Role of oils and fats in diet is one of the most complex issues of nutrition studies. The dietary effect of fats mostly depends on their fatty acids composition. Due to usage of partially hydrogenated vegetable oils in production process, margarine is one of the important sources of trans fatty acids. The aim of this study was evaluation of fatty acid profiles of margarine brands produced in Iran and compare ratio of Trans, saturated, linoleic and linolenic acid with Iran standard of margarines. In this study fatty acid profile of eight Iranian margarine brands were analyzed by AOCS official method via gas chromatography using HP-88 capillary columns (100 m×0.25 mm I.D.×0.25 µm, Agilent, USA, Part No:112-88A7,Serial No: US7307815H). The average of saturated, monounsaturated, polyunsaturated and trans fatty acids were 38.83, 33.19, 18.56 and 6.91 % respectively and the range of trans fatty acids were also 0.48-23.97. In this study the fatty acid profile, oxidative stability index, total phenol and also peroxide values of several liquid used liquid oil samples were assessed at the same time by gas chromatography, rancimat, spectrometer and also deep-fryer device. The average of saturated, monounsaturated, polyunsaturated and trans fatty acids were 23.76, 28.31, 46.46 and 1.33% respectively and the range of trans fatty acids were also 0.67-2.42 %. According to oxidative stability index, peroxide value and also Total polar material, 72 %, 33.33 %, and 6.25 % of used oil and 65 %, 21 %, 8.02 % of fresh samples didn‘t approved by the Iranian standard ranges. Pomegranate (Punica granatum L.) belongs to genera Punica and family Punicaceae. It is a herbal preparation that has been suggested as useful in the treatment of gastrointestinal disorders. However, to our knowledge, no study has been conducted to evaluate this therapeutic property. In the present study the antiulcerogenic effects of pomegranate peel methanol extract, was tested on male Wistar albino rats. Oral pretreatment with peel extracts (25, 50 and 100 mg/kg) for 15 days protected the gastric mucosa against the damage induced by indomethacin (50 mg/kg). The incidence of ulceration in the control group was 100%. The best results were found in a dosage of 50 mg/kg in sour summer cultivar which inhibited the peptic ulcerin comparison with indomethacin induced gastric ulcer group. Lowest ulcer index (5.4 ± 0.55), an apparent decrease in the infiltration of polymorphonuclear leukocytes and hemorrhage were observed after administration of sour summer extracts (50 mg/kg). In conclusion present study showed that pomegranate peel extract, especially sour summer, has curative potential as an antiulcer, possibly via its high antioxidant activity. These results from pomegranate peel extract can provide an extra income and may contribute about good nutritional values of this product.

Date is one of the world's oldest food-producing plants wich has always played an important role in the economy and social life. Various researchers examined chemical composition and nutritional values of edible parts of dates while limited information about chemical composition and nutritional quality of date seed is available. In this study, fatty acid composition and total tocopherol content of 14 Iranian date seed oils were studied. Statistical analysis was performed through SPSS computing package. According to the fatty acid profiles, seven fatty acids were found through nearly 50% oleic acid in seeds. Shekar cultivar by 51.40% had the maximum amount and Lasht cultivar by 33.38% had the minimum amount of oleic acid. Tocopherol content in the samples varied between 33.86 μg vit E/g oil for Shahabi2 to 10.09 μg vit E/g oil for Shekar. Tocopherol content was 1.88 and 0.61 μg respectively in one-gram seed of these two cultivars. Iranian date seed oils classified as oleic-lauric oil, had a high amount of oleic acid and could serve as a profitable source of valuable oils for industrial applications.

The genus Phoenix is one of the most widely cultivated groups of palms around the world. The aim of this study was to determine the antioxidant activity and total phenolic compounds of 14 different varieties of date palm (Phoenix dactylifera L., Arecaceae) seed extracts with 5 solvents [water, methanol, methanol (50%), DMSO, and water: methanol: acetone: formic acid (20:40:40:0.1)]. Ferric reducing antioxidant power assay and Folin-Ciocalteu reagent was used for determination of the antioxidant effect and phenolic content of date seeds. DMSO extract of the “Zahedi” variety had the highest antioxidant effect (37.42 mmol/100 g dry plant) and total phenolic content (3541 mg /100 g dry plant) among these 14 varieties and 5 solvents. There was a significant correlation between the total phenolic content and antioxidant activity (R2 = 0.791, P < 0.001) of the “Zahedi” variety DMSO extract, which can indicates that polyphenols are the main antioxidants. Iranian date palm seed has a relatively high antioxidant activity due to contribution of phenolic compounds. The present study showed that the Iranian date seeds are strong radical scavengers and can be considered as a good source of natural antioxidants for medicinal and commercial uses.
