- Abstract
S ciljem utvrđivanja utjecaja načina soljenja i duljine zrenja na nutritivni sastav i nutritivnu kvalitetu masti Dalmatinske pancete (DP) zaštićene oznakom zemljopisnog podrijetla, sukladno propisanoj specifikaciji proizvedeno je 100 DP podijeljenih u 5 grupa, koje su podvrgnute različitim tretmanima soljenja i različitim duljinama zrenja. Grupa A – 5 % NaCl na početnu masu sirovine, faza soljenja 6 dana, a faze zrenja 84 dana; grupa B – 7 % NaCl na početnu masu sirovine, faze soljenja 6 dana, a faza zrenja 84 dana; grupa C – 5 % NaCl na početnu masu sirovine, faza soljenja 8 dana; faze zrenja 67 dana; grupa C – 7 % NaCl na početnu masu sirovine, faza soljenja 8 dana; faza zrenja 67 dana; kontrolna grupa E - 6 % NaCl na početnu masu sirovine, faza soljenja 7 dana; faza zrenja 83 dana. Na kraju proizvodnog procesa uzeto je po 5 uzoraka iz svake grupe, te je određen nutritivni sastav (udio vode, masti, energije, bjelančevina, ugljikohidrata, soli i natrija) i profil masnih kiselina (plinska koromatografija) po grupama. Analiza nutritivne vrijednosti i nutritivne kvalitete masti DP izvršena je na temelju sljedećih indeksa masnih kiselina (MK): omjer polinezasićene/zasićene MK, omjer omega-6/omega-3 MK, indeks aterogenosti (IA), indeks trombogenosti (IT) i indeks HH (omjer hipo-/hiperkolesterolemične MK). Nutritivna tablica 100 g DP sastoji se prosječno od: 22,88 g vode, 43,34 g masti od čega 18,35 g zasićenih MK, 22,54 g bjelančevina, 3,73 g NaCl, 1492,81 mg Na, 1,05 g ugljikohidrata, što energetski iznosi 2002,25 KJ, odnosno 483,67 kcal. Profil MK DP čini 48,89 % mononezasićenih od kojih 43,53 % omega-9 MK, 42,40 % zasićenih i 8,02 % polinezasićenih MK od kojih 7,63 % omega-6 i 0,40 % omega3 MK. Značajno veći (P<0,001) udio NaCl utvrđen je samo u zreloj DP čija je faza soljenja trajala dulje, dok utjecaj povećanja količine soli nije utvrđen. Povećan udio soli u DP i produljenje faze zrenja značajno su utjecali na većinu pokazatelja, a osobito na profil MK i većinu ind, With the aim of determining the influence of the salting method and length of ripening on the nutritional composition and nutritional fat quality of Dalmatinska panceta (DP) with protected geographical indication, according to the prescribed specification, 100 DP divided into 5 equal groups were produced, which were subjected to different salting treatments and different lengths of ripening. Group A – 5% NaCl kg-1 of raw belly, salting phase 6 days, ripening phase 84 days; group B – 7% NaCl kg-1 of raw belly, salting phase 6 days, ripening phase 84 days; group C – 5% NaCl kg-1 of raw belly, salting phase 8 days; ripening phase 67 days; group C – 7% NaCl kg-1 of raw belly, salting phase 8 days; ripening phase 67 days; control group E - 6% NaCl kg-1 of raw belly, salting phase 7 days; ripening phase 83 days. At the end of the production process, 5 samples from each group were taken, and the nutritional composition (proportion of water, fat, energy, protein, carbohydrates, salt and sodium) and fatty acid profile (gas chromatography) were determined. The analysis of the nutritional value and nutritional fat quality of DP was performed on the basis of the following indexes of fatty acid (FA): polyunsaturated/saturated FA ratio, omega-6/omega-3 FA ratio, index of atherogenicity (IA), index of thrombogenicity (IT) and HH index (ratio of hypo-/hypercholesterolemic FA). The nutritional table of 100 g DP consists on average of: water 22.88 g, fat 43.34 g of which 18.35 g saturated FA, protein 22.54 g, NaCl 3.73 g, Na 1492.81 mg, carbohydrates 1.05 g, which is 2002.25 KJ, i.e. 483.67 kcal. The FA profile of DP consists of monounsaturated 48.89% of which omega-9 FA 43.53%, saturated 42.40% and polyunsaturated FA 8.02% of which omega-6 7.63% and omega-3 FA 0.40%. A significantly higher (P<0.001) proportion of NaCl was determined only in mature DP whose salting phase lasted longer, while the influence of increasing the amount of salt was not determined. The increased proportion o, Mit dem Ziel, den Einfluss der Salzungsmethode und der Reifungsdauer auf die ernährungsphysiologische Zusammensetzung und die Fettqualität der Dalmatinska panceta (DP) mit geschützter geografischer Angabe gemäß der vorgeschriebenen Spezifikation zu bestimmen, wurden 100 DP, aufgeteilt in 5 gleiche Gruppen, hergestellt, die verschiedenen Salzungsbehandlungen und unterschiedlichen Reifungsdauern unterzogen wurden. Gruppe A - 5% NaCl kg-1 roher Bauch, Salzungsphase 6 Tage, Reifungsphase 84 Tage; Gruppe B - 7% NaCl kg-1 roher Bauch, Salzungsphase 6 Tage, Reifungsphase 84 Tage; Gruppe C - 5% NaCl kg-1 roher Bauch, Salzungsphase 8 Tage; Reifephase 67 Tage; Gruppe C - 7% NaCl kg-1 roher Bauch, Salzungsphase 8 Tage, Reifephase 67 Tage; Kontrollgruppe E - 6% NaCl kg-1 roher Bauch, Salzungsphase 7 Tage, Reifephase 83 Tage. Am Ende des Produktionsprozesses wurden von jeder Gruppe 5 Proben entnommen und die Nährstoffzusammensetzung (Wasser-, Fett-, Energie-, Protein-, Kohlenhydrat-, Salz- und Natriumanteil) sowie das Fettsäureprofil (Gaschromatographie) bestimmt. Die Analyse des Nährwerts und der Qualität der Nahrungsfette von DP wurde anhand der folgenden Fettsäureindizes durchgeführt: Verhältnis mehrfach ungesättigte/gesättigte Fettsäuren, Verhältnis Omega-6/Omega-3-Fettsäuren, Index der Atherogenität (IA), Index der Thrombogenität (IT) und HH-Index (Verhältnis hypo-/hypercholesterinämische Fettsäuren). Die Nährwerttabelle von 100 g DP besteht im Durchschnitt aus: Wasser 22,88 g, Fett 43,34 g, davon 18,35 g gesättigte Fettsäuren, Eiweiß 22,54 g, NaCl 3,73 g, Na 1492,81 mg, Kohlenhydrate 1,05 g, was 2002,25 KJ, d.h. 483,67 kcal entspricht. Das Fettsäureprofil von DP besteht aus einfach ungesättigten Fettsäuren 48,89 %, davon Omega-9-Fettsäuren 43,53 %, gesättigten Fettsäuren 42,40 % und mehrfach ungesättigten Fettsäuren 8,02 %, davon Omega-6 7,63 % und Omega-3 0,40 %. Ein signifikant höherer (P<0,001) NaCl-Anteil wurde nur in reifen DP festgestellt, deren Salzungsphase länger, Con el objetivo de determinar la influencia del método de salado y la duración de la maduración en la composición nutricional y la calidad nutricional de las grasas de la Dalmatinska panceta (en continuación DP) con indicación geográfica protegida, según la especificación prescrita, se produjeron 100 DP divididas en 5 grupos iguales, que fueron sometidas a diferentes tratamientos de salado y diferentes duraciones de maduración. Grupo A – 5% de NaCl por kg de panceta cruda, fase de salado 6 días, fase de maduración 84 días; grupo B – 7% de NaCl por kg de panceta cruda, fase de salado 6 días, fase de maduración 84 días; grupo C – 5% de NaCl por kg de panceta cruda, fase de salado 8 días; fase de maduración 67 días; grupo D – 7% de NaCl por kg de panceta cruda, fase de salado 8 días; fase de maduración 67 días; grupo de control E - 6% de NaCl por kg de panceta cruda, fase de salado 7 días; fase de maduración 83 días. Al final del proceso de producción, fueron tomadas 5 muestras de cada grupo y determinadas la composición nutricional (proporción de agua, grasa, energía, proteína, carbohidratos, sal y sodio) y el perfil de ácidos grasos (cromatografía de gases). El análisis del valor nutricional y la calidad de las grasas de la DP fue realizada en base a los siguientes índices de ácidos grasos (en continuación AG): relación AG poliinsaturados/saturados, relación AG omega-6/omega-3, índice de aterogenicidad (IA), índice de trombogenicidad (IT) e índice HH (relación AG hipo-/hipercolesterolémicos). La tabla nutricional de 100 g de DP consiste en promedio de: agua 22,88 g, grasa 43,34 g de las cuales 18,35 g son AG saturados, proteína 22,54 g, NaCl 3,73 g, Na 1492,81 mg, carbohidratos 1,05 g, lo que equivale a 2002,25 KJ, es decir, 483,67 kcal. El perfil de AG de la DP consiste en 48,89 % de AG monoinsaturados de los cuales 43,53 % son AG omega-9, 42,40 % de AG saturados y 8,02 % de AG poliinsaturados de los cuales 7,63 % son omega-6 y 0,40 % son AG omega-3. Fue determinada, Allo scopo di determinare l’impatto del metodo di salatura e della durata della stagionatura sulla composizione e la qualità nutrizionale del grasso della Dalmatinska panceta (DP) a indicazione geografica protetta, secondo il disciplinare prescritto, sono state prodotte 100 DP suddivise in 5 gruppi, i quali sono stati sottoposti a diversi trattamenti di salatura e a diversi tempi di stagionatura. Gruppo A – 5% NaCl sulla massa iniziale di materia prima, con fase di salatura di 6 giorni e fase di stagionatura di 84 giorni; gruppo B – 7% NaCl sulla massa iniziale di materia prima, con fase di salatura di 6 giorni e fase di stagionatura di 84 giorni; gruppo C – 5% NaCl sulla massa iniziale di materia prima, con fase di salatura di 8 giorni e fase di stagionatura di 67 giorni; gruppo C – 7% NaCl sulla massa iniziale di materia prima, con fase di salatura di 8 giorni e fase di stagionatura di 67 giorni; gruppo E – 6% NaCl sulla massa iniziale di materia prima, con fase di salatura di 7 giorni e fase di stagionatura di 83 giorni. Al termine del processo di produzione, sono stati prelevati 5 campioni da ciascun gruppo e sono stati determinati per ciascun gruppo la composizione nutrizionale (contenuto di acqua, grassi, energia, proteine, carboidrati, sale e sodio) e il profilo degli acidi grassi (gascromatografia). L'analisi del valore nutrizionale e della qualità nutrizionale del grasso della DP è stata eseguita sulla base dei seguenti indici di acidi grassi (FA): rapporto FA polinsaturi/saturi, rapporto FA omega-6/omega-3, indice di aterogenicità (IA), indice di trombogenicità (IT) e indice HH (rapporto FA ipo-/ipercolesterolemico). La tabella nutrizionale di 100 g di DP è composta in media da: 22,88 g di acqua, 43,34 g di grassi di cui 18,35 g di FA saturi, 22,54 g di proteine, 3,73 g di NaCl, 1492,81 mg di Na, 1,05 g di carboidrati, ovvero 2002,25 KJ/483,67 kcal. Il profilo FA della DP è composto per il 48,89% da monoinsaturi di cui 43,53% omega-9, 42,40% saturi e 8,02%

- Abstract
For centuries, game meat has been an important source of proteins, vitamins and minerals in the human diet. Interest for game meat during last few decades is increasing, mainly due to lower ecological footprint and a preferred chemical composition in comparison to the meat of domestic animals. In recent years, Europe has been facing an overpopulation of wild boars, which affects the availability of game meat to a wider niche of consumers. Therefore, wild game meat is a great alternative to others red meats and it has a great advantage on the world meat market. Regarding physical parameters of wild boar meat wide range of values can be found depending on analysed muscle type, sex, age, season and/or hunting technique. In general, same as meat of other large game species, wild boar meat is darker (lower L*), more red (higher a*) and colour parameter values can highly vary depending on previously mentioned factors. pH value usually ranges between 5.5 to 5.8, but also variations are often as wild boars have different post-mortem pH decline than domestic pigs. Expected cooking loss of wild boar meat is about 30% and higher, while meat tenderness measured as Warner-Bratzler shear force is usually higher than 40 N., Stoljećima je meso divljači važan izvor bjelančevina, vitamina i minerala u ljudskoj prehrani. Zanimanje za mesom divljači posljednjih je desetljeća u porastu, uglavnom zbog niskog ekološkog otiska i preferiranog kemijskog sastava u usporedbi s mesom domaćih životinja. Posljednjih godina Europa se suočava s porastom populacije divljih svinja, što utječe na dostupnost ovog mesa većem broju potrošača. Stoga je meso divljači izvrsna alternativa crvenom mesu domaćih životinja i ima veliku prednost na svjetskom tržištu mesa. Fizikalni parametri kakvoće mesa divlje svinje mogu poprimiti vrlo različite vrijednosti ovisno o anatomskoj poziciji mišića, spolu, dobi i/ili tehnici lova. Općenito, meso divlje svinje kao i meso drugih vrsta krupne divljači je tamnije (niže vrijednosti parametra boje L*) i crvenije (više vrijednosti parametra boje a*) te vrijednosti parametara boje mogu jako varirati ovisno o prije spomenutim čimbenicima. Obično pH vrijednost mesa divlje svinje je u raspon između 5,5 i 5,8, međutim moguća su veća odstupanja budući da post-mortalni pad pH u divlje svinje nije jednak onome u domaćih svinja. Očekivani kalo kuhanja iznosi oko 30% i više, dok otpor presijecanju kao mjera mekoće mesa obično iznosi više od 40 N.

The term venison in literature can be used in different meanings. Originally, ´venison´ referred to meat of any large game species suitable for human consumption. However, it should be noted that game meat comes not only from wild ungulates and other species, but also from farmed game animals. Nowadays term ´venison´ is used to define meat of antler ungulates, i.e. free-living or farmed cervids. Although production and consumption of venison are generally still modest, the both trends are constantly increasing. The most numerous cervids used for venison production in different systems worldwide are red deer (Cervus elaphus), fallow deer (Dama dama), elk (Cervus canadensis), axis deer (Axis axis) and reindeer (Rangifer tarandus). During last decade numerous studies have been published presenting different aspects of venison quality and factors affecting it. Thus, the aim of this paper was to give review of the quality and nutritional properties of venison.

The problem of the erosion of animal genetic resources is evident in certain local donkey breeds, and their long-term sustainability can be achieved by economically repositioning them. To develop alternative and sustainable commercial programs, the meat and milk production characteristics of Istrian donkey and Littoral Dinaric donkey breeds were investigated. The meat production characteristics were examined in mature males, whose carcasses were dissected, and meat composition was determined using NIT spectrophotometry and gas chromatography. Milk yield and milk composition were determined in jennies in second or subsequent lactations by measuring milk volume and using infrared spectrometry and gas chromatography. Compared to the Littoral Dinaric donkey, the Istrian donkey has a higher carcass weight and dressing percentage (p < 0.001). The share of boneless meat in relation to live weight was 28.27% in the Istrian donkey and 26.18% in the Littoral Dinaric donkey. The absolute masses of primal cuts of meat in E, I, and II classes were significantly greater in Istrian donkeys than in Littoral Dinaric donkeys (p < 0.01), although the differences in the proportions of primal cuts were not significant. The breed did not have a significant impact on the color, pH, or meat composition. A significant influence of breed on milk yield, lactose, protein, and the fat content of milk was observed (p < 0.01). A significant influence of breed on the ratio of n-6/n-3 PUFA fatty acids in donkey milk was observed (p = 0.002). The values of the atherogenic and thrombogenic indexes were favorable, considering potential beneficial effects of donkey milk and meat on consumer health. The findings of this research suggest that local donkey breeds hold significant potential for meat and milk production, focusing on the uniqueness and quality of their products rather than the quantity of meat and milk they can produce.

10. Ponašanje potrošača u konzumaciji kozjeg mlijeka i mliječnih proizvoda

U svrhu utvrđivanja potrošačkih navika u pogledu kozjeg mlijeka i proizvoda od kozjeg mlijeka provedeno je online anketno ispitivanje 353 ispitanika. Gotovo polovica (47, 9%) ispitanika ne konzumira kozje mlijeko, 30, 8% ispitanika ne konzumira kozji sir, dok ih čak 60, 9% ne konzumira ostale mliječne proizvode. Pritom žene rjeđe konzumiraju mlijeko, kozji sir i druge kozje proizvode od muškaraca. Potrošači najčešće kupuju kozje proizvode u supermarketima, kao i izravno na gospodarstvima koja se bave uzgojem koza, dok je način nabave kozjeg sira pod značajnim utjecajem mjesta odrastanja. Najčešći razlog nekonzumacije kozjeg mlijeka, sira i mliječnih proizvoda su miris, okus i aroma tih proizvoda (39%), dok 37% ispitanika nije imalo prilike konzumirati kozje proizvode.

The aim of this study was to determine effect of diet-based seasonal changes on fatty acid composition of Jersey milk in mountain region of Croatia. Bulk milk samples (200 mL) were collected during total-mixed ratio (TMR)-based, intermediate and pasture-based diet. Fatty acid composition of milk was determined by gas-chromatography. We found that pasture-based diet has positive effect on fatty acid composition of Jersey milk considering human nutrition. During pasture-based diet, Jersey cows produced milk with lower (P<0.05) saturated fatty acid and higher (P<0.05) polyunsaturated fatty acid content. Namely, regarding individual fatty acids, milk produced during pasture-based diet had lower (P<0.05) C16:0 and higher (P<0.05) C18:2n-6, C18:3n-6 and conjugated linoleic acid (CLA) content than milk produced during TMR and intermediate diet. Milk produced during pasture-based diet can be valuable source of healthbeneficial PUFA in diet., Cilj ovog istraživanja bio je utvrditi utjecaj sezonskih promjena u sastavu obroka na profil masnih kiselina u mlijeku krava Jersey pasmine. Skupni uzorci mlijeka iz laktofriza (200 mL) prikupljeni su tijekom prehrane bazirane na potpuno izmiješanom obroku (TMR), prijelaznog razdoblja sa TMR-a na ispašu i samo ispaše. Profil masnih kiselina je određen plinskom kromatografijom. Utvrđeno je da hranidba bazirana na ispaši ima pozitivan utjecaj na profil masnih kiselina sa stanovišta ljudske prehrane. Tijekom hranidbe bazirane na ispaši u mlijeku Jersey krava utvrđen je manji (P<0,05) udio zasićenih masnih kiselina i veći (P<0,05) sadržaj polinezasićenih masnih kiselina. Naime, što se tiče udjela pojedinačnih masnih kiselina, mlijeko proizvedeno tijekom pašne sezone imalo je manji (P<0,05) udio C16:0 i veći (P<0,05) udio C18:2n-6, C18:3n-6 te CLA masnih kiselina. Mlijeko proizvedeno tijekom pašne sezone može biti vrijedan izvor višestruko nezasićenih masnih kiselina koji imaju poželjan nutritivni učinak.

Cilj rada bio je utvrditi povezanost broja somatskih stanica (BSS) u mlijeku i nekih odlika mliječnosti koza u uvjetima intenzivne proizvodnje mlijeka. Istraživanjem obuhvaćene francuske alpske koze (n=80) držane su u istom stadu na području Međimurske županije, u identičnim uvjetima smještaja, hranidbe i mužnje. Tijekom laktacije na grlima je provođena redovita mjesečna kontrola mliječnosti (AT metoda). U svrhu provedbe laboratorijskih analiza ukupno je prikupljeno 613 pojedinačnih uzoraka kozjeg mlijeka. Aritmetička srednja vrijednost BSS svih analiziranih uzoraka je iznosila 1401x103/mL mlijeka, dok je geometrijska srednja vrijednost bila 602x103/mL. 16. Ponašanje krmača i prasadi u različitim sustavima prasenja

U suvremenoj svinjogojskoj proizvodnji dobrobit svinja dobiva sve značajnije mjesto u planiranju i provođenju proizvodnih procesa. Tome pridonosi i sve zahtjevnija zakonska regulativa koja predviđa poboljšanje uvjeta držanja svih kategorija svinja. U fokusu se posebice nalazi držanje krmača u boksovima za prasenje, čije potpuno ukidanje najavljuje Europska komisija. Cilj rada bio je utvrditi razlike u ponašanju krmača banijske šare svinje u različitim sustavima prasenja: konvencionalnim boksovima za prasenje s betonskim podom s uklještenjem krmača, te u nadstrešnicama bez uklještenja sa zemljanim podom. Podaci su prikupljeni snimanjem krmača pasmine banijska šara svinja video kamerama u boksu i nadstrešnici. Preliminarni rezultati prikazani su za jednu krmaču u konvencionalnom boksu i nadstrešnici. Ukupno analizirano vrijeme snimanja je 120 sati po boksu, prvih 5 dana nakon prasenja. Prilikom obrade videozapisa, utvrđen je broj i interval trajanja različitih aktivnosti krmača: stajanje, ležanje i sjedenje. Također, pratio se broj prignječene prasadi, kao i frekvencija te prosječno vrijeme sisanja prasadi. Najzastupljeniji položaj u boksu sa uklještenjem (85 % vremena) bio je ležeći položaj, zatim stajaći položaj (15 % vremena), dok je vrijeme sjedenja bilo zanemarivo. U nadstrešnici bez uklještenja najzastupljeniji položaj je također bio ležeći (89 % vremena), zatim stajaći (11 % vremena). Viši udio stajaćeg položaja u boksu s uklještenjem može se objasniti utjecajem sezone prasenja i vrste poda, pri čemu hladniji betonski pod i temperatura zraka utječu na aktivnost krmača. Tijekom laktacije u oba sustava nisu uočena prignječenja prasadi. Veća frekvencija sisanja prasadi uočena je u sustavu prasenja s uklještenjem, dok je prosječno vrijeme sisanja bilo slično u oba sustava prasenja (7 minuta). Sljedeći koraci u straživanju uključuju detaljnu statističku analizu na većem broju ponavljanja te uključivanje dodatnih oblika ponašanja poput interakcije između prasadi, učestalosti agresivnog ponašanja.

Slavonian-Syrmian Podolian cattle is one of the three autochthonous breeds in Croatia. After three decades of implementation of conservation measures, it is still in a critically endangered status. The objective of this work is to determine the population parameters based on pedigree records. The ENDOG v4.8 software package was used to estimate the population parameters. The mean number of complete and equivalent generations is relatively low (1.72 ; 2.71). The average inbreeding coefficient is relatively high (5.13%), while the mean average relatedness coefficient is of concern in terms of population sustainability (14.56%). The effective number of founders and ancestors of the reference population is low (9, 8) and their ratio (1.12) confirms the bottleneck that the population went through three decades ago. The average generation interval is 6.34 years and ranges from 5.84 (father - son) to 6.76 years (mother - son). The mean age of parents at the birth of offspring was 6.92 years. The population indicators calculated on the basis of pedigree records indicate the vulnerability of the Slavonian-Syrmian Podolian cattle. It is necessary to reduce the level of inbreeding, preserve existing lines and partially refresh the genetic potential of the breed.

Stoga je cilj ovog rada prikazati svojstva stajskog gnoja te njegove prednosti i nedostatke kao sirovine u proizvodnji bioplina.

In recent years there has been an increasing trend in research of sheep and goat udder morphology, not only from the view of its suitability for machine milking, but also in terms of milk yield and mammary gland health. More precisely, herds consisting of high-yielding sheep and goats as a result of long-term and one-sided selection to increase milk yield, have been characterised by distortion of the udder morphology caused by increasing the pressure of udder weight on its suspensory system. Along with the deteriorated milking traits, which is negatively reflected on the udder health, some udder morphology traits are often emphasized as factor of production longevity of dairy sheep and goats. Since the intention of farmers and breeders nowadays is to increase the milk yield of sheep and goats while maintaining desirable udder morphology and udder health, the aim of this paper is to give a detailed overview of the current knowledge about the relationship of morphological udder traits with milk yield, and the health of the mammary gland of sheep and goats. External measures of udder size (circumference, width and depth of the udder) are strongly correlated with milk production in sheep and goats. The morphological udder traits determining its suitability for machine milking (such as teat position and teat angle, udder depth, teat size, cistern height) are related to the mammary gland health in sheep and goats. Thus, the incidence of mastitis is noticeably higher in the udders of unsuitable shape for machine milking (deep and hung udders, unfavourable position of teats, etc.). Consequently, the morphological udder traits that affect the milkability of sheep and goats are indirectly related to milk yield.

The objective of this study was to determine cortisol concentration in the serum of hunted wild boar in Croatia. Blood samples were collected during regular hunting season in the period between November 2018 and January 2020. Blood samples were taken from wild boar hunted using two most common methods: driven (n=139) and individual hunt (n=61) from high seats. Additionally, animals obtained by driven hunt were divided on those hunted in the unfenced areas (n=83) and fenced area (N=56). Fencing was considered as possible source of additional stress. Serum cortisol was determined using an enzyme immunoassay kit (Cortisol ELISA kit, Enzo Life Sciences, Inc.). Differences in cortisol concentration were observed between analysed hunting methods. As potential stress- related indicator, mean cortisol concentration was the highest in serum of wild boar culled during fenced driven hunt (327.18±46.53 nmol/l). 25. Stanje i perspektiva mesnog govedarstva u Republici Hrvatskoj

Mesno govedarstvo je izrazito bitan dio ukupne govedarske proizvodnje u Republici Hrvatskoj. Nakon ulaska u Europsku uniju došlo je do povećanog uvoza goveđeg mesa uz istovremeno smanjenje vlastite proizvodnje tako da je prosječna samodostatnost na razini od 70%. Tijekom posljednjih nekoliko godina zabilježen je porast broja plotkinja čistokrvnih mesnih pasmina, no one još uvijek čine svega 5% ukupnog broja krava. Zbog nedostatnog broja kvalitetne teladi za tov na domaćem tržištu, tovljači junadi primorani su materijal za tov tražiti u zemljama iz okruženja. Specifična tehnologija tova junadi u Republici Hrvatskoj osigurava vrhunsku kvalitetu mesa koja je prepoznata na stranim tržištima. Razvoj i perspektivu mesnog govedarstva treba u budućnosti pokušati temeljiti na stavljanju što većeg broja domaće teladi u tovilišta. Navedeno je moguće ostvariti intenzivnijim razvojem sustava krava-tele koji treba biti subvencioniran. Nadalje, potrebno je bikove mesnih pasmina koristiti u većoj mjeri u stadima za proizvodnju mlijeka na kravama ispod prosječne proizvodnje mlijeka. Ovakvim postupkom povećavamo i selekcijski pritisak i omogućavamo bolji sekcijski napredak u proizvodnji mlijeka jer ostavljamo rasplodni pomladak od iznad prosječnih krava. Potrebno je mijenjati tehnologiju proizvodnje telećeg mesa povećanjem završne mase teladi pri klanju. Istovremeno je potrebno i dobro uhodanu tehnologiju proizvodnje mesa tovne junadi prilagođavati potrebama tržišta s tendencijom povećanja težine trupova na liniji klanja Protekla, 2020. godina obilježena pandemijom korone nam treba biti upozorenje da svakako moramo za svoje stanovništvo osigurati samodostatnost u većini poljoprivrednih proizvoda pa tako i govedskog mesa.

Blood is the first and inevitable by-product of the meat production. In general, per adult cattle can be collected up to 15 l of blood and 2–3 l per pig. Depending on pre- and post-mortem inspection, blood can be categorised as edible or inedible by- product. Considering amounts produced, high organic content and high chemical oxygen demand, blood needs to be managed and used to prevent pollution and health related risks. 27. Mogućnosti uzgoja izvornih hrvatskih pasmina koza za potrebe agroturizma

Izvorne hrvatske pasmine koza (hrvatska šarena koza, hrvatska bijela koza i istarska koza) čine gotovo polovinu ukupne evidentirane populacije koza u Hrvatskoj. Međutim, uzgoj hrvatskih izvornih pasmina koza najčešće je obilježen izrazitom ekstenzivnošću te vrlo niskom dohodovnošću i učinkovitošću proizvodnje. Možebitnu dodatnu prihodovnu mogućnost uzgajivačima izvornih pasmina koza omogućava ponuda njihovih proizvoda kroz agroturizam. Stoga je cilj rada bio utvrditi informiranost potrošača i njihove spoznaje o izvornim pasminama koza te utvrditi percepciju o potencijalu izvornih pasmina koza i/ili njihovih proizvoda u sklopu agroturističke ponude. Online anketno ispitivanje provedeno je na uzorku 353 ispitanika. Rezultati istraživanja ukazuju na dobre mogućnosti uzgoja izvornih hrvatskih pasmina koza za potrebe agroturizma. Više od 90 % ispitanih smatra da bi izvorne pasmine koza i njihovi proizvodi upotpunili i obogatili agroturističku ponudu, a nešto više od polovice ispitanih smatra da bi uzgoj izvornih hrvatskih pasmina koza za potrebe agroturizma pridonio ostanku mladih ljudi na selu i revitalizaciji ruralnih prostora. Više od dvije trećine ispitanih bi češće posjećivao neki agroturizam na kojemu se uzgajaju izvorne pasmine koza i/ili u ponudi ima njihove proizvode. Gotovo polovica ispitanika smatra da su proizvodi izvornih pasmina koza kvalitetniji od proizvoda ostalih pasmina, dok otprilike trećina ispitanih smatra da bi proizvodi izvornih pasmina trebali biti cjenovno skuplji nego proizvodi ostalih pasmina koza.

Nusproizvodi životinjskog podrijetla nastaju nakon klanja i obrade trupova domaćih životinja u klaonicama i prosječni udio u živoj masi goveda iznosi oko 45 %, oko 50 % za ovce i koze, 40 % za svinje i 30 % za brojlere. Nusproizvodi se dijele na jestive i nejestive odnosno one koji nisu prikladni za prehranu ljudi. Većina jestivih nusproizvoda ima visoki udio proteina, poželjan aminokiselinski sastav te esencijalne minerale i vitamine. Hranjiva vrijednost nusproizvoda životinjskog podrijetla čini ih pogodnom sirovinom u industriji hrane za pse i mačke. U Hrvatskoj je posljednjih godina prisutan konstantan trend povećanja broja ekoloških poljoprivrednih gospodarstava i površina pod ekološkom proizvodnjom, pri čemu je tijekom posljednjih pet godina zamjetno osjetnije povećanje broja ekološki uzgajanih goveda. Cilj rada je prikazati odlike ekološkog uzgoja goveda sustavom krava-tele, kao i izazove s kojima su suočeni ekološki proizvođači goveda u sustavu krava-tele budući da je to jedan od glavnih sustava držanja goveda u ekološkoj proizvodnji. Do razvoja ovog sustava uzgoja goveda u Hrvatskoj je došlo osobito tijekom posljednja dva desetljeća kao odgovor na izazove s kojima je suočena domaća govedarska proizvodnja, a jedan od glavnih je osiguranje dostatnog broja teladi za proizvodnju goveđeg mesa.

Sisačko-moslavačka županija smjestila se u južnom dijelu središnjeg dijela Republike Hrvatske i druga je po veličini županija s obzirom na površinu poljoprivrednog zemljišta. Stočarstvo je najvažnija grana poljoprivredne proizvodnje uglavnom vezana za pašno držanje životinja (goveda, konji) na području Lonjskog i Odranskog polja. Govedarstvo čini okosnicu stočarske proizvodnje pri čemu dominira simentalska pasmina. Negativni trendovi u kretanju broja goveda na državnoj razini prisutni su i na navedenom području, a odnose se prvenstveno na pad broja mliječnih i kombiniranih pasmina goveda. Tijekom posljednjeg desetljeća raste zanimanje uzgajivača za uzgoj mesnih pasmina goveda što se očituje porastom broja krava svih čistokrvnih mesnih pasmina uključujući i neke koje se nisu ranije uzgajale na području Sisačko-moslavačke županije (salers i aubrak). Također, broj izvornih pasmina bilježi blagi porast u promatranom razdoblju. Navedene promjene pasminske strukture mogle bi poslužiti kao primjer korištenja prirodnih resursa i pašnjačkih površina i na ostalom području Republike Hrvatske., Sisačko-moslavačka county is located in the southern part of the central part of the Republic of the Croatia as a second largest county in relation to amount of agricultural land. Livestock is the most important branch of agricultural sector, mainly related to grazing animals (cattle, horses) in the area of Lonjsko and Odransko fields. Cattle breeding is the backbone of livestock production, dominated by the Simmental breed. Negative trends in the number of cattle are present in this area, and relate primarily to the decline in the number of dairy and dual purpose breeds. Over the last decade, breeders’ interest in raising beef cattle breeds has grown which is reflected in the increase in the number of cows of all purebred beef cows including some that were not previously bred in Sisak-Moslavina County (salers and aubrak). Also, the number of native breeds a slight increase in the observed period. These changes in the breed structure could serve as an example of the use of natural resources and pastures in the rest of the Republic of Croatia.

Najčešće se uspješnost upravljanja farmom (menadžmenta) i primijenjenih tehnologija na nekoj farmi procjenjuju samo na osnovu količine i kvalitete proizvedenog mlijeka i mesa. Međutim, tehnologija proizvodnje mlijeka i mesa je složena i uključuje čitav niz različitih menadžmenata na farmama od smještaja, proizvodnje krme, hranidbe, mužnje, izgnojavanja, ljudskih resursa itd. Pri procjeni upravljanja farmom i primijenjenih tehnologija na farmi pored osnovnih proizvodnih pokazatelja treba uključiti i ostale pokazatelje kao što su: međutelidbeno razdoblje, dob kod prvog teljenja, postotak mrtvorođene teladi, dob krava pri izlučenju, stopu izlučenja, broj somatskih stanica i količinu ureje u mlijeku kao i ostale neproizvodne pokazatelje. Na našim farmama najčešće pogreške se događaju u razdoblju oko teljenja i nakon teljenja (tranzicija). Navedene greške direktno ili indirektno utječu na produžavanje međutelidbenog razdoblja i niz drugih pokazatelja uspješnosti menadžmenta u mliječnih i mesnih stada. Produženo međutelidbeno razdoblje uzrokuje niz gubitaka u proizvodnji mlijeka i mesa, stoga su u ovom radu prikazani tehnološki postupci kojih bi se trebalo pridržavati kako do navedenih gubitaka ne bi došlo ili kako bi ih smanjili na najmanju moguću mjeru

40. Udder shape and milk yield of different sheep breeds

Cilj ovog rada bio je utvrditi zastupljenost pojedinih oblika vimena u triju mliječnih pasmina ovaca uzgajanih u Hrvatskoj, kao i povezanost oblika vimena s proizvodnjom i kemijskim sastavom ovčjeg mlijeka. U tu svrhu istraživanjem je bilo obuhvaćeno 111 paških ovaca, 93 istarske ovce te 80 istočnofrizijskih ovaca. Tijekom razdoblja mužnje u istraživanim stadima provedena je redovita mjesečna kontrola mliječnosti ovaca primjenom AT metode, dok je prosudbu vimena prema obliku u svih ovaca obavila ista osoba jednom tijekom laktacije, i to prilikom provedbe prve kontrole mliječnosti (nakon odvajanja janjadi). U paških ovaca utvrđena su jasno (izražajno) različita četiri oblika ili tipa vimena (tipovi I, II, III i IV), u istarskih ovaca determinirano je postojanje triju oblika vimena (tipovi II, III i IV), dok su u istočnofrizijskih ovaca utvrđena dva oblika vimena (tipovi II i III). U sve tri istraživane pasmine najzastupljenije su bile ovce s vimenom tipa III. Neovisno o pasmini, u ovaca s nisko postavljenim i (gotovo) vertikalno položenim sisama te s jasno izraženom podužnom brazdom između polovica vimena (tipovi vimena III i IV) utvrđena je veća proizvodnja mlijeka nego u ovaca s visoko postavljenim i horizontalno položenim sisama (tipovi vimena I i II). Međutim, utvrđene razlike u proizvodnji mlijeka između ovaca različitog oblika vimena bile su značajne (P, The aim of this study was to determine the prevalence of individual udder shapes in three dairy sheep breeds, as well as the relationship of udder shape with the production and chemical composition of sheep's milk. For this purpose, the research included 111 Pag sheep, 93 Istrian sheep and 80 East Friesian sheep. During the milking period in all flocks included in the research, milking control was carried out using the AT method, while the udder shape assessment in all studied ewes was carried out by the same person once during lactation when conducting the first milking control (after weaning of lamb(s)). In Pag sheep four distinct forms or types of udder (types I, II, III and IV) were clearly identified, in Istrian sheep the existence of three udder shapes (types II, III and IV) was determined, while in East Friesian sheep were found two udder shapes (type II and III). In all three breeds the most frequent were ewes with the udder type III. in all three breeds, higher production of milk was observed in sheep with low and (almost) vertically positioned teats and with a pronounced longitudinal furrow between the udder halves (udder types III and IV) than in sheep with highly placed and horizontally positioned teats (udder types I and II). The aim of this study was to determine the microhabitat, relief and forest structure characteristics of brown bear (Ursus arctos L.) cave dens and other types of dens in the North Dinarides (Velebit Nature Park) in Croatia. In total, 63 dens were identified, consisting of 89% cave dens and 11% other den types (nest dens 6%, stump dens 3%, trunk dens 2%). In the 20-meter radius around each den, microhabitat, relief and structural characteristics were recorded, including altitude, slope, exposition, rockiness, forest developmental stage, canopy density, tree height, forest site index, tree basal area, and tree species composition. Based on altitude, the climatic category was determined according to the Köppen climate classification. The majority of cave dens (62%) were in the temperate climate category. Most cave dens were at altitudes between 900 and 1100 m, with a southern exposition and slope class between 30 to 60%, situated in partial canopy density of the third forest site index with tree heights between 16 and 20 m and without forest degradation. Slopes and tree heights were lower (p < 0.019) in cave den areas in comparison to other den types.

The aim of this research was to determine effect of gender on physical characteristics of wild boar meat. Animals (n=85 ; 27 male and 56 female) were harvested during drive hunt in period between November 2018 and January 2019 in the open state hunting ground ˝Prolom˝. Muscle samples (m. psoas major) were taken post mortem, vacuumed packed and stored at minus 20ºC until analyses. Physical characteristics (colour, pH, thawing loss and cooking loss) of muscle samples were determined as described by Honikel (1998). Meat colour was measured using Minolta Chromameter CR-450 (Minolta Co., Ltd., Japan) with 50-mm measurement area after 1 hour of blooming and pH was measured using pH meter S2 Food Kit (Mettler– Toledo d.o.o., Columbus, Ohio, USA). Statistical analyses were made using SAS Software V9.4 (Cary, NC, USA). Average values of meat colour parameters (L*, a*, b*) were as follows: 37.97±0.38, 21.47± 0.28, 9.33±0.21. Differences in meat colour parameters between males and females were minor (38.32±0.48 vs. 37.78±0.49 ; 21.16±0.37 vs. 21.69±0.37 ; 9.39±0.31 vs. 9.38±0.27). Average pH was 6.22±0.32 and in males was found lower (p>0.05) pH than in females (5.73±0.04 vs. 6.44±0.48). The breeding of indigenous Croatian goat breeds is most often marked by extreme extensiveness and very low profitability and production efficiency. Possible additional income opportunity for breeders of indigenous goats is provided by the offer of their products through agritourism. Therefore, the aim of this study was to determine the awareness of consumers and their knowledge of the indigenous Croatian goat breeds and determine the perception of the potential of indigenous goats and/or their products as a part of agritourism offer. An online survey was conducted on a sample of 353 respondents. More than two thirds of the respondents would more often visit an agritourism where indigenous goats are kept and/or which offer their products. Almost half of the respondents believe that the products of the indigenous breeds are of better quality than the products of other goats, while one third of the respondents think that the products of the indigenous goats should be more expensive than the products of other goats. These results provide an informative basis for the development of innovative marketing strategies for agritourism owners who could enrich their offer with the introduction of autochthonous (local) products. Istraživanje je provedeno radi utvrđivanja udjela alelnih varijanti GHR gena u populaciji simentalskih junica i križanaca simentalskih × Holstein junica, te povezanosti alelnih varijanti GHR gena i genotipova s odlikama rasta, trupa i kakvoće mesa. U istraživanoj populaciji tvrđene su slijedeće frekvencije genotipova GHR gena: AA (0, 468), GA (0, 426) i GG (0, 106), odnosno frekvencije alela kako slijedi A (0, 681) i G (0, 319). Utvrđen je pozitivan utjecaj GHRGG genotipa na veće dnevne priraste i veći udio mišićnog tkiva, te niži udio masnog tkiva u trupovima junadi koji su bili statistički značajni. Rezultati ukazuju na iskoristivost determinacije GHR genskih varijanti i njihove uporabe u selekciji mesnih pamina goveda.

45. Growth and carcass performance of Istrian bulls

Istrian cattle is one of the three autochthonous Croatian cattle breeds, which is due to the small size of the population in the status of the endangered breed. During the second half of the twentieth century because of lower economic competitiveness, it is suppressed from farming. Economic reaffirmation is the only safe way to achieve longterm sustainability of the breed. During the last decade, a program for the production of Istrian cattle meat as a recognizable product has been launched resulting with higher inclusion of Istrian cattle in the gastronomic offer of the region. The aim of the research was to determine the growth and carcass performance of the Istrian cattle bulls. The research includes 141 bulls divided into two groups: young bulls (slaughter age from 18 to 24 month ; 37 bulls) and older bulls (slaughter age over 24 months ; 104 bulls). The average body weight of young and older bulls (587.94 kg ; 690.88 kg) indicates a respectable growth potential. The cold carcass weight of young and older bulls (320.59 kg ; 368.65 kg) indicate a moderate level of carcass yield (55.48% ; 54.17%) and cooling shrinkage (1.74% ; 1.68%). Young bulls had a better EUROP conformation score (p < 0.05) and a level of carcass fatness was not significantly different. Shares of commercial beef cuts in the carcass between the groups of young and older bulls were significantly different in absolute and relative values. The results indicate a moderate growth capacity and carcass yield of the Istrian bulls, which emphasizes the need to affirm the attributes of specificity and originality of Istrian beef in the market development for these products.

Kvalitetan uzgoj teladi mora biti cilj na svim farmama koje drže krave bez obzira da li se radi o proizvodnji mlijeka, sustavu krava dojilja ili sustavu krava-tele. Nažalost, još uvijek se rade velike greške u tehnologiji uzgoja teladi što se posebno odnosi na razdoblje neposredno nakon teljenja pa sve do odbića. Cilj rada bio je istražiti odlike uzgoja teladi od teljenja do odbića na području Koprivničkokriževačke županije. Anketnim istraživanjem 312 obiteljskih poljoprivrednih gospodarstava (OPG-a) utvrđeno je da se telad najčešće drži vezana u istom objektu sa kravama (68, 9% OPG-a). Prvu porciju kolostruma unutar prva tri sata nakon teljenja telad dobiva na 79, 2% OPG-a. U hranidbi teladi najčešće se koristi mlijeko (97, 8% OPG-a) i to na 61, 5% OPG-a više od 500 litara. Od krute hrane telad dobiva sijeno (77, 6% OPG-a), starter (61, 2% OPGa), dok se ukupno izmješani obrok (TMR) koristi na 2, 9% OPG-a. Najčešće bolesti teladi su proljevi (85, 6% OPG-a), a vakcinacija se provodi na 43, 3% OPG-a.

50. Comparison of Hereford and Hereford × Charolais bulls in conventional beef production in Croatia

Beef production is a very important part of animal production in Croatia. It is constantly faced with the problem of small number and poor quality of calves for beef production. One of the solutions is to produce more crossbreed calves and choose appropriate genotype considering production technology. The aim of this research was to determine production characteristics of Hereford bulls and crossbreed Hereford × Charolais bulls in conventional fattening conditions. Twenty-five Hereford and twenty-five crossbreed Hereford × Charolais bulls were used in the study. The bulls were fattened in the same housing and feeding conditions, fed ad libitum with diet based on maize silage and concentrates. The bulls were slaughtered at the age of 15±0.2 months according to the standard procedure. Carcasses were chilled under commercial conditions at 4 °C/24 h. EUROP conformation score of carcass and subcutaneous fat thickness were determined at 24 h post-mortem. Subcutaneous fat thickness was measured with a calliper over the 12th rib of the m. longissimus dorsi. Minolta Chroma CR-410 colorimeter was used in order to evaluate meat colour. Statistical analysis was performed using the General Linear Model.
