Students' level of engagement and approach to learning can significantly impact their overall success in a course. This study used the student course engagement questionnaire (SCEQ) to assess the engagement levels of first-year undergraduate students studying three different introductory units (chemistry, biology and nursing) at a regional Australian university. No significant differences in engagement were found between genders, or for students studying different units. One of the most notable factors influencing engagement was student age, with students under 20 years of age scoring significantly less than mature age students across nearly all measures of engagement. Tertiary educators could use several complementary approaches to improve engagement in younger students, including the use of interactive multimedia and social media to connect with students, making the unit content relatable and relevant to students' lives, providing authentic and engaging assessment items, and pursuing interactive approaches to lectures and tutorials. Given that many university students take an introductory science course during their first year, these results are likely to be relevant across a range of disciplines.

In order to investigate gender and ethnicity-based differences in scientific attitudes among Fijian students, the widely studied Test of Scientific Related Attitudes (TOSRA) was administered to 1401 senior secondary Fijian students (Years 11-13; approximately 15-18 years of age). Students generally had a positive attitude towards science overall in Years 11-13, with females showing a more positive attitude than males. By Year 13, the attitudes of females towards science had become more negative. The attitude of iTaukei students towards science started out lower than other ethnicities in Year 11 and increased during Year 12, before falling to below the starting attitude levels in Year 13. Fijian students of Indian descent generally had a positive attitude towards science that remained consistent throughout Years 11-13, with an increase in leisure and career interest in science in Year 13. A strong correlation was found between the ethnicity of a student and their first language. Continued science outreach programmes, particularly in Year 12, are important to achieve and retain scientific interest and attitudes among Fijian secondary students.

As with other Pacific Island nations, the scientific efforts of the Kingdom of Tonga have been hampered through a lack of local scientists and science graduates. As observed globally, the region appears to face a steady decline in student interest and achievement in science, resulting in reduced uptake of science subjects in schools and universities. This study aims to provide insight into the attitudes of Tongan senior secondary students toward science, using the validated Test of Scientific Related Attitudes (TOSRA) instrument. The sample population comprised 2636 students of approximately 15-18 years of age, from 26 schools across Tonga. Overall, the mean attitudes of Tongan senior secondary students toward science were lower than that previously observed for Australian secondary students (Grades 7-10) and Fijian senior secondary students. A significant reduction in attitude was found between forms 5 and 6 for female students from rural areas, but not those from urban areas. No significant changes across different form levels were found for male students. The greatest difference between students' perspectives was found for the normality of scientists, which may be indicative of cultural views toward this topic. Combined with the similar results of previous research in Fijian students, this may point toward broader differences in the attitudes toward science between students in Pacific Island countries more generally.

The optimum germination conditions for foxtail millet sprouts enriched with γ-aminobutyric acid (GABA) and antioxidant polyphenols were investigated. From single-factor experimental results, both the GABA level and total phenolic content (TPC) were more significantly affected by soaking temperature and time, and concentration of sucrose culture solution. Response surface methodology (RSE) was used to optimize the germination conditions of foxtail millet sprouts, where the interaction between soaking temperature and sucrose concentration exhibited a significant (p < 0.05) effect on TPC, and the interaction between soaking time and sucrose concentration displayed a significant (p < 0.05) effect on GABA content. The optimal germination conditions for TPC and GABA enrichment of foxtail millet sprouts were soaking at 31 °C for 4.5 h and germinating at 35 °C with 4.5 g/L sucrose solution for 5 days. Under the optimized conditions, the TPC and GABA content of foxtail millet sprouts were 926.53 milligrams of ferulic acid equivalents per 100 g dry weight (mg FAE/100 g DW) and 259.13 mg/kg, separately, with less difference from the predicted values of 929.44 mg FAE/100 g DW and 263.60 mg/kg, respectively. Collectively, all the individual phenolic compounds increased significantly (p < 0.05) by optimization, except for cis-p-coumaric acid and cis-ferulic acid in bound. Dragon fruit (Hylocereus spp.), renowned for its aesthetic appeal and rich antioxidant content, has gained global popularity due to its numerous health benefits. In Australia, despite growing commercial interest in cultivating dragon fruit, there is uncertainty for local growers stemming from competition with imported varieties. Notably, there is a lack of comparative research on the shelf-life, antioxidant activity, and phytochemical contents of Australian-grown versus imported dragon fruit, which is crucial for enhancing market competitiveness and consumer perception. This study compares the shelf-life, antioxidant activity, and phytochemical content of Australian-grown and imported dragon fruits under ambient conditions, addressing the competitive challenges faced by local growers. Freshly harvested white-flesh (Hylocereus undatus) and red-flesh (H. polyrhizus) dragon fruit were sourced from Queensland and the Northern Territory and imported fruit were sourced from an importer in Queensland. All fruit were assessed for key quality parameters including peel color, firmness, weight loss, total soluble solids (TSS), pH, titratable acidity (TA), total phenolic content (TPC), total flavonoid content (TFC), ferric reducing antioxidant power (FRAP), cupric reducing antioxidant capacity (CUPRAC), total betalain content (TBC), and total anthocyanin content (TAC). The results indicate that Australian-grown white dragon fruits exhibited average one day longer shelf-life with less color degradation, better firmness retention, and less decline in weight loss, TSS, and acidity compared to imported fruits. Australian-grown red dragon fruits showed similar shelf-life compared to fruits from overseas. Antioxidant activities and phytochemicals were consistently higher in Australian-grown fruits throughout their shelf-life. Understanding the extraction process of Nigella oil is crucial due to its significant impact on yield, quality, and therapeutic effectiveness. This study explored the effects of various screw press temperatures (40 °C, 50 °C, 60 °C, 70 °C, and 80 °C) on the quantity and quality of Nigella oil to optimize conditions that maximize yield while maintaining its nutritional and therapeutic attributes. Our findings indicate a linear increase in oil yield as screw press temperatures rose from 40 °C to 80 °C. There were no significant differences observed in total phenolic content (TPC), cupric reducing antioxidant capacity (CUPRAC), or the composition and ratio of fatty acids across oils extracted at different temperatures. However, the ferric-reducing antioxidant power (FRAP) was highest in oils extracted at 60 °C, while the thymoquinone (TQ) content peaked between 40 °C and 60 °C. Nigella sativa, also known as black cumin, is esteemed for its rich reservoir of health-benefitting phytoconstituents nestled within its seeds. The composition of its seeds can be influenced by factors such as genotype diversity and agricultural practices. Understanding these dynamics is important for maximizing the nutritional and medicinal attributes of the seeds. This study investigated how different genotypes, growing densities, and sowing times affect oil yield and phytoconstituents of Nigella seeds in Northern Australia. The aim was to find the optimal combination of these factors to maximize desirable compounds. Our findings revealed variability in oil yield and phytoconstituents among different genotypes, growing densities, and sowing times. No single genotype stood out as having elevated levels of all desired compounds. For instance, genotype AVTKS#5 had high total phenolic content (TPC) and antioxidant capacity, while AVTKS#8 and AVTKS#7 excelled in thymoquinone (TQ) and polyunsaturated fatty acids (PUFAs) and monounsaturated fatty acids (MUFAs), respectively. Planting density had a nuanced impact, with no significant effect on oil yield and CUPRAC values, but higher densities decreased TPC, FRAP, and TQ. Interestingly, seeds cultivated at 20 and 30 plants/m2 had higher ratios of MUFAs/SFAs, PUFAs/SFAs, and (MUFAs + PUFAs)/SFAs, indicating the importance of planting density in shaping fatty acid profiles. Sowing times also had a noticeable effect, with late sowing leading to a decrease in oil yield from 19% to 14%. May-sown seeds had higher TPC, FRAP, CUPRAC, and fatty acid ratios, while TQ levels peaked in June-sown seeds. Our study highlighted positive correlations among TPC, FRAP, CUPRAC, and TQ, emphasizing their collective contribution to the nutritional and medicinal potency of Nigella seeds. Fatty acids, on the other hand, showed no significant correlation with these parameters, indicating independent regulation. In summary, our comprehensive analysis provides insights into the factors (genotype and agronomic practice) that shape the phytochemical profile of Nigella seeds, and suggests better genotype, planting density, and time of sowing for the cultivation and quality production. The addition of methane-reducing compounds (MRCs) to livestock drinking water presents an alternative method for enteric methane mitigation in extensive systems where these compounds cannot be fed through the diet. This work evaluated several such compounds with the potential to be deployed in this manner. Methane-reducing compounds were selected based on the existing literature and likelihood of dissolution when combined with a commercially available water-based nutrient supplement (uPRO) (uPRO ORANGE®, DIT AgTech, QLD, Australia). This, in turn, would demonstrate the capacity for MRCs to be administered through animal drinking water when such supplements are in use. This technique requires the analysis of MRC solubility and stability in solution, which was completed via Fourier transform infrared-attenuated total reflectance spectroscopy. The uPRO supplement is comprised of urea, urea phosphate, and ammonium sulfate, providing nitrogen, phosphorus, and sulfur—limiting nutrients for ruminants grazing extensive systems during drier periods of the year. Accordingly, medium-quality Rhodes grass hay was used in fermentation runs to simulate a basal diet during the dry season. Methane-reducing compounds were assessed in accordance with each variable measured (gas/methane production, dry matter digestibility, stability under different environmental conditions) along with existing research in the field to determine the most suitable compound for co-administration. Whilst most compounds examined in this study appeared to retain their structure in solution with uPRO, fermentation results varied in terms of successful methane mitigation. Land cover analysis is a key method used to understand past land use patterns and explore the driving forces and processes behind them. This study focuses on land cover in 18 counties and cities of Hainan Island, delving into the driving factors of land cover in specific areas of Hainan Island, including the southern, northern, eastern, western, inland, and coastal regions. The effects of socio-economic factors, landscape pattern, and urban functional units on land cover are considered, and three hypotheses are proposed to explain the observed trends. The results indicate that house prices are positively correlated with construction area, woodlands land, and urban green space, thereby supporting the luxury effect hypothesis on land cover. In addition, construction age was negatively correlated with the woodlands area, confirming the role of the inverse legacy effect hypothesis in land cover. Other relationships between urban functional units and land cover emphasized the importance of the land use hypothesis in land cover planning. These results will help decision-makers and managers to better understand the current drivers of land cover, allowing for a more scientific basis when planning and managing urban land cover. The recent steady demand for products with increased antioxidant properties largely determines the direction of research in the field of creating high‐quality products with increased biological value. Insufficient knowledge of the antioxidant activity and potential biological value of whiskey makes this area of research relevant and in demand. This study presents the results of an analysis of the influence of distillate aging conditions on the phenolic composition and antioxidant capacity of whiskey, obtained using coulometric, chromatographic, and amperometric methods of analysis. During the study, samples of whiskey with increased antioxidant capacity were obtained based on the use of alcoholic extracts of grape stems of the Vitis vinifera species. The data obtained as a result of the study can be used in the future both to improve the efficiency of methods for monitoring and regulating the circulation of alcoholic products based on the developed methodology for determining antioxidant capacity and to contribute to the creation of a new type of alcoholic products with an increased content of bioavailable biologically active substances and antioxidant capacity. This study explored the performance and physiological responses of three commercially used peanut cultivars in Australian farming systems under ambient and elevated CO2 conditions, aiming to identify the most suitable genotype for dual-purpose (grain and graze) cropping experiments. The experiment utilized an open-top chamber (OTC) facility to regulate CO2 concentrations. The elevated CO2 (EC) treatment targeted approximately 650 ± 50 µmol mol−1, while both ambient CO2 (AC) and control plots operated at a concentration of approximately 400 µmol mol−1. Notably, control plots without chambers served as a reference for current CO2 and environmental conditions. In contrast, despite having the same ambient CO2 concentration, AC plots were enclosed in chambers, allowing for plant growth comparisons with EC plots with the same environmental conditions aside from CO2 levels. The analyses revealed significant effects of CO2 enrichment on peanut plants. In particular, the EC treatment led to enhanced photosynthetic rates (20% in Kairi, 31% in Holt, and 19% in Alloway), alongside reduced stomatal conductance (−55% in Kairi, −32% in Holt, and −40% in Alloway), transpiration, and increased water use efficiency compared to AC conditions. Elevated CO2 levels positively influenced pod yields in Kairi (+41%) and Alloway (+36%). However, CO2 enrichment did not significantly alter the protein content, total phenolic content, cupric-reducing antioxidant capacity, and ferric-reducing antioxidant power of peanut plant material. Furthermore, no significant differences were observed in the phytochemical composition among the three cultivars under ambient or elevated CO2 conditions. On the other hand, analysis of the fibre structure conducted on peanut stover harvested at plant maturity suggested potential declines in feedstock quality. Based on the findings of this research, further investigations and testing, including simulated grazing trials, will be carried out to identify a single breed line suitable for dual-purpose management under future elevated CO2 conditions. Sesame is an emerging crop of interest in Australia and has attracted widespread interest due to the health-benefitting properties of its bioactive compounds, including fatty acids, lignans, and polyphenols. This study aimed to investigate the impact of drought stress on these bioactive compounds, using eleven cultivars of black sesame seeds grown in Australia. Specific varieties responded positively to water deficit (WD) conditions, showing increased levels of TPC, FRAP, CUPRAC, and lignans. Varieties 1, 4, 7, and 12 showed significantly increased FRAP values ranging from 158.02 ± 10.43 to 195.22 ± 9.63 mg TE/100 g DW in the WD treatment compared to the well-watered (WW) treatment, whereas varieties 7, 10, 12, 13, and 18 demonstrated the highest CUPRAC values of all varieties (2584.86 ± 99.68–2969.56 ± 159.72 mg TE/100 g) across both WW and WD conditions, with no significant variations between irrigation regimes. Moreover, lignan contents (sesamin and sesamolin) were higher in varieties 1, 2, 5, and 8 grown in WD conditions. Compared to the optimal unsaturated to saturated fatty acid ratio (Σ UFA/Σ SFA ratio) of 0.45, all sesame genotypes showed superior ratios (ranging between 1.86 and 2.34). Moreover, the ω-6/ω-3 PUFA ratio varied from 33.7–65.5, with lower ratios in varieties 2, 4, 5, 8, and 18 under WD conditions. The high levels of phenolic compounds and healthy fats suggest the potential of black sesame to be incorporated into diets as a functional food. Furthermore, the enhanced phytochemistry of these cultivars in WD conditions is promising for widespread adoption.
