The article examines the peculiarities of the use of police custody in relation to minors. As a result of the study, it was learned that police custody is a police measure, that is, such a measure that police officers are authorized to apply. The subjects of police custody are police officers. One of the main tasks of the National Police of Ukraine is to ensure the implementation and protection of the rights and freedoms of all categories of citizens, including children. It is worth noting that one of the innovations of the Law is the introduction into the practical activity of police bodies of such a preventive police measure as police custody of certain categories of persons, which was not previously used in the activities of police bodies. The peculiarity of the purpose of police custody is not only the facts of the need to eliminate circumstances that create risks for the persons in respect of whom police custody is carried out, but also for the persons surrounding them. Despite the legal definition of the procedural procedure for police custody (compilation of a protocol), a single document was not developed that recorded the specified measure, and only a corresponding report was drawn up about its application by the police, the content of which was also free and in fact did not contain complete information about application of a police measure. On October 12, 2020, after the issuance of the order of the Ministry of Internal Affairs of Ukraine No. m724 "On the approval of the Instructions for the preparation of materials on the use of police custody", the procedural registration of the applied police measure became possible, since the specified order approved a sample of the protocol on the use of police custody. Considering that the main purpose of police custody is to provide assistance to the person for whom it is carried out, including medical, legal, household, etc., the adoption and implementation of the specified order is a relevant and timely event, as it made it possible to bring administrative actions of a police officer in accordance with the requirements of the Constitution and state legislation.

The availability of the material and technological capabilities of modern information and communication technologies in the field of education allows, on the one hand, to realize the creative potential of each teacher in creating such tools as educational and methodological complexes, applications, simulators, educational games, and so on, significantly changing the pedagogical tools, and on the other hand, the expanding range of newly created teaching aids causes an urgent need for an adequate assessment of their impact on learning outcomes. The purpose of the work is to evaluate the effectiveness of using the simulator program for independent studies of students in the discipline "Descriptive geometry". The work used such research methods as questionnaires using Google Forms, testing, timing, statistical data processing, comparison of control and experimental groups, construction of bar and pie charts, SWOT analysis. In the process of pedagogical research, the following platforms and programs were used: LMS Moodle, Microsoft Excel, an original simulator program for the development of students' spatial thinking. It has been established that the developed simulator program for the development of spatial thinking of students of engineering specialties studying the discipline "Descriptive Geometry" allows increasing students' interest in mastering the topics of the discipline, favorably affects the formation of skills for constructing orthogonal projections of a point, reducing the time for solving problems on this topic by 40% and also positively affects the degree of adequacy of students' self-assessment. It has also been established that to check in a semi-automatic mode 80 reports of students on the implementation of individual tasks in the simulator program, the teacher will spend only about 30 ... 40 minutes of his time. At the end of the article, ways to improve the simulator program are given and directions for further research are outlined.

In connection with the development of new methods of nanotechnology, the article discusses the features of the morphology of nanoobjects that determine the relevance of the modernization of the training of undergraduates in the study of the disciplines «Nanomaterial Science», «Nanotechnology», «Descriptive geometry, engineering and computer graphics» and «Computer modeling». Recently, the concept of «cluster» has become relevant due to the trend in the development of nanomaterials. Such nanomaterials obtained using unconventional growth mechanisms (including oriented attachment) are extremely interesting in the field of electronics, photonics and are of great interest for catalysis. The article considers homoatomic clusters constructed from identical structural units. The desire to minimize energy is expressed in the tendency to the densest arrangement of structural units in the cluster. This allows us to assert that cluster structures with the maximum number of connections per structural unit will be the most stable; that clusters tend to a quasi-spherical shape (i.e., cluster sizes along three Cartesian axes should be close if possible, while dense structures are formed, the surface of which is minimal, and the number of connections is maximum); that clusters with higher symmetry are preferable (identical structural units composing the cluster framework should strive to stay in an indistinguishable state and position from each other). The work applies the knowledge and skills laid down by students in the course of engineering and computer graphics to the study of the patterns of processes in the nanowire on the example of the principles of building nanoclusters along a tetrahedral line using three-dimensional modeling in the Autodesk 3ds Max environment. Visualization and visual representation of geometric images of nanoclusters will allow students to avoid a primitive geometric representation of nanoobjects and will serve as motivation to study other natural science subjects. The content of the article is intended for specialists working in the fields of nanotechnology, solid-state electronics, micro- and nanoelectronics, micro- and nanosystem technology, thin-film sensors.

The article considers important aspects of the problem of formation of informational-communicative competence of junior students in the context of the requirements of the State Standard of Primary Education (2018) and the Concept "New Ukrainian School" (2016). The concepts of "competence", "information and communication competence", "formation of information and communication competence", "pedagogical conditions for the formation of informational-communicative competence" are analyzed. Based on the analysis of scientific and educational literature on the study of advanced pedagogical experience and the use of positive results of their own pedagogical activities in higher education and in primary schools, the authors determine the pedagogical conditions for informational-communicative competence of primary school students. Particular attention is paid to such conditions as: positive motivation of teachers and cognitive interest of students in information and communication activities; creating an educational and developmental environment in the classroom, at school; teacher's possession of modern technologies and techniques, in particular, games, information and communication and their use in practice; taking into account in the process of studying computer science age and individual characteristics of students; availability of material and technical and information support for students and schools. The National Doctrine of Education Development in Ukraine in the 21st Century defines that the priority of education development is the introduction of modern ICT, which ensure further improvement of the educational process, accessibility and effectiveness of education, preparation of the young generation for life in the information society.

The widespread use of computer technology, its rapid development and use in almost all areas of human activity requires constant updating of information security issues. The activities of many enterprises in the field of IT, construction, and other areas are of a project nature and therefore further research on information security management of projects is relevant. Appearance of changes and the current state of the project results at certain points of time describe the documents that accompany it. In this paper, the information structure of the project is considered as a set of specific documents. During the life cycle of each project document, which includes the creation, transfer, preservation and transformation, there are generally threats to its confidentiality, integrity, accessibility and authenticity. This paper develops a method for assessing the risks of violation of the availability of project documents in solving information security problems. A formal description of many project documents in the form of a generalized hierarchical structure is presented, the connection of documents with the operations performed on them and information systems used during these operations is formalized. Given the incompleteness and dimension of the data, the based on fuzzy logic model was developed to assess the risk of document accessibility. Approaches to the assessment of the damage from the violation of the availability of the project document and the method of calculating the overall assessment of the risk of violation of the documents availability are proposed. The results presented in this paper can be used in decision-making processes regarding information security of projects in organizations that have project activities. The approaches proposed in this paper can serve as a basis for the creation of specialized information technologies to automate the calculation of project risk assessments.

Problem setting. National identity is a multidimensional, complex phenomenon in which political and cultural (ethnic) factors combine and interact in some way. The question of their relationship, interaction and share in the formation of national communities has been the subject of long-standing debate . In Ukraine in a wide public space the ethnic paradigm of the nation dominates, according to which the phenomenon of the nation is maximally identified with the ethnos politically organized in its state. In academic circles, there is a much more complex vision of the essence of the nation. However, in the context of the problem of further development of Ukrainian national identity and national consolidation of Ukrainians, many authors focus primarily on the importance of the cultural factor. But, the importance of political factors of national consolidation is markedly underestimated. In particular, the question of the role of institutions of representative democracy and democratic political culture in the process of strengthening the current Ukrainian national identity, the difficulties and opportunities associated with them, is on the margins. Recent research and publications analysis. In Ukraine, a wide range of different aspects of the formation of modern Ukrainian national identity has been the subject of coverage in the monographs of M. Stepyko, M. Rozumny, articles by N. Pidberezhnyk, D. Kravchenko, O. Shaparenko, and other researchers. In the context of the analysis of the problem of national consolidation of Ukraine, A. Kolodiy presented her vision of the essence of the phenomenon of nation and national identity. In the collective monograph of scientists of the Institute of State and Law named after V. Koretsky presents an analysis of the specifics of the identity of the population of certain regions of Ukraine, proposals for effective mechanisms for its integration into the Ukrainian common national identity. Distinctive narratives of national identity that exist in Ukraine have been the subject of research by American political scientist K. Korostelina. British / Ukrainian researcher T. Kuzio addressed the problem of the interaction of different identity options and democratization processes in Ukraine in the post-Soviet period. In their reflections, these authors offered, in particular, the different visions of the share of political, ethnic and cultural components of national identity, the dynamics of their interaction in the process of national formation of modern Ukraine. Of particular note are the publications of Yu. Ruban, who pointed out, also in the Ukrainian context, the close interdependence between democratic institutions and national identity.Highlighting previously unsettled parts of the general problem. The relationship between the processes of formation of modern Ukrainian national identity and democratic values as its important and necessary component, democratic institutions, in particular, electoral and potential ways of national consolidation of Ukrainian citizens, needs to be studied in more detail.The purpose of the article is to determine the place and role of institutions of representative democracy in the processes of formation of Ukrainian national identity, in particular, taking into account current political changes, identifying related challenges and opportunities.Paper main body. For almost three decades of Ukraine’s independent state existence, its political development has taken place within the framework of democratic political institutions and has been carried out through the mechanisms of representative democracy. In the process of state/national development of Ukraine, the formation of its current national identity, the basic institutional components of democratic political procedures have proved to be a mandatory and permanent factor. In the process of interaction between the government and society, its starting point is the legitimation of power in the eyes of citizens. Citizens’ perception of state power as legitimate appears to be in some way connected with the process of asserting national identity in its political dimension. It is democratic procedures in a pluralistic society that become the basis of the legitimacy of power.The central element of the democratic legitimization of power and one of the most important components of communication between government and society is elections, which in this aspect are essentially a factor in the formation of national identity. In the course of the electoral process, numerous group and individual identities that exist in society, in a certain way, manifest themselves in public space, in open and defined by certain rules rivalry with others.The common national idea / ideology and democratic principles of political coexistence are interrelated factors, because the formation of a common identity through dialogue, through the integration of human rights, political and civil liberties into the whole multidimensional construction of national identity can be a factor in consolidating society. Encouraging the integration of linguistic, ethnic and other minorities into the social and political space of a single state on the basis of interculturalism will thus contribute to the formation of a common civic identity in people with different (but at the same time in no way isolated from each other) cultural identities. Citizens’ perceptions of the state as an institution that takes into account their interests and values, a greater level of civic participation in decision-making and implementation will ultimately mean greater efficiency of democratic governance, thus contributing to socio-economic progress and stability of the entire socio-political system. Conclusions of the research and prospects for further studies. The task of forming an image of national identity capable of integrating around itself, around the Ukrainian core, the achievements and values of various ethnic, linguistic and cultural minorities, politically united by the borders of the Ukrainian state, remains relevant. In this context, democratic institutions and values, forming the basis for constructive public articulation of different points of view and interests, have the potential to promote more effective government and intergroup communication, reduce conflict in society, feelings of alienation between government and certain groups. Further prospects for research in this area are a more detailed analysis of the relationship between the democratic mechanisms of public communication and the peculiarities of the formation of the current Ukrainian national identity and national consolidation. In particular, in this context, the appropriate influence of the specifics of electoral procedures and processes, different forms of government needs to be considered separately.

The work is devoted to the description of technology of evaluation of the characteristics of the reaction chamber for obtaining thermally expanded graphite, as a sorbent for oil products, using methods of numerical gas dynamics based on the use of the ANSYS - 12 software complex. The purpose of this study is to optimize the geometric and thermal parameters of the reaction chamber, which provides the maximum degree of thermal expansion of oxidized graphite. The following assumptions and limitations were used in the calculations: simulation was performed using a compressed ideal gas model, a standard SST turbulent viscosity model was used, there is no heat exchange through the walls of the chamber with the environment, the simulation was carried out without the supply of expanded graphite powder, instead of supplying air (with an initial temperature of 300 ° K) in the amount equivalent to graphite to calculate the equal value of heat absorption, the chemical reaction of combustion of the fuel-air environment was not taken into account (1500 ° K gas was fed into the chamber), limit conditions of type "opening" (T = 300 ° K, P = 0 Pa - excess pressure), the boundary condition of type "inlet" was set in the form of air flow taking into account its temperature. The boundary conditions were determined on all surfaces of the computational domain and included the conditions on the solid walls, at the inlet and outlet, the boundary conditions on the solid walls were determined from the condition of the flow adherence to the smooth adiabatic wall. The simulation results made it possible to achieve stable operation of the ejector by which the graphite is fed into the reaction chamber. The need to re-profile the chamber to provide a more stable vortex flow within the reaction chamber was detected to allow for the separation of expanded and unexpanded graphite, increasing the reaction time of the expansion, increasing the magnitude of thermal expansion of oxidized graphite, creation of a uniform thermal field in the reactor, which increased the sorption capacity of thermally expanded graphite.

Many women now have complications in childbirth due to poor labor, which often threatens both mother and fetus. Also,the problem of prevention and treatment of premature uterine contractions is unresolved. Therefore, in this work we investigated the influence of ion channels as the end stage effectors of the regulatory cascades in the contractility of myometrium. To better understand the participation of TRPC4, TRPV4 and BKCa ion channels in myometrial contractility, we conducted experiments, keeping in mind the fact that changes in ionic conductivity of the plasma membrane regulate spontaneous and agonist-induced contractions. On the myometrial preparations of pregnant rats usingisolated tissue tensiometry, the amplitude of contractile force was recorded under the activation of these ion channels by their selective agonists. Obtained results allow us to consider (-) – englerin A as a way to stimulate uterine contractions in case of insufficient response to oxytocin, because at a concentration of 1 nM a significant increase in contraction force was developed and did not differ statistically from the response to oxytocin or carbacholin. The use of an agonist at concentrations of 30-100 nM causes some suppression of contractility. Based on the results describing the role of TRPV4 channels, namely the reduction of uterine smooth muscle contractions in response to their selective agonist GSK1016790A administration, we suggest that the main effect of activation of these channels depends on the expression and activity of adjacent calcium-dependent potassium channels. Our experiments found that the use of the liposomal form of quercetin to activate BKCa channels inhibits the excitability of myometrial cells more effectively than that dissolved in DMSO, which is promising for the correction of premature or excessive uterine activity.

Ідеться про ефективність запровадження партисипативної моделі стратегічного розвитку місцевого самоврядування як інструменту забезпечення її спроможності. Визначено, що стратегічне планування розвитку місцевого самоврядування передбачає залучення до роботи над стратегічним документом широкого представництва місцевого середовища (представників основних верств міста, виконавчих органів влади, громадських організацій, бізнесу), діяльність яких спрямовано на визначення: майбутнього образу (бачення) міста, головних (стратегічних) цілей, досягнення яких забезпечить набуття містом визначеного громадою образу; планів дій, тобто логічних послідовних заходів, спрямованих на досягнення цих цілей із використанням спеціальних процедур.

The article is aimed at disclosing the features of European standards of staff management in the public service with the purpose of their implementation in Ukraine. The main problems that arise in the provision of quality services by the State authority bodies are identified. Two groups of European HR standards are allocated: 1) ISO 9000 Series Standards, TQM (Total Quality Management), EFQM model, CAF model, «Investors in People», SA 8000 «Social Accountability»; 2) standards that define innovative concepts, practices and approaches to the introduction of human resources technologies: management of talent and leadership, knowledge management, recruitment methods, plus: screening, headhunting, recruitment, Executive Search, LAB-profile methodology, flexible staff schedules, etc. The conception of introducing an information system for the management of human resources in the government bodies and a plan of actions to implement it was developed to introduce European standards and ensure an efficient management of human resources in the sphere of public service in Ukraine. The prospect of further research in this direction is to prove the necessity for reforms in other spheres of public administration.

Розроблено та обґрунтовано основні елементи авторської теорії неспостережуваної економіки. Методологічною основою дослідження став концептуальний підхід щодо визначення причинно-наслідкових зв’язків у репрезентативній економічній системі через ідентифікацію фактора неспостережуваних економічних процесів. Окремим елементом методології став підхід до опису моделі функціонування, динаміки та модернізації економічної системи за системною і флуктуаційною інтерпретацією, теорією катастроф, самоорганізації та синергії; зазначене розглядалося водночас як методологія прогнозування можливих змін об’єкта дослідження. Очевидно, що теорія неспостережуваної економіки дає додаткові можливості для формування нової архітектоніки відносин між основними економічними агентами, у т. ч. щодо морфогенезу взаємоузгоджених стратегій розвитку на довгострокову перспективу саме у контексті модернізації інституційного середовища. Логізація відповідної теорії дозволила сформувати як ключову тезу про те, що оптимізація функціонування економічної системи без створення комплексу ефективних стимулів, направлених на зменшення масштабів та / або частоти виникнення неспостережуваних економічних процесів, є неможливою.

The results of the study of the process of synthesis of vat dye from chemical components isolated from coke oven gas and resin after coking coal are shown. The schemes of reactions of obtaining intermediates for the synthesis of the dye are given. block diagrams of chemistry of technological operations are made, physicochemical color properties of this dye are studied.

Improved composition of final forms of cationic dyes and their mixtures in liquid form when mixed to expand the colors of such classes as azine, oxazine, acridine, triazole, triazine, benthiazole and polymethine with reduced foaming and increased resistance to storage of roses. The improved composition allows to expand the color range of mixed dyes for dyeing and printing of fabrics from polyacrylonitrile fiber with high quality indicators. Options for utilization of coke oven gas and resin components isolated from coal coking waste by synthesis of intermediates based on it for the synthesis of triarylmethane dyes are considered. The main directions of improvement of technology of their production for various areas of application are defined. The reactions of aniline, phenol, toluene and their derivatives, naphthalene from coke chemical resin with subsequent production of target dyes from yellow to blue and violet colors are shown. Physicochemical and technological features of the formed tungsten-molybdenum varnishes on the basis of cationic basic dyes are resulted.

The article is aimed at disclosing features of the budgetary financing of the State-guaranteed social services in Ukraine and defining development prospects, taking into account the emerging internal and external risks and available budgetary opportunities. Based on a study of the dynamics of the expenditures according to the Consolidated Budget of Ukraine for 2015-2018, the leading position of the expenditures for social needs is proved. The main macro-economic and institutional factors influencing the volume of budgetary financing for social services are defined. It is noted that the volumes of annual expenditures for the social sphere in Ukraine tend to increase year to year. However, distribution of expenditures by the State functions is fairly uneven and unreasonable. The structure of expenditures accounts for the largest share of social protection and social security, in particular the social protection of pensioners. The peculiarity of financing social services in Ukraine is that the lack of funds in the extra-budgetary Pension Fund of Ukraine is covered by transfers from the State budget, which contradicts the current norms of the budget legislation, renders the idea of building a cumulative pension system impossible, and reduces the possibilities of budgetary manoeuvre in favor of other social expenditure items, such as education and health. Prospect for further research in this direction is to reason the need for reforms in the sphere of budgetary policy, improving the mechanism of financial provision for social services guaranteed by the State through the gradual introduction of a cumulative pension system, compulsory health insurance and a gradual transition from the estimated financing of the providers of social services to another form of direct financing - order for social services.

The article analyzes the socio-economic problems and prospects of development of rural areas of Ukraine. The potential and possibilities of implementation of territorial branding models of such development are substantiated. The key role of the factor of opportunism of the economic agents of the domestic rural territories as restriction of development is defined. The model of typical conflict at implementing a universal project of territorial branding in accordance with the concept of public interest in the interpretation of the Pareto Effect is presented. The contents of brand management is substantiated with use of the istrumentarium of contract theory. The contents of a typical contract agreement at implementing the projects of branding of rural areas is developed. The peculiarity of the above mentioned is the achievement of managerial balance between the functions of planning and organization, motivation, control and sanctions, including self-improvement of contractual relations, as well as formalization of the above specified in terms of the corresponding settlement.

The article is devoted to the influence of protease of microbiological origin on the autolysis process in broiler chicken meat. Protease made by Aspergillus fungi was chosen as an enzym. According to the experiment plan, 5 samples were made, including a control sample, in which autolytic processes were performed without the addition of an enzyme. The experimental group (samples I–IV) included samples with 30, 50, 70 and 90 mg of the added enzyme solution, respectively, per 100 g of basic meat raw material. After introduction of the enzyme and parallel fixation of the studied control parameters before maturation, the samples were stored at 4–6 °C for 2 days. The selected physicochemical parameters were studied in all samples after 1 and 2 days of storage. Among the parameters studied, the following were selected: pH, water-holding capacity (WHC), water binding capacity (WBC), fat binding capacity (FBC), moisture content, and optical density by measuring of soluble and water-soluble proteins volume. Examenated transition of proteins from salt- to water-soluble experimental group also as their overall solubility is noticeably higher than in the control sample. Among the functional and technological characteristics, these samples have shown a high pH and WHC levels. The WBC, FBC and total water content show a slight increase. The values of the studied parameters among the samples I–IV have not shown a noticeable difference. For research minced meat at 48 hours of maturation compared with the control, the increase of WHC was accordingly from 16.4 to 18.4%, the value of the university increased by 9.1–19.1%, and FBC by 1.1–5.9%. At the same time, the change in the proportion of salt and algae protein substances of minced meat according to the optical density for 48 hours of maturation was equalized with the control and the variation of this index fluctuated within 1–2 units. A literature and studies sources review have shown the effectiveness of microbial-derived protease enhancement under the action of protease ASP on the functional-technological indices of white meat of broiler chickens. It has been determined that when injecting into broth from chicken broiler meat, ASP proteases in an amount of 30 to 90 mg per 100 g of raw materials, an increase in the thermal stability indices for FBC by 1.1–5.9%, in higher education institutions by 9.1–19.1%, which makes it possible to effectively model the increase in the functional and technological characteristics of minced meat from the amount of enzyme addition and maturation time.

The maximum density of monolayer packing on a graphene surface is calculated by means of molecular dynamics (MD) for ions of characteristic size and symmetry: 1-butyl-3-methylimidazolium [BMIM]+, tetrabutylammonium [TBA]+, tetrafluoroborate [BF4]−, dicyanamide [DCA]−, and bis(trifluoromethane) sulfonimide [TFSI]−. The characteristic orientations of ions in a closely packed monolayer are found. It is shown that the formation of a closely packed monolayer is possible for [DCA]− and [BF4]− anions only at surface charges that exceed the limit of the electrochemical stability of the corresponding ionic liquids. For the [TBA]+ cation, a monolayer structure can be observed at the charge of nearly 30 μC/cm2 attainable in electrochemical experiment.

In conditions of global information system development, when work on creation of software training resources has been transferred in the rank of priority tasks for Russian Federation’s education modernization, it’s really necessary for each high educational institution to develop its own e-learning tools that meet not only the Federal state educational standards, but also academic disciplines’ work programs approved by the higher educational institution, its industry-based specificity, as well as higher educational institution’s established traditions. This paper’s aim is to present the experience in development of e-learning tools for geometric and graphic disciplines of Saint Petersburg Mining University’s “Descriptive Geometry and Graphics" chair. In the paper has been carried out an overview of e-learning tools used in students training on geometric and graphic disciplines. Have been identified and analyzed visiting statistics and content for various websites of geometrical-graphic profile. Have been performed a patent search and analysis of available information on the Federal Institute of Industrial Property’s official website. Have been analyzed the current requirements for e-learning systems, based on which has been designed a software complex for students’ independent work in bachelor’s degrees 09.03.01 ("Information and Computer Science") and 11.03.04 ("Electronics and Nano-electronics"). The problems related to development of e-learning tools by Borland Delphi, and their features have been considered. Has been described an interface for computer program, and have been presented examples for modeling of typical tasks solved by students of listed bachelor’s degrees at Mining University’s “Descriptive Geometry and Graphics" chair. A structure and content of test questions’ database have been developed using the Microsoft Access database management system. Conclusions as well as software system’s further advanced development and improvement trends have been presented.

Today's Ukraine needs an optimum investment model, as those that exist are incapable of providing any restructuring of the national economy, or of solving local problems of the socio–economic crisis. Losing the bitter struggle for foreign investment will lead to Ukraine being displaced to the periphery of world capital markets and, consequently, to the economic reform program being curtailed. The level of investment security in Ukraine is still rather low. The investment climate prevailing in our country is failing to stimulate or attract direct and portfolio investment which is needed for a variety of functions, such as improve the investment climate in Ukraine, to increase investment activity and thus the level of investment security through the establishment of appropriate financial, economic, legal and methodological frameworks, and to concentrate resources on implementing an improved investment policy. This paper discusses the need to develop investment processes in Ukraine, taking into account its investment security. It characterizes national interests in the field of investment security and emphasizes that developing theoretical and methodological foundations for investment security is predicated on defining principles for investments in general. The paper also deals with the main thrusts of research into investment security, the approaches taken to determine the nature and content of the authors' hypothesis regarding the definition of "investment security" and its various classifications. Finally, the characteristics of the relationship between and interdependence of the components of investment security are addressed.

This study considers the expediency of combined duck meat of regional origin containing other types of raw materials with high protein value in meatcontaining sausages. The model for the studying of feasibility of combining duck meat of regional origin with other types of raw materials was a recipe for smoked sausage containing duck meat and pork, which also including pork fat and spices. The developed formulations contained meat of Peking duck, pork hearts, pork fat, soybean isolates, dry demineralized whey, chicken skin, and soluble dietary fiber. In the model samples of smoked sausage qualitative characteristics, indicators of microbiological safety, nutritional and biological value have been studied according to standard methods. The analysis of the results of the organoleptic evaluation confirms that the combination of Peking duck meat with raw materials of different origins containing protein enhances the appearance of the products, the taste and smell, the texture and the color. The study of the microbiological parameters of the sausages developed has indicated that the number of mesophilic aerobic and optional anaerobic microorganisms in all the tested samples was within the normal limits. The study of the number of bacteria of E. coli group has not detected these microorganisms in any of the samples. It has been proved that the developed variants of meat-containing smoked sausages contained high protein according to the analysis of the nutritional value of the products, low fat concentration and low-calorie foods. It has been confirmed that the duck meat can be combined with protein ingredients of different origins to increase the protein content in the developed products by 29.98 - 31.69%, to reduce the mass fraction of fat by 31.18-35.64%. The high biological value for the content of essential amino acids and the biological efficiency for the content of fatty acids of the ω-6 and ω-3 families have been confirmed. It has been determined that when Peking duck meat is combined with non-meat types of protein-containing raw materials (pork hearts, soybean isolate, dry demineralized whey) as a part of meat-containing smoked sausage, it allows producing nutritious products with high quality indicators.

This paper presents a comparative analysis of the parameters of the cardiovascular system of the female population of Ugra from the standpoint of chaotic and stochastic approaches. It was found that the chaotic dynamics of HRV parameters in a number of comparisons of groups of women indigenous and nonindigenous population shows belonging to the same general population, i.e. there is the uncertainty of the first order. Using neural network technologies allowed not only to identify the differences between the groups, but also to identify the relevant parameters of the order of HRV.
