Information about food hygiene and quality in the sub-Saharan African countries remains scarce at a time when many of their citizenry are beginning to acquire the much coveted middle income status. Compounding this are challenges linked to monitoring the safety of food produced by such lucrative industries as the beef industry on a continuous basis. The objective of the study was to begin some how the process of encouraging changes to the status quo and showing by example how a start in that direction might look like. Using heavy metal contents of representative beef samples from butcheries in Soroti, Uganda typical of a sub-Saharan country, we demonstrate how relationships and common sources of metals could be identified among samples in a multivariate space. Beef samples from 40 sites were analyzed by atomic absorption spectrometry for iron (Fe), zinc (Zn), nickel (Ni), chromium (Cr), lead (Pb), copper (Cu), cobalt (Co) and cadmium (Cd). The study showed that all beef samples contained these metals, the extent of which were in the order: Fe > Zn > > Ni, Cr > Pb > Cu, Co > Cd. By correlation analysis, the pairs Ni and Cr, Cd and Co, Ni and Fe or Cr and Fe were most likely coming from the same sources. We also found that there are at least three distinct characteristics of beef consumed in Soroti, a distinction perhaps arising from three major categories of feedlots used to raise donor cattle. The incremental risk of children or adults developing cancer over a lifetime was estimated and found to fall into three categories, two of which are separately explained by the presence of Cr or Ni. The sources of these metals remain a matter of speculation on our part. More studies are needed to determine these sources and to understand the nature of cancer risk in the three categories of beef identified here.

In this study, we initiated an effort to generate information about beef safety in Uganda. Our entry point was to assess by atomic absorption spectrophotometry the levels of essential elements copper (Cu), cobalt (Co), iron (Fe) and zinc (Zn), and non-essential elements lead (Pb), chromium (Cr), nickel (Ni), and cadmium (Cd) in 40 beef samples collected from within and around Soroti (Uganda). The information was used to evaluate the safety of consuming such beef against the World Health Organization (WHO) limits. The latter was accomplished by (i) estimating the daily intake (EDI) of each metal in the study area, (ii) modeling the non-cancer health risk using the target hazard quotient (THQ) and (iii) modeling the cancer risk using the incremental lifetime cancer risk (ILCR). The study finds that the mean concentrations (±95% CI) and EDI were in the order of Fe > Zn > Cr > Ni > Pb > Co > Cu > Cd. Cancer risk was found to be due to Ni > Cr > Cd > Pb and significantly higher in children than adults. The latter particularly demonstrates the importance of Ni poisoning in the study area. Overall, while essential elements in our beef samples were below WHO limits (hence no health risks), non-essential elements had high health and cancer risks due to higher levels of Cr and Ni.

Background Information as regards the epidemiology of the Anaplasmataceae in small ruminants in several low- and middle-income countries is scarce. Methods In this study a total of 712 DNA samples collected from small ruminants were analyzed for Anaplasmataceae and Anaplasma ovis using the 16S rRNA and MSP4 genes respectively. Infection risk was assessed by location, sex and age of the animals and qGIS® was used to construct spatial maps. Results The prevalence of Anaplasmataceae spp was 89.1% (95% CI: 77.5–95.9) and 79.1% (95% CI: 75.9–82.1) in ovines and caprines respectively (RR = 1.1, 95% CI: 1.0–1.3); higher than those previously reported in other eastern African countries. The prevalence of A. ovis was 26.1% and 25.4% for both ovines and caprines respectively with ovines showing significantly higher levels of infection than caprines (P < 0.05). The risk of Anaplasma ovis infections was not affected by age (OR = 1.2, 95% CI: 0.9–1.7) or sex (OR = 1.1, 95% CI: 0.6–2.0). BackgroundStress among medical students is related to their academic lifespan; however, information on brain health among medical students from developing countries continues to be scarce. The objective of this study was to establish perceived academic stress levels, assess the ability to cope with stress, and investigate its effects on the visual reaction time (VRT), audio reaction time (ART), and tactile reaction time (TRT) in the somatosensory cortex among medical students of Uganda.MethodsThis was a cross-sectional study conducted among preclinical (n = 88) and clinical (n = 96) undergraduate medical students at Kampala International University Western Campus. A standard Perceived Stress Scale (PSS) was used to categorize stress into low, moderate, and severe while the ability to cope with stress was categorized into below average, average, above average, and superior stresscoper (SS). Data on reaction time were acquired through VRT, ART, and TRT using the catch-a-ruler experiment, and this was analyzed using SPSS version 20.ResultsThis study shows that preclinical students are more stressed than clinical students (PSS prevalence for low stress = preclinical; clinical: 40, 60%). Moderate stress was 48.4 and 51.6% while high perceived stress was 75 and 25% among preclinical and clinical students. Among male and female students in preclinical years, higher TRT and VRT were found in clinical students showing that stress affects the tactile and visual cortical areas in the brain, although the VRT scores were only significantly (P = 0.0123) poor in male students than female students in biomedical sciences. Also, highly stressed individuals had higher TRT and ART and low VRT. SS had high VRT and ART and low TRT in preclinical students, demonstrating the importance of the visual cortex in stress plasticity. Multiple regression showed a close relationship between PSS, ability to cope with stress, age, and educational level (P < 0.05), demonstrating the importance of social and psychological support, especially in the biomedical sciences.ConclusionPreclinical students suffer more from stress and are poorer SS than clinical students. This strongly impairs their cortical regions in the brain, thus affecting their academic productivity.

Background. Community consumption of herbal plants in developing countries is a common practice, however, scarcity of information on their physiochemical composition is a major public health concern. In Uganda, Vernonia amygdalina is of interest in rural communities due to its therapeutical action on both bacterial and protozoal parasites, however no studies have been conducted to assess the heavy metal concentrations in traditional plants used in alternative medicine. The aim of the study was to establish concentrations of heavy metals in Vernonia amygdalina, model the estimated daily intake (EDI), and assess both the non-cancer-related health risk using the target hazard quotient (THQ), and the risk related to cancer through the incremental lifetime cancer risk (ILCR) for the Ugandan population. Methods. Leaves of Vernonia amygdalina were collected from 20 georeferenced villages and processed into powder in the laboratory using standard methods. These were then analyzed in the laboratory using an atomic absorption spectrometer for lead (Pb), chromium (Cr), copper (Cu), zinc (Zn), cobalt (Co), iron (Fe), cadmium (Cd), and nickel (Ni). Concentrations were compared against the World Health Organization (WHO) limits. The EDI, THQ, and ILCR were modelled and significance was measured at 95% confidence. Results. The study showed that mean ± SEM concentrations of heavy metals were highest in the order of Cr, 121.8 ± 4.291 ppm > Ni, 84.09 ± 2.725 ppm > Zn, 53.87 ± 2.277 ppm > Pb, 40.61 ± 3.891 ppm > Cu, 28.75 ± 2.202 ppm > Fe, 14.15 ± 0.7271 ppm > Co, 7.923 ± 0.7674 ppm > Cd, 0.1163 ± 0.005714 ppm. Concentrations of Pb, Cr, Zn, Co, and Ni were significantly higher than the WHO limits. The EDI was significantly higher in children than in adults, demonstrating an increased risk of toxicity in children. The THQ and ILCR were over 1000 times higher in all Ugandans, demonstrating the undesirable health risks following oral consumption of Vernonia amygdalina due to very high Cr and Ni toxicities, respectively. Conclusion. Consumption of raw Vernonia amygdalina was associated with a high carcinogenic risk, demonstrating a need to enact policies to promote physiochemical screening of herbal medicines used in developing countries against toxic compounds.

Uganda is still struggling with chronic poverty and malnutrition especially among women and children despite the targeted efforts towards eradicating poverty by transforming subsistence agriculture to intensive or commercial agriculture that have been in place for the last 13 years. The aim of this paper was therefore to analyze the Republic of Uganda’s current strategy on eradication of extreme hunger and poverty, identify the major constraints and suggest possible strategic interventions using examples of poultry and cattle. The article has identified unemployment and persistent inflation as major constraints to modernization of agriculture in Uganda and has offered development of small holder poultry production, promotion of poultry crossbreeds, rehabilitation of community dip tanks and promotion of dairy crossbreeds as strategic intervention areas to alleviate extreme hunger and poverty in Uganda. In conclusion, the strategies used by the government of Uganda to fight poverty and hunger did not favour the rural poor but have supported the rich and thus failed to cause a notable impact. It is therefore recommended that adoption of the suggested intervention areas shall overcome the said bottlenecks and accelerate eradication of hunger and poverty. A cross sectional study was carried in Aloet Parish, Soroti district-Uganda to assess and quantify the prevalence of mastitis of lactating cows at cow level in the villages and udder quarter level for cows brought for sale at the Soroti livestock market. The objective was to acquire an empirical basis for stakeholders’ awareness in the small holder pastoral zones. Both clinical and subclinical mastitis were quantified at the village level and only SCM was considered at the market level. In the villages and the market SCM was tested using California Mastitis Test (CMT). In the villages of Aloet, 4 (12.5%) of the crosses and 60 (22.4%) Small East African zebu had mastitis. Overall, SCM and CM were at 50 (16.7%) and 14 (4.7%) occurrence and SCM was responsible for 78% of all the mastitis. Predisposing factors to mastitis among the pastoralists in communal grazing systems in Aloet were possibly habits such as stripping of teats using rough abrasion of fingers during milking coupled with none usage of milking salves. In the market, the right fore (RF) had a 34.2% (27/79) SCM and 1.25% (1/80) blind quarters. Right hind (RH) had a 30.8% (24/78) SCM and 2.5% (2/80) blind quarters. The left fore (LF) had a 36.6% (27/78) SCM and 2.5% (2/80) blind quarters. The left hind (LH) had a 31.4% (22/70) SCM and 12.5% blind quarters. The quarter prevalence rates were higher for the fore quarters than for the hind quarters. For all the quarters SCM prevalence was at 32.8% (100/305) and 4.9% (15/320) were blind. Bovine mastitis is an escalating hindrance to the upcoming dairy industry in agro-pastoral areas and requires urgent measures, SCM is possibly confounded by poor performance of local breeds and poor feeding management.

Amoebiasis is an infection caused by water borne protozoan parasite Entamoeba histolytica . In Uganda where sanitation infrastructure and health education was not adequate, amoebiasis was thought to be still an important health problem. However there was little or no data on prevalence of this very important protozoan infection. In addition, microscopy remained the main method for the diagnosis of amoebiasis but could not differentiate between Entamoeba dispar/moshkovskii and Entamoeba histolytica infections. This made determination of true prevalence of Entamoeba histolytica infections difficult. It was against this background that this study was designed to carry out species specific diagnosis of Entamoeba histolytica and Entamoeba dispar/moshkovskii in Uganda where these species had been reported to be endemic. This study used microscopy and polymerase chain reaction amplification of Serine-rich Entamoeba histolytica (SREHP) gene. It was shown that 36.7% (n=22) of the samples initially diagnosed as positive by microscopy were positive by PCR. The true prevalence of E. histolytica and E.dispar/ moshkovskii was found to be 7.31% and 12.6% respectively. It was concluded that Entamoeba infection in Soroti, Eastern Uganda is more frequently due to E. dispar /moshkovskii (13.3%) the non-pathogenic forms than to E. histolytica , the pathogen (7.31%).
