This study aimed to determine the effectiveness of different green extraction techniques (GETs) on targeted bioactive compounds from artichoke leaf by-products using deep eutectic solvent extraction (DESE), supercritical CO2 extraction (SCO2E), subcritical water extraction (SWE), and ultrasound-assisted extraction (UAE). Moreover, (HR) LC-ESI-QTOF MS/MS and HPLC-PDA analyses were used to perform qualitative–quantitative analysis on the extracts, enabling the detection of several bioactive compounds, including luteolin, luteolin 7-O-glucoside, luteolin 7-O-rutinoside, apigenin rutinoside, chlorogenic acid, and cynaropicrin as the most representative ones. SWE showed better results than the other GETs (TPC: 23.39 ± 1.87 mg/g of dry plant, dp) and appeared to be the best choice. Regarding UAE, the highest total phenols content (TPC) was obtained with 50:50% v/v ethanol: water (7.22 ± 0.58 mg/g dp). The DES obtained with choline chloride:levulinic acid showed the highest TPC (9.69 ± 0.87 mg/g dp). Meanwhile, SCO2E was a selective technique for the recovery of cynaropicrin (48.33 ± 2.42 mg/g dp). Furthermore, the study examined the antioxidant activity (1.10–8.82 mmol Fe2+/g dp and 3.37–31.12 mmol TEAC/g dp for DPPH• and FRAP, respectively) and total phenols content via Folin–Ciocalteu's assay (198.32–1433.32 mg GAE/g dp), of which the highest values were detected in the SWE extracts. The relationship among the GETs, antioxidant assays, and compounds detected was evaluated using Principal Component Analysis (PCA). PCA confirmed the strong antioxidant activity of SWE and showed comparable extraction yields for the antioxidant compounds between UAE and DESE. Consequently, GETs selection and extraction parameters optimization can be employed to enrich artichoke leaf by-products' extracts with targeted bioactive compounds. [ABSTRACT FROM AUTHOR]

Featured Application: The concept of this investigation aimed to formulate a beer enriched with functional ingredients originating from sea macroalgae Fucus virsoides. Marine macroalgae are organisms rich in bioactive compounds such as polysaccharides, polyphenols, and various minerals. Macroalgae are increasingly being added to the human diet precisely because they contain useful compounds that can also be used in the pharmaceutical industry. Previous research describes their addition to meat products, yogurt, bread, and baby food. However, data on the addition of algae to beer have been scarce. The goal of this work was to produce beer with the addition of brown macroalgae (Fucus virsoides) from the Adriatic Sea. In addition, the basic physical–chemical parameters (color, pH, ethanol, extract, and polyphenols) were determined. The most important premise is the transfer of selenium (Se) to beer, since Se is deficient in human food chain. The transfer of different metals, namely, S (sulfur), Mg (magnesium), P (phosphorus), K (potassium), Ca (calcium), Cr (chromium), Mn (manganese), Fe (iron), Co (cobalt), Ni (nickel), Cu (copper), Zn (zinc), As (arsenic), Se (selenium), Mo (molybdenum), Cd (cadmium), Hg (mercury), and Pb (lead), from algae to beer was determined using inductively coupled plasma–mass spectrometry (ICP−MS). The results, however, were not satisfactory regarding metal transfer. In particular, Se was detected in beer, but other metals such as As, Cd, and Pb were not. Alga addition contributed to extract values, and the original extract reached 14.3 °P in wort with alga addition, as opposed to 12.8 °P in the control sample. Such high extract content, however, resulted in beer with low alcohol content, <4% v/v for both beers. This could be explained by the high levels of unfermentable extract. pH values showed statistical difference between samples, meaning that the addition of algae significantly affected the pH value of beer, reducing acidity by almost 5%. This study aimed to determine the optimal pressure and temperature for the maximum extraction yield and recovery of lipophilic bioactive compounds (BACs) during the supercritical carbon dioxide extraction (SCO2) of fennel seeds. For this purpose, the SCO2 pressure (78.6–361.4 bar) and temperature (35.9–64.1 °C) were varied and optimized, and all of the extracts obtained were analyzed for the volatiles, fatty acids, sterols, tocochromanols and carotenoids. The results showed that the maximum extract yield and content of all of the compounds analyzed favored a higher pressure (320 bar) and lower temperature (40 °C), except for the volatiles, which were the highest at 120 bar and 42 °C. However, the optimal SCO2 conditions for obtaining the highest overall total lipophilic fraction were 320 bar and 40 °C, respectively. The fennel SCO2 extract obtained under these conditions contained 18 volatiles (trans-anethole as the major component), 12 fatty acids (oleic and petroselinic as the major compounds), 12 sterols (β-sitosterol and stigmasterol as the major compounds), two pentacyclic triterpenoids (α-, β-amyrin), one tocopherol (α-tocopherol), two tocotrienols (γ-, δ-tocotrienol) as well as two carotenoids (lutein and β-carotene). Saffron (Crocus sativus) floral by-products are a source of phenolic compounds that can be recovered and used in the nutraceutical, pharmaceutical, or cosmetic industries. This study aimed to evaluate the phenolic compounds' extraction using green extraction techniques (GETs) in saffron floral by-products and to explore the influence of selected extraction techniques on the phytochemical composition of the extracts. Specifically, ultrasound-assisted extraction (UAE), subcritical water extraction (SWE), and deep eutectic solvents extraction (DESE) were used. Phenolic compounds were identified with (HR) LC-ESI-QTOF MS/MS analysis, and the quantitative analysis was performed with HPLC-PDA. Concerning the extraction techniques, UAE showed the highest amount for both anthocyanins and flavonoids with 50:50% v/v ethanol/water as solvent (93.43 ± 4.67 mg/g of dry plant, dp). Among SWE, extraction with 96% ethanol and t = 125 °C gave the best quantitative results. The 16 different solvent mixtures used for the DESE showed the highest amount of flavonoids (110.95 ± 5.55–73.25 ± 3.66 mg/g dp), while anthocyanins were better extracted with choline chloride:butane-1,4-diol (16.0 ± 0.80 mg/g dp). Consequently, GETs can be employed to extract the bioactive compounds from saffron floral by-products, implementing recycling and reduction of waste and fitting into the broader circular economy discussion. This study compared the efficiency of advanced supercritical CO2 extraction (SC-CO2) and conventional Soxhlet extraction (SE) in the isolation of lipophilic bioactive molecules (BAMs) from the oils of different sea buckthorn (SB) berries (Leikora and Ascola). A SB cake, a valuable by-product of oil extraction, was analyzed for phenolic compounds and antioxidant activity (AA). For this purpose, ultrasound-assisted extraction (UAE) with 70% (v/v) ethanol was optimized, and the following optimal UAE conditions were determined: ultrasonic power of 60%, temperature of 50 °C, and extraction time of 20 min. The individual BAMs in the oils and cake extracts were analyzed chromatographically, while the AAs were determined using the ORAC method. The oils extracted with SC-CO2 had a higher content of lipophilic BAMs and a higher AA value than the oils extracted with SE. Palmitic and palmitoleic acids, β-sitosterol, and α-tocopherol dominated the Leikora oil, while a higher content of oleic, linoleic, and α-linolenic acids and carotenoids was found in the Ascola oil. The highest phenolic content was found in the Ascola cake, with the flavonols isorhamnetin-3-hexoside, isorhamnetin-3-rutinoside, and quercetin-3-glucoside being the most abundant. In this study some functional properties and the in vitro digestibility of protein isolates from plum oil cakes, obtained by supercritical fluid extraction and cold pressing, as a control, were described and compared. Amygdalin contents in the protein isolates were at amounts considerably lower than regulatory. Solubility profiles of both protein isolates were typical for this type of plant proteins. Proteins showed good digestibility, which was assessed by gastrointestinal proteases (pepsin and pancreatin). SDS-PAGE analysis was used for characterisation of protein digests which showed that the protein isolates were completely digested. In vitro antioxidant capacity by three complementary methods and enzyme inhibitory effects towards Angiotensin-I Converting Enzyme (ACE) related to the onset of hypertension were determined. All obtained protein hydrolysates acted as DPPH and ABTS scavengers, as reducing agents and also as ACE enzyme inhibitor. Hence, the protein isolates obtained from plum kernel cake showed to be a potential source of natural products for food applications, with good digestibility and beneficial bioactive properties.

The category of edible plant oils with additional health and sustainable benefits is growing steadily. However, this category still represents a relatively small market segment known as ‘niche oils’. Oils derived from byproducts, especially seeds, are considered as functional foods due to their properties. However, to increase their usage, it is necessary to examine their sensory acceptability among consumers. The results of this research demonstrate that cold-pressed sweet pepper seed oil (Capsicum annuum L.), from the Podravka and Slavonka cultivars, is acceptable to consumers as an ingredient in meal preparation and in various processed food products, due to its favorable organoleptic and physicochemical characteristics. The quality of oil is highly dependent on the quick manipulation of pepper seeds. Pepper seeds, that have been dried for a shorter time, yield oil that has a higher smoke point (230 °C), which makes it suitable even for frying food. Aroma profile analysis revealed that cold-pressed sweet pepper seed oil is rich in terpene trans-β-ocimene (40%), as dominant component. Trans-β-ocimene plays a crucial role in the plant’s protective mechanisms their during growth and development. Consequently, sweet pepper seed oil represents a potential natural resource for isolating this terpene to be used as a biopesticide. Notably, this innovative oil is entirely produced from byproducts (seeds) and thus it provides an additional benefit for consumers who seek to contribute to the sustainability of our planet through their dietary choices. Extrusion process is one of the most important innovations of the 20th century applied in many industries. Extrusion is a technology that is increasingly used for the production of various food products, especially snacks and breakfast cereals. Supercritical carbon dioxide (CO2) as a non-toxic, non-flammable and inexpensive, is applied in many processes, including the extrusion technology. Supercritical CO2 extrusion process (SCFX) found its application primarily in the processing and manufacturing plastic, but recently more and more begins to be applied in food production and processing. Scientific researches in this area are based in production of extrudates with improved properties compared to conventional extrusion process without the addition of CO2. A number of applications of SCFX in food processing technology will be reviewed and numerous advantages over the conventional process will be described in this paper.
