated by CRs accelerated in starburst galaxies. This model provides a good fit to ln(A) data, while the estimated CR dipole anisotropy is close to, or below, upper limits in the energy range 1017 – 1018 eV. The phase of the dipole is expected to change between 1 × 1017 and 3 × 1018 eV.

A dipolar anisotropy in the cosmic ray (CR) arrival directions on the sky is predicted by the diffusion approximation (DA). However, the DA is not designed to predict phenomena arising on spatial scales smaller than the cosmic ray mean free path. We demonstrate here that energy-dependent smaller scale anisotropies (higher order multipoles) must naturally appear on the sky and reflect the local concrete realization of the magnetic field within the CR mean free path [1, 2]. We show that it is a viable explanation for the observed medium and small scale anisotropies. We also discuss the perspectives and priorities for the near future, and suggest that CR anisotropy measurements should become a new way of probing local interstellar and, or heliospheric fields in the future.

In this work, we investigate the impacts a potential shift towards a heavy composition at the end of the cosmic ray (CR) spectrum would have on the future data [1, 2]. We present detailed simulations for the propagation of ultra-high energy (UHE) heavy nuclei, with E ≥ 60 EeV, within recent Galactic magnetic field (GMF) models. We consider both regular and turbulent components of the GMF. We show that with UHE heavy nuclei, there is no one-to-one correspondence between the arrival directions of cosmic rays measured at Earth and the direction of their extragalactic sources. Sources can have several distorted images on the sky. We compute images of galaxy clusters and of the supergalactic plane in recent GMF models and show the challenges, but also the possibilities, of “ultra-high energy cosmic ray astronomy” with heavy nuclei. Finally, we present a quantitative study of the impact of the GMF on the (de-)magnification of source fluxes, due to magnetic lensing. Such effects cannot be neglected in case of heavy primaries.
