The aim of this study was to evaluate the influence of extrusion process variables on the resistant starch content (RS) in a sample of rice snacks with added chicory root (addition: from 20-40%). The effect of different levels of feed moisture (16.3 to 22.5%) and screw speed (500 to 900) rpm, as well as chicory root addition, during extrusion cooking on the resistant starch content of extruded products, was investigated. Results of our experiments have demonstrated a decrease in the resistant starch content after extrusion, which is also observed in some other studies. The resistant starch content was in a range of 0.1302 g/100g to 0.5302 g/100g. According to Yoon's model, the screw speed had the greatest negative influence, while the increased feed moisture had a positive effect on resistant starch content, as well as the share of chicory addition.

This study was conducted to investigate the effect of the addition of buckwheat flour, as well as the influence of buckwheat grain pretreatment, on betaine content in wholegrain wheat pasta. The buckwheat is traditionally used in the human diet for centuries due to its nutritional benefits and positive effect on health such as plasma cholesterol level reduction, anticancer and anti-inflammatory activity. On the other side, betaine is a bioactive compound naturally present in cereals and pseudocereals, important for demethylation of homocysteine to methionine which mainly occurs in the liver. The single screw extruder was used for the production of wholegrain wheat pasta as a control sample and pasta in which wholegrain wheat flour was substituted with one of two types of wholegrain buckwheat flour (autoclaved wholegrain buckwheat flour and flour without treatment), with a level of substitution from 10 to 30%. High-performance liquid chromatography with evaporative light scattering detector (ELSD) was used to analyze betaine content in different pasta samples. Betaine content in wholegrain wheat pasta was 30.07 mg/100 g f.w. (i.e. 34.92 mg/100 g d.w.) and the highest content of betaine in pasta enriched with wholegrain buckwheat flour was detected in a sample with 10% flour substitution (21.63 mg/100 g, apropos 24.22 mg/100 g d.w.) compared to other levels of substitution. Following the presented results, autoclaving pretreatment of buckwheat grain prior to buckwheat flour production did not show important differences in betaine content when pasta made with this type of flour was compared with pasta made with untreated buckwheat flour. 4. Physico-chemical properties of corn-based snack fortified with raspberry seeds

This study was carried out in order to evaluate the effect of extrusion conditions on the physico-chemical properties of corn grits-raspberry seeds snacks. The raspberry seeds were chosen to fortify the corn-based snack due to their richness in ellagic acid, a natural phenol antioxidant which has a beneficial effect on human health. Extrudates were prepared using a laboratory single-screw extruder, operated at different conditions. Box-Behnken experimental design was used to evaluate the impact of processing variables: moisture content (18-25%), temperature of extrusion (100-200 °C) and content of raspberry seeds (0-20%) on expansion index, hardness and ellagic acid content. Snack with the highest expansion (2.15) was obtained under 18% moisture, 150 °C temperature and 0% of raspberry seeds content. The highest content of ellagic acid (609.54 mg/kg) was reported in the samples with 20% of raspberry seeds, 100 °C temperature and 21.5% moisture. Extrudates obtained under conditions of 0% raspberry seeds, 100 °C temperature and 21.5% moisture showed the highest hardness value (53.34 kg). It was concluded that changing one or more parameters in the extrusion process can significantly affect the characteristics of the obtained product, and that raspberry seeds have a great potential in food fortification.

Sugar beet molasses represents the most important by-product in the sugar beet industry which can be valorised through various methods due to very valuable composition. Standard beet molasses composition consists of sugar, nonsugar components and water. Furthermore, beet molasses normally contains betaine in the range from 3 to 8%/DM. Betaine is an important nonsugar component which is not eliminated during the production of sugar, so it accumulates in the molasses and could be obtained through separation process on an industrial chromatographic columns. The main objective of this research was to increase betaine content in betaine fractions and lower other impurities by applying different pretreatments before final separation process. Samples composition was characterized by using the HPLC technique and the quantification was performed by applying external standard method with betaine as a standard. Separation techniques used in this research were: (I) separation method without pretreatment (II) separation with preceded acidification (samples pH value adjustment) and (III) separation with alcohol fermentation as previous treatment. Betaine content in the starting sample was 62.76%/DM. The highest increase in betaine content was achieved by using separation method without pretreatment having final betaine content of 85.16%/DM. By using acidification as pretreatment before centrifugation the level of betaine was increased up to 67.68%/DM, whereas implementing the alcohol fermentation before centrifugation showed no significant differences compared to the starting sample.

Istraņivanja u okviru ove doktorske disertacije bavila su se proizvodnjom novog bezglu-tenskog prehrambenog proizvoda na bazi pirinčanog brańna sa dodatkom korena cikorije na dvo-puņnom ekstruderu. U okviru ove studije prvi put je implementiran koren cikorije u flips pro-izvode kao potencijalno funcionalni dodatak. Koren cikorije je jedan od najbogatijih izvora inu-lina, prebiotske komponente poņeljne u ishrani osoba obolelih od dijabetesa, ali i mnogih drugih bioaktivnih komponenata (seskviterpenskih laktona, polifenolnih jedinjenja, masnih kiselina, amino kiselina, vitamina, minerala i dr). Ispitivanja u okviru doktorske disertacije definisana su u cilju odreĎivanja optimalnih uslova procesa ekstrudiranja neophodnih za ostvarivanje poņeljnih fizičkih, teksturnih, i funkcionalnih (sadrņaj inulina i drugih gorenavedenih sastojaka) karakte-ristika finalnog proizvoda.Proistekli rezultati daju uvid u zakonitosti koje vladaju izmeĎu zadatih procesnih parame-tara (sadrņaja vlage polazne smeńe, brzine obrtanja puņnice, i sadrņaja korena cikorije) i fizičkih, funkcionalnih, teksturnih, reolońkih i senzorskih karakteristika finalnih flips proizvoda. Pri-menom optimalnih uslova proizvodnje, koji su definisani uz pomoć genetskog algoritma (16,3 % vlage; brzina obrtanja puņnice od 700 o/min i 30% korena cikorije), uspeńno je proizveden hrs-kav flips proizvod prihvatljive boje, sa visokim sadrņajem prebiotika inulina (5,36%). Time je opravdana primena korena cikorije u razvoju novih funkcionalnih proizvoda prihvatljivih od strane potrońača.PredviĎanje vrednosti ispitivanih parametara ekstrudata vrńeno je primenom dva matema-tička modela čime se jasno pruņa uvid u njihovu primenjivost i učinkovitost kod ove vrste proizvoda. U tu svrhu primenjene su veńtačka neuronska mreņa (engl. Artificial neural network, ANN) i nova metodologija ubrzanog regresionog stabla (engl. Boosted regression trees, BRT), koja se po prvi put primenjuje kod procesa ekstrudiranja hrane.Jedan od ciljeva istraņivanja bio je obogaćnje ekstrudiranog proizvoda inulinom u literaturno preporučenim granicama. Stoga je posebna paņnja bila posvećena optimizaciji postup-ka ekstrakcije inulina, kao i razvoju i validaciji sofisticirane analitičke metode za njegovo kvan-titativno odreĎivanje primenom visokopritisne tečne hromatografije kuplovane sa detektorom ra-sipanja svetlosti na isparenom uzorku (engl. High performance liquid chromatography-Evapo-rative light scattering detector, HPLC-ELSD). Ova metoda primenjiva je na komercijalno do-stupnim proizvodima na teritorije Republike Srbije koji sadrņe inulin (flipsevi, kafe, dodaci ishrani sa inulinom).Inovativni prehrambeni funkcionalni proizvodi nastali u okviru ove disertacije mogu doprineti zdravijoj ishrani potrońača, obogatiti aktuelni trņińni asortiman flips proizvoda i pro-movisati implementaciju korena cikorije u prehrambene proizvode s obzirom na to da Srbija spada u 10 najvećih svetskih proizvoĎača ove sirovine., Research conducted within this doctoral thesis was focused on the production of a novel gluten-free food product based on rice flour with the addition of chicory root on a twin-screw extruder. As a part of this study, chicory root was implemented for the first time in snack puffed products as potential functional ingredient. Chicory root is one of the richest sources of inulin, a prebiotic component desirable in the diet of people with diabetes, but also many other bioactive components (sesquiterpene lactones, phenolic compounds, fatty acids, amino acids, vitamins, mi-nerals, etc.). The main goal of this doctoral thesis research was to define the optimal conditions of extrusion cooking process necessary to achieve the desired physical, textural, and potentially functional (inulin content and other bioactive compounds) characteristics of the final product.The results provide insight into the relationships that prevail between the set of process parameters (moisture content of the starting mixture, screw speed, and chicory root content) and physical, functional, textural, rheological and sensory characteristics of the final puffed snack products. Applying the optimal production conditions, which were defined using a genetic algo-rithm (16.3% moisture; 700 rpm and 30.0% chicory root), it was successfully generated a crispy snack product of attractive color, with a high content of inulin (5.36%). This justifies the use of chicory root in the development of new food products acceptable to consumers.Prediction of extrudates tested properties was performed using two mathematical models, which clearly provides insight into their applicability and effectiveness in this type of product. For this purpose, the Artificial neural network (ANN) was applied, as well as the new young methodology of Boosted regression trees (BRT), which is being used for the first time in food extrusion.One of the goals of the research was to develop a functional extruded snack product enriched with inulin within the literary recommended intake. Therefore, special attention was de-dicated to the optimization of the inulin extraction process, as well as for the development and validation of a sophisticated analytical method for its quantitative determination using high per-formance liquid chromatography coupled with evaporative light scattering detector (HPLC-ELSD). This method is applicable to commercially available products in the territory of the Re-public of Serbia that contain inulin (flips, coffee, dietary supplements with inulin).Innovative food products created within this dissertation can contribute to healthier consumer nutrition, enrich the current market range of snack products and promote the imple-mentation of chicory root in food products, considering that Serbia is one of the 10 largest world producers of this raw material.

8. Rigid telescopy and contact endoscopy in the diagnosis and surgery of Reinke’s oedema: Clinical and histological assessment

We focussed our attention on the use of both rigid telescopy and contact endoscopy in order to assess their effectiveness in the diagnosis and surgery of Reinke’s oedema. Changes were observed in a sample of 40 patients, suffering from different stages of Reinke’s oedema, who had undergone microlaryngoscopies. For the first time during our laryngological praxis, we discussed a number of parameters that appeared to be significant in the monitoring and detailed evaluation of this vocal fold disease. With contact endoscopy, during the early stages of the disease, the cells and nuclei of normal squamous layered epithelium continued to display uniform morphological features. The appearance of epithelial changes helps to distinguish between different stages of Reinke’s oedema, which can be associated with severe inflammation or keratinisation. With latter-stage oedemas, the following was observed: various changes in the blood vessels of the glottis, which when viewed through the endoscope have an unusual “loop-like” or “branching” appearance, as well as elongated and varicose blood vessels, and the build-up of erythrocytes inside atypical capillaries. Both endoscope techniques are non-invasive and very appropriate for precisely diagnosing Reinke’s oedema within a relatively short period of time. Rigid telescopy has the advantage of enabling the systematic observation of many details in the large area of both vocal fold mucosae, particularly when access to the larynx is difficult. This enables dynamic monitoring and immediate pathology consultations inside the operating theatre. The special contribution of contact endoscopy is that, both in vivo and in situ, it allows a detailed scanning and mapping to be performed of all cell changes and of vascularisation throughout the entire mucosa surface. Video-assisted telescopy does not permit a completely first-rate surgical resection of Reinke’s oedema, because of unsatisfactory control or insufficient stability of the instrument during the operation using the one-handed method.

- Abstract
The subject of the research performed herein is solutions accepted in the sources of arbitration law, case law and arbitration case law and legal theory in respect of the notion and significance of arbitrability in the international commercial relations. Arbitrability is understood in the broadest sense as capability of dispute to be entrusted for resolving to the arbitration as a non-state authority. The reasons for asking the question of arbitrability should be looked for in the differences and disputes existing among the people. This fact, manifested as relation of the social community towards arbitration, testifies to arbitrability not only as legal, but as sociological phenomenon as well. With the emerging of state as organized and regulated way of living together, the respect for which is provided by enforcement regulations and especially by separated judicial power, the importance of arbitrations, as autonomously organized manner of resolving disputes is relativized and placed in line with state courts. A comparison and parallelism between the two ways of resolving disputes will remain a criterion for efficiency and justifiability of both ways of resolving disputes.

20. Media Literacy in Montenegro

- Abstract
Few countries in the world have introduced media education into their curriculums. Montenegro became one of them in 2009, when “media literacy” was introduced as an optional subject for 16 and 17 year old students of Gymnasium high schools. This article presents the findings of the first and only research conducted so far on media education in Montenegro. It is a national case study which examines the potential of media education to change the school culture and accelerate education system reform towards embracing the new digital education paradigm in the future. The focus is on the results of research conducted through in-depth interviews with media literacy teachers all over the country. Despite the many challenges, all teachers identify the potential of media education to strengthen some of the key competences of the students and to improve their motivation and academic performance. They also identify potential to change positively school culture by transforming teachers into “cultural mediators” (Morcellini, 2007) and by supporting the formation of a “participative culture” (Jenkins & Kelley, 2013) in schools. This research recommends focusing education reform on spreading the media education pedagogy to the entire curriculum in order to embrace the new digital education paradigm in the future. In this paper the authors analyze the legal regime applicable to negotiations in comparative law, with a special emphasis on the solutions adopted in uniform law. The general hypothesis of the paper is that the differences in rules on negotiations in various legal systems are likely to jeopardize legal certainty in international business transactions as they may lead to unexpected outcomes in the field of pre-contractual liability. For that reason, the advance understanding of the applicable law to negotiations is of utmost importance in international business transactions as it may significantly affect party's overall cost calculation and liability, in particular in case of failed negotiations. Upon examining the approaches to negotiations taken by two major legal systems (civil law and common law), the content of the sources of uniform contract law and the practice of courts and arbitral tribunals, the authors conclude that, irrespective of the law applicable to negotiations, the parties may exercise critical impact on the legal framework of their negotiations by concluding different kinds of agreements on negotiations. However, in doing so, the parties need to be aware of the importance of predictability of the solutions to be applied, since predictability is one of the crucial elements of legal certainty in international business transactions.

- Abstract
The subject-matter of this doctoral dissertation is the research of legal regime, content and consequences of State responsibility for the protection of foreign direct investments. To that effect, the author examines in detail the elements of theoretical definition of the notion of State responsibility for the protection of foreign direct investments, the specificities with respect to the determination of the law applicable to different aspects of responsibility, the influence of various methods of defining the notion of investment to the scope of responsibility for its protection, the content and effects of elements and preconditions for responsibility, the circumstances excluding the responsibility as well as the legal consequences of responsibility of the host State in case of violation of its obligation to protect foreign direct investments in its territory. This choice of subject-matter of the doctoral dissertation is governed by the increasing importance of foreign direct investments for the development of national economies, which is a world-wide trend also present in Serbia. However, attempts to attract foreign investments are not always accompanied by careful considerations of legal consequences and potential practical repercussions of guarantees given to foreign investors. This is clearly proved by the diversity and heterogeneous content of sources of foreign direct investment law which, along with the specificities caused by the hybrid nature of international regime of investment protection, represent the focus of this dissertation. Accordingly, the general aim of the research is the identification of factors that shape State responsibility for protection of foreign direct investments and the exploration of their effects in order to enable better theoretic understanding and practical application of the rules studied in the thesis. - Abstract
This dissertation focuses on the issue of scope and calculation of the damages for the breach of the contract for the international sale of goods. In other words, the author seeks to define specific kinds of damages which are deemed recoverable pursuant to the UN Convention on Contracts for the International Sale of Goods and to discuss particular conditions for recovery of such damages, delineate the methods of calculation of the actual amount of damages due and point out the factors of limitation of that amount. It is undisputed that the efficiency in exercising the right to claim damages is a conditio sine qua non of efficient trade. Therefore, the purpose of this thesis is to provide for a systematization of an important area of law which has unfortunately not been in the focus of the Serbian legal literature so far. The aim is to identify the governing principles of this area of law, define a coherent system and methodology of calculation of different kinds of damages and put forward modern theoretical and practical tendencies with respect to specific kinds of damages. The relevance of this topic is twofold. On the one hand, the topic is important because of its scientific and theoretic aspect. Namely, the issues covered by this thesis have not been sufficiently discussed in the Serbian legal literature. On the other hand, the topic bears a practical significance since the issue of calculation of damages is often discussed in judicial and arbitral case law. In that respect, it should be noted that only a correctly defined scope of damages and appropriatly chosen method of calculation of damages is likely to produce positive effects to the assets of the creditor and, indirectly, in the economic system of the country of its seat. Few countries in the world have introduced media education into their curriculums. Montenegro became one of them in 2009, when "media literacy" was introduced as an optional subject for 16 and 17 year old students of Gymnasium high schools. This article presents the findings of the first and only research conducted so far on media education in Montenegro. It is a national case study which examines the potential of media education to change the school culture and accelerate education system reform towards embracing the new digital education paradigm in the future. The focus is on the results of research conducted through in-depth interviews with media literacy teachers all over the country. Despite the many challenges, all teachers identify the potential of media education to strengthen some of the key competences of the students and to improve their motivation and academic performance. They also identify potential to change positively school culture by transforming teachers into "cultural mediators" (Morcellini, 2007) and by supporting the formation of a "participative culture" (Jenkins & Kelley, 2013) in schools. This research recommends focusing education reform on spreading the media education pedagogy to the entire curriculum in order to embrace the new digital education paradigm in the future. Предмет истраживања која су обављена у овом раду су решења која су прихваћена у изворима арбитражног права, судској и арбитражнoј пракси и правној теорији у погледу појма и значаја арбитрабилности у међународним трговинским односима. Арбитрабилност је схваћена у најширем смислу као подобност спора да буде поверен на решавaње арбитражи као недржавном органу. Разлоге за постављање питања арбитрабилности треба тражити у разликама и споровима који пoстоје између људи. Ова чињеница, која се манифестује као однос друштвене заједнице према арбитражи, сведочи о арбитрабилности не сaмо као правној, већ и као социолошкој појави. Са настанком државе као организованог и уређеног начина заједничког живота чије је поштовање обезбеђено принудним прописима и посебно издвојеном судском влашћу, значај арбитража, као аутономно организованог начина решaвања спорова, бива релативизован и стављен у раван са државним судовима. Упоређивање и паралелизам између два начина решавања спорова ће остати мерило ефикасности и оправданости и једног и другог начина решавања спорова. Својеврсни дуалитет и ривалитет између судског и арбитражног "судовања" требало би схватити не само као ограничавајуће факторе, већ и као покретачку снагу за стално преиспитивање улоге и значаја арбитража. The subject of the research performed herein is solutions accepted in the sources of arbitration law, case law and arbitration case law and legal theory in respect of the notion and significance of arbitrability in the international commercial relations. Arbitrability is understood in the broadest sense as capability of dispute to be entrusted for resolving to the arbitration as a non-state authority. The reasons for asking the question of arbitrability should be looked for in the differences and disputes existing among the people. This fact, manifested as relation of the social community towards arbitration, testifies to arbitrability not only as legal, but as sociological phenomenon as well. With the emerging of state as organized and regulated way of living together, the respect for which is provided by enforcement regulations and especially by separated judicial power, the importance of arbitrations, as autonomously organized manner of resolving disputes is relativized and placed in line with state courts. A comparison and parallelism between the two ways of resolving disputes will remain a criterion for efficiency and justifiability of both ways of resolving disputes.

Предмет докторске дисертације представља истраживање правног режима, садржаја и правних последица одговорности државе за заштиту страних директних улагања. У том смислу детаљно се испитују специфичности теоријског одређења одговорности државе за заштиту страних директних улагања, посебности у погледу одређивања меродавног права за различите аспекте одговорности, утицај различитих начина дефинисања појма страног директног улагања на домашај одговорности државе пријемнице за његову заштиту, садржај и дејство конститутивних елемената, односно услова одговорности, начини испољавања услова искључења одговорности у међународном праву заштите страних директних улагања, као и последице постојања одговорности државе пријемнице у случају повреде обавезе заштите страних директних улагања на њеној територији. Овако постављен предмет истраживања условљен је растућим значајем страних директних улагања за развој националних привредних система, што је међународни тренд у погледу којег наша држава није изузетак. Међутим, настојање да се привуку страна директна улагања није увек праћено довољно пажљивим промишљањем о правним последицама јемстава датих страним улагачима. О томе јасно сведочи изразита хетерогеност садржаја извора међународног права заштите страних директних улагања. Управо утицај те хетерогености међународних и унутрашњих извора права заштите страних директних улагања, као и специфичности које произлазе из хибридне природе међународног права страних улагања на режим одговорности држава пријемница, представљају окосницу проблематике ове дисертације. Сходно томе, општи циљ истраживања представља утврђивање фактора који уобличавају одговорност државе за заштиту страних директних улагања и испитивање њиховог дејства, како би се изучавани институт боље теоријски разумео и правилније практично примењивао. Из овог општег циља проистиче и неколико конкретних задатака истраживања, а то су: давање прегледа и систематизовање извора права у области одговорности државе за заштиту страних директних улагања, утврђивање актуелних тенденција у праву страних улагања у вези са одговорношћу државе за заштиту страних директних улагања, испитивање усаглашености извора права страних улагања на снази у Републици Србији са тим тенденцијама и формулисање предлога за измене правила чија би примена могла да доведе до претераног ширења одговорности државе, односно до немогућности страног улагача да заштити своја легитимна улагачка права и интересе. Предмет овог рада јесте одређивање обима накнаде штете због повреде уговора о међународној продаји, односно дефинисање појединих облика штете који се могу надокнадити према одредбама Бечке конвенције о уговорима о међународној продаји робе, уз разматрање посебних услова за накнаду штете, метода одмеравања висине накнаде штете, као и начина ограничења обима накнаде. Неспорно је да без ефикасне могућности остваривања права на накнаду штете нема ни ефикасне привреде. Отуд је и циљ овог рада систематизација једне важне правне области, до сада недовољно разматране у нашој стручној литератури, изналажење руководних начела за њено правилно разумевање, те установљење кохерентног система и методологије одмеравања накнаде различитих облика штете, са посебним освртом на поједине облике штете и модерне тенденције у разматрању овог института, како у теорији тако и у пракси. Ова тема је од посебног значаја, с једне стране, у научно-теоријском смислу, јер је реч о недовољно обрађеној материји пре свега у домаћој стручној литератури, а с друге стране и у практичном смислу, имајући у виду учесталост расправљања о захтевима за накнаду штете базираним на Конвенцији у судској и арбитражној пракси и позитивне ефекте који се само правилно одређеним обимом и одмереним износом висине накнаде штете могу постићи непосредно у имовини повериоца и посредно у привредном систему земље његовог седишта. Рад обухвата увод, пет поглавља и закључна разматрања са преко 1000 референци (фуснота) упућивања на друге савремене ауторе и различите правне изворе, који на примерен начин одражавају стање актуeлне упоредноправне науке у овој области. У раду су поред нормативног метода као основног, коришћени и упоредноправни и историјски метод. Релевантну истраживачку грађу чине домаћи и страни извори из ове области, бројни коментари Конвенције, дела монографског карактера и чланци. The research was based on domestic and foreign scientific resources, numerous commentaries of the CISG, monographs and papers.
