Customers prefer tilapia (Oreochromis niloticus), one of the most popular freshwater fish species farmed in Bangladesh, because of its flavor and affordable market pricing. This study aimed to develop value-added tilapia fish sticks and evaluate the quality changes, shelf life, and storage stability of the developed tilapia fish sticks in order to investigate the possibilities of better utilizing low-value tilapia fish and to satisfy consumers' growing demand for quality ready-to-eat food products. For this regard, storage characteristics in room (28ºC) and refrigerator (5ºC) temperatures were assessed in terms of microbiological, chemical, proximate, and sensory attributes. The moisture, lipid, protein, and ash contents of the fish sticks were observed to be 56.23±0.62, 7.62±0.27, 26.01±0.39, and 2.93±0.23%, respectively, at fresh condition. As storage time increased, it was discovered that ash content at room temperature increased while moisture, lipid, and protein levels steadily declined. On the other hand, it was discovered that at refrigeration temperatures, ash and fat content increased while moisture and protein content decreased. Compared to fish sticks held at ambient temperature, changes in the proximate composition of fish sticks stored in a refrigerator were found to be more stable. TVB-N was initially measured as 12.38±0.45 mg/100 g. After 24 hours of room storage, the TVB-N value exceeded the acceptable level; however, after 72 hours of refrigeration, it did not exceed the acceptable limit and was deemed fit for consumption. Dried fish is a popular and in-demand fish food item in Bangladesh, and it is regarded to be the most cost-effective form of nutritional protein, which helps to alleviate malnutrition among the disadvantaged people. A consumer survey reported a slew of concerns regarding the physical, visual, and organoleptic aspects of market available sun-dried fish. The current study evaluated the organoleptic, nutritional, and microbiological quality of dried striped dwarf catfish, Mystus vittatus, which is one of the most popular dried fish in Bangladesh. To highlight the quality disparities among the samples, an experimental sample was made in the laboratory with the utmost hygiene and sanitation. Experimental samples had the highest features score than marketed ones, according to organoleptic analysis. Except for moisture and ash content, the experimental sample had greater mean lipid, protein, crude fiber, and nitrogen-free-extract (NFE) values. The mean (±SD) moisture content of the experimental, drying yard and market sample were 19.82±1.7, 21.44±2.7 and 24.3±1.4%; lipid content were 12.30±2.12, 10.54±1.76 and 9.04±2.41%; protein content were 43.01±.10, 41.74±.79 and 39.67±3.18%; ash content were 16.11±1.70, 17.91±3.70 and 20.77±3.24%; crude fiber content were 1.78±.08, 1.56±.08 and 1.54±.13% and NFE content were 7.01±1.08, 6.80±.77 and 4.67±1.01%, respectively. The mean Total Plate Count (TPC) of dried M. vittatus from the experiment, drying yard, and market samples, respectively, was 4.51±0.11, 5.33±0.25, and 6.39±0.18 log cfu g-1. The results show that commercially manufactured dried striped dwarf catfish has low organoleptic, nutritional, and microbiological quality. Commercially manufactured dried fish requires improved hygiene and good manufacturing practices (GMPs) to ensure consumer safety and health.

The study revealed the status of formalin used in four commercially important fishes namely Rohu (Labeo rohita), Catla (Catla catla), Mrigal (Cirrhinus cirrhosus) and Hilsa (Tenualosa ilisha) from Sylhet and Moulvibazar district for a period of four months from April to July 2016. A total of 100 fish samples from different town and village markets were collected and analyzed instantly on the market to detect the presence of formalin by using a kit developed by Bangladesh Council of Scientific and Industrial Research (BCSIR). Among the analyzed fishes 46.7, 26.7, 20.0 and 13.3% of Rohu, Catla, Mrigal and Hilsa, respectively were found treated with formalin from Sylhet district. Similarly, formalin was also detected in 40, 20, 20 and 20% of investigated Rohu, Catla, Mrigal and Hilsa from Moulvibazar district, individually. There was no significant difference in formalin used between town and village market, whereas a significant difference in application of formalin in domestic and imported fishes except Catla has been identified. Two-third of imported Rohu (66.7%) was found formalin positive followed by Hilsa (44.4%), Mrigal (40%) and Catla (35.7%). Amongst the domestic fishes, presence of formalin was detected in 27.8, 18.8, 10.0 and 4.8% in Rohu, Catla, Mrigal and Hilsa, separately. This devastating use of formalin in food fishes should be banned through proper enactment of the existing laws of the country, as well as timely and appropriate implementation of government monitoring is mandatory to combat the unethical formalin use.

A new strain of coronavirus severe acute respiratory syndrome coronavirus 2 (SARS-CoV-2) responsible for the coronavirus disease 2019 (COVID-19) pandemic was first detected in the city of Wuhan in Hubei province, China in late December 2019. To date, more than 1 million deaths and nearly 57 million confirmed cases have been recorded across 220 countries due to COVID-19, which is the greatest threat to global public health in our time. Although SARS-CoV-2 is genetically similar to other coronaviruses, i.e., SARS and Middle East respiratory syndrome coronavirus (MERS-CoV), no confirmed therapeutics are yet available against COVID-19, and governments, scientists, and pharmaceutical companies worldwide are working together in search for effective drugs and vaccines. Repurposing of relevant therapies, developing vaccines, and using bioinformatics to identify potential drug targets are strongly in focus to combat COVID-19. This review deals with the pathogenesis of COVID-19 and its clinical symptoms in humans including the most recent updates on candidate drugs and vaccines. Potential drugs (remdesivir, hydroxychloroquine, azithromycin, dexamethasone) and vaccines [mRNA-1273; measles, mumps and rubella (MMR), bacille Calmette-Guérin (BCG)] in human clinical trials are discussed with their composition, dosage, mode of action, and possible release dates according to the trial register of US National Library of Medicines (clinicaltrials.gov), European Union (clinicaltrialsregister.eu), and Chinese Clinical Trial Registry (chictr.org.cn) website. Moreover, recent reports on in silico approaches like molecular docking, molecular dynamics simulations, network-based identification, and homology modeling are included, toward repurposing strategies for the use of already approved drugs against newly emerged pathogens. Limitations of effectiveness, side effects, and safety issues of each approach are also highlighted. This review should be useful for the researchers working to find out an effective strategy for defeating SARS-CoV-2.

Meeting consumer concerns and preferences for fresh and safely processed fisheries products free of chemical and synthetic preservatives is a challenge for the aqua-food industry. As such, natural preservatives from plant and animal origin including chitosan, essential oils (EOs), plant extracts and lactic acid bacteria have attracted considerable interest recently. These preservatives have antimicrobial and antioxidant properties that can retard spoilage, uphold product quality and safety as well as extend the storage shelf-life of fish and seafood. Chitosan and EOs have been successfully used in edible coatings, film wrapping and dipping solutions. The present review focuses on the effectiveness of chitosan, EOs and other natural preservatives intended for prolonging the shelf-life of fisheries products, and maintaining their freshness and quality. Moreover, the mechanisms of action of natural additives, harmful impacts of chemical preservatives and status of aquatic food preservatives in Southeast Asian countries are summarized, with notes on important research gaps. Overall, this study informs recent development in natural preservatives related to the aqua-food industry.

Several antiviral peptides (AVPs) from aquatic organisms have been effective in interfering with the actions of infectious viruses, such as Human Immunodeficiency Virus-1 and Herpes Simplex Virus-1 and 2. AVPs are able to block viral attachment or entry into host cells, inhibit internal fusion or replication events by suppressing viral gene transcription, and prevent viral infections by modulating host immunity. Therefore, as promising therapeutics, the potential of aquatic AVPs for use against the COVID-19 pandemic caused by SARS-CoV-2 (severe acute respiratory syndrome coronavirus 2) is considered. At present no therapeutic drugs are yet available. A total of 32 AVPs derived from fish and shellfish species are discussed in this review paper with notes on their properties and mechanisms of action in the inhibition of viral diseases both in humans and animals, emphasizing on SARS-CoV-2. The molecular structure of novel SARS-CoV-2 with its entry mechanisms, clinical signs and symptoms are also discussed. In spite of only a few study of these AVPs against SARS-CoV-2, aquatic AVPs properties and infection pathways (entry, replication and particle release) into coronaviruses are linked in this paper to postulate an analysis of their potential but unconfirmed actions to impair SARS-CoV-2 infection in humans.

The present study was carried out at the north-eastern part of Bangladesh to investigate organochlorine pesticide (OCP) residues and microbiological quality of dried barb (Puntius sophore). Samples were collected from both producers and retailers from December 2016 to April 2017. A control sample was also prepared with the same raw fish used by the producers in the laboratory to compare the result. Gas Chromatography with Electron Capture Detector (GC-ECD) was used to detect and quantify OCP residues. Around 22 % (6) samples out of 27 were found contaminated with OCP residues. Among these six adulterated samples, four were from retailers and two from producers. Only Aldrin was detected in four samples and rest two samples were detected with both Aldrin + Dieldrin and Aldrin + Endrin. Aldrin was found between 0.332 to 0.967 ppm, Dieldrin 0.762 ppm, and Endrin 0.828 ppm. All these values were much higher than the Maximum Residual Limit (MRL) 0.1 ppm. Aerobic Plate Count (APC) of producer samples were ranged between log5.3 ± 0.02 to log5.4 ± 0.03, log6.2 ± 0.02 to log6.4 ± 0.02 for retailer samples and log5.0 ± 0.03 to log5.2 ± 0.04 for control samples. While fungal count was ranged between log3.2 ± 0.04 to log3.5 ± 0.04, log3.4 ± 0.04 to log3.6 ± 0.03 and log2.2 ± 0.05 to log2.5 ± 0.03 for producer, retailer and control samples respectively. All the producer and retailer samples and one-third of the control samples were found contaminated with Escherichia coli. Whereas, Salmonella sp. was detected as 13.3% in producer samples, 20% in retailer samples except for the control. In case of Vibrio sp., maximum count was found for retailer samples (13.3%), whereas, producer and control samples showed no detection. The finding of the present study revealed the presence of pesticides and poor microbiological quality of dried barb are alarming for the consumers of Bangladesh and which may cause chronic disease and potential long-term risk for human health.
