The objective of this work was to assess the morphophysiological characteristics and the ionic imbalance in the substrate, roots, and leaves of young oil palm (Elaeis guineensis) plants under different levels of saline stress, following a substrate salinization protocol in which the level of salt was known. Bifid oil palm plants were subjected to different NaCl rates (0.0, 0.5, 1.0, 1.5, and 2.0 g NaCl per 100 g substrate on a dry basis), and their morphophysiological responses were evaluated for a period of 12-14 days. This protocol generated different levels of stress due to the gradients of electrical conductivity and water potential in the saturation extract of the substrate, according to the added NaCl. Based on the rates of real evapotranspiration and leaf gas exchange, the osmotic effect of the salt reflected negatively on leaf temperature, on the chlorophyll content index, and on the chlorophyll fluorescence variables. The increase in Na and Cl levels in the saturation extract culminated with the increasing availability of Ca, K, and Mg in the solution and their accumulation in the leaves. However, the plants poorly absorbed Na and Cl. The obtained results are indicative that, for a better characterization of the osmotic and ionic phases of salinity stress, it is necessary to reduce the applied level of salinity stress and to increase the evaluation period. Resumo: O objetivo deste trabalho foi avaliar as características morfofisiológicas e o desequilíbrio iônico no substrato, nas raízes e nas folhas de plantas jovens de dendezeiro (Elaeis guineensis) sob diferentes níveis de estresse salino, seguindo protocolo de salinização do substrato em que o nível de sal era conhecido. Plantas bifídicas de dendezeiro foram submetidas a doses distintas de NaCl (0,0, 0,5, 1,0, 1,5 e 2,0 g de NaCl por 100 g de substrato em base seca), e suas respostas morfofisiológicas foram avaliadas por um período de 12 a 14 dias. Este protocolo gerou diferentes níveis de estresse devido aos gradientes de condutividade elétrica e potencial hídrico no extrato de saturação do substrato, de acordo com o NaCl adicionado. Com base nas taxas de evapotranspiração real e nas trocas gasosas foliares, o efeito osmótico do sal refletiu negativamente na temperatura da folha, no índice de conteúdo de clorofila e nas variáveis de fluorescência da clorofila. O aumento nos níveis de Na e Cl no extrato de saturação culminou com o aumento da disponibilidade de Ca, K e Mg na solução e com o seu acúmulo nas folhas. No entanto, as plantas pouco absorveram Na e Cl. Os resultados obtidos são indicativos de que, para uma melhor caracterização das fases osmótica e iônica do estresse salino, deve-se reduzir o nível de estresse salino e aumentar o período de avaliação.

One of the main obstacles for food production in many developing countries, as in Brazil, is the damage caused by root-knot nematodes, mainly those belonging to the genus Meloidogyne. This study aimed to assess the resistance levels of 44 sweet potato genotypes to M. javanica, M. incognita race 1 and M. enterolobii. These researches were carried out in 2014, under greenhouse conditions in Brasília-DF, Brazil. A completely randomized design with six replicates of one plant/plot/treatment was used. We determined the gall index (GI) and egg mass index (EMI) in the root system of each plant, the number of eggs and juveniles per gram of root with galls and the nematode reproduction factor. M. javanica was less aggressive and reproduced in only 9.09% of the evaluated genotypes; M. incognita race 1 was intermediate (47.73%); whereas M. enterolobii was more aggressive, with a population increase in 79.55% of the genotypes. The genotypes CNPH 1200, CNPH 1219, CNPH 1292, CNPH 1392, CNPH 60 and ‘Coquinho’ were the most resistant to the three species and can be used in breeding programs for multiple resistance to root-knot nematodes. RESUMO Um dos principais obstáculos para a produção de alimentos em muitos países em desenvolvimento, como no Brasil, é o dano causado por fitonematoides, principalmente os formadores de galhas, pertencentes ao gênero Meloidogyne. O trabalho teve como objetivo avaliar o nível de resistência de 44 genótipos de batata-doce a M. javanica, M. incognita raça 1 e M. enterolobii. O experimento foi realizado em 2014, em casa de vegetação, em Brasília-DF. Utilizou-se o delineamento inteiramente casualizado, com seis repetições, constituindo-se de uma planta por tratamento. Foi determinado o índice de galhas (GI) e de massas de ovos (EMI) no sistema radicular de cada planta, quantificado o número de ovos e juvenis por grama de raiz e parte da raiz tuberosa com galhas e efetuado o cálculo do fator de reprodução dos nematoides. Verificou-se que M. javanica foi menos agressivo e se reproduziu em apenas 9,09% dos genótipos avaliados. M. incognita raça 1 foi intermediário, com 47,73%; enquanto que M. enterolobii foi mais agressivo, com aumento populacional em 79,55% dos genótipos. Os genótipos CNPH 1200, CNPH 1219, CNPH 1292, CNPH 1392, CNPH 60 e ‘Coquinho’ foram os mais resistentes às três espécies avaliadas, podendo ser utilizados no melhoramento visando à resistência múltipla aos nematoides-das-galhas.

Carotenoids were extracted from pressed palm fiber using supercritical CO2 and microencapsulated by spray-drying with gum Arabic. Twenty-eight tests were made. Emulsions were characterized with respect to droplet size and viscosity. The effects of solid content and spray-drying conditions on moisture, hygroscopicity, microencapsulation efficiency, and powder lipid oxidation were investigated. Particles produced at optimized process (35% of solids, feed flow of 26%, temperature of 166 °C, and atomization air flow of 40 mm) were evaluated for major carotenoids identification and fatty acid profile. Higher solid content led to higher encapsulation efficiency and lower lipid oxidation, which was related to the higher emulsion viscosity and lower droplet size. Increasing atomization air flow and temperature resulted in higher lipid oxidation. Moisture increased and higroscopicity decreased when higher feed flow and lower temperature were used. Microparticles presented high content of monounsaturated fatty acids, α-, β-, and (9Z)-β-carotene and reflected the composition of un-encapsulated oil.

O objetivo deste trabalho foi avaliar caracteristicas agronomicas de clones de batata-doce mantidos no Banco de Germoplasma da Embrapa Hortalicas.

Studies on the determination of genetic divergence among genotypes are important tools in breeding programs, contributing to the identification of parents with considerable productive potential. However, little is known about the combinatorial capacity of sweet potato (Ipomoea batatas) accessions and its adaptation to the different regions of Brazil. The objective of this study was to evaluate the morpho-agronomic traits from 102 sweet potato accessions from the Germplasm Bank of Embrapa Hortaliças. The experiment was laid out as an augmented block design comprised of 102 treatments. Nineteen above ground traits were measured using descriptors for the respective parts. Estimated values of broad sense heritability were high for the traits mean branch length (95.75%), immature leaf color (85.06%), and predominant branch color (90.57%). Coefficients of environmental variation were below 30.00% for all variables, except for branch weight (51.62%). The 102 clones analyzed presented broad genetic variability for the different traits evaluated, especially for branch weight, and branch length, and mature leaf color. Estudos de determinação de divergência genética entre genótipos são ferramentas de grande importância em programas de melhoramento, auxiliando na identificação de genitores com considerável potencial produtivo. No entanto, pouco ainda se sabe sobre a capacidade combinatória de acessos de batata-doce (Ipomoea batatas) e sobre a adaptação a diferentes regiões do Brasil. O objetivo deste trabalho foi avaliar características agronômicas de 102 acessos de batata-doce mantidos no Banco de Germoplasma da Embrapa Hortaliças. O experimento foi instalado utilizando o delineamento em blocos aumentados, com 102 tratamentos. Foram mensuradas 19 características da parte aérea utilizando-se descritores das respectivas partes. Os valores das estimativas de herdabilidade no sentido amplo foram altos para as características comprimento médio das ramas (95,75%), cor da folha imatura (85,06%) e cor predominante da rama (90,57%). Os coeficientes de variação foram inferiores a 30 % para todas as variáveis, exceto para peso das ramas (51.62%). Os 102 clones analisados apresentaram ampla variabilidade genética para as diferentes características avaliadas, principalmente para peso das ramas, comprimento das ramas e cor da folha madura.

O conhecimento da divergência genética disponível em um conjunto de genótipos é de grande importância em programas de melhoramento, por evitar recombinações gênicas semelhantes, com consequente aumento da expressão heterótica em híbridos e de ganhos genéticos em gerações segregantes. Objetivou-se caracterizar morfoagronômicamente 23 genótipos de batata-doce do banco ativo de germoplasma mantido na Embrapa Hortaliças; utilizar estas características para avaliar a variabilidade genética entre os materiais pela aplicação dos métodos de Análise por Agrupamento Hierárquico (AAH) e Análise por Componentes Principais (PCA) e estimar parâmetros populacionais. O experimento foi conduzido na Fazenda Água Limpa da UnB, em Brasília-DF. Os materiais foram cultivados em condições de campo no delineamento em blocos ao acaso com quatro repetições. Foram avaliados 8 caracteres das raízes. Os coeficientes de variação genética (CVg) e ambiental (CVe), a herdabilidade no sentido amplo (ha 2) e a razão CVg/CVe indicaram uma situação favorável para a seleção das características produtividade comercial, produtividade total, diâmetro e comprimento das raízes. Constatou-se que a maioria dos materiais genéticos avaliados é similar com relação aos descritores morfoagronômicos utilizados. Contudo, os cruzamentos entre genitores dissimilares como o clone CNPH 69, o qual destacou-se por sua alta produtividade comercial e total; o clone CNPH 80, que exibiu bom formato e moderada resistência aos insetos de solo e o clone CNPH 60, que apresentou raízes com diâmetro de batata-doce do tipo extra A, podem ser indicados para compor programas de intercruzamentos, visando obter genótipos superiores.

American oil palm [Elaeis oleifera (Kunth) Cortes] is known to present a much slower palm oil deterioration rate than African oil palm (E. guineensis Jacq.). In the present study, fatty acid composition, total carotenoids, oil content, and free fatty acid content were characterized for five accessions (Careiro, Anori, Manicoré, Coari, and Autazes) belonging to an American oil palm collection maintained as field gene bank by Embrapa. This germplasm collection was originally collected in different areas in the Brazilian Amazon forest. These accessions were subjected to different storage times (1, 7, and 14 d) before processing to evaluate the quality of the oil produced. Oil content of the dried pulp was found to range between 31.36 and 50.34%. Gas chromatographic analysis revealed that oleic acid is the predominant monounsaturated fatty acid in all five accessions. After 14 d of fruit storage, these accessions were found to maintain low acidity (free fatty acid content), between 1.33 and 2.66%. Total carotenoid content was presented in high concentrations in all five accessions (>1500 mg kg−1). The estimation of genetic parameters showed, in general, high heritability values (>80%), and the estimated genetic gains were generally very high. Coari and Careiro presented the highest oil yields, whereas Manicoré and Coari presented the lowest acidity. This work aimed to study the effect of emulsion properties on the microencapsulation of orange essential oil by spray drying. The study was performed using a 2 central composite design, where the independent variables were the total solid content (0-30%), the ratio of oil/total solids (0-30%) and the homogenization pressure used for emulsification (0-1000 bar). Whey protein concentrate and 20 DE maltodextrin, mixed in a 1:3 ratio, were used as wall materials. The emulsions were first prepared by blending the oil and the wall solution, using a rotor-stator blender; they were further emulsified using a high pressure homogenizer. All emulsions were characterized for viscosity and droplets mean diameter. Microencapsulation was performed in a laboratory scale spray dryer and particles were characterized for total and surface oil content. From these results, encapsulation efficiency and oil retention were calculated and analyzed as responses, being used for process optimization. In general, the best process responses were obtained at moderate homogenization pressures (400-650 bar), in which emulsions had the smallest droplet diameters. Higher solid content and lower oil concentration resulted in higher encapsulation efficiency and greater flavor retention, which was attributed to the higher viscosity and smaller droplet size presented by the emulsions produced under these conditions.

A batata-doce é uma importante cultura tuberosa cultivada em regiões tropicais, subtropicais e temperadas do mundo. É conhecida como uma excelente fonte de vitaminas do complexo B, ácido ascórbico, α-tocoferol, fibra dietética, minerais e polissacarídeos. Adicionalmente, algumas variedades são rica fonte de fitoquímicos, como o β-caroteno, precursor da vitamina A e antocianinas, compostos fenólicos que apresentam diversas funções fisiológicas no organismo humano. Contudo, vários fatores são limitantes para a produção da cultura; dentre eles, a ocorrência de insetos de solo e nematoides, que danificam severamente as raízes tuberosas, depreciando a sua aparência e provocando danos diretos à produção. Foram realizados três experimentos em campo com o objetivo de avaliar características morfoagronômicas e físico-químicas e a resistência a insetos de solo de clones de batata-doce; e um experimento em casa de vegetação visando avaliar a reação de genótipos de batata-doce à infecção por M. javanica, M. incognita raça 1 e M. enterolobii em Brasília - DF. No primeiro ensaio foram estudados 23 genótipos, sendo avaliados 17 caracteres morfoagronômicos e físico-químicos das raízes. Constatou-se que a maioria dos materiais genéticos avaliados foram similares com relação aos descritores utilizados. Porém há possibilidade de obtenção de variabilidade genética e genótipos superiores, cruzando-se genitores dissimilares como o clone CNPH 69, que se destacou por suas altas produtividades comercial e total; o clone CNPH 59, que apresentou altas produtividades e altos teores de matéria seca e de sólidos solúveis totais; o clone CNPH 80, que exibiu bom formato e moderada resistência aos insetos de solo; a cultivar Brazlândia Rosada, que apresentou altos teores de amido e alta produtividade e o acesso CNPH 55, que mostrou o maior teor de proteína e alto teor de fibra bruta. No segundo experimento foram caracterizados morfoagronomicamente 26 genótipos de batata-doce. Posteriormente avaliaram-se as características físico-químicas de 13 materiais. As cultivares Brazlândia Roxa, Beauregard, BRS Rubissol, Princesa e Brazlândia Branca e os clones CNPH 60, CNPH 46, CNPH 1796 e CNPH 08, com altas produtividades, atingiram mais de 80% de raízes comerciais. Os clones CNPH 1796, CNPH 80, CNPH 08 e CNPH 05 mostraram aptidão para mesa. Os acessos CNPH 69 e CNPH 66 podem ser boas alternativas para processamento industrial ou alimentação animal. Os clones CNPH 05, CNPH 1232 e a cultivar Beauregard proporcionaram os maiores teores de fibra bruta. Os genótipos CNPH 05, BRS Rubissol, Beauregard e CNPH 1796, destacaram-se com relação aos conteúdos mais elevados de proteína bruta. Foi observado na cultivar Brazlândia Roxa o maior rendimento de amido. As maiores concentrações de carotenoides foram observadas nos genótipos Beauregard, BRS Amélia e CNPH 1232. No terceiro ensaio foi avaliado o desempenho morfoagronômico de 30 genótipos de batata-doce. Verificou-se que os clones CNPH 1232, CNPH 1357, CNPH 1298, CNPH 1197 e CNPH 1208 e as cultivares Beauregard e Brazlândia Branca destacaram-se quanto ao rendimento total de raízes. Os clones CNPH 1310 e CNPH 1192, com altas produtividades totais, apresentaram suscetibilidade aos insetos de solo e os formatos menos desejáveis. As características produtividade comercial, número de raízes comerciais por planta, produtividade total, comprimento, diâmetro, porcentagem de raízes comerciais, formato e número total de raízes por planta, evidenciaram alta presença do componente genético na expressão destes caracteres e grande possibilidade de sucesso com a seleção. No quarto experimento o trabalho objetivou avaliar o nível de resistência de 44 genótipos de batata-doce aos nematoides-das-galhas do gênero Meloidogyne (M. javanica, M. incógnita raça 1 e M. enterolobii). A classificação dos níveis de resistência foi realizada de acordo com o fator de reprodução dos nematoides. M. javanica foi a espécie menos agressiva infectando 9,09% dos genótipos. A raça 1 de M. incognita reproduziu-se exitosamente em 47,73% dos materiais. M. enterolobii foi a espécie mais virulenta tendo como hospedeiros suscetíveis 79,55% dos clones avaliados. Dos 44 genótipos de batata-doce avaliados, 52,27% foram resistentes a M. javanica e M. incognita raça 1; 18,18% foram resistentes à infecção por M. javanica e M. enterolobii e 13,64% foram resistentes a M. incognita raça 1 e M. enterolobii e simultaneamente a M. javanica, M. incognita raça 1 e M. enterolobii. As correlações entre a resistência à infecção por M. javanica, M. incognita raça 1 e M. enterolobii e as cores da periderme e da polpa dos tubérculos não foram estatisticamente significativas. Sweet potato is an important tuberous crop grown in the tropics, sub-tropics and warm temperate regions of the world. It is known as an excellent source of B vitamins, ascorbic acid, α-tocopherol, dietary fiber, minerals and polysaccharides. Additionally, some varieties are rich source of phytochemicals, such as β-carotene, vitamin A precursor and anthocyanins, phenolic compounds which show various physiological functions in the human body. However, several factors are limiting for the production of the culture; among them, the occurrence of soil insects and nematodes, which severely damage the tuberous roots, depreciating their appearance and causing direct damage to the production. Three experiments were conducted, with the objective of evaluating morphoagronomic and physicochemical characteristics and the resistance to soil insects of sweet potato clones; and one experiment in greenhouse to evaluate the reaction of sweet potato genotypes to infection by M. javanica, M. incognita race 1 and M. enterolobii in Brasília - DF. In the first experiment, 23 genotypes were studied, being evaluated 17 morphoagronomic and physicochemical characteristics of the roots. It was found that the most of the genotypes analyzed is similar with respect to the descriptors used. However, it is possible to obtain genetic variability and superior genotypes, crossing genetically dissimilar parents as the CNPH 69 clone, which stood out for its high marketable and total yield; the CNPH 59 clone, which in addition to its high productivity showed high content of dry matter and total soluble solids; the CNPH 80 clone, which exhibited good shape and moderate resistance to soil insects; the Brazlândia Rosada cultivar, which showed high levels of starch and productivity and the CNPH 55 access; which showed the highest protein content and high crude fiber content. In the second experiment were characterized morpho-agronomically 26 sweet potato genotypes. Subsequently, the physicochemical characteristics of 13 materials were evaluated. The Brazlândia Roxa, Beauregard, BRS Rubissol, Princesa and Brazlândia Branca cultivars and the CNPH 60, CNPH 46, CNPH 1796 and CNPH 08 clones, with high total yield, reached more than 80% of marketable roots. The CNPH 1796, CNPH 80, CNPH 08 and CNPH 05 clones showed suitability for human consumption. The CNPH 69 and CNPH 66 accessions can be good alternatives for industrial processing or animal feed. The CNPH 05, CNPH 1232 clones and the Beauregard cultivar provided the highest crude fiber contents. The CNPH 05, BRS Rubissol, Beauregard and CNPH 1796 genotypes, stood out in relation to the highest crude protein contents. The Brazlândia Roxa cultivar showed the highest yield of starch. The highest total carotenoids content were observed in the Beauregard, BRS Amélia and CNPH 1232 genotypes. In the third experiment the morphoagronomic performance of 30 sweet potato genotypes was evaluated. It was found that the CNPH 1232, CNPH 1357, CNPH 1298, CNPH 1197 and CNPH 1208 clones and the Beauregard and Brazlândia Branca cultivars, stood out in relation to the total yield of roots. The CNPH 1310 and CNPH 1192 clones, with high total yields, showed susceptibility to soil insects and the less desirable shapes of roots. The characteristics marketable yield, number of marketable roots per plant, total yield, length, diameter, percentage of marketable roots, shape and total number of roots per plant, showed high presence of the genetic component in the expression of these characteristics and great possibility of successful with the selection. In the fourth experiment, the study aimed to evaluate the resistance level of 44 sweet potato genotypes to root-knot nematodes of the genus Meloidogyne (M. javanica, M. incognita raça 1 e M. enterolobii). The classification of the resistance levels was defined by the nematodes reproduction factors. M. javanica was the less aggressive specie infecting 9.09% of the genotypes. M. incognita race 1 reproduced successfully on 47.73% of the materials. M. enterolobii was the most virulent specie, which had as susceptible hosts 79.55% of the clones. Among the 44 sweet potato genotypes studied, 52.27% were resistant to M. javanica and M. incognita race 1; 18.18% were resistant to the infection by M. javanica and M. enterolobii and 13.64% were resistant to M. incognita race 1 and M. enterolobii and simultaneously to M. javanica, M. incognita race 1 and M. enterolobii. Correlations between the resistance to the infection by M. javanica, M. incognita race 1 and M. enterolobii and the colors of periderm and flesh of storage roots were not statistically significant.

Inicialmente foram realizados alguns testes para fixar a temperatura do ar de secagem e a vazão mássica da alimentação, com base na maior retenção de óleo, fixando-se o teor de sólidos em 30% e o teor de óleo em relação aos sólidos em 20%. A partir das condições selecionadas nessa primeira etapa (temperatura do ar de secagem de 190°C e vazão mássica de 0,8 L/h), foram avaliadas as variáveis concentração de sólidos, concentração de óleo em relação aos sólidos e pressão de homogeneização da emulsão, através de um delineamento experimental composto central rotacional 23, usando misturas de concentrado protéico do soro de leite com maltodextrina, em uma proporção 1:3 como material de parede, sobre as seguintes respostas: tamanho médio das gotas da emulsão, viscosidade, higroscopicidade, umidade, atividade de água, densidade aparente, óleo retido na emulsão e no pó, óleo superficial, eficiência de encapsulação e retenção de óleo. Nas condições selecionadas do planejamento nesta segunda etapa (30% de sólidos totais, 15% de óleo em relação aos sólidos e 650 bar) foi avaliado o efeito do número de passagens (1, 2, 3 e 4 passagens) da emulsão pelo homogeneizador a alta pressão sobre as características do pó. O aumento do número de passagens pelo homogeneizador reduziu o tamanho das gotas da emulsão até a segunda passagem, acima da qual houve excesso de processamento da emulsão e as gotas coalesceram resultando em tamanhos maiores. Embora com o aumento do número de passagens da emulsão, através do homogeneizador, o teor de óleo superficial tenha diminuiudo, também diminuíram o óleo retido na emulsão, a eficiência de encapsulação e a retenção de óleo. Nas mesmas condições selecionadas no planejamento, foram avaliadas diferentes misturas de materiais de parede (concentrado protéico de soro de leite: maltodextrina DE 20 e goma arábica: maltodextrina DE 20) em diferentes razões (3:1, 1:1 e 1:3) ou puros (concentrado protéico de soro de leite e goma arábica). O emprego de diferentes materiais de parede resultou em alterações na viscosidade, tamanho da gota da emulsão, higroscopicidade, densidade, microestrutura das partículas, eficiência de encapsulação e retenção de óleo. Na etapa seguinte do trabalho, avaliou-se a estabilidade das microcápsulas produzidas com diferentes materiais de parede sobre a retenção do d-limoneno e a estabilidade oxidativa das partículas quando armazenadas a 40°C, durante cinco semanas, em uma umidade relativa de 32%. O nível de oxidação foi avaliado com base no teor de limoneno-1,2-epóxido e carvona. Finalmente foi calculado o tempo de vida média das partículas com base no teor de limoneno encapsulado. As microcápsulas de óleo de laranja com matrizes constituídas por altos teores de concentrado protéico do soro de leite apresentaram a maior estabilidade oxidativa, durante o armazenamento a 40°C Abstract: This work aimed to study the microencapsulation of orange essential oil by spray drying. Initially some tests were performed to determine the air drying temperature and feed flow rate based on higher oil retention, settling the solids as 30% and the relation oil-solids as 20%. From the conditions selected in the first stage (drying temperature of 190 ° C and mass flow of 0.8 L/h) solids concentration, oil concentration in relation to solids and homogenization pressure of the emulsion were evaluated, through a central composite experimental design 23, using mixtures of whey protein concentrated with maltodextrin at a ratio 1:3, as wall material, on the following responses: average size of droplets of the emulsion, viscosity, hygroscopicity, moisture, water activity, bulk density, withholding oil emulsion, oil trapped in the dust compared to the emulsion, oil surface, encapsulation efficiency and oil retention. Under the conditions selected in the second stage of the experimental design (30% total solids, 15% oil in relation to solids and 650 bar) it was evaluated the effect of the number of passages (1, 2, 3 and 4 passes) of the emulsion by high pressure homogenizer on the characteristicas of the powder. The increase in the number of passes dropped by homogenizer reduced the emulsion droplet size until the second passage, above which there was an over-processing and emulsion droplets coalesced, resulting in larger sizes. Although the increase in the number of emulsion passes through the homogenizer the surface oil content decreased also decreased the oil retained in the emulsion, the encapsulation efficiency and oil retention. Under the same conditions described in the planning different mixtures of wall materials (whey concentrate, maltodextrin DE 20 and gum arabic: maltodextrin DE 20) at different ratios (3:1, 1:1 and 1:3) or pure state (whey protein concentrate milk and gum arabic) were evaluated. The use of different wall materials resulted in changes in viscosity, emulsion droplet size, hygroscopicity, density, microstructure of the particles, encapsulation efficiency and oil retention. In the next stage of the study it was evaluated the stability of the microcapsules produced with different wall materials on the retention of d-limonene and oxidative stability of the particles when stored at 40 °C for five weeks in a relative humidity of 32%. The level of oxidation was evaluated based on the content of limonene-1,2-epoxide and carvone. Finally, it was calculated the average shelf life of particles based on the content of limonene encapsulated. The microcapsules of orange oil with matrices consisting of high levels of protein concentrate of whey showed the highest oxidative stability during storage at 40 °C, showing the lowest levels of formation of carvone and limonene-1,2-epoxide Mestrado Engenharia de Alimentos Mestre em Engenharia de Alimentos
