In this study, the effects of soy protein isolate (SPI) concentration (0%, 50%, and 100%), sonication time (10, 20, and 30 min), and whipping time (5, 10, and 15 min) on the quality characteristics of the model food foam were investigated and optimized. In order to maximize both foaming capacity (FC) and foam stability (FS), it was aimed to select the optimum process parameters using a Taguchi-based fuzzy logic method (TBFLM). The experiments were performed according to Taguchi L9 (3(3)) orthogonal design, and the effects of process parameters on foam quality characteristics were investigated by analysis of variance. Optimization results revealed that optimum FC and FS values were obtained with 50% SPI, 30 min sonication, and 10 min whipping. SPI concentration was the most effective factor for the responses in Taguchi single-response optimization. However, the whipping time has the greatest impact on the multiperformance characteristics index, accounting for 78.93% of the contribution to fuzzy logic multiresponse optimization. Bu çalışmanın amacı, sakkarozun nadir şeker (D-psikoz) ve/veya poliollerle (sorbitol, ksilitol) %25 veya %50 oranında değiştirilmesiyle hazırlanan bisküvilerin fizikokimyasal, tekstürel ve duyusal özelliklerini belirlemektir. Sonuçlar incelendiğinde, D-psikoz ikamesinin artmasıyla bisküvilerde nem içeriğinin azaldığı, daha koyu renkte olan daha kalın bisküvilerin elde edildiği görüldü. Bununla birlikte, bisküvilerde poliol ikamesinin artmasıyla nem içeriği artarak parlaklık (L) ve kırmızılık (a) değerleri azalmıştır. Pişmiş bisküvilerin tekstürü de tatlandırıcı ikamesinden önemli ölçüde etkilenmiştir. In this study, effects of control parameters (protein type, hydrocolloid concentration, hydrocolloid type and mixing temperature) on density response of model foams and color response of model foam halvas. Signal/Noise ratio for the lowest density and the highest L* values were obtained using Taguchi L16 experimental design (44). As a result of the analysis, model foam obtained by mixing solution containing whey protein isolate (0.5%), saponin (0.096%) and pectin (0.05%) at 80oC was determined as the best foaming sample. For density response, Signal/Noise ratio of this sample (13.98 dB) was also detected higher than control (11.49 dB). There was no significant difference between the model foam halva produced by whipping the solution (whey protein isolate (0.5%), saponin (0.096%) and xanthan gam (0.1%)) at 40oC and traditional method. Ayrıca, bu örneğin yoğunluk yanıtı Sinyal/Gürültü oranının (13.98 dB) kontrolden (11.49 dB) daha yüksek olduğu tespit edilmiştir. Peynir altı suyu protein izolatı (%0.5), saponin (%0.096) ve ksantan gam (%0.1) ile hazırlanan çözeltinin 40 oC’de çırpılmasıyla üretilen model köpük helva ve geleneksel yöntemle üretilen helvanın parlaklıkları arasında istatistiksel açıdan önemli fark bulunmamıştır. Bu çalışmada, formülasyonda kullanılacak suyun %20 ve %30’u düzeyinde ekşi ve tatlı nar çeşitlerinden iki farklı yöntemle elde edilen taze sıkılmış nar suları kullanılmak suretiyle lokum üretilmesi amaçlanmıştır. Üretilen nar suyu ilaveli lokumlarda suda çözünür kuru madde, pH, toplam asitlik, toplam fenolik madde, toplam antosiyanin, renk, sertlik değeri, su aktivitesi analizleri yapılmış ve örnekler duyusal olarak değerlendirilmişlerdir. Nar suyu ilaveli lokum örneklerinin suda çözünür kuru madde değerleri 71,25-81,90 °Briks, pH değerleri 3,50-4,78, sertlik değerleri 0,75- 1,64N, toplam asitlik değerleri 0,042-0,240 g/100g, L * değeri; 27,43-43,94, a * değeri; (-0,66)- (+14,45), b * değeri ise; (-1,67)-(+4,08), toplam fenolik madde miktarı 201,33-760,33 mg GAE/kg, antosiyanin miktarı 23,37-42,15 mg siyanidin 3-glikozid/kg olarak belirlenmiştir. Duyusal değerlendirmede birçok özellik bakımından en yüksek ortalama puanı hidrolik pres ile elde edilen tatlı nar suyu (300 ml) ilaveli lokum örneği almıştır. Lokum formülasyonundaki suyun nar suyu ile ikamesiyle fonksiyonel bileşenler bakımından zengin ve tüketiciler tarafından tercih edilen ürünlerin üretilebileceği görülmektedir. In this study, it is aimed to produce Turkish delight by using fresh squeezed pomegranate juice obtained from two different sour and sweet pomegranate varieties in 20% and 30% of the water to be used in the formulation. Water soluble dry matter, pH, total acidity, total phenolic substance, total anthocyanin, colour, hardness value, water activity of Turkish delight added pomegranate juice were analysed and the samples were sensory evaluated. Soluble solids dry matter values of Turkish delight were; 71.25-81.90 °Brix; pH values; 3.50-4.78, hardness values; 0.75-1.64 N, total acidity values; 0.042- 0.240g/100g, L values; 27.43-43.94, a * values; (-0.66)-(+14.45) and b * values; (-1.67)- (+4.08), the amount of the total phenolic matter; 201.33-760.33 mg GAE/kg, the amount of total anthocyanin; 10.01-42.15 mg Cy-3Gluc/kg determined, respectively. When the results of the sensory evaluation were examined, the highest average score in terms of many features was obtained with a sweet pomegranate juice (300 ml) obtained with hydraulic press.
