Последњих неколико деценија, наша перцепција о бактеријама и њиховим заједницама значајно се променила. У прошла времена преовладавало је мишљење да заједнице бактерија представљају популацију ћелија које делују индивидуално. Данас је добро документована чињеница да механизам међућелијске комуникације, познат као „quorum sensing“, има важну улогу у контролисању различитих целуларних процеса бактерија као што су биолуминисценција, вируленција, толеранција на дезинфицијенсе, спорулација, покретљивост, стварање биофилма и антимикробна резистенција. Разумевање система међућелијске комуникације даје могућност контроле раста непожељних бактерија у матриксу хране и развоја нове стратегије у обезбеђивању квалитета и безбедности хране.

Насупрот планктонским бактеријским ћелијама, раст и експресија гена код бактерија у биофилму су потпуно другачије, што се нарочито одражава на њихову отпорност на средства за чишћење и дезинфекцију. Једном формирани биофилм, на површинама и опреми које долазе у контакт са храном, тешко се уклања и може да представља перзистентан извор контаминације хране. Контаминација из биофилмова представља економски проблем у случају микроорганизама квара (Pseudomonas spp., Bacillus spp.), али и питање безбедности хране у случају када је биофилм формиран од стране патогених бактерија (Listeria monocytogenes). Спречавање формирања и уклањање биофилма подразумева различите физичке третмане, попут примене ултразвука, магнетних и електричних поља, али и примену хемијских једињења (хлор, пероксиди, квартернерна амонијумова једињења), као и различитих ензима, бактериофага, бактериоцина и етарских уља. С обзиром да и даље не постоји универзални приступ како за спречавање формирања биофилмова, али и за уклањање већ постојећих, овај проблем и даље представља изазов и покреће нова истраживања о санитационим процедурама у индустрији хране. Contrary to planktonic bacterial cells, the growth and genes expression of bacteria in the biofilm are completely different, which is reflected especially in their resistance to cleaning and disinfecting agents. Once formed, biofilm, on surfaces and equipment that come into contact with food, is difficult to remove and can be a persistent source of food contamination. Contamination from biofilms is an economic problem in the case of spoilage microorganisms (Pseudomonas spp., Bacillus spp.), but also a food safety issue in the case when the biofilm is formed by pathogenic bacteria (Listeria monocytogenes). Strategies to prevent the formation and removal of biofilm can be various physical sanitation treatments, such as ultrasound, magnetic and electric fields, chemical compounds (chlorine, peroxides, quaternary ammonium compounds), but also various enzymes, bacteriophages, bacteriocins and essential oils. Since there is still no universal method, both to prevent the formation of biofilms, but also to remove existing, this problem remains a challenge and initiates new researches with sanitation procedures in the food industry. Food safety criteria for Listeria monocytogenes in the ready-to-eat food category have been applied since 2006. In the territory of the European Union in 2019, there were 2 621 confirmed cases of invasive listeriosis in humans, with a high mortality rate (17.6%). A broader understanding of the ecology of Listeria monocytogenes is crucial for the successful control of this pathogen in the food chain continuum. The paper presents new knowledge on reservoirs/sources of contamination, distribution, dynamics and transmission routes, survival and persistence of Listeria monocytogenes, both in natural habitat and in farm or processing environment.

U današnje vreme, više nego ikad, naglašava se međuzavisnost ljudi, životinja i njihovog okruženja. Na osnovu onoga što veterinar- ska profesija jeste u svojoj osnovi, „Jedno zdravlje“ nudi veterinarima jedinstvenu priliku da zauzmu ključnu ulogu u ovom specifičnom pri- stupu sagledavanja sveukupnosti zdravlja. Pitanje koje se neminovno postavlja je – da li su i u kojoj meri veterinari spremni da odgovore na postavljeni izazov?

Zbog malog ekonomskog značaja, magarice spadaju u tzv. "mlečne životinje od minornog značaja". Interesovanje nauke je ovde pre svega usmereno na hipoalergena, kao i potencijalno funkcionalna svojstva mleka magarice. Nizak sadržaj proteina i masti i visok sadržaj laktoze, kao i razlike u proteinskim frakcijama u odnosu na kravlje mleko, uslovljavaju specifične tehnološke karakteristike mleka magarica. Mleko magarica se može konzervisati primenom visokih temperatura, liofilizacijom i zamrzavanjem. Procesom liofilizacije, njegov sastav se najmanje menja u odnosu na sirovo mleko. Glavna mana u senzornom kvalitetu fermentisanih proizvoda od mleka magarice je nedovoljna viskoznost, što se može poboljšati dodavanjem Na-kazeinata, pektina i treonina. Viskoznost fermentisanih proizvoda je moguće poboljšati i mešanjem sa suncokretovim uljem, kravljim ili ovčijim mlekom. Primenom tradicionalnih postupaka, od mleka magarica je mogiće dobiti samo kiselo-koagulišuće sireve, dok je proizvodnja slatko-koagulišućih sireva teško izvodljiva. Primenom specijalnih vrsta sirila, obezbeđivanjem optimalnih uslova za koagulaciju, dodavanjem mleka drugih vrsta životinja ili transglutaminaze, moguće je dobiti i slatko-koagulišuće sireve. Bez obzira na pokušaje modifikacije tehnoloških procesa, dobijeni koagulum kod slatko-koagulišućih sireva je uvek slab. Glavni problem u proizvodnji sireva od mleka magarica je visoka cena, što se može prevazići samo povećanjem produktivnosti životinja. Due to its low economic significance, donkeys are regarded as minor dairy species. Scientific interest in donkey milk is focused on its hypoallergenic properties and potential functional characteristics. Low protein and fat content, and high lactose content in donkey milk, and different protein profile from cow milk, are responsible for its unique technological properties. Donkey milk can be preserved by high temperatures, freezing, and lyophilization. The composition is least changed by applying lyophilization. The main sensory defect in fermented products made from donkey milk is low viscosity. Viscosity can be improved by adding Na-caseinate, pectin, and threonine. Mixing donkey milk with sunflower oil, or adding cow or ewe milk can improve the final product's viscosity. Traditionally, it is only possible to produce acid-coagulated cheeses from donkey milk. By using special types of rennet, providing optimal conditions for coagulation, or adding milk from other species, it is also possible to produce enymatically cheeses. Regardless of modification of technological process, coagulum is always weak. The main limit for the mass production of donkey milk cheeses remains its high cost, which can be overcome by increasing milk yield in dairy animals. Zbornik predavanja

The aim of this study was to evaluate the spoilage patterns of pasteurized milk microbiota. Additionally, the microbiological quality of raw and pasteurized milk regarding total aerobic and psychrotrophic counts was assessed. Samples were collected from two dairies at the milk reception point and different sites along pasteurized milk production line. Total aerobic and psychrotrophic counts in raw milk samples from Dairy 1 and 2 were at similar levels (approximately 6-7 log CFU/ml). The pasteurization step significantly reduced the total mesophilic bacteria counts. Samples from both dairies did not contain a detectable level of culturable psychrotrophic bacteria before the filling. However, psychrotrophic count in milk packages from Dairy 1 increased from 0.66±0.26 log CFU/ml to 3.76±0.19 at the end of the shelf-life. Forty-eight isolates with the different colony morphology selected from plate-count agar plates were screened for spoilage potential under laboratory conditions. The most prominent enzymatic trait (64.58% isolates) was proteolytic activity. Out of 17 enzymatically active isolates, 10 isolates were successfully identified as following: Bacillus pumilus (n=3), Bacillus licheniformis (n=2), Leifsonia aquatica (n=2), Pseudomonas oryzihabitans (n=2) and Bacillus megaterium (n=1). More stringent hygiene is required at each step of the dairy production chain to achieve a high microbiological quality of raw and pasteurized milk and to control spoilage microbiota. Antimicrobial resistance is now a major global public health issue often referred as a „silent pandemic“. Food chain is, undoubtedly, considered a route of transmission for the resistant bacteria and/or resistant genes. However, the objective risk assessment evaluating foodborne antimicrobial resistance is still missing as many data gaps relating to reservoir, sources and transmission routes along the food chain are identified. This review critically assess and summarizes the information available in the literature on the emergence and spread of antimicrobial resistance throughout the food chain. Book of abstracts

Критеријуми безбедности хране за Listeria monocytogenes у категорији хране спремне за конзумирање примењују се још од 2006. године. на подручју Европске Уније у 2019. години бележи се 2.621 потврђен случај инвазивне листериозе људи уз високу стопу морталитета (17,6%). Шире разумевање екологије Listeria monocytogenes је од пресудне важности за успешну контролу овог узрочника у континууму ланца хране. У раду су представљена нова сазнања о резервоарима/изворима контаминације, дистрибуцији, динамици и путевима трансмисије, преживљавању и перзистенцији Listeria monocytogenes, како у природном хабитату, тако и у фармском, односно процесном окружењу.

Индикатор организми се користе дуже од једног века у процени микробиолошког статуса воде и хране. Функционално, индикатор организми се могу сагледати као индикатори безбедности и квалитета. Иако се питање безбедности и квалитета хране, у највећем броју случајева, преклапа, генерално није случај да се одабрани индикатор организам може користити у обе сврхе. Од примарне је важности пажљив одабир индикатор организма, али и тумачење резултата у одговарајућем контексту, узимајући у обзир микробну екологију, физичко-хемијске карактеристике матрикса хране, екстринзичне факторе, карактеристике технолошког процеса и услове складиштења. Далеко потпунија слика о изворима и путевима контаминације хране, преживљавању индикатора у специфичном матриксу хране, али и њиховом опстанку у процесном окружењу, као и спознаја о специфичној микробиоти, која у датим условима производње, компромитује микробиолошку слику готовог производа, пружа нам могућност преиспитивања улоге постојећих индикатор организама, пре свега колиформне групе бактерија, али и дефинисање нових. The indicator organisms have been used for more than a century in assessing the microbiological status of water and food. Functionally, they may be viewed as safety and quality indicators. Although the issues of food safety and quality, in most cases, overlap, it is generally not the case that the selected indicator organism can be used for both purposes. It is of primary importance to carefully select the indicator organism, but also to interpret the results in an appropriate context, taking into account microbial ecology, physico-chemical characteristics of food matrix, extrinsic factors, technological process characteristics and storage conditions. Far more complete picture of the sources and pathways of food contamination, survival of indicators in a specific food matrix, but also their survival in the process environment, and knowledge about specific microbiota, which under the given production conditions, compromises microbiological status of finished product, provides an opportunity to reconsider the role of the existing indicator organisms, primarily coliform groups of bacteria, but also to define the new ones. Туберкулоза представља водећи узрок смрти од инфективних обољења у свету, са 1,7 милиона смртних случајева у 2017.години. У периоду 2013-2017. забележен је пораст броја случајева туберкулозе људи, у којима је као узрочник идентификован Mycobacterium bovis, најчешћи узрочник туберкулозе преживара. Сматра се да је стваран број људи оболелих од туберкулозе узроковане са М. bovis подцењен, нарочито у подручјима где је туберкулоза говеда ендемично обољење или се конзумирају сирово млеко и производи од млека и када постоји директан контакт са оболелим животињама. Зоонотска туберкулоза изазвана са M. bovis представља превасходно обољење преносиво храном, мада најновији извештаји наглашавају и могућност аерогене секундарне трансмисије M. bovis са човека на човека. Ћелије M. bovis се у случају обољевања млечних животиња излучују путем млека у високом броју, при чему постоји могућност контаминације велике количине збирног млека у лактофризима или цистернама. Конзумација сировог млека и производа направљених од сировог млека, историјски гледано, представља главни пут преноса туберкулозе са животиња на људе. Увођењем пастеризације млека, али и спровођењем програма мера здравствене заштите животиња, овај вид обољевања од туберкулозе је у развијеним земљама сведен на занемарљиву меру. Млеко оболелих животиња може да уђе у ланац хране, у случајевима када оболеле животиње на дају позитивну реакцију туберкулинизације. У земљама Европе у којима је продаја сировог млека дозвољена, млеко мора да потиче од животиња из стада слободних од туберкулозе, а на декларацији мора да буде јасно наглашен здравствени ризик повезан са конзумацијом сировог млека. Све већа потражња за сиревима произведеним од сировог млека, али и скорији случајеви туберкулозе људи изазвани конзумацијом сирева од сировог млека, питање зоонотске туберкулозе чине и данас актуелним. У овом прегледном раду биће размотрена епидемиологија зоонотске туберкулозе, процена ризика од обољевања при конзумацији сировог млека и производа направљених од сировог млека, као и стратегије за спречавање ширења зоонотске туберкулозе као обољења преносивог храном Tuberculosis is the leading cause of the death from a single infectious agent in the World. It is estimated that 1.7 million people died of tuberculosis in 2017. In the period 2013-2017. an increase in tuberculosis caused by Mycobacterium bovis, most frequent causative agent of ruminant tuberculosis, was reported. However, it is estimated that the true number of human tuberculosis caused by M. bovis is underestimated, especially in areas with endemic bovine tuberculosis, where direct contact between humans and animals exists, or raw milk and raw milk products are frequently consumed. Zoonotic tuberculosis is mostly foodborne disease, although recent reports highlight the possibility of aerogenic secondary transmission of M.bovis between humans. Lactating animals with tuberculosis can excrete high numbers of M. bovis cells through milk. Consequently milk from these animals can contaminate large quantities of raw milk in cooling tanks and cisterns. Historically, consumption of raw milk and raw milk products represents the main transmission route between animal and human population. However, introduction of control measures and pasteurization has reduced cases of foodborne tuberculosis to a minimum in developed countries. Milk from animals with tuberculosis can enter the food chain, in cases when animals remain undetected by the skin test. In European countries, if selling of raw milk is permitted by national legislation, food label must include statement about health risks implicated with the raw milk consumption. Increasing demand for the artisan raw milk cheeses, as well as recent cases of tuberculosis caused by raw milk cheese consumption, also make zoonotic tuberculosis a contemporary food safety issue. In this review, zoonotic tuberculosis epidemiology, risk assessment correlated with the raw milk and raw milk products consumption, as well as strategies for zoonotic tuberculosis prevention as a foodborne disease will be discussed. Leuconostoc spp. are widely distributed in dairy environments, mostly as adjunct cultures and non-starter lactic acid bacteria. In order to gain Qualified Presumption of Safety status, bacteria must not carry transferable resistance to antibiotics. Although members of lactic acid bacteria are recognized as safe, constant monitoring of antibiotic resistance is recommended by European Food Safety Authority. The aim of this study was to evaluate antibiotic resistance in Leuconostoc isolates of cheese origin. This study was conducted on 20 Leuconostoc isolates belonging to two species: Leuconostoc mesenteroides (n=18) and Leuconostoc pseudomesenteroides (n=2). All investigated isolates originated from Serbian traditional raw milk cheeses – Zlatar, Sjenica and Homolje cheese. Minimum inhibitory concentrations were determined by broth microdilution method for 8 antibiotics and results were interpreted according to European Food Safety Authority guidance. Most prevalent resistance phenotype was resistance to kanamycin (n=15), following with resistance to chloramphenicol (n=6), and streptomycin (n=5). One Ln. mesenteroides isolate showed multiresistance, with resistance to 7 out of 8 investigated antibiotics. Genetic basis of tetracycline resistance (tet(A), tet(B), tet(C), tet(K), tet(L), tet(M), tet(O) and tet(W) genes) was analyzed by PCR method in all isolates. None of the analyzed genes was found in any of the isolates. According to the results of this study Leuconostoc isolates are not a reservoir of tetracycline resistance. However, determining genetic basis of antibiotic resistance is necessary for the complete risk assessment regarding transferable antibiotic resistance in the isolates. Proceedings

Lanac hrane predstavlja jedan od mogućih puteva transmisije bakterija rezistentnih na antibiotike između populacija životinja i ljudi. Komensalne bakterije, poreklom od životinja, predstavljaju deo mikrobiote hrane životinjskog porekla, i često se prepoznaju kao „rezervoari“ gena za rezistenciju na antibiotike. Rezistencija na tetraciklin kod komensalnih bakterija je dobro dokumentovana i s obzirom da je prenosive prirode, koristi se kao model za praćenje ekologije rezistencije na antibiotike. Homoljski, zlatarski i sjenički sir su na nacionalnom nivou zaštićeni oznakom geografskog porekla. Proizvode se na tradicionalan način, od sirovog mleka, te bakterije mlečne kiseline, poreklom iz sirovine i/ili procesnog okruženja čine značajan deo mikrobiote tradicionalnih sireva Srbije. U naučnoj literaturi postoje brojni podaci o tome da bakterije mlečne kiseline mogu biti nosioci gena za rezistenciju na antibiotike. Ciljevi ove doktorske disertacije bili su: karakterizacija biodiverziteta tradicionalnih sireva Srbije, utvrđivanje fenotipa i prevalencije rezistencije na antibiotike i genetske baze rezistencije na tetraciklin kod izolata bakterija mlečne kiseline poreklom iz tradicionalnih sireva, kao i mogućnosti prenosa tet gena u uslovima in vitro. Ukupno 48 uzoraka tradicionalnih sireva (13 uzoraka homoljskog sira, 20 zlatarskog i 15 uzoraka sjeničkog sira), zasejano je na MRS-S agar radi utvrđivanja broja BMK i na MRS-S agar sa dodatkom tetraciklina u dvostrukorastućim koncentracijama (1-256 μg/ml), kako bi se utvrdila zastupljenost populacije BMK rezistentne na tetraciklin. Prosečan broj BMK u uzorcima homoljskog sira iznosio je 7,65±1,09 log CFU/g, u uzorcima zlatarskog sira 7,74±0,6 log CFU/g i u uzorcima sjeničkog sira 7,47±0,71 log CFU/g. Total of 48 samples traditional Serbian cheeses (13 samples of Homolj cheese, 20 samples of Zlatar cheese and 15 samples of Sjenica cheese) were analyzed. All samples were plated on MRS-S agar plates in order to determine LAB count and on MRS-S agar plates with added tetracycline in doubling concentrations (1-256 μg/ml), in order to determine tetracycline resistant LAB subpopulation count. Fermentisani proizvodi od mleka zauzimaju značajno mesto na svetskom tržištu i uživaju veliku popularnost kod potrošača zahvaljujući dobrim senzornim svojstvima, nutritivnoj vrednosti, ali i funkcionalnom karakteru. Ova grupa proizvoda se stavlja u promet kao: jogurt, kiselo mleko, kefir, fermentisani proizvodi od mleka sa probiotskim bakterijama, ostali fermentisani proizvodi od mleka i fermentisani mlečni napici. Kvalitet fermentisanih proizvoda od mleka je uslovljen velikim brojem faktora, a kao najvažniji se ističu: mikrobiološki status i sastav sirovog mleka, primena dodataka za poboljšavanje teksture proizvoda, uslovi homogenizacije i pasterizacije, tip startera, uslovi fermentacije, kao i način punjenja, odnosno uslovi čuvanja gotovih proizvoda. U praksi postoje brojni primeri nepravilno istaknutih deklaracija, pre svega prilikom označavanja fermentisanih proizvoda od mleka sa probiotskim bakterijama, gde se načelo poštenog informisanja potrošača svesno ne poštuje. U okviru radionice, izvršiće se senzorna analiza fermentisanih proizvoda od mleka. Ocenjivanje će se raditi prema standardu ISO 22935- 2:2012 Milk and milk products -Sensory analysis - Part 2 - Recommended methods for sensory evaluation, kao i sprovođenjem Rang testa (razlike u prihvatljivosti), odnosno Parnog testa (prepoznavanje zadate razlike). Posebna pažnja posvetiće se tumačenju ispravnosti deklaracija istaknutih na proizvodima zastupljenim u prometu. Fermented milk products take an important part of the World market as some of the most consumed food products. They also have a remarkable popularity with consumers due to their nutritional valueand functional and sensory properties. Fermented milk products are placed in the Serbian market labeled as yoghurt, soured milk, kefir, fermented milk products with probiotic cultures, fermented milk beverages and unclassified (other) fermented milk products. Number of factors affect fermented milk products’ quality, with most important being microbiological quality and raw milk constituents, pasteurization and homogenization conditions, type of used starter cultures,conditions in which fermentation is conducted, addition of components that enhance or change texture, packaging and storage conditions. Although misleading information placed on fermented milk products’ labels are frequent in general, they can be most commonly seen on the fermented milk products with probiotic cultures, where manufacturers intentionally misinform consumers about the product’s properties. The workshop is designed to provide participants with the fundamental tools to define the sensory quality of selected fermented milk products (yoghurt, fermented milk products with probiotic bacteria) offering basic sensory training to describe and record the sensory characteristics of fermented milks. Evaluation will be performed according to the ISO standard 22935-2:2012(IDF-99-2:2009) “Milk and milk products - Sensory analysis - Part 2- Recommended methods for sensory evaluation”, and by applying the “Ranking” and “Paired-Comparison” test. Млеко је намирница која садржи хранљиве састојке потребне за раст и развој и представља извор липида, протеина, аминокиселина, витамина и минерала. Садржи имуноглобулине, хормоне, факторе раста, цитокине, нуклеотиде, полиамине, ензиме и биоактивне пептиде. Садржај олеинске киселине, коњуговане линолеинске киселине, омега-3 масне киселине и масних киселина кратких и средњих ланаца може промовисати позитивне ефекте млека на здравље. Циљ овог рада био сакупљање, анализа и интерпретација података о количини производње крављег, овчијег и козијег млека на подручју Србије и Републике Српске у периоду 2011-2017 године. Подаци су преузети из архива Републичког завода за статистику Републике Србије и Републичког завода за статистику Републике Српске. Након тога подаци су статистички обрађени. Просечна годишња производња крављег млека у Србији у периоду 2011-2017 била је 1483,00±22,96 (96,99%), овчијег 15,86±3,53 (1,03%) и козијег 35,43±4,79 (2,31%) милиона литара. У истом периоду просечна производња крављег млека у Републици Српској била је 321,89±12,99 (97,91%), овчијег 4,53±0,78 (1,38%) и козијег 2,33±0,18 (0,71%) милиона литара. Линија тренда која се добија као резултат статистичке обраде података о количини произведеног крављег, овчијег и козијег млека у периоду 2011-2017 године показује континуиран раст производње млека у Србији и континуиран пад производње млека у Републици Српској. Иако број музних крава, оваца и коза на подручју Србије опада, производња млека расте због тенденције фармера ка примени савремене технологије у исхрани и узгоју животиња, чиме се повећава млечност грла. Разлог смањења количине произведеног млека у Републици Српској треба тражити у чињеници да је све мањи број великих фарми са преко 100 музних грла, а производња се концентрише на малим сточарским газдинствима. Последица овакве праксе може бити смањена млечност музних грла, губљење континуитета у производњи, али и изостанак повећањa производних капацитета. За рурално подручје Србије и Републике Српске производња крављег, овчијег и козијег млека представља значајну развојну шансу, али у процесу европских интеграција долази до пада броја мањих фарми млечних грла као и мањих млекара и очекује се укрупњавање производних капацитета у овом сектору што показују искуства земаља у окружењу. Овакав тренд је заступљен у Србији и сразмерно томе види се пораст производње млека у протеклом периоду. Milk contains nutrients needed for the growth and development and is the rich source of lipids, proteins, amino acids, vitamins and minerals. Milk also contains immunoglobulins, hormones, growth factors, cytokines, nucleotides, polyamines, enzymes and bioactive peptides. Oleic acid, conjugated linoleic acid, omega-3 fatty acids and short and medium chain fatty acids from milk can promote thepositivehealth effects. The aim of this study was to gather, analyze and interpret the data regarding the cow, sheep and goat milk production in Serbia and Republika Srpska in the period 2011-2017. The data were collected from the archives of the Statistical Office of the Republic of Serbia and Institute of Statistics of the Republic of Srpska.The average annual production of cow milk in Serbia in the period 2011-2017 was 1483,00 ± 22,96 (96,99%) million liters, of sheep milk 15,86 ± 3,53 (1,03%) million liters and of goat milk 35,43 ± 4 ,79 (2,31%) million liters. Although the number of dairy cows, sheep and goats in Serbia is decreasing, milk production is growing due to the farmers' tendency to apply modern technologies in feeding and breeding animals. The reason for the milk production decrease in the Republic of Srpska is the fact that the number of large farms with more than 100 dairy animals is reduced, and the production is concentrated around small dairy farms. The consequences of such practice may be reduced quantity of the milk, loss of continuity in production and the stagnation of production capacity. The production of cow, sheep and goat milk may present opportunity for the development of rural areas in Serbia and the Republic of Srpska.However, along the process of European integration there is a decline in the number of smaller dairy farms and small dairies, and the production capacities in this sector are expected to grow. The aim of this study was to evaluate the effectiveness of different packaging conditions (vacuum and modified atmosphere) on the behavior of total Enterobacteriaceae in minced meat. Mixed pork and beef, in ratio 50:50%, was packaged in vacuum, modified atmosphere with 20% O-2/50% CO2/30% N-2 and modified atmosphere with 20% O-2/30% CO2/ 50% N-2, refrigerated at 3C1C and examined on days zero, 3, 6, 9 and 12 of storage. Cheese is one of the oldest food products with preservation based on fermentation, the most common and perhaps the oldest biotechnology. It relies on the biochemical action of lactic acid bacteria (LAB) and is regarded as health-friendly by consumers. Some autochthonous LAB, worldwide and in Serbia, have been characterized as effective producers of antimicrobial compounds such as low-molecular-weight metabolites, hydrogen peroxide, bacteriocins, and bacteriocin-like molecules, and so have demonstrated great potential as food preservatives . The raw milk cheese microbiota, as a good source of novel bacteriocinogenic LAB with high diversity of microbial activity, is key in controlling the microbial load in cheese and achieving diverse sensory characteristics.

Mastitisi koza su u osnovi slični mastitisima, koji se javljaju kod ovaca i krava. Mogu da se jave kao akutni i hronični kataralni galaktoforitiisi i teški akutni oblici (mastitis acuta gravis). Po obliku mogu biti klinički i subklinički. Izvor infekcije mogu da budu obolelo vime i okolina. Uzročnici mastitisa dospevaju u vime galaktogeno, limfogeno i hematogeno. Kao uzročnici mastitisa koza navode se: koagulaza-negativne stafilokoke, Staphylococcus aureus, Streptococcus agalactiae, Str.uberis, Str.dysgalactiae, Str. caprae, Mycoplasma capricolum, koliformni mikroorganizmi (E.coli), Pseudomonas aeriginosa i Clostridium spp. Prema podacima iz literature kao najčešći uzročnici subkliničkih mastitisa kod koza navode se koagulaza negativne stafilokoke. U dijagnostici problem može da predstavlja razlikovanje stafilokoka, koje su kod sojeva koagulaza negativne i mikrokoka. Mikroorganizmi iz roda Micrococcus su gram-pozitivne koke u tetradama, katalaza pozitivne, oksidaza pozitivne i koagulaza negativne. Od stafilokoka se razlikuju oksido-redukcionim testom. Mikorokoke su aerobi razlažu šećere iz podloge oksidativno, dok su stafilokoke aerobi i fakultativni anaerobi pa šećere razlažu oksidativno i fermentativno. Materijal je predstavljalo mleko aseptično uzeto iz obe polovine vimena koze, koja se ručno muze. Zasejavanje uzoraka je izvršeno na krvni agar, koji je inkubisan pri 37°C 24-48h. Ispitivanjem makromorfoloških, mikromorfoloških i biohemijskih osobina izolat je identifikovan kao Micrococcus spp. Dijagnoza je postavljena na osnovu bakteriološkog pregleda. Rezultati antibiograma su pokazali da je izolat osetljiv na Augmentin, Orbenin, Gentamicin, Ciprofloxacin,Tetracicline. Pravilnom higijenom pri muži, načinom držanja i uzgojem koza, mogu izbeći uzroci koji dovode do pojave mastitisa, a posledično tome i ekonomske štete. Mastitis in goats are basically similar to mastitis, which occurs in sheep and cows. They may appear as acute and chronic catarrhal galactophoritis and severe acute forms (Mastitis acuta gravis). According to the form can be clinical and subclinical. Source of infection may be infected udder and the environment. The pathogens pass to the mammary gland via galactogenous, lymphatogenous and hematogenous way. As a causes of mastitis in goat are cited: coagulase-negative staphylococci (including Staphylococcus aureus), Streptococcus agalactiae, Str.uberis, Str.dysgalactiae, Str. caprae, Mycoplasma capricolum, coliform microorganisms (E. coli), Pseudomonas and Clostridium spp. The difficulties in diagnosis may represent differentiation of staphylococci, whose as caprine isolates are coagulase negative from micrococci. The microorganisms of the genus Micrococcus are gram-positive cocci in tetrads, catalase-positive, oxidase-positive and coagulase-negative. From staphylococci differ by oxidation-reduction test. Mikrococci are strict aeorobes, fermenting oxidatively sugars from the substrate, while staphylococci are aerobes and facultative anaerobes, sugars ferment oxidatively and fermentatively. The material were samples aseptically taken from both halves of the goat udder, hand-milking.. Samples were plated on blood agar plates incubated at 37°C 24-48h. By determination of macromorphologicall, micromorphological and biochemical characteristics isolate were identified as Micrococcus spp. The diagnosis was based on bacteriological examination. The results of antibiogram showed that isolate sensitive Augmentin, Orbenin, Gentamicin, Ciprofloxacin,Tetracicline. Proper hygiene in milking, keeping and breeding goats, can avoid the causes that lead to mastitis, and consequently to economic costs. Zbornik predavanja
