This study aimed to compare the fiber-type composition and fiber cross-sectional area (CSA) of male and female springbok () (LTL) and (BF) muscles. Frozen samples from 4 male and 3 female springbok were fiber-typed immunohistochemically using the primary antibodies A4.74, BA-D5 and BF-35. The CSA of the fibers was determined using the software Image J. Type IIX fibers accounted for 64 to 77% of the fibers in all samples, with type IIA (12.7 to 19.1%), type IIAX (6.4 to 9.3%) and type I (2.4 to 8.5%) making smaller ( < 0.001) contributions. Female springboks’ muscles contained more type IIX fibers than males’ ( = 0.004) and the BF contained more type I fibers and fewer type IIA and IIAX fibers than the LTL ( < 0.001). CSA values did not differ between sexes or muscles; however, they increased with apparent fiber glycolytic capacity (I < IIA < IIAX < IIX; < 0.001). The glycolytic nature suggested by the fiber-type composition of springbok muscle found in this study is in contrast with previous reports on the physicochemical nature of springbok meat. This casts doubt on the application of standard associations between fiber-type and meat quality to this species. However, it may provide some explanation for the low shear force values found for springbok meat in previous studies.

Zoonoses, which account for approximately 75% of emerging human infectious diseases worldwide, pose a re-emerging threat to public health. With an ever-increasing interrelationship between humans, livestock and wildlife species, the threat to human health will rise to unprecedented levels. Wildlife species contribute to the majority of emerging diseases; therefore, there is an urgent need to define control systems of zoonoses of wildlife origin but very little information exists. In this review, we examine prevalent zoonotic infections reported in Namibia between 1990 and 2009 and assess their potential impact on the growing wildlife industry. A wide spectrum of zoonotic diseases was confirmed in both livestock and wildlife species, with rabies and anthrax cases being over-represented and also showing the widest species distribution. Whilst vaccination and ante-mortem inspection against these diseases may curb infected livestock species from entering the human food chain, such practices are difficult to implement in free-ranging wildlife species. In this context, there is a need to improve existing control measures and/or develop novel and better interventional strategies to reduce the threat of this re-emerging global problem. This review provides the basis for initiating a multidisciplinary evidence-based approach to control zoonoses in countries with thriving wildlife and game farming.

Background Appendicitis is the most common general surgical emergency worldwide, but its diagnosis remains challenging. The aim of this study was to determine whether existing risk prediction models can reliably identify patients presenting to hospital in the UK with acute right iliac fossa (RIF) pain who are at low risk of appendicitis. Methods A systematic search was completed to identify all existing appendicitis risk prediction models. Models were validated using UK data from an international prospective cohort study that captured consecutive patients aged 16–45 years presenting to hospital with acute RIF in March to June 2017. The main outcome was best achievable model specificity (proportion of patients who did not have appendicitis correctly classified as low risk) whilst maintaining a failure rate below 5 per cent (proportion of patients identified as low risk who actually had appendicitis). Results Some 5345 patients across 154 UK hospitals were identified, of which two‐thirds (3613 of 5345, 67·6 per cent) were women. Women were more than twice as likely to undergo surgery with removal of a histologically normal appendix (272 of 964, 28·2 per cent) than men (120 of 993, 12·1 per cent) (relative risk 2·33, 95 per cent c.i. 1·92 to 2·84; P, Women in the UK had a disproportionate risk of admission without surgical intervention and had high rates of normal appendicectomy. Risk prediction models to support shared decision‐making were identified by identifying UK adults at low risk of appendicitis. An online calculator is available (http://appy-risk.org). This study set out to characterize the farming and management practices of smallholder pig production systems in the Western Cape, South Africa. Data was gathered in three municipalities: Khayelitsha (27 farmers), Mamre (26 farmers) and Malmesbury (22 farmers) with the use of a structured questionnaire through both face-to-face and telephonic interviews. The study revealed that smallholder pig farmers in the Western Cape owned on average 37.4 ± 50.5 pigs. Majority of farmers (61%) made use of tattoo markings to identify their pigs, 6% made use of ear tags and 4% clipped the ears of their pigs. More than 25% of farmers did not use any method of identification to mark their pigs. More than half of the respondents (51%) do not have formal recordkeeping systems in place. Livestock theft was found to be a major problem amongst farmers. No differences were found amongst the three study areas and the type of housing system used (P > 0.05). The most popular materials pens were constructed of across the three areas were wood (40%), corrugated iron (16%) or a combination of the two (32%); other materials used were cement blocks (5%), polystyrene (1%) or plastic (1%). Pig farmers kept 43% Large White, 43 % crossbred and 14% Landrace across the three districts. Commercial feed was used by 61% of Mamre farmers whereas Khayelitsha farmers fed an equal amount of by-products (44%) and mixed (44%) feed to their pigs, whereas Malmesbury fed 44% mixed, 33% commercial and 24% by-products obtained from factories to their pigs. Piglet mortality due to the sow lying on her piglets was experienced by 47% of farmers interviewed, whilst 29% had experienced piglet mortalities due to the cold. Perturbingly, 76% of farmers did not send dead pigs for a post-mortem, stating that they could not rely on veterinarians or afford their services. Smallholder pig farmers in Malmesbury (68%) and Khayelitsha (70%) sold their pigs to the informal market, indicating that keeping pigs provided a source of revenue. Mamre marketed 88% of their pigs as weaners, Khayelitsha marketed 73% of their pigs as growers, whereas Malmesbury kept 32% of their pigs as breeding stock. Khayelitsha and Malmesbury marketed their growers at 63.3 ± 41.2 kg and 51.5 ± 30.2 kg, respectively, to the informal market. The study highlights the farming practices of smallholder pig farmers in three districts in the Western Cape. There a few differences in the practices of these farmers, but overall, there are similar limitations that hinder them from improved production, such as limited recordkeeping, theft, lack of infrastructure and finances for post-mortem examination. Smallholder pig farmers in the Western Cape are still mainly selling to the informal market. This informal market is not fully characterized yet in the Western Cape, and more studies are needed to further determine and investigate the benefits of only selling to the informal market.

With on-going changes in land use practices from conventional livestock farming to commercial, wildlife-based activities, the interface or interaction between livestock and wildlife is increasing. As part of the wildlife-based activities of ecotourism, breeding and hunting, game farmers are also exploring the utilisation of meat from hunted or harvested game. The expanding interface or increased interaction between livestock and wildlife increases the risk of disease incidence and the emergence of new diseases or the re-emergence of previously diagnosed diseases. The risk is not only related to domestic and wild animal health, but also to the occupational hazards that it poses to animal handlers and the consumers of game meat. This review endeavours to highlight the role that game plays in the spreading of zoonotic diseases to other animals and humans. Examples of zoonotic diseases that have occurred in wild animals in the past, their relevance and risk have been summarised and should function as a quick reference guide for wildlife veterinarians, ecologists, farmers, hunters, slaughter staff, processors and public health professionals.

Objective To evaluate the immobilization quality and cardiopulmonary effects of etorphine alone compared with etorphine–azaperone in blesbok (Damaliscus pygargus phillipsi). Study design Blinded, randomized, crossover design. Animals A total of 12 boma-habituated female blesbok weighing [mean ± standard deviation (SD)] 57.5 ± 2.5 kg. Methods Each animal was administered etorphine (0.09 mg kg–1) or etorphine–azaperone (0.09 mg kg–1; 0.35 mg kg–1) intramuscularly with 1-week intertreatment washout period. Time to first sign of altered state of consciousness and immobilization time were recorded. Physiological variables were recorded, arterial blood samples were taken during a 40-minute immobilization period, and naltrexone (mean ± SD: 1.83 ± 0.06 mg kg–1) was intravenously administered. Recovery times were documented, and induction, immobilization and recovery were subjectively scored. Statistical analyses were performed; p Results No difference was observed in time to first sign, immobilization time and recovery times between treatments. Time to head up was longer with etorphine–azaperone (0.5 ± 0.2 versus 0.4 ± 0.2 minutes; p = 0.015). Etorphine caused higher arterial blood pressures (mean: 131 ± 17 versus 110 ± 11 mmHg, p Conclusions and clinical relevance Both treatments provided satisfactory immobilization of blesbok; however, in addition to a deeper level of immobilization, etorphine–azaperone caused greater ventilatory impairment. Oxygen supplementation is recommended with both treatments.

- Abstract
BACKGROUND: In the REMoxTB study of 4-month treatment-shortening regimens containing moxifloxacin compared to the standard 6-month regimen for tuberculosis, the proportion of unfavourable outcomes for women was similar in all study arms, but men had more frequent unfavourable outcomes (bacteriologically or clinically defined failure or relapse within 18 months after randomisation) on the shortened moxifloxacin-containing regimens. The reason for this gender disparity in treatment outcome is poorly understood. METHODS: The gender differences in baseline variables were calculated, as was time to smear and culture conversion and Kaplan-Meier plots were constructed. In post hoc exploratory analyses, multivariable logistic regression modelling and an observed case analysis were used to explore factors associated with both gender and unfavourable treatment outcome. RESULTS: The per-protocol population included 472/1548 (30%) women. Women were younger and had lower rates of cavitation, smoking and weight (all p < 0.05) and higher prevalence of HIV (10% vs 6%, p = 0.001). They received higher doses (mg/kg) than men of rifampicin, isoniazid, pyrazinamide and moxifloxacin (p ≤ 0.005). There was no difference in baseline smear grading or mycobacterial growth indicator tube (MGIT) time to positivity. Women converted to negative cultures more quickly than men on Lowenstein-Jensen (HR 1.14, p = 0.008) and MGIT media (HR 1.19, p < 0.001). In men, the presence of cavitation, positive HIV status, higher age, lower BMI and 'ever smoked' were independently associated with unfavourable treatment outcome. In women, only 'ever smoked' was independently associated with unfavourable treatment outcome. Only for cavitation was there a gender difference in treatment outcomes by regimen; their outcome in the 4-month arms was significantly poorer compared to the 6-month treatment arm (p < 0.001). Women, with or without cavities, and men without cavities had a similar outcome on all treatment ar

Over the course of the last few years, the consumption of insects, known as entomophagy, has sparked increasing interest amongst scientists and environmentalists as a potential solution to the inevitable global food security and sustainability issues humans will be facing in the coming years. Despite the fact that insects have been an integral part of over 2 billion people's diet worldwide, the concept of eating insects is still new to Western culture. As a result, there are many unknowns regarding insects as a food source, and this has led to a number of studies and investigations being done in recent years to create more knowledge and awareness around this new concept in the food industry. This review discusses some of the key topics and new developments published over recent years, such as the nutritional benefits, food safety concerns, functional properties, potential product concepts and the current ideas and attitudes towards insects as a food source in Western culture. © 2017 Society of Chemical Industry.

Information on feather and skin growth is important for the development of mathematical optimisation nutritional models for ostriches. Ostriches (n = 65) were subjected to a four-stage formulated growth diet programme (pre-starter, starter, grower and finisher), with declining protein and energy content. Nine birds were weighed, stunned, exsanguinated, defeathered, skinned and eviscerated at 1, 54, 84, 104, 115, 132 and 287 days of age. Feathers from four pre-selected locations on the body were harvested and weighed. The wet skin weight, wet unstretched skin size and wet unstretched crown size were measured at each slaughter stage. The live weight, feather and skin yields of the birds increased with age at slaughter, as did feather shaft diameter. Prediction models were developed to estimate the yield of the skin in terms of live weight and of empty body protein weight to aid in diet formulation. The allometry of feather growth was determined from total feather weight, as the maturation rates of the feathers differ from that of the ostrich body. Results from this study will aid in setting up a mathematical optimisation nutritional model for ostriches.

This study aimed to compare the fiber-type composition and fiber cross-sectional area (CSA) of male and female springbok (Antidorcas marsupialis) Longissimus thoracis et lumborum (LTL) and Biceps femoris (BF) muscles. Frozen samples from 4 male and 3 female springbok were fiber-typed immunohistochemically using the primary antibodies A4.74, BA-D5 and BF-35. The CSA of the fibers was determined using the software Image J. Type IIX fibers accounted for 64 to 77% of the fibers in all samples, with type IIA (12.7 to 19.1%), type IIAX (6.4 to 9.3%) and type I (2.4 to 8.5%) making smaller (P < 0.001) contributions. Female springboks’ muscles contained more type IIX fibers than males’ (P = 0.004) and the BF contained more type I fibers and fewer type IIA and IIAX fibers than the LTL (P < 0.001). CSA values did not differ between sexes or muscles; however, they increased with apparent fiber glycolytic capacity (I < IIA < IIAX < IIX; P < 0.001).

A population of the common warthog, Phacochoerus africanus, recently became established on several farms in the Free State Province, South Africa. The aim of the study was to record ectoparasite species that occur on this non-indigenous population and to compare the parasite abundance and prevalence at three different times during 2011. Forty-six warthogs were culled in autumn (15), winter (16) and spring (15). Each individual warthog was screened for ectoparasites for 7–10 minutes by 3–4 persons. Parasites were removed using forceps and stored in 70% ethanol. Ticks were identified by an expert taxonomist, while fleas and lice were identified using published books containing their respective taxonomic keys. A single flea (Echidnophaga larina) and louse (Haematopinus phacocheri) species and three tick species (Hyalomma truncatum, Rhipicephalus gertrudae and Rhipicephalus simus) were recovered from 46 warthogs. The louse and flea were the most abundant ectoparasitic taxa, while the ticks had lower mean abundances. This is the first record of the tick R. gertrudae on warthogs in South Africa. Temporal variation in parasite abundance was observed. The louse was most abundant during spring and summer, while the flea preferred cooler and drier winter conditions. Hyalomma truncatum and R. gertrudae both preferred warmer spring conditions. In general, parasite species richness in the non-indigenous host population was low, which could support the parasite release hypothesis.Key words: ectoparasites, flea, louse, Phacochoerus africanus, tick, warthog.

Climate change is projected to intensify and smallholder farmers will be the most affected because they entirely rely on climate-sensitive livelihoods and have low adaptive capacity. Appropriate coping strategies for smallholder farmers depend on an accurate description of the effects of agro-ecological and farmers’ socio-economic factors on climate change. A total of 182 structured questionnaires were administered to determine socio-economic factors affecting smallholder farmers’ perceptions of impacts of climate change on beef production in Malawi. Male heads had a higher perception of having increased cattle feed intake and decreased mortality than female heads suggesting that the former had better control and access to animal feed and health resources. Young farmers had a greater perception of experiencing decreases in cattle water supply than adults implying that they lacked experience required to cope with water scarcity. More educated household heads had a higher perception of experiencing decreased tick loads and increased cattle sales than less educated household heads as they are posited to have increased knowledge of parasite control and understanding of market dynamics and expected to make better marketing decisions. High-income farmers had a lower perception of having decreased rangeland biomass and growth rates than low-income farmers indicating that they had capital to acquire resources required to improve rangeland and cattle production. Gender, age, education and income level were the major socio-economic factors that influenced farmers’ perceptions of impact of climate change on beef production. This highlights the importance of incorporating socio-economic factors when devising climate change adaptation and vulnerability reduction strategies for smallholder beef producers.

BACKGROUND: The cardiovascular effects of adding once-weekly treatment with exenatide to usual care in patients with type 2 diabetes are unknown. METHODS: We randomly assigned patients with type 2 diabetes, with or without previous cardiovascular disease, to receive subcutaneous injections of extended-release exenatide at a dose of 2 mg or matching placebo once weekly. The primary composite outcome was the first occurrence of death from cardiovascular causes, nonfatal myocardial infarction, or nonfatal stroke. The coprimary hypotheses were that exenatide, administered once weekly, would be noninferior to placebo with respect to safety and superior to placebo with respect to efficacy. RESULTS: In all, 14,752 patients (of whom 10,782 [73.1%] had previous cardiovascular disease) were followed for a median of 3.2 years (interquartile range, 2.2 to 4.4). A primary composite outcome event occurred in 839 of 7356 patients (11.4%; 3.7 events per 100 person-years) in the exenatide group and in 905 of 7396 patients (12.2%; 4.0 events per 100 person-years) in the placebo group (hazard ratio, 0.91; 95% confidence interval [CI], 0.83 to 1.00), with the intention-to-treat analysis indicating that exenatide, administered once weekly, was noninferior to placebo with respect to safety (P

An overview is presented on the global human usage of unconventional animal species (ungulates, rodents, rabbits and hares, kangaroos, reptiles and bats) derived either from wild harvesting or farming. The nutritional value of these species is discussed, focusing on their potential to contribute to food security and to address the protein requirements of a growing population. The challenges and opportunities arising from the commercial use of these animals are highlighted, as are the problems faced with overexploitation of certain wild species. Of the species addressed, the rodents appear to present great potential for becoming large commercial commodities for food use.

The game meat industry is continuing to grow in South Africa. Several stakeholders are involved in the game meat supply chain and a high level of knowledge is necessary to ensure compliance with legislation and standards. It was therefore necessary to determine the level of knowledge of the stakeholders since this has not been determined before. Information regarding the extent of stakeholders' knowledge and the possible impact on compliance to standards was obtained through a desk-top study and an analysis of questionnaire responses from industry, consumers and relevant authorities. Results have shown that consumers have a specific expectation regarding the safe production of game meat. Limitations in the knowledge of the stakeholders have been identified. Understanding these limitations can assist policy-makers, law enforcers and the game meat industry in developing strategies to alleviate the problem. The result of this study may assist in providing consumers with game meat that is safe for human consumption.

Ante-mortem stress is known to adversely affect meat quality, and cropping methods that minimize stress are key to ensuring acceptable meat quality from wild ungulates. The purpose of this study was to compare the difference in meat quality between day- and nightcropped red hartebeest (Alcelaphus buselaphus). The cropping method had no significant effect on the stress parameters, the ultimate pH of the meat or any of the constants of the exponential decay model of the pH data (y=a+b e (-ct)). No significant differences were found in drip loss, cooking loss or shear force between treatments. Significant correlations were found between carcass pHu versus drip (r = -0.322) and cooking losses (r = -0.323). A significant difference was found for a* (P= 0.048) and chroma (P= 0.032) between day and night-cropped animals. All colour ordinates, except hue angle, were found to be significantly correlated to pHu. The results of this study indicate that if an experienced cropping team is used, neither of the two crop...

This study investigated the aptness of modified atmospheric packaging (70:30, O:CO (O-MAP); 70:30, N:CO (N-MAP)) and traditional overwrap (control) for previously frozen ostrich steaks, stored at 4±1°C for 10days. The N-MAP showed the least oxidation, O-MAP the highest and the control moderate. The redness (CIE a*) decreased to 3.67±0.83 by day 10 in the O-MAP, the N-MAP and control initially had lower values indicating slower oxidisation. The free carbonyl production was higher in the O-MAP than the N-MAP and control. TBARS remained relatively constant for the N-MAP and control, but increased to 9.70±3.26 (day 10) in the O-MAP. Drip loss (non-cumulative), was initially high (5-6%) for N-MAP and control, followed by a decrease on day 2 (2%) that increased to day 10 (4-6%). In conclusion, the traditional overwrap was not suited; N-MAP holds potential under a true anoxic atmosphere whilst O-MAP was limited by protein and lipid oxidation. © 2011 The Authors. We determined the effect of region and gender on the physical (pH45min, temperature45min, pH24h, temperature24h, L*-value, a*-value, b*-value, hue-angle, chroma, drip loss, cooking loss and Warner-Bratzler shear force value) and sensory properties (aroma, flavour, initial juiciness, sustained juiciness, first bite and residue) of M. longissimus dorsi from blesbok (Damaliscus dorcas phillipsi). Meat from a total of 65 blesbok (males and females) from four regions (Maria Moroka, Gariep, Qua-Qua and Rustfontein in the Free State Province, South Africa) were evaluated. No gender effects were found in any of the physical characteristics. However, region influenced (P < 0.05) pH45min (mean: 6.17), pH24h (mean: 5.49), temperature24h (mean: 7.39°C), a*-values (mean: 12.90), chroma (mean: 15.73) and cooking loss (mean: 34.63%). Both region and gender had a significant effect on first bite and residue, whereas sustained juiciness was only influenced (P < 0.05) by region. Blesbok presented a meat that would be accep...

"Namibia is the driest country in sub-Saharan Africa, but well known for its richness in species and sustainable natural resource utilization. The Namibian farming sector consists mainly of extensive farming systems. Cattle production contributes 54% of the livestock sector???s production output, followed by sheep and goats (25%), hides and skins (9%), and other forms of agricultural production (12%). Namibia???s freehold farmers have obtained ownership rights over land and livestock since the early 1900s; commercial rights over wildlife and plants were given to freehold farmers in 1967 and to communal farmers in 1996. Natural resource-based production systems then overtook agricultural production systems and exceeded it by a factor of at least two. The shift from practicing conservation to sustainable utilization of natural resources contributed to the rapid growth of wildlife utilization. The wildlife industry in Namibia is currently the only animal production system that is expanding. There are in total at least two million head of different wildlife species. The broader impact of the utilization of wildlife on the economy is estimated to be around N$ 1.3 billion. Tourism, live sales and trophy hunting, cannot sustain further growth. Wildlife farming could offer better opportunities for ensuring long-term sustainability. As the game meat trade in Namibia is not formalized, harvesting wildlife to satisfy the demand for game meat in export markets is still in its infancy.Sustainable harvesting of wildlife for meat production, however, has the potential to increase earnings to the beneficiaries in the wildlife sector."

The aim of this study was to investigate the effect of different seasons and gender on the physical and chemical composition of black wildebeest (Connochaetus gnou) meat. Twenty-six black wildebeest were harvested at Maria Moroka Nature Reserve, in the Free State Province, South Africa, during winter, spring and autumn. Mean body and carcass weight did not differ (P > 0.05) between either seasons or genders. However, dressing percentage was higher (P 0.05) between seasons, whereas differences (P < 0.05) in temperature of carcasses measured 24 h post-mortem could be ascribed to differences in ambient temperature. Meat from animals harvested during spring (5.52 and 39.63%) had a higher (P ≤ 0.05) drip and cooking loss compared to those harvested in winter (2.27 and 34.59%) and autumn (3.61 and 33.88%). Meat was the most (P < 0.05) tender during autumn (2.27 kg/1.27 cm dia...

The greater kudu (Tragelaphus strepsiceros) has become a popular ungulate species for game meat production and the purpose of this study was to determine the effects of day and night cropping on its meat quality. Eight animals were cropped during the day and eight at night. Day-cropped animals had higher mean behavioural scores (perceived amount of ante-mortem stress experienced) and Cortisol levels (behavioural score = 3.0 ± 0.641; Cortisol = 68 ± 1.28 nmol/l) than night-cropped animals (behavioural score = 1.8 ± 0.955; Cortisol = 14 ± 2.15 nmol/l). The muscle ultimate pH (pHu) values differed significantly between the two treatments (day-cropped animals = 5.40 ± 0.030; night-cropped = 5.48 ± 0.041). Significant differences were also found in drip loss (day-cropped = 2.76 ± 0.261%; night-cropped = 1.36 ± 0.361 %) and in shear force between treatments (day-cropped = 3.45 ± 0.171; night-cropped = 4.06 ± 0.237 kg/1.27 cm diameter). No differences were found between the treatments for any of the colour ordlnates, except L* values (day-cropped: 33.45 ± 0.435; night-cropped = 32.13 ± 0.601). The results of this study are Inconclusive in that although day-cropped animals experienced more ante-mortem stress and, as a result produced meat with higher drip loss, they had a lower shear force and a paler colour, which are positive meat quality attributes associated with less stress.

In South Africa, night cropping from a vehicle Is commercially used to crop game. Conventional hunting employs the principles of fair chase and usually consists of hunting on foot during the day. The purpose of this study was to compare the meat quality of the Impala (Aepyceros melampus) shot utilizing these two methods. No significant differences In pH45 or pHu were found between the two methods. An exponential decay model (y = a + b-ct) was fitted to the pH data and conventionally hunted animals showed significantly higher rates of pH decline (c = -0.385 ± 0.022 units per hour) than night-cropped animals (c = -0.184 ± 0.019 units per hour) - a phenomenon that may be linked to the ante-mortem stress experienced by the animals, and the cooling rate of the carcasses. Impala conventionally hunted also had significantly higher constants for the pH exponential model (a = 5.424 ± 0.039; b = 1.405 ± 0.034) than the night-cropped Impala (a = 5.295 ± 0.033; b = 1.556 ± 0.029). The influence of gender on the physical and chemical properties of the M. longissimus dorsi et lumborum of mountain reedbuck (Redunca fulvorufula) was examined. The mean live weights of ten male (28.58 kg) and nineteen female (30.58 kg) mountain reedbuck did not differ (P > 0.05),and the mean cold carcass weight was 16.36 kg for both genders. Gender had no influence (P > 0.05) on any of the physical characteristics (pH, drip loss, cooking loss, shear force, colour) investigated. For the proximate chemical analysis of the M. longissimus dorsi et lumborum muscle, the effect of gender was only significant for the protein content, where the females (24.51%) displayed a higher percentage of protein compared to the males (23.68%). Neither the amino acid nor the mineral content differed significantly between the two genders. Glutamic acid (11.35 g/100 g) was the most abundant amino acid, followed by aspartic acid (2.94 g/100 g), glycine (0.86 g/100 g) and serine (0.66 g/100 g). The mineral content of mountain re...
