CHICKPEA ,SUNFLOWER seed oil ,IRON ions ,ANTIOXIDANTS ,ACCELERATED life testing - Abstract
The objective of this study was to analyze the chemical composition and antioxidant activity of a chickpea husk polyphenol extract (CPE) obtained from Argentinian Kabuli chickpea and to evaluate its antioxidant effect on the chemical quality of sunflower oil. The polyphenol composition of CPE was analyzed by HPLC–ESI‐MS/MS. Antioxidant activity was evaluated by DPPH•, FRAP, ABTS•+, and chelating activity in ferrous ion tests. An accelerated oxidation test in sunflower oil was carried out by applying 0.01, 0.02, and 0.05% p/p CPE and comparing it with BHT (0.02%). Peroxide value, conjugated dienes, and volatile compounds were determined on sunflower oil samples. Twelve polyphenols were identified in the chickpea extract. The CPE showed in vitro antioxidant activity. The lowest doses (0.01% and 0.02%) protected sunflower oil more efficiently against oxidative deterioration than the higher level (0.05%). Chickpea husk extract has a good antioxidant effect on sunflower oil, which helps to preserve the quality properties of this product. [ABSTRACT FROM AUTHOR]

- Abstract
ITGAM–ITGAX (rs11150612, rs11574637), VAV3 rs17019602, CARD9 rs4077515, DEFA (rs2738048, rs10086568), and HORMAD2 rs2412971 are mucosal immune defence polymorphisms, that have an impact on IgA production, described as risk loci for IgA nephropathy (IgAN). Since IgAN and Immunoglobulin-A vasculitis (IgAV) share molecular mechanisms, with the aberrant deposit of IgA1 being the main pathophysiologic feature of both entities, we assessed the potential influence of the seven abovementioned polymorphisms on IgAV pathogenesis. These seven variants were genotyped in 381 Caucasian IgAV patients and 997 matched healthy controls. No statistically significant differences were observed in the genotype and allele frequencies of these seven polymorphisms when the whole cohort of IgAV patients and those with nephritis were compared to controls. Similar genotype and allele frequencies of all polymorphisms were disclosed when IgAV patients were stratified according to the age at disease onset or the presence/absence of gastrointestinal or renal manifestations. Likewise, no ITGAM–ITGAX and DEFA haplotype differences were observed when the whole cohort of IgAV patients, along with those with nephritis and controls, as well as IgAV patients, stratified according to the abovementioned clinical characteristics, were compared. Our results suggest that mucosal immune defence polymorphisms do not represent novel genetic risk factors for IgAV pathogenesis.

- Abstract
CD40, BLK and BANK1 genes involved in the development and signaling of B-cells are identified as susceptibility loci for numerous inflammatory diseases. Accordingly, we assessed the potential influence of CD40, BLK and BANK1 on the pathogenesis of immunoglobulin-A vasculitis (IgAV), predominantly a B-lymphocyte inflammatory condition. Three genetic variants within CD40 (rs1883832, rs1535045, rs4813003) and BLK (rs2254546, rs2736340, rs2618476) as well as two BANK1 polymorphisms (rs10516487, rs3733197), previously associated with inflammatory diseases, were genotyped in 382 Caucasian patients with IgAV and 955 sex- and ethnically matched healthy controls. No statistically significant differences were observed in the genotype and allele frequencies of CD40, BLK and BANK1 when IgAV patients and healthy controls were compared. Similar results were found when CD40, BLK and BANK1 genotypes or alleles frequencies were compared between patients with IgAV stratified according to the age at disease onset or to the presence/absence of gastrointestinal or renal manifestations. Moreover, no CD40, BLK and BANK1 haplotype differences were disclosed between patients with IgAV and healthy controls and between patients with IgAV stratified according to the clinical characteristics mentioned above. Our findings indicate that CD40, BLK and BANK1 do not contribute to the genetic background of IgAV.

The hypothesis was that maternal intake of the antioxidant alpha-lipoid acid (ALA), during the developmental period of the hypothalamic orexigenic neurons, causes a permanent beneficial effect in offspring metabolism. Pregnant Wistar rats were fed with standard diet (food) + ALA (0.4% wt/wt) from day 14 of gestation to day 20 of lactation (n = 4) or food (n = 4). At 3 months of age, male offspring born from ALA-fed rats or controls (CT) were randomly assigned to be fed with food + 10% fructose solution in drinking water (F) or food + tap water (C), resulting in four groups: ALAF, ALAC, CTF, and CTC (n = 5/group). Food intake and body weight (BW) were measured twice a week for 31 days. Metabolites' levels in blood, mRNA expressions of Npy, Agrp (hypothalamus), Fasn, Srebf1, Ppard, and Pparg (liver), and the antioxidant capacity of the liver were determined. Results significance was set at p < 0.05. Average BW gain, daily BW gain, and intraabdominal fat tissue at necropsy were higher in CTF group followed by CTC, ALAF, and ALAC groups. There were no differences between groups in Kcal intake per day. mRNA expressions of hypothalamic and hepatic genes and plasmatic levels of glucose and triglycerides were higher in CTF group followed by ALAF, CTC, and ALAC groups. Fructose intake affected the oxidative capacity of the liver, but this effect was not observed in the ALAF group. In conclusion, maternal ALA intake protected the adult offspring to develop metabolic symptoms associated with high fructose in the drinking water. [ABSTRACT FROM AUTHOR]

Corpas 105 Carta firmada en PDF 105 BIBLIOGRAFÍA 106 Maestría This research has been designed seeking to identify factors that affect the management of human talent in the health sector, offering possible solutions that impact management. Based on the literature on health reforms, Law 100 (1993 Regulations), frustrations are reflected by what was raised at that time and today, as a rule of the game for the sector, they favored private interests and the EPS, Hospitals and not to the people (patients), the work is formalized as a result of these changes, which sparked conflicts between unions, doctors and the training of doctors that confronted the service-providing institutions and universities. The challenge for universities currently has been to increase the quality of service, opportunities in care, sustainability and equity as achievements and challenges of the sector, thus giving rise to changes derived from socio-economic and social contexts, professional profile, labor market and health service organizations and practices. Considering the impact that there is on the management of services, the application of technological advances, the ways of hiring work, the new practice scenarios and the foreseeable forms of the care model, that is why it was necessary to think about the need of profound changes in the training of health professionals, the contents and curricular structures, as well as in the pedagogical strategies of the higher education system, in order to meet these demands. Universities have to respond and leave their limitations to process these changes. This project proposes learning in an e-learning environment, allowing training and responding to the needs of the health sector in the management of human talent, with a module "Human talent as an essential part of outsourcing." The development of a proposal for the integration of ICTs to the Module "Human talent as an essential part of outsourcing" of the Juan N. Corpas Foundation in the city of Santa Fe de Bogotá and which is developed in the third and last semester of the program of Specialization in Human Talent Management. This proposal proactively addresses aspects related to the module's curriculum, its current state both in theory or formal level and in the reality of daily practice, the evaluation is described from its strengths and weaknesses, a curricular evaluation is made, which provides information on organizational aspects and the status of teacher development. Through the redesign of module activities, it is intended to take its development from a face-to-face mode to a virtual one, allowing the incorporation of educational innovations through the analysis of technological resources, content and methodology. Teacher training needs are also analyzed and a training proposal in the implementation of ICTs in both teaching and learning is finally proposed. In addition to a teaching guide with the mediation of ICT in topics related to the human talent management module, as well as a resource guide for the construction of tasks and activities typical of the module under study.

Arsenic (As) is a worldwide immunotoxic agent that is in contaminated waters and consumed by mammals. Phytotherapy may counteract its harmful effects. Lantana grisebachii Stuck (LG, Verbenaceae) and its extract are proposed as protective, given vvits in vitro bioactivity. The aim was to determine the protective capacity of the aqueous LG extract on splenocytes exposed in vivo to arsenic. Splenocytes were obtained from an arsenicosis model (Wistar rats consuming orally 0 [control; C] or 5 mg/Kg/d of As) that received 0–100 mg/Kg/d of LG extract for 30 days. As content (total reflection X-ray fluorescence), fatty acid profile (gas chromatography), γ-glutamyl transpeptidase activity (Szasz method), peroxides (xylenol orange-based assay), and nitrites (Griess reaction) were then assayed in viable splenocytes. Data were analyzed with ANOVA and the Tukey's test (p <.05). It was observed that the splenocytes contained 2.2 mg/Kg of this elemental arsenic. With γ-glutamyl transpeptidase inhibition and consequent triggering of hydroperoxides (p <.05), it was observed to increase saturated fatty acids and alter lipid profiles. LG treatment avoided damaging effects with values similar to unexposed C (p <.05), and cellular arsenic concentration (p <.0001). In conclusion, the aqueous extract of L. grisebachii counteracted arsenic toxicity in rat splenocytes by preventing its cellular accumulation and induction of lipid and redox disturbances, which may impair immune function. - Abstract

- Abstract
The presence of ecgonine in urine has been proposed as an appropriate marker of cocaine use. Only a few methods have been published for their determination along with cocaine and the rest of its metabolites. Due to their high polarity and consequent solubility in water, these have low recoveries, which is why it is necessary to increase the sensitivity, by the formation of hydrochloric salts or multiderivatization of the analytes or by performing two solid‐phase extractions (SPEs), considerably increasing the time and cost of the analysis. This work describes a fast and fully validated procedure for the simultaneous detection and quantification of ecgonine, ecgonine‐methyl‐ester, benzoylecgonine, nor‐benzoylecgonine, m‐hydroxybenzoylecgonine, cocaethylene, cocaine, norcocaine, and norcocaethylene in human urine (500 μL) using one SPE and simple derivatization. Separation and quantification were achieved by gas chromatography–electron ionization–mass spectrometry (GC–EI–MS) in selected‐ion monitoring mode. Quantification was performed by the addition of deuterated analogs as internal standards. Calibration curves were linear in the adopted ranges, with determination coefficients higher than 0.99. The lower limits of quantification ranged from 2.5 to 10 ng/mL. The intra‐ and inter‐day precision, calculated in terms of relative standard deviation, were 1.2%–14.9% and 1.8%–17.9%, respectively. The accuracy, in terms of relative error, was within a ± 16.4% interval. Extraction efficiency ranged from 84% to 103%. Compared with existing methods, the procedure described herein is fast, since only one SPE is required, and cost‐effective. In addition, this method provides a high recovery for ecgonine, resulting in a better alternative to the previously published methods. Development, optimization, and validation of a one‐step solid‐phase‐extraction (SPE) method with a simple derivatization coupled to gas chromatography–mass spectrometry (GC–MS) to identify and quantify ecgonine, cocaine, and seven other metabolites in human urine samples. This is the first report on the use of one cartridge of SPE, with high recoveries and better limits for quantification of COC and metabolites. The procedure is considered a better alternative to the previously published methods. [ABSTRACT FROM AUTHOR]

Summary: Hake (Merluccius hubbsi) is the most important fish of Argentinean industry. The preservative effects of an oregano essential oil (EO) nanoemulsion (NE) on hake burgers (FB) during 15 days at 4 °C were studied. Fatty acids determined by gas chromatography coupled with mass spectrometry (CG‐MS), volatile compounds determined by solid phase microextraction (SPME) coupled with CG‐MS, total volatile basic nitrogen (TVBN), and microbial count was measured. ANOVA and DCG tests were performed. After 14 days, significant differences were detected among samples (P ≤ 0.05). FB with EO (EO‐FB) and FB with NE containing EO (NEEO‐FB) had the highest content of EPA (eicosapentaenoic acid) (191.82 and 198.42 g kg−1) and DHA (docosahexaenoic acid) (107.97 and 110.87 g kg−1, respectively). Also, NEEO‐FB had the lowest microbial count (7 log CFU g−1). The incorporation of the oregano essential oil into a nanoemulsion improves the preserving activity in hake fish burgers. The incorporation of Oregano EO into a stable NE protected its physical properties. A good interaction of oregano EO‐NE with hake burgers matrix was observed. As a consequence, the oregano EO‐NE preserved PUFAs and reduced the microbial growth of hake burgers. [ABSTRACT FROM AUTHOR]

The objective was to evaluate the stability of sensory and chemical parameters in roasted sunflower seedssupplemented with oregano and poleo essential oils; and the consumer acceptability of this product. Four samples wereprepared: plain roasted sunflower seeds (Control = RS-C), and sunflower seeds added with oregano (RS-O) or poleo(RS-P) essential oils or BHT (RS-BHT). Consumer acceptance was determined on fresh samples. The overall acceptanceaverages were 6.13 for RS-C, 5.62 for RS-P, and 5.50 for RS-O (9-point hedonic scale). The addition of BHT showedgreater protection against the oxidation process in the roasted sunflower seeds. Oregano essential oil exhibited a greaterantioxidant effect during storage than poleo essential oil. Both essential oils (oregano and poleo) provided protectionto the product, inhibiting the formation of undesirable flavors (oxidized and cardboard). The antioxidant activity thatpresents essential oils of oregano and poleo could be used to preserve roasted sunflower seeds. Fil: Quiroga, Patricia Raquel. This study reported the chemical composition, phenolic content, antioxidant and anti-lipase activity of oregano and Lippia essential oils. The major compounds found in oregano essential oil were γ-terpinene (32.10%), α-terpinene (15.10%), p-cymene (8.00%) and thymol (8.00%). In Lippia essential oil, α-limonene (76.80%) and 1,8-cineole (4.95%) represented the major compounds. Oregano essential oil had higher phenolic content (12.47 mg gallic acid mL−1) and DPPH scavenging activity (IC50 0.357 μg mL−1) than Lippia essential oil (7.94 mg gallic acid mL−1 and IC50 0.400 μg mL−1, respectively). Both essential oils had similar antioxidant indexes (about 1.2) determined by Rancimat. Moreover, oregano essential oil had also higher anti-lipase activity (IC50 5.09 and 7.26 μg mL−1). Higher phenolic content in the essential oils was related with higher scavenging and anti-lipase activities. Oregano and Lippia essential oils could be used as natural antioxidants on food products. Because of their chemical composition rich in lipids, oilseeds and derived products are susceptible to oxidative deterioration. The addition of antioxidants is an alternative t o prol ong the shelf - life of oilseed products. The aim of this work was study the protective effect of essential oils and their major compounds applied to high - fat foods to prevent oxidative deterioration of lipids. Essential oils of Origanum vulgare L. (oregano), Lippia turbinata (Griseb.) (poleo), different species of oregano : Cordobés (Cor) , C ompacto (Com) , Mendocino (M) y Criollo (Cri ) and pure monoterpenes : carvacrol (Car) , thymol (T) and trans - sa binene hydrate (S ) were studied. The following det erminations were performed on the essential oils and monoterpenes: c hemical composition of essential oils ( EO ), the antioxidant activity (radical scavenging activity on DPPH , anti - lipase activity , Rancimat test and accelerated oxidation test on canola oil, determining perox ide (IP), conjugated dienes (DC ) and p - anisidine index (I p - A) during storage of samples). In addition, storage studies were performed on roasted sunflower seeds with EO , monoterpenes and synthetic antioxidant BHT. Chemical analysis (IP, DC, I p - A and volatiles by GC - MS) and sensory analysis (acceptability and descriptive) were conducted on the roasted sunflower samples from storage. The oregano and poleo essential oils showed activity on DPPH, anti - lipase activity a nd by the Rancimat method. B oth essential oils showed a protective effect against oxidative and sensory deterioration of sunflower products, and o regano EO showed higher activity than poleo EO . Consumers had positive acceptability of these products. Due to the higher activity of oregano, AA was evaluated on essential oils of the four different species of oregano (Cor, Com, M and Cri). These EO had activity against DPPH and in canola oil. The most active EO were Com and Co r . The major compounds in these EO were the monoterpenes S and T. In consequence, those monoterpenes and the Car were used to evaluate their antioxidant activity . Car and T showed activity on DPPH. Car, T and S showed antioxidant activity on canola oil, being higher the activity of S and T , both similar to BHT. These monoterpenes also showed synergistic effect with BHT on canola oil. The chemical and sensory changes during storage of roasted sunflower seeds with these monoterpenes indicated Car, T and S had protective effect against oxidati ve and sensory deterioration of the products. Carvacrol had the highe st protective effect. These EO and its major components are potential food preservatives, and can be used to replace synthetic antioxidants such as BHT.

This dissertation, primarily, evaluates the extent at which some family characteristics and school characteristics affect students’ achievement in Peru. For this purpose, the data used in this study is based on a survey conducted in Peru in 2009, to 3,438 students of 60 schools in 17 urban cities in the country. Finally, as we can see, the role of the government to close the inequality gaps in schools is decisive, as those gaps have a multiplicative effect in the wage gap when students from poorer backgrounds enter the labour market.

There is a sense that civic values have undergone a certain decline. Today's higher education systems are therefore put to the challenge of making the university a place for learning citizenship and democratic values and practices. This challenge means students must be encouraged to experience participation in decision-making processes. In this sense our country's recent adoption of the University Students' Statute is a welcome development, because it institutes student involvement in university policy through the creation of the University Students' Council of the State. To date, however, there is very little research on student participation. This paper aims to ascertain what value students assign to different means of political participation in the university. The answers given by more than 5.000 students were subjected to various analyses. Firstly, factor analysis was done to identify the underlying structure of the different means of participation. Subsequently, the means of participation were analyzed to discover how highly they are valued by students. Lastly, the value scores were studied to ascertain whether certain characteristics of the student subjects may be credited with making any difference. The results show that students value institutional means of participation more highly than alternative means. Especially, the results reveal that students give priority to the individual dimension of the civic experience over the community dimension. These results throw a subtly different light on the common scheme for interpreting political participation by youth in the university and suggest there is a need to strengthen both the community aspect and the critical dimension of the civic experience, a task that would require fostering environments that are open to less-tightly regulated means of exercising citizenship.

The objective of this study was to evaluate the oxidative stability of roasted almonds coated with prickly pear and algarrobo pod syrups and the effect of these coatings on the consumer acceptance. RESULTS: Prickly pear syrup had higher moisture, proteins, ashes and lipids, and less carbohydrate content than algarrobo pod syrup. Phenolics and antioxidant activity such as inhibition percentages of diphenyl picryl hydrazyl radical were higher in prickly pear syrup than algarrobo pod syrup. Roasted almonds had higher protein and lipid contents and lower total carbohydrates than coated almonds. Three main fatty acids detected in all almond products were palmitic (63.2 g kg-1), oleic (727.0 g kg-1) and linoleic (208.0 g kg-1) acids. The overall acceptance means in Roasted almonds, Roasted almonds coated with prickle pear syrup and Roasted almonds coated with algarrobo pod syrup were 6.83, 6.65 and 6.70 in a 9 points hedonic scale, respectively. The peroxide and anisidine values increased in all products. The increase was higher in roasted almonds without coating. CONCLUSION: These results indicated that the syrup coatings provided protection against lipid oxidation in almond products. Prickly pear syrup showed better protection against lipid oxidation.
