Simple Summary: It is widely acknowledged that transportation stresses livestock, harming the animal's health and the meat quality. This study tested if hemp leaves, which contain beneficial phytochemicals, could alleviate these effects in transported goats. Goats received 10 g/kg of fresh hemp leaves or none, as the controlled group, before a 200 km journey. Hemp maintained some blood measures compared to controls. However, carcass traits, pH, tenderness, and texture were similar between the two groups. Hemp slightly affected the initial meat color and odor volatiles. Overall, this low dose of fresh hemp leaves provided limited protection against transportation stress in goats, but higher doses may have enhanced benefits. Transportation stress adversely affects animal health, productivity, and meat quality. Bioactive plant compounds may alleviate transit stress in livestock. This study evaluated the effects of fresh hemp leaf supplementation on blood metabolites, performance, carcass traits, and meat quality in transported goats. Twenty male goats (15 ± 2.76 kgBW) were investigated, some were given a hemp supplement (n = 10) and the remaining goats were used as a control group (n = 10). The hemp group received 10 g/30 kg body weight of fresh leaves prior to transportation. Blood samples were analyzed before and after the 200 km journey. The goats were slaughtered after transit and the quality of the meat examined. In the controlled group, transportation increased neutrophils and electrolytes, but decreased lymphocytes and hemoglobin. In contrast in the hemp-supplemented group, the hemp maintained this animal blood parameters. Body weight and carcass yield, however, did not differ between the two groups. Hemp reduced meat redness at 1 h postmortem but had minimal effects on its pH, color, water holding capacity, tenderness, and texture after 24 h. However, hemp supplementation did alter the odor profiles between the two groups detected by electronic nose sensors. In conclusion, fresh hemp leaf supplementation maintained blood metabolites and had minor advantageous effects on meat quality in response to transportation stress in goats. Further investigation using hemp supplements shows potential to alleviate transit stress, although higher doses may be required in order to further enhance its benefits. [ABSTRACT FROM AUTHOR]

The increasing need for effective analytical tools to evaluate beef quality has prompted the development of new procedures to improve the animal sector's performance. In this study, three beef breeds—Thai native (TN), crossbred Brahman × Thai native (BT), and crossbred Charolais × Brahman (CB)—were compared in terms of their physicochemical and metabolic profiles. The findings demonstrated that TN beef was lighter and tougher than other beef. Beef odor was stronger in BT. In addition, CB beef was the most tender and had the highest intramuscular fat content. Twenty-one different metabolites were found overall through NMR and chemometric approaches. The primary factors contributing to the difference in OPLS-DA loading plots were acetylcholine, valine, adenine, leucine, phosphocreatine, β-hydroxypyruvate, ethanol, adenosine diphosphate, creatine, acetylcholine, and lactate. The multivariate analysis indicated that these metabolites in beef cattle breeds could be distinguished using NMR spectroscopy. The results of this study provide valuable information on the quality and meat metabolites of different breeds. The objective of this research was to investigate the effect of dietary supplementation of curcumin with increased solubility (CS: 0, 0.2, 0.4, 0.6, and 0.8% of diet) and broiler sex (males and females) on plasma lipoprotein concentrations, meat quality, and chemical composition in the breast meat (BM). A total of 240 1-day-old Arbor Acres chicks were randomly divided into ten groups, six replicates of four chicks each, using a 5 × 2 factorial experiment. All chicks were fed diets and water ad libitum for a period of 6 weeks. Results showed that no any interactions were presented. Supplementation of CS reduced plasma total cholesterol (TC), low-density lipoprotein cholesterol (LDL-C), and meat fat content, while had no significant differences between treatments in meat quality, triglyceride (TG), high-density lipoprotein cholesterol (HDL-C), and very low-density lipoprotein cholesterol (VLDL-C). Objective: The aim of this study was to assess the effect of Thai native cattle grazing in the lowland or mountain forest on carcass characteristics, meat quality, sensory palatability, and chemical composition., Methods: Twelve male Thai native cattle with an average weight of 110±10 kg are allowed to be grazing in the lowland or Phu Phan mountain forest during the rainy season in northeastern Thailand., Results: The carcass characteristics, meat pH, and meat color were unaffected by treatment (p>0.05). The boiling loss was lower in the cattle grazing on the mountain forest (p = 0.027). The cattle grazing in the mountain forest had increased shear force (p = 0.039), tenderness (p = 0.011), and flavor intensity (p = 0.003). The protein and fat were higher (p<0.001 and p = 0.035, respectively) in cattle grazing in the mountain forest. The different grazing systems of the cattle had no effect (p>0.05) fatty acids in meat, except for capric acid (C10:0) and lauric acid (C12:0), which were higher (p = 0.046 and p = 0.049, respectively) when the cattle were grazing in the mountain forest. The different grazing systems did not influence (p>0.05) the unsaturated fatty acids in meat., Conclusion: Thai native cattle grazing in the Phu Phan mountain forest in the rainy season improves meat quality, sensory evaluation, and chemical composition.
