Commercial Saccharomyces cerevisiae plays an important role in the traditional winemaking industry. In this study, the correlation of microbial community and aroma compound in the process of alcohol fermentation of Cabernet Sauvignon by four different commercial starters was investigated. The results showed that there was no significant difference in the fermentation parameters of the four starters, but there were differences in microbial diversity among the different starters. The wine samples fermented by CEC01 had higher microbial abundance. GC-MS detected a total of 58 aromatic compounds from the fermentation process by the experimental yeasts. There were 25 compounds in the F6d variant, which was higher than in other samples. The PCA score plot showed that 796 and F15 yeast-fermented wines had similar aromatic characteristic compositions. According to partial least squares (PLS, VIP > 1.0) analysis and Spearman’s correlation analysis, 11, 8, 8 and 10 microbial genera were identified as core microorganisms in the fermentation of 796, CEC01, CECA and F15 starter, respectively. Among them, Leuconostoc, Lactobacillus, Sphingomonas and Pseudomonas played an important role in the formation of aroma compounds such as Ethyl caprylate, Ethyl caprate and Ethyl-9-decenoate. These results can help us to have a better understanding of the effects of microorganisms on wine aroma and provide a theoretical basis for improving the flavor quality of Cabernet Sauvignon wine.

Anecdotal evidence suggests that spontaneous alcoholic fermentation of grape juice is becoming a more popular option in global wine production. Wines produced from the same grape juice by inoculation or spontaneous fermentation usually present distinct chemical and sensorial profiles. Inoculation has been associated with more similar end-products, a loss of typicity, and lower aroma complexity, and it has been suggested that this may be linked to suppression of the local or regional wine microbial ecosystems responsible for spontaneous fermentations. However, whether inoculated fermentations of different juices from different regions really end up with a narrower, less diverse chemical profile than those of spontaneously fermented juices has never been properly investigated. To address this question, we used grape juice from three different varieties, Grüner Veltliner (white), Zweigelt (red), and Pinot noir (red), originating from different regions in Austria to compare spontaneous and single active dry yeast strains inoculated fermentations of the same grape samples. The chemical analysis covered primary metabolites such as glycerol, ethanol and organic acids, and volatile secondary metabolites, including more than 40 major and minor esters, as well as higher alcohols and volatile fatty acids, allowing an in depth statistical evaluation of differences between fermentation strategies. The fungal (mainly yeast) communities throughout fermentations were monitored using automated ribosomal intergenic spacer analysis. The data provide evidence that inoculation with single active dry yeast strains limits the diversity of the chemical fingerprints. This study was conducted to examine putative correlations between weather parameters during April-September and the amounts of nutrients, minerals and bioactive compounds in the juices of 16 apple varieties from four harvest years in Lower Austria. For most sugar-parameters, negative correlations were found with the total precipitation (r between -0.42 and -0.64). Conversely, positive correlations were observed with the mean air temperature (r between 0.32 and 0.66), the global radiation (r between 0.32 and 0.61) and the number of tropical days (r between 0.39 and 0.51). The sum of 14 polyphenols (HPLC quantitation) was positively correlated with the mean air temperature and global radiation (r s 0.44 and 0.42). Negative correlations were observed between the global radiation and potassium, magnesium and calcium contents (correlation coefficients -0.49, -0.68 and -0.69). Pinot blanc is a grape variety found in all wine-growing regions of Austria. However, there are only few scientific studies which deal with the aroma of wines of this variety. In the course of this project, the relationship between aroma profile and the typicity of Austrian Pinot blanc wines was studied. The aim was to describe the typicity and to find significant differences in aroma profiles and aroma descriptors of typical and atypical Pinot blanc wines. Since the typicity of a jointly anchored prototype is embedded in the memory, typical attributes for Austrian Pinot blanc wines were first identified by consumers and experts or producers. According to this, 131 flawless commercial Austrian wines of the variety Pinot blanc of the vintages 2015 to 2017 were analysed for more than 100 volatile substances. The wines of the vintages 2015 to 2017 were judged by a panel of producers and experts for their typicity; furthermore, the wines of the vintage 2017 were also evaluated by a consumer panel and a trained descriptive panel. Subsequently, typical and atypical wines were described by the trained descriptive panel. It was found that Pinot blanc wines typical of Austria showed significantly higher concentrations of the ester compounds ethyl hexanoate, ethyl butanoate, ethyl octanoate, ethyl decanoate, methyl hexanoate, hexyl acetate and isoamyl acetate, while atypical wines had higher concentrations of free monoterpenes such as linalool, trans-linalool oxide, nerol oxide, nerol and alpha-terpineol. The sensory description of typical Pinot blanc wines was significantly more pronounced for the attribute "yellow pome fruit", and tended to be more pronounced for the attributes "green pome fruit", "pear", "walnut", "pineapple", "banana" and "vanilla", while the atypical Pinot blanc wines were described more by the attribute "citrus". These findings could help to ensure that, through targeted measures, Austrian Pinot blanc wines become even more typical and distinguish themselves from other origins such as Germany or South Tyrol through a clear concept of typicity.

Apple scab, caused by Venturia inaequalis , is a major fungal disease worldwide. Cultivation of scab-resistant cultivars would reduce the chemical footprint of apple production. However, new apple cultivars carrying durable resistances should be developed to prevent or at least slow the breakdown of resistance against races of V. inaequalis . One way to achieve durable resistance is to pyramid multiple scab resistance genes in a cultivar. The choice of the resistance genes to be combined in the pyramids should take into account the frequency of resistance breakdown and the geographical distribution of apple scab isolates able to cause such breakdowns. In order to acquire this information and to make it available to apple breeders, the VINQUEST project (www.vinquest.ch) was initiated in 2009. Ten years after launching this project, 24 partners from 14 countries regularly contribute data. From 2009 to 2018, nearly 9,000 data points have been collected. This information has been used to identify the most promising apple scab resistance genes for developing cultivars with durable resistance, which to date are: Rvi5 , Rvi11 , Rvi12 , Rvi14 , and Rvi15. As expected, Rvi1 , together with Rvi3 and Rvi8 , were often overcome, and have little value for scab resistance breeding. Rvi10 may also belong to this group. On the other hand, Rvi2 , Rvi4 , Rvi6 , Rvi7 , Rvi9 , and Rvi13 are still useful for breeding, but their use is recommended only in extended pyramids of ≥3 resistance genes.

With the extensive use of nitrogen-based fertilizer in agriculture, ammonia emissions, especially from cattle manure, are a serious environmental threat for soil and air. The European community committed to reduce the ammonia emissions by 30% by the year 2030 compared to 2005. After a moderate initial reduction, the last report showed no further improvements in the last four years, keeping the 30% reduction a very challenging target for the next decade. In this study, the mitigation effect of different types of tannin and tannin-based adsorbent on the ammonia emission from manure was investigated. Firstly, we conducted a template study monitoring the ammonia emissions registered by addition of the tannin-based powders to a 0.1% ammonia solution and then we repeated the experiments with ready-to-spread farm-made manure slurry. The results showed that all tannin-based powders induced sensible reduction of pH and ammonia emitted. Reductions higher than 75% and 95% were registered for ammonia solution and cattle slurry, respectively, when using flavonoid-based powders. These findings are very promising considering that tannins and their derivatives will be extensively available due to the increasing interest on their exploitation for the synthesis of new-generation "green" materials.

Boron is a finite resource, which has been listed as a critical raw material in the EU since 2014. Glass, frits and ceramics production, as well as fertilizers are among the major uses of B. Moreover, about 50 000 t B have been applied as fire retardant and pest repellent in cellulose fiber insulation (CFI) in Europe since the 1980s. Here we propose the end-of-life utilization of borated CFI as B fertilizer, to decrease societal B consumption and to avoid costly and potentially environmentally harmful CFI incineration and deposition in landfills. In a case study, we show that CFI biochar can provide substantial amounts of B to rapeseed and sunflower, with the B plant-availability being comparable to sodium tetraborate, a conventional B fertilizer. The annual B fertilizer consumption of the EU is estimated at ∼4000 t B yr -1 , which could be sustained by the B currently installed as CFI for >10 years. In addition, the annual use of B in CFI of 1100 t B yr -1 could cover ∼25% of the annual B fertilizer demand of the EU. Hence, conversion of CFI to B fertilizer provides a meaningful end-of-life strategy, which would contribute to a more resource-efficient and sustainable economy and to several of the UN Sustainable Development Goals.

The monitoring inspection of food after the Fukushima nuclear accident (2011) was essential for ensuring food safety in Japan and reducing the adverse health effects due to incorporation of inacceptable amounts of radionuclides, in particular radiocesium ( 134 Cs and 137 Cs). In this study, the mushroom fraction of the governmental data set of the first 5 years after the accident has been analyzed for contamination levels in mushrooms, in particular time trends and radioecological characteristics as well as associated health risks. The analyses show that mycorrhiza mushrooms are much more sensitive for radionuclide uptake than saprobiontic mushrooms (the latter of which include the very popular shiitake mushrooms (Lentinula edodes)). The maximum value reached 31,000 Bq/kg in a sample of apricot milkcaps in 2012. Analysis of the origin of the samples revealed that the origin (in terms of prefecture) of the mushrooms was a less determining factor for the contamination level than the type of mushrooms, as most exceedances in 2012 and thereafter were found outside Fukushima Prefecture. Several dose models were applied to the data to evaluate both worst case and realistic effective committed dose scenarios. The doses were generally rather low due to low consumption rates in the Japanese food basket. In any case, the analysis proved that the food monitoring campaign was highly effective in cutting doses to the public by more than a factor of 10 compared with a hypothetical scenario in which no monitoring had been conducted.

Bois noir (BN) associated with ' Candidatus Phytoplasma solani' (Stolbur) is regularly found in Austrian vine growing regions. Investigations between 2003 and 2008 indicated sporadic presence of the confirmed disease vector Hyalesthes obsoletus and frequent infections of bindweed and grapevine. Infections of nettles were rare. In contrast present investigations revealed a mass occurrence of H. obsoletus almost exclusively on stinging nettle. The high population densities of H. obsoletus on Urtica dioica were accompanied by frequent occurrence of ' Ca. P. solani' in nettles and planthoppers. Sequence analysis of the molecular markers secY, stamp, tuf and vmp1 of stolbur revealed a single genotype named CPsM4_At1 in stinging nettles and more than 64 and 90 % abundance in grapevine and H. obsoletus , respectively. Interestingly, this genotype showed tuf b type restriction pattern previously attributed to bindweed associated ' Ca. P. solani' strains, but a different sequence assigned as tuf b2 compared to reference tuf b strains. All other marker genes of CPsM4_At1 clustered with tuf a and nettle derived genotypes verifying distinct nettle phytoplasma genotypes. Transmission experiments with H. obsoletus and Anaceratagallia ribauti resulted in successful transmission of five different strains including the major genotype to Catharanthus roseus and in transmission of the major genotype to U. dioica . Altogether, five nettle and nine bindweed associated genotypes were described. Bindweed types were verified in 34 % of grapevine samples, in few positive Reptalus panzeri , rarely in bindweeds and occasionally in Catharanthus roseus infected by H. obsoletus or A. ribauti . ' Candidatus Phytoplasma convolvuli' (bindweed yellows) was ascertained in nettle and bindweed samples.
