Antibiotics have traditionally been used to prevent and treat common diseases in farm animals. However, residual antibiotics in dairy products and meat remain a serious public health problem, which is associated with antibiotic resistance. The research objective was to assess the impact of antibiotic contamination on the quality and safety of dairy products, the microbiological composition of milk, and antibiotic-resistant bacteria. The study featured six years of Russian and foreign scientific articles registered in PubMed (National Center for Biotechnology Information, USA), Scopus and ScienceDirect (Elsevier, the Netherlands), Web of Science (Clarivate, USA), and eLibrary.ru. The analysis involved 63 foreign and domestic sources. Residual antibiotics in milk inhibits the vital activity of lactic acid bacteria, which, in its turn, disrupts the technological process of yogurts, cheeses, etc. After such processing as normalization, pasteurization, and homogenization, antibiotics accumulate in fermented dairy products and bind with milk proteins and fats. Antibiotics, in their initial amount, enter yoghurts from dairy raw materials. In cheese production, antibiotics usually pass into the whey, but aminoglycosides, quinolones, and tetracyclines remain in the finished product because they bind with the protein fraction. The problem of biological safety of dairy products is associated with antibiotic resistance developed by human intestinal microbiota. This problem remains understudied, and the number of scientific papers on the matter is limited.

The modern food market is undergoing a period of rapid development following the changes in marketing technologies and consumer behavior patterns. Nowadays, people pay more attention to the quality and composition of food products, as well as their functional properties. The present article reviews the international and Russian market of functional foods in order to define the consumer demand for new specialized products. The methods included data comparison, grouping, and systematization. The analysis involved Russian and foreign papers published in 2018–2022 and registered in Scopus, eLibrary, Cyberleninka, and the Library of the Russian Foundation for Basic Research. It also covered the National Demography Project, the Healthy Nutrition Project, and the Strategy for Improving the Quality of Food Products through 2030. Consumers’ growing interest in improving their health and immune system proved to be the key factor in the functional food market. The COVID-19 pandemic intensified such trends as the priority of healthy, high-protein, and low-sugar foods. Japan and the USA are the current leaders on this market. Russia supports healthy food policy at the state level. The functional food market is likely to become the most promising and competitive sector of global food economy. Consumer demand for these products is steadily growing: the volume of demand for functional food products will reach 17 trillion rubles by 2027. However, Russian food science needs more research in this area to catalyze import substitution. The Omsk Agrarian University has numerous projects that are meant to increase the competitiveness of the domestic functional food industry.

The increase of functional food production makes the search for new non-traditional raw materials and the selection of methods for their processing relevant. Methods for obtaining biologically active substances of a lipid nature from valuable raw materials extracted from hunting animals (bear, badger, marmot and beaver) are of particular interest. The purpose of this review is to analyze the existing methods of obtaining rendered fat from raw fat and evaluate them. The objects of analysis were the data of scientific articles, patents and studies on the extraction of the lipid fraction from raw materials of animal origin from 2017 to 2021. In the work, various methods for extracting fats were considered. Their systematization, analyze, and description were carried out, indicating the advantages and disadvantages. The considered methods for extracting lipid components can be used in the process of rendering fat from non-traditional raw materials of animal origin. When using the dry rendering method, the heating of adipose tissue is carried out by the conductive method, which leads to oxidative processes and a decrease in the quality of the finished product. The wet rendering method is carried out by interacting raw fat with a heating agent – water or live steam, which, by varying the temperature and duration of exposure, allows to preserve the properties and quality of the product. Wet rendering methods are the most effective. These methods allow to obtain a high-quality finished product, as well as to produce the maximum yield of valuable lipid components of raw materials. To accelerate the technological process with the wet method of exposure, it is possible to use a biocatalytic method. The results of the research can be used in the development of schemes for obtaining biologically active substances of a lipid nature from valuable expensive raw materials extracted from hunting animals.

According to the World Health Organization, oncological diseases are a common cause of mortality in the population, as a result of which the development of measures aimed at the prevention of carcinogenesis is urgent. This study is devoted to obtaining a probiotic consortium consisting of bacteria isolated from the gastrointestinal tract of a healthy person, with the further prospect of its use in anticancer therapy in the form of a biologically active additive (BAA) in specialized food products. The object of the study was bacteria isolated from the feces of a healthy person, and consortia based on them. The identification of bacteria and the study of antimicrobial, antioxidant activity, antitumor properties, resistance to antibiotics, acidic medium and bile of bacteria and consortia based on them were carried out according to generally accepted methods. The results of the study are the formation of consortia of isolated and identified bacteria: № 1 – B. bifidum, B. breve, L. plantarum, L. acidophilus, № 2 – B. bifidum, B. breve, L. plantarum, L. fermentum, № 3 – B. breve, L. fermentum, S. salivarius, № 4 – B. breve, L. fermentum, S. thermophiles exhibiting probiotic properties. Consortium № 2 showed antimicrobial activity to the largest number of test cultures; moderate resistance to the largest number of antibiotics – № 1 and № 2; the highest antioxidant activity – № 1, the most pronounced anti-cancer properties in relation to HepG2, LBR2, MDA-MB-231, U87 and Panc-1 – № 4, and to MCF-7 – № 3; the greatest resistance to environments with low acidity and bile – № 2. According to the results of the study, it can be said that the isolated strains, like the consortia based on them, had antimicrobial, antioxidant activity, showed an antitumor effect, resistance to antibiotics, bile and an acidic environment, so that they can be used as probiotic agents in the form of dietary supplements and specialized lactic acid products for the prevention of carcinogenesis.

Introduction. Wild-crafting leads to the local extinction of many medicinal plants that are rich in phenolic substances. In vitro cultivation of cells and organs of higher plants can be the optimal solution to this problem. The research objective was to study the biosynthetic activity of in vitro extracts of wild Siberian plants. Study objects and methods. The study featured callus, cell suspension, and hairy root extracts of such Siberian medicinal plants as Eleutherococcus senticosus, Codonopsis pilosula, Platanthera bifolia, and Saposhnikovia divaricata. They were obtained by in vitro cultivation using modified nutrient media of Murashige and Skoog and Gamborg. The content of secondary metabolites was studied using the methods of thin-layer and high-performance liquid chromatography. A set of in vitro experiments tested the antioxidant and antimicrobial activity of the extracts. Results and discussion. All the samples demonstrated a high content of secondary metabolites of phenolic nature. Flavonoglycosides, apigenin, and rutin were found to be the predominant biologically active substances in the callus extracts. Flavonoglycosides dominated in the suspension extracts. The root extracts contained more caffeic acid, rutin, ecdysteroids, quercetin, apigenin, cardiofolin, and coleofolide than the callus and suspension cultures. The list of prevailing secondary metabolites in the root extracts included rutin, apigenin, coleofolide, and quercetin. All the extracts showed antimicrobial and antioxidant activity. Conclusion. All the extracts demonstrated good antioxidant and antimicrobial properties. Therefore, they can be used for the production of pharmaceuticals and biologically active food supplements as they can be helpful against infectious diseases, as well as oncological, cardiovascular, and neurodegenerative diseases linked to oxidative stress.

Introduction. Maltodextrins are a common dietary supplement with a number of positive properties. They consist of D-glucose units connected by a (1–4) glucoside bond. The research objective was to improve the existing technology of maltodextrin production based on potato and corn starch. Study objects and methods. Maltodextrins were obtained by enzymatic and acidic incomplete hydrolysis of potato and corn starch. Amilolux ATS and Glucolux A were used for enzyme hydrolysis, and sulfuric acid was used for acid hydrolysis. The finished product was obtained by spray drying. The sensory properties of the finished product were determined by standard methods. The method of high-performance liquid chromatography defined the hydrocarbon composition, while the method of dextrose equivalent helped to determine the reducing capacity of sugars. Results and discussions. The study improved the technique of the enzymatic breakdown of starch. Amylolysis ATS proved to be the optimal enzyme preparation in concentration of 0.5 mL/50 cm3). Other optimal parameters included the starch-splitting activity of 2,330.50 u/mL, temperature of hydrolysis of 65 ± 2°C, and pH reactions of pH 6.5. The method of spray drying proved most efficient for drying starch hydrolysates: the drying temperature and air flow was 100°C, while the flow rate of the solution was 12 mL/min). The experiment also established the dextrose equivalent of the finished product (12–13%) and the quantitative content of sugars in the obtained samples. For maltodextrins obtained from potato starch, the content of maltose and glucose was 16.73 ± 0.25% and 12.48 ± 0.050%, respectively; for corn maltodextrins – 40.22 ± 0.30% and 52.93 ± 0.040%. Conclusion. The market for food additives is developing rapidly. Maltodextrin is a natural food additive that can be used in various branches of food industry. The research made it possible to improve the technology of maltodextrin production in t dairy industry.

The Arctic is currently a strategic region of Russia and it requires military protection. Good nutrition is a prerequisite for successful performance of the servicemen in such extreme conditions. The Russian armed forces do not have a special ration for the Arctic region. The existing rations lack products enriched with biologically ac- tive substances, probiotics, prebiotics, or vitamin and mineral complexes. Subcaloric nutrition, even with short-term physical exertion, in combination with low temperatures deprives the human body of vitamins and minerals. There- fore, the development of freeze-dried bioproducts with functional properties is highly relevant. This article presents the results of a study aimed to develop new freeze-dried milk-based bioproducts for the Russian military in the Arc- tic. For this, we created a microbial consortium of lactic acid bacteria with a wide spectrum of antimicrobial activity. We also used a range of functional ingredients, namely pectin, pine nut meal, a ‘Lactobel’ prebiotic protein-and-car- bohydrate product, rowan puree, and rosehip syrup in the amounts established during the study. The new freeze- dried milk-based bioproducts named ‘Pobeda’, enriched with combiotics and metabiotics, will provide the Russian military with better nutrition in the extreme conditions of the Arctic.

The increasing shortage of fossil hydrocarbon fuel dictates the need to search for and develop alternative energy sources, including plant biomass. This paper is devoted to the study of the Miscanthus plants biomass potential and the analysis of technologies of its processing into products targeted at bioenergy, chemistry, and microbiology. Miscanthus is a promising renewable raw material to replace wood raw materials for the production of chemical, fuel, energy, and microbiological industries. Miscanthus is characterised by highly productive (up to 40 tons per one hectare of dry matter) C4-photosynthesis. Dry Miscanthus contains 47.1–49.7% carbon, 5.38–5.92% hydrogen, and 41.4–44.6% oxygen. The mineral composition includes K, Cl, N and S, which influence the processes occurring during biomass combustion. The total amount of extractives per dry substance lies in the range of 0.3–2.2 % for different extraction reagents. Miscanthus has optimal properties as an energy source. Miscanthus × giganteus pellets showed the energy value of about 29 kJ/g. For the bioconversion of plants into bioethanol, it is advisable to carry out simultaneous saccharification and fermentation, thus reducing the duration of process steps and energy costs. Miscanthus cellulose is of high quality and can be used for the synthesis of new products. Further research will focus on the selection of rational parameters for processing miscanthus biomass into products with improved physical and chemical characteristics: bioethanol, pellets, industrial cellulose, bacterial cellulose, carbohydrate substrate.

BACKGROUND: Human infectious diseases caused by antibiotic-resistant bacterial pathogens present a serious problem for clinical medicine. Causative agents of nosocomial infections, such as Escherichia coli, Klebsiella pneumoniae, Enterobacter spp., are the most common among them. An active search for antimicrobial agents that can effectively combat drugresistant pathogens is underway. Antimicrobial substances of bacterial origin are of particular interest. Promising sources of microorganisms with antibiotic properties are natural sources: Soil, water, plants, etc. AIM: The purpose of this work is to screen and characterize the antagonistic properties of microorganisms isolated from natural sources in connection with the creation of new pharmaceutical substances. METHODS: The material for the isolation of microorganisms was the soil, water bodies, and plant objects of various municipal districts of the Kemerovo Region. Identification of the isolated microorganisms was carried out using the methods proposed in the directory “Bergey’s Manual of Determinative Bacteriology” and in the monograph Nesterenko et al. The selection of strains from soil samples was carried out according to standard methods described in “Methods of soil microbiological control. Methodical recommendations,” cultural-morphological properties of isolates were studied using conventional microbiological methods. RESULTS: The following results are obtained: (1) Lactic acid bacteria and other microorganisms antagonists from natural sources were isolated: Soil, water bodies, and plant objects; 20 isolates were isolated, their cultural and morphological properties were studied; isolated microorganisms were found to belong presumably to the genera Bacillus, Leuconostoc, Pedio-coccus, Lactobacillus, and Bacteroides; (2) Antimicrobial properties of lactic acid bacteria and other antagonistic microorganisms isolated from natural sources on solid and liquid nutrient media were studied; (3) 12 strains of 20 isolates with maximum antimicrobial properties were selected for further studies. CONCLUSION: Further research on the biochemical properties of lactic acid bacteria and other antagonist microorganisms isolated from natural sources, the study of antibiotic resistance of lactic acid bacteria and other antagonist microorganisms isolated from natural sources, as well as other more detailed studies will be conducted with selected 12 strains with maximum antimicrobial properties.

Antibiotic contamination of water and food is a particularly important environmental worldwide problem. Antibiotics are found in water, soil, and food, which negatively affects both the environment and the health of the entire world’s population. Therefore, it is important to control the content of antimicrobials. To solve this problem, scientists are developing new and improving existing methods for these preparation determination. The paper considers the possibility of applying the technique of high-performance liquid chromatography with mass spectrometric detection for the determination of nitroimidazole group antibiotics in meat raw materials. The method was evaluated in terms of the main characteristics taken into account during validation: accuracy, reproducibility, linearity, and specificity. Studies conducted on pork muscle tissue samples showed the absence of antibiotics of this group in all samples, which meets the requirements of regulatory documents.

Lignin that is the main matrix for the humus formation in Phaeozems affect greatly the transformation of their organic matter. The aim of this work was a detailed characterisation of the lignin phenols composition and processes of their transformation in soils under the impact of soil plowing and drainage during the last 30 years. The objects of investigation were Greyic Phaeozems Albic of south of the Russian Plain. The process of lignin determination included the alkaline oxidation of a sample using copper oxide at 170 degrees under the pressure in a nitrogen medium. The lignin phenols were divided by a gas-luquid chromatograph. The proportions of lignin phenols in soils ploughed did not change under plowing. Drainage caused a deep transformation of lignin in soils and in the Fe-Mn nodules too. Lignin phenols are associated with the coarse sand fraction.

An important strategic objective of the food industry is to meet the demands of all categories of the population in high-quality, biologically valuable, and safe food. At present, structured products based on dairy raw materials are commonly used. Food materials used to generate the necessary rheological properties or modify the existing properties for food systems that adjust or form the consistency of food products are referred to as structure- stabilizing agents. Both individual ingredients and complex mixtures thereof can be structure-stabilizing agents. The use of these agents contributes to an increase in the density and to the formation of a specific structure of the food product, which is retained even after heat treatment. In this study, the composition and properties of structure- stabilizing agents for products based on dairy raw materials have been analyzed. The following characteristics have been selected to examine: bulk density, viscosity, the fraction of undissolved residue, microvoid content, specific volume, specific surface area, and characteristic diameter. The dynamics of structural changes that occur during the interaction with the solvent have been analyzed from micrographs. The weight fraction of chemical elements (oxygen, nitrogen, carbon, sodium, chlorine) has been determined via analyzing the spectrophotometric profile.

In recent years, the problem of processing and rational use of the secondary raw materials of the meat industry is becoming relevant all over the world. Pork skin or wastes accumulate in significant quantities at meat-packing plants and slaughter houses in livestock farms. There are various technologies for processing collagen-containing raw materials, but their widespread introduction to enterprises is constrained by high cost. One of the effective approaches to solving this problem is the processing of collagen-containing wastes of pig complexes by biotechnological methods. For these purposes, compositions of consortia based on yeast have collagenase activity: Clavispora lusitaniae Y-3723, Candida utilis Y-263, Candida lipotica Y-3153, Candida lipotica Y-3157, Candida arthrobotrys F-1138. The compositions of nutrient media for co-cultivation of yeast were selected: temperature, pH, duration of cultivation. It was found that the degree of biodegradation of collagen-containing raw materials under the action of the consortia is 89.7%. The mass fraction of protein in the hydrolysates of collagen-containing raw materials is 78.15%, which opens prospects for their use as feed for farm animals.

Investigation of the composition and microstructure of dietary fiber derived from plants showed that the stabilizers investigated differ with regard to size and shape of the particles and the density of particle distribution. The composition and microstructure of dietary fiber derived from plants have been studied using electron microscopy. Spectrometric profiles of chemical composition have been obtained, and the content of the predominant chemical elements in food microstructure stabilizers has been determined. Some similarity concerning the content of certain chemical elements and the ratio of the contents of different elements has been detected upon the analysis of food structure stabilizers of the same type (carboxymethylcellulose, gum, and sodium pyrophosphate). Mathematical processing of photomicrographs of structure stabilizer samples has been performed, and masks for the assessment of the content of microcavities in the particles of the structure stabilizers investigated have been created.
