After the outbreak of the novel SARS-COV-2 coronavirus, in the Chinese province of Wuhan that spread rapidly across the world, the Government of the Republic of Serbia introduced protection measures in March 2020, to prevent the spread of the infectious disease COVID-19 in Serbia. All gatherings indoors (sport, cultural and other events), as well as in parks and public places intended for recreation and sports, were prohibited. Shortly after, a lockdown took place which prohibited leaving home with the exception of basic needs, work from home was recommended and online schooling was introduced. The World Health Organization has recommended the use of online resources to maintain basic physical activity. In these circumstances of social distancing, this study examines the prevalence of physical activity supported by social networks and mobile applications during the COVID-19 lockdown in Serbia. The study was conducted as a cross-sectional study, using questionnaire distributed through social networks. The study found that more than a third of respondents (38.3%) used social networks or mobile apps to perform physical activity during the lockdown in Serbia; 27.1% used social networks/mobile apps before the pandemic, while 11.2% began to use social networks/mobile apps to perform physical activity during the lockdown. Easy access and review of exercises were the most common reasons for using social networks/mobile apps. 40% of the participants in the study agreed that social networks/mobile apps, make it easier to engage in physical activity. Based on the presented results, it can be concluded that the promotion of physical activity at home through social networks and mobile apps can provide an invaluable contribution to maintaining physical activity globally during pandemics such as COVID-19.

Information regarding the adaptation of maize (Zea mays L.) inbred lines to various field conditions and seed longevity is essential for seed companies. The objective of this work was to evaluate different vigour tests for detecting differences among naturally aged seeds and to assess the relationship between seed quality parameters and pedigree data of maize inbred lines. A seed of 15 maize inbred lines, selected at Maize Research Institute Zemun Polje, belonging to different heterotic groups was produced during 2011. Seed quality was assessed in 2015 by standard ger mination, radical emergence, accelerated ageing, and cold test. Root length of 4-day old seedlings was measured in all applied tests. Analysis of variance showed that genotype and storage condi tions had a significant effect on all seed quality parameters. Large variation among inbred lines was detected in seed vigour determined by three tests, in particular by the accelerated ageing test. Cold test results showed very good chilling tolerance of tested genotypes, except two inbred lines with Lancaster background. The correlation between the cold test and the accelerated ageing test was significant, while the radical emergence test had a poor correlation with them. Obtained results indicate that the application of either cold test or accelerated ageing test is reliable for screening seed vigour of maize inbred lines. Monitoring genetic uniformity and identity is very important in maize breeding and seed production. Due to practical reasons, molecular and biochemical methods for the determination of genetic purity and uniformity should reliably reflect genetic differences associated with traditional morphological traits, even when they are not agriculturally important. A comparison of genetic purity and uniformity of one maize hybrid lot, based on morphological UPOV markers and the UTLIEF (Ultrathin-layer isoelectric focusing) method is performed in this research. Tested hybrid samples expressed uniform protein markers profiles, but on the other hand, unsatisfactory uniformity of morphological markers in the field, indicating some laches in seed production. Although the UTLIEF method, standardized by ISTA rules, provides enough accurate distinction between F1 seed and self-pollinated maternal seed, a "clean" isozyme or protein profile will not necessarily correlate with morphological homogeneity. It is most likely that the non-uniformity of the tested hybrid lot originates from the non-uniformity of one of the parental lines. Therefore, to establish where the laches occurred, it is necessary to perform post-control tests with reference samples of maize hybrid and parental lines, as well as, the insight into their official descriptions according to the UPOV descriptor. Thus, it is very important to require the deposition of referent samples of hybrids and varieties whose seed production is allowed in Serbia, as well as to have harmonised protocols for conduction of laboratory and field post-control tests.

Ground ivy (Glechoma hederacea L.) has been used for generations in folk medicine to treat various diseases. Up until today, the information about its chemical and bioactive composition is still rather incomplete. The aim of this study was to evaluate macro- and microcomposition of ground ivy including the polyphenolic profile. In the present study, different phenolic fractions (free soluble, esterified, glycosylated and insoluble-bound phenolic fractions) of ground ivy were prepared and analysed using spectrophotometric methods (total phenolic content and antioxidant capacity) and HPLC-PAD methodology. Regarding the macrocomposition, the results revealed that most of the ground ivy dry matter was composed of insoluble dietary fibre (48.96% dmb) followed by proteins (17.92% dmb). Minerals also markedly contributed to the dry matter (12.74% dmb) with potassium as the main macroelement (48.49 mg/g dmb). Dominant phenolic compounds in ground ivy extract were: rosmarinic (6.64 mg/g dmb) and chlorogenic acid (1.11 mg/g dmb), and flavonol rutin (1.87 mg/g dmb). Fractionation of phenolic compounds from ground ivy confirmed that dominant esters were indeed those of caffeic acid, while glycosides those of quercetin, which corresponded to the majority of identified compounds in the initial extract. Insoluble-bound phenolics were not represented in notable content. This study provided additional reference for macro- and microcomponent and phenolic composition of rather underutilized but valuable medicinal plant – ground ivy, to be used in further research of its health properties.

For patients with gluten intolerance, the most common cause of treatment failure is an inadequate gluten-free diet (GFD), such as because of gluten contamination. Here we describe the design, implementation and validation of an HACCP protocol for preparing glutenfree meals in a children's hospital. Gluten content in prepared meals was analyzed using R5 sandwich ELISA, which indicated that gluten concentrations did not exceed 20 mg/kg. Total daily gluten intake of patients on the GFD was less than 10 mg.

For the first time, the levels of benzo(a)anthracene (BaA), chrysene (CHR), benzo(b)fluoranthene (BbF) and benzo(a)pyrene (BaP) and their sum (PAH4) were investigated in a total of 180 samples of fish, shellfish and meat products produced in Croatia. In addition, dietary polycyclic aromatic hydrocarbons (PAHs) intake of adult Croatian consumers was estimated for both acute and chronic ingestion circumstances. None of the food samples exceeded the currently legal PAHs levels according to the European legislation. The mean PAH4 level was 1.47 µg/kg for meat and 1.48 µg/kg for shellfish products. The acute daily ingestion of BaP and PAH4 through meat and shellfish products was 2? to 7? fold higher in comparison to chronic intake, with meat products being the major contributors. Consequently, the evaluation of consumption patterns that used the margin-of-exposure approach indicated a negligible risk to human health. © 2018 Elsevier Inc.

Chokeberry (Aronia melanocarpa) fruits and its products are one of the richest sources of pholyphenols which may play important role in human health as for example in regulation of blood pressure levels, reducing concentrations of triglycerides, low density and total cholesterol. The objective of this study was to identify and quantify the content of pholyphenols, specifficaly phenolic acids (gallic, caffeic, p-coumaric, ellagic, chlorogenic) and flavonols (quercetin and kaempferol) using high performance liquid chromatography (HPLC) in two varieties of fresh chokeberry fruit (type Nero and Viking) and in different types of chokeberry products available from Croatian market: eleven samples of juices, three samples of powders, two samples of both capsules and dried berries and four samples of teas. The results showed that there is a difference in amount of examined polyphenols between different product categories, and significant difference was also observed within the same product group (p≤0.05). In all analysed samples the highest phenolic acid quantified was p-coumaric acid, and gallic acid was the lowest one. Berry juices from fresh chokeberry fruits had higher amount of p-coumaric acid (284.55±6.34 mgL-1) compared to commercially available juices (195.48±3.05 mgL-1). The same phenolic composition was observed within the rest of the products where capsules have the higher amount of phenolic acids, followed by powders, dried berries and teas (eg. p-coumaric 81.36; 79.76; 36.28; 28.81 mg/100 g dry matter, respectively). According to flavonol amount, all observed products had higher values of quercetin compared to kaempferol. Obtained results represents a valuable set of data for novel and under-examined plant source of health promoting bioactivecompounds.

This report adds to the ongoing vivid dispute on the fate of carotenes in tomato upon thermal processing. Although many papers dealing with changes in the raw tomatoes during industrial treatment have already appeared, data on the fate of finished, processed tomato products when they are additionally heated (e.g., when used in the household) is scarce. In this study, effects of heating and storage on a commercial, double concentrated tomato pur ee were examined spectrophotometrically. Our results indicate that upon exposing unopened cans with double concentrated tomato pur ee to thermal treatments between 100 and 135 ^o C during specific time intervals spectral profile of lycopene remained preserved. Likewise, a slight hypsochromic shift of lycopene peak III did not occur up to 135 ^o C. However, significant (20%) initial loss of lycopene content was induced by thermal treatment for 20 min at 100 ^o C. During the more intensive treatments that followed the lycopene content was first leveling off and then slightly increased. After storage of thermally treated samples at - 18 ^o C the content of lycopene was found to increase. All these results suggest simultaneous working of several mechanisms: possible autooxidation and isomerization processes of carotenes taking place, in addition to the Maillard reaction and enhanced extractability of carotenes at increased temperatures. Results acquired from hexane solutions of samples treated at temperatures of 120 and 135 ^oC obtained at different time points, confirmed severe isomerization in organic solvent and/or photo-oxidative degradation of lycopene.

Tijekom ovog istraživanja prisutnost alergena kikirikija je analizirana ELISA (Enzyme-linked immunosorbent assay) metodom u uzorcima čokolade s lješnjakom i krem-proizvoda iz trgovačkih lanaca te uzorcima kolača koji sadrže kakaove dijelove iz trgovačkog lanca, slastičarnice i objekta javne prehrane, a dobiveni rezultati uspoređeni su sa informacijama o hrani vezanim uz prisutnost alergena kikirikija. U petnaest od šesnaest analiziranih uzoraka zapakirane hrane (čokolada s lješnjakom i krem-proizvodi) detektirani su alergeni kikirikija pri čemu je navod o sadržaju alergena kikirikija, u okviru informacija o hrani, sadržavalo šest takovih proizvoda. Alergeni kikirikija detektirani su i u četrnaest od šesnaest analiziranih uzoraka nepretpakirane hrane, odnosno kolača koji sadrže kakaove dijelove iz trgovačkog lanca, slastičarnice i objekta javne prehrane pri čemu su informacije o hrani ukazivale na sadržaj kikirikija u tri takova proizvoda. Rezultati istraživanja ukazuju na značaj detekcije alergena kikirikija kao skrivenog sastojka u hrani, obzirom da je podatke o tvarima ili proizvodima koji uzrokuju alergije ili netolerancije koji između ostalog uključuju kikiriki i proizvode od kikirikija, potrebno navoditi u okviru obveznih informacija o hrani.

Proces integracije promatramo kroz prizmu pravde, gdje je cilj integracije postizanje pravne i političke jednakosti između manjine i većine. U ovom radu polazi se od ideje da društvo čine dvije osnovne zajednice: kulturna i politička. Prateći ovu dihotomiju zaključuje se da i proces integracije ima dvije dimenzije: političku i društvenu. Proces integracije nacionalnih manjina podrazumijeva njihovo sudjelovanje (integriranost) u politički i društveni život zajednice (države) u kojoj žive. U prvom dijelu rada autorica predstavlja modele političkog predstavljanja nacionalnih manjina, kako bi utvrdila prednosti i mane svakog od njih. U drugom dijelu rada autorica analizira aktivnosti manjinskih stranaka na posljednjim parlamentarnim izborima u Srbiji, izborne programe koje predlažu i rezultate koje su ostvarile., The integration process can be perceived through the prism of justice, whereby the aim of integration is to achieve the legal and political equality between minority and majority. This paper is based on the idea that the society has two main communities: cultural and political. Following this dichotomy, one can conclude that the integration of national minorities has two dimensions: political and social. Integration of national minorities involves their participation (integration) in political and social life of the community (state) in which they live. First part of the paper provides the analysis of models of political representation of national minorities in order to determine the advantages and disadvantages of each model. In the second part, the author analyzes the activities of minority parties in the last parliamentary elections in Serbia, the electoral programs which they proposed and the results that have been achieved.

In this paper a commercial electronic tongue (αAstree, Alpha M.O.S.) was applied for botanical classification and physicochemical characterization of honey samples. The electronic tongue was comprised of seven potentiometric sensors coupled with an Ag/AgCl reference electrode. Botanical classification was performed by PCA, CCA and ANN modeling on 12 samples of acacia, chestnut and honeydew honey. The physicochemical characterization of honey was obtained by ANN modeling and the parameters included were electrical conductivity, acidity, water content, invert sugar and total sugar. The initial reference values for the physicochemical parameters observed were determined by traditional methods. Botanical classification of honey samples obtained by ANN was 100 % accurate while the highest correlation between observed and predicted values was obtained for electrical conductivity (0.999), followed by acidity (0.997), water content (0.994), invert sugar content (0.988) and total sugar content (0.979). All developed ANN models for rapid honey characterization and botanical classification performed excellently showing the potential of the electronic tongue as a tool in rapid honey analysis and characterization. The advantage of using such a technique is a simple sample preparation procedure, there are no chemicals involved and there are no additional costs except the initial measurements required for ANN model development.

A number of studies have shown that the consumption of cocoa and chocolate products has positive health effects on humans. The object of this research was to monitor changes of total and individual phenolics and antioxidant capacity during the cocoa bean manufacturing. The loss of cocoa phenolics and their antioxidant activity vary with the degree of technological process. The process of roasting and cocoa nib alkalisation had the major influence on phenolic compounds as well as on antioxidant capacity. The roasting treatment resulted in 14% loss of the total phenolics content, while alkalisation resulted in 64% loss of total phenolics content. Procyanidins B1 and B2 as well as ())-epigallocatechin were the unstable components, while caffeic acid derivate showed the greatest stability in all technological process. Furthermore, PCA showed that phenolic contents, antioxidant capacity and non-fat cocoa solids parts of the samples were classified in groups according technological conditions.

The electronic tongue or taste sensor system, comprised of seven potentiometric sensors, was applied as a tool in isotonic sports drinks analyses and characterization. Recently, electronic tongue systems showed large potential in food quality control, and for the first time it was used in isotonic sports drinks differentiation. The ability of the electronic tongue to differentiate between isotonic sports drinks samples and to monitor isotonic sports drinks during shelf life was evaluated by PCA analysis. The obtained results showed that the electronic tongue system was capable of differentiating between differently flavoured isotonic sports drinks samples and was able to monitor the changes in isotonic sports drinks samples during storage. High correlations of the developed PLS models between the observed sensory taste attributes (sweet, sour, bitter taste intensity and chemical senses intensity) and physicochemical parameters (electrical conductivity, refractometric value, pH value) and predicted values of sensory taste attributes and physicochemical parameters evaluated by electronic tongue, confirmed the performance of the electronic tongue and also indicate that the electronic tongue system can be used for rapid evaluation of sensory taste attributes and physicochemical parameters of isotonic sports drinks.

Solid-phase microextraction (SPME) was examined to investigate volatiles in tomatoes and tomato products. Aroma volatiles and differences in volatile composition of different varieties of fresh tomatoes and several commercial tomato products, such as tomato juice, tomato puree, tomato paste and canned diced tomatoes, were analysed by a manual headspace SPME technique coupled with gas chromatography (GC–FID and GC–MS). Fresh and processed tomato aroma was composed of terpenes and lactones, esters, carbonyls and alcohols, sulphur compounds, free acids and oxygencontaining heterocyclic compounds. In most samples of processed tomatoes, lower relative concentrations of volatiles than in fresh tomato samples were determined, but in some cases (especially in samples of tomato juice) higher concentrations were observed. The most important difference between fresh tomato and processed tomato aroma was the almost complete loss of cis-3-hexenal and the presence of furfural in tomato products. On the basis of the aromatic profiles obtained by GC analysis, relationships between fresh and processed tomato samples were obtained, using multivariate PCA statistical analysis. The antioxidant activities and total phenolic content of 30 samples of acacia honey from Croatian terri - tory were analysed. Phenolics were determined by the modified Folin-Ciocalteu method, antiradical activity by the 1,1-diphenyl-2-picrylhydrazyl (DPPH) method and potential antioxidant activity using the ferric reducing antioxi - dant power (FRAP) method. In all samples, physicochemical parameters (water content, electrical conductivity, total reducing sugars, sucrose content, acidity, hydroxymethylfurfural content, prolin content, optical rotation, diastase activity and invertase activity) were measured according to Croatian legislation and International regulatory standards. Honey can be considered as a dietary supplement as it contains some important components including α-tocopherol, ascorbic acid, flavonoids and phenolics. The composition and properties of honey are dependent on floral origins, climatic conditions of the produced area, processing and storage methods. The results of physicochemical analyses showed that all the values of investigated parameters are in agreement with the current legislation. Phenolic content ranged from 31.72 mg/kg to 80.11 mg/kg, antiradical activity expressed as IC 50 ranged from 61.28% to 253.47% and antioxidant activity expressed as FRAP value from 6.95 to 142.43. Promocija umjetnosti za cilj ima da se djelo, takvo kakvo jest, predstavi na način koji neće narušiti njegovu suštinu, a koji će privući širu (raspoloživu) publiku. Specifičnost odnosa pošiljatelj – objekt – primatelj u okviru komunikacijskih praksi dovodi do potrebe utvrđivanja kriterija važnosti karakteristika objekta poručivanja (samog umjetničkog djela) s jedne, i primatelja s druge strane. Podčinjavanjem načina promocije karakteru potencijalne publike dovodimo u pitanje, ne samo, etiku promocije umjetničkog stvaralaštva nego i stvaralaštvo po sebi. Osnovno istraživačko pitanje autora je: koči li nedostatak etabliranih kriterija netike umjetnost ili je potiče? Paradigma virtualne stvarnosti kroz prizmu neodređenih i nejasnih demarkacija, potiče i druga istraživačka pitanja: prolazi li netika tek kroz formativni period ili bi trebalo, u kontekstu promocije umjetnosti na internetu, govoriti o neetici?, Ethic promotion of art on the internet through analyses of using internet with the practical consequences, starting of promotion of art as the goal ( presenting the work of art in the way which will not violate it’s essence). Specificity of the relationship between a sender – an object – a recipient in communication practice (the need to determinate the importance of the characteristics of the object (the work of art) from one and the recipient from the other side). Subordinating the way of promotion to the character of the potential audience (question not only about the nethic promotion of artistic creativity, but about creativity itself). Does the lack of established criteria of nethic inhibit or encourage art? The paradigm of virtual reality through the prism of vague and unclear demarcation , encourages authors to other questions : whether nethic passes through the formative period, or in the context of promotion of art, should speak about no-ethic?

This report is aimed at intra-laboratory and inter-laboratory comparison of the results obtained during spectrophotometric and HPLC analyses of lycopene, beta-carotene and total carotenoids in tomato products and yellow maize flours/grits. Extensive statistical analyses are performed in order to identify the main sources of uncertainties which may occur when using: (i) different techniques/methods/approaches in the same/different laboratories, in various food samples, and (ii) to indicate the facts/conditions under which the biases between results may remain unidentified after applying statistical testing. Our data points to the inertness of t-test to detect significance of differences, particularly at low R values: in general, the higher correlation coefficient, the higher is sensitivity of statistical testing, especially of the paired t-test. Therefore, simple deviation of relationship line slope from unity could be used as additional evaluation parameter. This adds to reliable and objective quality assurance of foods in regard to carotenoids.

UNLABELLED Quality index method scheme was developed for raw bogue (Boops boops) and evaluated it in a shelf-life study, using samples from wild fish aggregations at fish farms (BF) and from area not influenced by the fish farms (BW). Different environment influenced the shelf life of bogues; thus the maximum ice storage, evaluated from cooked samples, was found to be 17 d for BF and 12 d for BW. The calculated quality indexes (QIs) evolved linearly with storage time on ice (QI(BF) = 0.968x + 0.583, R(2) = 0.947, Std. Err. Est. = 1.41; QI(BW) = 1.212x + 0.474, R(2) = 0.972, Std. Err. Est. = 0.95). The multivariable analysis was used to identify the most effective variables during spoilage evolution. The sum of all demerit points showed higher correlation (R > 0.99) then any single parameters itself, indicating that the individual parameters could not replace the usage of 20 demerit points QIM scoring scheme in sensory assessment. The impact of farming cages was observed in fat (BF > 19%; BW < 2%) and water content (BF = 55%; BW = 77%) of bogues, but also in pH, dielectric properties, thiobarbituric acid index, and volatile amine changes. High correlations of these parameters with storage time and sensory assessment were observed. PRACTICAL APPLICATIONS The catch landings of bogue make this species very important in the Mediterranean fishery production. The effect of finfish farms makes individual fish samples of this species different in size and chemical content, thus changing the rate and in which their postmortem changes occur. The practical use of the article is a new developed and species adopted descriptive scheme for bogue, ready to use for scientific and industrial freshness assessment providing the information on fish quality and its remaining shelf life in ice, taking into account the environmental conditions such as catching ground.

Total flavonoid and total phenolic content were studied in acacia and multifloral honey for 12 months in 6-month intervals. DPPH (1,1-diphenyl-2-picrylhydrazyl) and FRAP (ferric reducing antioxidant power) methods were used to determine total antioxidant activity in honey samples during the same period of time. Samples were stored in transparent glass containers at room temperature, on shelves exposed to natural light during daytime and in the dark during nighttime. Two types of honey from four different regions in Varaždin county, Croatia, were investigated: monofloral – acacia (Robinia pseudoacacia L.) and multifloral. Of the total of 40 samples, there were 20 of each type of honey (5 from each region). The goal of this study is primarily to demonstrate the changes in the antioxidant activity of the two investigated types of honey during one year of storage, and not to make comparisons between them. According to the obtained data, the rate of decrease in the content of total flavonoids and phenolics was determined and changes in the antioxidant activity in honey samples were measured. After one year of storage, total phenolic content decreased by 91.8 % in acacia honey, and by 88.6 % in multifloral honey. Total flavonoid content also decreased in both types of honey, by 45.6 % in acacia honey and by 43.8 % in multifloral honey. During the same period, an increase from 12.20 to 16.73 mg/mL (i.e. by 37.1 %) was recorded in the IC50 values in multifloral honey, while in acacia honey this increase was from 44.64 to 407.01 mg/mL (i.e. by 811.7 %). Decrease in the antioxidant activity measured by FRAP method was also bigger in acacia honey than in multifloral honey (by 428.0 and 72.5 %, respectively), which corresponds well with the results obtained by DPPH method. Simple correlations were made to determine how each of the investigated parameters affects the others. The analysis of variance was used in order to determine the influence of the region, honey type and storage time on different parameters of antioxidant activity as well as on the total phenolic and total flavonoid content in honey samples., U ovom je radu određivan udjel ukupnih flavonoida i fenolnih spojeva u cvjetnom i bagremovom medu tijekom 12 mjeseci u intervalima od 6 mjeseci. Za određivanje antioksidacijske aktivnosti u uzorcima meda korištene su DPPH i FRAP metode. Uzorci su skladišteni na policama u prozirnim staklenim posudicama pri sobnoj temperaturi, izloženi prirodnom dnevnom svjetlu tijekom dana, te mraku tijekom noći. Ispitane su dvije vrste meda: monoflorni bagremov (Robinia pseudoacacia L.) i multiflorni cvjetni med, podrijetlom iz četiri različite regije Varaždinske županije u Hrvatskoj. Ukupni je broj istraživanih uzoraka bio 40, od čega po 20 od svake vrste meda (po pet uzoraka sa četiri lokacije). Svrha je ovog istraživanja bila (bez usporedbe) odrediti promjene u antioksidacijskoj aktivnosti dvije ispitane vrste meda tijekom jednogodišnjeg skladištenja. Određena je stopa smanjenja udjela ukupnih fenola i flavonoida, a praćene su i promjene antioksidacijske aktivnosti. Nakon jednogodišnjeg skladištenja, udjel se ukupnih fenola u medu bagrema smanjio za 91,8 %, a u cvjetnom medu za 88,6 %. Udjel se ukupnih flavonoida također smanjio u obje vrste meda, i to za 45,6 % u bagremovom i 43,8 % u cvjetnom medu. Tijekom istog vremenskog perioda zabilježeno je povećanje IC50 vrijednosti u cvjetnom medu sa 12,20 na 16,73 mg/mL (tj. za 37,1 %), dok su se te vrijednosti u medu bagrema povećale sa 44,64 na 407,01 mg/mL (tj. za 811,7 %). Smanjenje je antioksidacijske aktivnosti, određeno FRAP metodom, također bilo veće u bagremovom (za 428,0 %) od onog u cvjetnom medu (za 72,5 %), što potvrđuju i rezultati dobiveni DPPH analizom. Napravljene su jednostavne korelacije za određivanje utjecaja svakog od ispitivanih parametara. Analizom varijance ispitan je utjecaj lokacije, vrste meda i vremena skladištenja na antioksidacijsku aktivnost, te udjel ukupnih fenola i flavonoida u medu.

The lycopene content in pulp and peel of five fresh tomato cultivars, most common on Croatian market, was determined by spectrophotometry and the high-performance liquid chromatography (HPLC). Peels from the raw tomatoes contained more lycopene (expressed on a fresh basis) than the pulps: the ratio was 3.75±1.08 for spectrophotometric and 3.50±0.95 for HPLC measurements. Comparison of the results of lycopene content expressed on a dry weight basis revealed that the peel from raw tomato contains 1.74±0.36 times (spectrophotometry) more lycopene than the pulp as compared to a factor of 1.61±0.24 obtained by HPLC analysis. Fraction of the pulp in a whole tomato was found to vary between 89.9 and 95.2%, while that of tomato peel was between 4.9 and 10.1%. Nutritional habits in Croatia often include tomato-based food, all year around, prepared partlyof whole fresh tomatoes (including peel), partly of industrial tomato products (from which peel is often excluded). This study provides evidence that the peel of one of the most common varieties of tomatoes on Croatian market is richer in lycopene than the pulp and, moreover, that a diet including 100 g of raw tomatoes provides 1.35±0.29 mg lycopene from pulp as compared to 0.35±0.18 mg lycopene from tomato peel. In addition, results of this study will be useful in further attempts to quantify lycopene content of intact, whole tomatoes by means of the nondestructive, photoacoustic method.

The combined use of a high power light emitting diode (LED) and the compact photoacoustic (PA) detector offers the possibility for a rapid (no extraction needed), accurate (precision 1.5%) and inexpensive quantification of lycopene in different products derived from the thermally processed tomatoes. The concentration of lycopene in selected products ranges from a few mg to several tens mg per 100 g fresh weight. The HPLC was used as the well established reference method.

The trans-lycopene content of fresh tomato homogenates was assessed by means of the laser photoacoustic spectroscopy, the laser optothermal window, micro-Raman spectroscopy, and colorimetry ; none of these methods require the extraction from the product matrix prior to the analysis. The wet chemistry method (high performance liquid chromatography) was used as the absolute quantitative method. Analytical figures of merit for all methods were compared statistically ; best linear correlation was achieved for the chromaticity index a^* and chroma C^*.

The concept of electronic tongue or taste sensor has been developed rapidly in the last decade due to their large potential in food quality control. The electronic tongue is based on electrochemical sensors combined with multivariate data analysis. The aim of this study was to evaluate the discriminating ability of the electronic tongue for the recognition of different milk and yoghurt samples from different producers and various dairy products from one producer. The results were evaluated by multivariate data analysis - Principal components analysis. The electronic tongue α-ASTREE (Alpha M.O.S) has successfully distinguished five brands of milk purchased on the Croatian market, five brands of yoghurt also purchased on Croatian market and differentiated among various products from one dairy producer., Elektronski jezik ili senzor okusa prilično je dobro razvijen u posljednjih desetak godina, zahvaljujući njegovu velikom potencijalu u kontroli kvalitete prehrambenih proizvoda. Temeljen je na elektrokemijskim senzorima u kombinaciji s multivarijantnim analizama podataka. Cilj ovog rada bio je pomoću elektronskog jezika raspoznati različite uzorke mlijeka i jogurta različitih proizvođača te različite mliječne proizvode jednog proizvođača. Rezultati su izvedeni iz prikaza dobivenih statističkom metodom analize glavnih komponenata. Pomoću elektronskog jezika α-ASTREE (Alpha M.O.S) uspješno su prikazane razlike između pet uzoraka mlijeka različitih proizvođača kupljenih na hrvatskom tržištu, pet uzoraka jogurta različitih proizvođača kupljenih također na hrvatskom tržištu, te između različitih mliječnih proizvoda jednog proizvođača.

Lycopene, the pigment responsible for the characteristic deep red colour of ripe tomatoes and their products, plays an important role in human health. The stability of lycopene in tomato puree during storage was studied. Tomato puree was prepared from tomatoes grown in three different geographical regions of Croatia during two seasons. In spite of the interest in the role of lycopene in the prevention of chronic diseases, little is known about the lycopene content of the tomatoes and tomato products commonly consumed in Croatia, and the contribution of these products to the intake of lycopene. The lycopene content of tomatoes and different tomato products was determined. The lycopene content of tomato-based foods was provided to 3 young population groups of Croatia (approximately 1000 nursery children aged 2-6 years, 600 school children aged 6-14 years, and 700 university students aged 18-24 years) in the institutional food service (nursery, school, and university cafeterias), and the daily cafeteria meal intake of lycopene in these populations were estimated. Lycopene content in 24 samples of fresh tomatoes ranged from 1.82 to 11.19 mg per 100 g wet weight. In the 82 brands of different tomato products (tomato puree, ketchup, concentrated tomato paste, tomato juice, and whole canned tomatoes) from markets in Zagreb, Croatia, the values for lycopene content ranged from 3.80 to 52.20 mg per 100 g wet weight for individual samples and from 8.10 to 26.46 mg per 100 g wet weight for average content of various tomato products. The estimated daily cafeteria meal intake of lycopene (from tomatoes and tomato products) was 4.82 mg in nursery children, 4.11 mg in school children, and 3.35 mg in university students. These results have implications for the evaluation of the daily intake of lycopene in Croatia and raise important questions for establishing a recommendation for optimal daily lycopene intake.

Undesirable thermal processes or storage conditions lead to physical and chemical quality loss of every food. The objective of this study was to determine the total solid content, starch, reducing sugars, nitrates and nitrites in raw and thermal processed red and white potato samples purchased from different geographic origin in Croatia. The potatoes were processed with and without the skin, and cooking processes were carried out in classic way, in the pressure cooker and in the microwave oven. Standard methods of analysis for above-mentioned parameters were used. The results showed no significant influence (P < 0.05) of the geographic origin on investigated parameters in raw samples (except for nitrates), but there were significant differences (P < 0.05) in composition between the kinds of samples (red and white). Thus, samples of white potato had higher total solids, starch and reducing sugars content than red potato samples, while red potatoes had higher nitrites and nitrates content. Thermal treatment showed that the total solid content is higher in potatoes processed with skin then those processed without the skin. The starch content in both kinds of potatoes increased after thermal processes if potato was processed without skin. The content of reducing sugars was the highest in samples of raw potato. The nitrites and nitrates content were decreasing during thermal treatments. Thermal processing (classic way, under pressure or with microwaves) and the manner on which the potatoes were cooked (with or without skin) significantly influenced on all investigated parameters especially in red potatoes samples.

The present study was designed to provide information about (i) the profile of carotene pigments and (ii) trace quantities of lycopene and β-carotene left in tomato purees. The ultrasensitive method comprising HPLC and thermal lens spectrometric (TLS) detection enabled us to detect as low as 0.3 and 1.1 ng ml−1 lycopene and β-carotene in puree extracts, respectively. Total concentration of β-carotene and lycopene (varying from 3 to 170 ng g−1) in the examined tomato purees may serve as an indicator of the carotene-specific antioxidative capacity of these products. Although conventional spectrophotometry can be used to rapidly assess the quality of products derived from tomatoes, a highly sensitive and selective method such as HPLC-TLS is needed for reliable analyses of samples such as, for example, those subjected to inappropriate storage and/or handling.
