Este estudo investigou a influência do capital humano na qualidade de serviços no setor bancário de atendimento às micro e pequenas empresas paranaenses. A pesquisa foi realizada com os funcionários de instituições financeiras que atendem micro e pequenas empresas de diversos setores econômicos no estado do Paraná. Foi utilizada a replicação do instrumento de coleta do questionário aplicado no país Europeu de Andorra, dos autores Mariño-Mesías, Rodríguez-Antón & Rubio-Andrada (2015). A avaliação quantitativa utilizada na estatística descritiva foi realizada por meio da utilização do software IBM SPSS Statistics versão 22 e para o Modelo de Equações Estruturais foi utilizado o Software SmartPLS 3. Os resultados apresentados demonstraram alto nível de significância e forte relação quanto ao grau de influência do capital humano na qualidade de serviços.

This manuscript presents a review of the evolution of the legal framework for the production of refrigerated raw milk in Brazil, from the implementation of the National Program for the Improvement of Milk Quality – PNMQL, to the present day. After the beginning of the work of the PNMQL, in 2002, the Brazilian Network of Milk Quality Laboratories - RBQL was created and the Technical Regulation for Production, Identity, and Quality of Refrigerated Raw Milk was approved. Since then, there has been a gradual evolution in the standards regarding the production of raw milk. This evolution has been guided by rules concerning the obtaining, conservation, transport, and quality standards of refrigerated raw milk. However, official data on the quality of refrigerated raw milk produced by Brazilian producers are not available. In addition, there are few longitudinal case studies that have investigated this issue, after the implementation of PNMQL. Therefore, it is still unclear whether the quality of milk produced in the field has actually improved. Also, it is necessary to clarify which portion of an eventual improvement in the quality of refrigerated raw milk comes from the actions of the PNMQL, and which comes from the exclusion of small producers. The process of improving the quality of refrigerated raw milk depends on the performance of all the links that make up the production chain - producers, industry, and government. The government must regulate and inspect, the industry must support producers so that the goals are achieved, and, finally, producers must act as an interested part in improving the milk quality.

Several studies indicate that the consumer market considers the price of organic foods to be significantly high and attribute this fact as one of the main restrictive aspects for starting the consumption of organic foods or even increasing their frequency. Given this scenario, the present study is proposed as a way to confirm such a perception. Therefore, the purpose of the study is to evaluate if the price of organic is higher than conventional in the market of ready-for-consumption juices and nectars, using samples collected in Brazil and France. For this, the hedonic price methodology was applied, using as variables the information described on ready-to-drink processed juices/nectars marketed in Brazil and France. The results of the study confirm that organic version is more expensive, with the price being approximately 50% higher in the Brazilian market, and 10% higher in France. Additional attributes, such as type of packaging, pulp content, and flavor, are also relevant for the price. This is believed to be the first study to evaluate the impact on price of the organic certification of ready-for-consumption juices and nectars in different consumer markets.

Comparisons between the nutritional quality of organic and conventional fresh foods are frequently reported in the literature; however, discussion about processed foods is less frequent. Therefore, this study compared the nutritional content of processed products from both production systems using a systematic review of the literature and meta-analysis, regarding aspects of raw material management and processing. The study reviewed scientific articles published between 2010 and 2020 and the data obtained were analyzed using the standardized mean difference method with Hedges’ adjustment and a random analytical model. Thirty-seven articles were selected, and the foods analyzed in the studies were grouped into five categories: meat products, dairy products, caught fish, wines, and fruit juices/pulps. In products of animal origin, the comparative focus shown was mainly that of the fatty acid profile, while in those of vegetable origin it was that of phytochemicals. Related to the comparison of nutrient contents, it was possible to verify the similarities in organic and conventional products in most studies; however, specific differences were verified (P < 0.05): organics contained more proteins (meat), omega 3 (dairy), and less linoleic acid (dairy and caught fish). Also, there were differences in the management of organic and conventional raw materials, and similarities in processing. Therefore, the choice for organic processed foods should not be made exclusively based on nutritional aspects, considering that the differences in nutrient contents in relation to those of conventional products are practically nonexistent. RESUMO: Frequentemente são encontradas na literatura comparações entre a qualidade nutricional dos alimentos orgânicos e convencionais in natura, no entanto, pouco se discute acerca dos processados. Assim sendo, o objetivo desse estudo foi comparar o teor nutricional dos processados de ambos os sistemas de produção utilizando uma revisão sistemática da literatura e meta-análise, associando a aspectos de manejo das matérias-primas e processamento. Para isso, buscou-se artigos científicos publicados entre 2010 e 2020 e os dados obtidos foram analisados utilizando o método da diferença média padronizada com ajuste de Hedges e modelo analítico aleatório. Trinta e sete artigos foram selecionados, e os alimentos analisados em tais estudos foram agrupados em cinco categorias: cárneos, lácteos, pescado, vinhos e sucos/polpas de frutas. Nos produtos de origem animal o foco comparativo evidenciado foi principalmente o do perfil de ácidos graxos, enquanto nos de origem vegetal foi o dos fitoquímicos. Em relação à comparação do teor de nutrientes, foi possível constatar a similaridade nos orgânicos e nos convencionais na maioria dos estudos, entretanto, diferenças pontuais foram verificadas (P < 0,05): orgânicos com mais proteínas (cárneos), ômega 3 (lácteos) e menos ácido linoleico (lácteos e pescado). Também, notaram-se diferenças no manejo das matérias-primas orgânicas e convencionais, e similaridade no processamento. Portanto, a escolha por alimentos processados orgânicos não deve ser feita exclusivamente baseada em aspectos nutricionais, tendo em vista que as diferenças nos teores dos nutrientes em relação aos convencionais são praticamente inexistentes.

Anaerobic digestion for treatment of swine wastewater is an attractive alternative, among other aspects, for the generation of biogas. This gas is composed predominantly of methane and can be converted into electrical and thermal energy. However, the knowledge of the biogas composition is of paramount importance, especially regarding the methane content due to its energetic properties. The alternatives for this determination usually require high cost and specialized technicians. Therefore, the search for simple and low cost alternative solutions and techniques can improve the biogas use as an energy source and favor energy sustainability in pig farming. The present study aimed to compare the results of the methane composition of a portable analyzer with that of a Gasboard gas analyzer. The biogas was collected and characterized in a full cycle swine farm from January to December 2019 in the municipality of Teixeiras (MG), Brazil. The methane composition values did not differ statistically for a 5% significance level between the evaluated methods. The use of the portable kit is a simple and low cost alternative in determining the methane content in biogas and can be used reliably.

Este manuscrito apresenta uma revisão da evolução do marco legal da produção de leite cru refrigerado no Brasil, desde a implementação do Programa Nacional de Melhoria de Qualidade do Leite – PNMQL, até os dias atuais. Após o início dos trabalhos do PNMQL, em 2002, foi criada a Rede Brasileira de Laboratórios da Qualidade do Leite – RBQL e aprovado o Regulamento Técnico de Produção, Identidade e Qualidade do Leite Cru Refrigerado. Desde então, tem sido observada uma evolução gradativa das normas referentes à produção de leite cru. Esta evolução vem sendo balizada por normas referentes à obtenção, conservação, transporte e padrões de qualidade do leite cru refrigerado. Contudo, dados oficiais sobre a qualidade do leite cru refrigerado produzido pelos produtores brasileiros não estão disponíveis. Além disso, são poucos os estudos de caso longitudinais que investigaram esta temática, após a implementação do PNMQL. Logo, ainda não está claro se a qualidade do leite produzido no campo tem efetivamente melhorado. Também, é preciso elucidar qual parcela de uma eventual melhoria da qualidade do leite cru refrigerado é proveniente das ações do PNMQL, e qual é proveniente da exclusão de pequenos produtores. O processo de melhoria da qualidade do leite cru refrigerado depende da atuação de todos os elos que compõem a sua cadeia produtiva – produtores, indústria e governo. O governo deve regulamentar e fiscalizar, a indústria deve dar suporte aos produtores para que as metas sejam atingidas, e, finalmente, os produtores precisam atuar como parte interessada na melhoria da qualidade do leite.

O conceito de qualidade de um produto, sob o ponto de vista do consumidor, é baseado nas suas percepções subjetivas. No entanto, no processo de aquisição de um produto, atributos de qualidade podem ser observados, auxiliando o consumidor na sua tomada de decisão. Dentre estes atributos, selos de indicação geográfica têm sido apontados como indicadores de qualidade de produtos alimentícios podendo ser considerados pelos consumidores ao realizar a sua compra. Objetivando avaliar a relevância de sinais e atributos de qualidade na escolha da Cachaça, por apreciadores com alto nível de conhecimento e elevado grau de envolvimento com a bebida, foram aplicados questionários a esse público. Os resultados mostraram que os atributos sensoriais são os parâmetros mais importantes para os apreciadores de cachaça. No entanto, antes da degustação do produto, fatores como marca, preço e marketing têm maior relevância no momento da compra. Os resultados apontaram que a origem geográfica ainda não é um conceito relevante aos consumidores desse nicho de mercado.

This paper aimed to analyze the evolution of the quality of raw milk produced by producers in the Zona da Mata region, in the state of Minas Gerais, between 2012 and 2018. For this purpose, we used the linear mixed-effects model to analyze the monthly evolution of the results of milk composition indicators (fat, protein, and defatted dry extract - DDE), somatic cell count - SCC, and total bacterial count - TBC, from the official monthly registry of 94 milk producers, suppliers of a region’s dairy. Results indicate a continuous reduction in the milk composition indicators between 2014 and 2018. For the SCC and TBC indicators, we identified only one-off reductions. The supply of a larger volume of milk was associated with increased TBC. Seasonality influenced all quality indicators analyzed. According to these results, we concluded that the analyzed quality of chilled raw milk offered by producers was proven worse from 2012 to 2018, despite the actions implemented by the National Milk Quality Improvement Program - PNMQL. RESUMO: Este artigo objetivou analisar a evolução da qualidade do leite cru refrigerado produzido por produtores da região da Zona da Mata, do Estado de Minas Gerais, entre os anos de 2012 e 2018. Para tal, foi utilizado o modelo linear de efeitos mistos, a fim de analisar a evolução mensal dos resultados de indicadores de composição do leite (gordura, proteína e extrato seco desengordurado - ESD), contagem de células somáticas - CCS, e contagem bacteriana total - CBT, provenientes de análises oficiais mensais de 94 produtores de leite, fornecedores de um laticínio da região. Os resultados indicaram uma redução contínua dos indicadores de composição do leite entre os anos de 2014 e 2018. Para os indicadores de CCS e CBT foram observadas apenas reduções pontuais. O fornecimento de um maior volume de leite foi associado ao aumento da CBT. A sazonalidade influenciou todos os indicadores de qualidade analisados. De posse desses resultados, pode-se afirmar que, apesar das ações implementadas pelo Programa Nacional de Melhoria de Qualidade do Leite - PNMQL, a qualidade do leite cru refrigerado, proveniente dos produtores avaliados, piorou ao longo do período em análise.

This paper focuses on an analysis of the energy mix profile and energy efficiency of the Brazilian dairy industry. It investigates dairies’ energy mix and energy efficiency and identifies some actions for a cleaner energy mix. Primary data from 37 dairy cheese-making establishments distributed among the Brazilian regions were obtained from online surveys. The results indicate that woodfuel plays a critical role, being the most used fuel in thermal energy generation, while diesel is dominant in electric generation. It also emphasizes that only 51% of the dairy establishments utilize electric energy generators. Other alternative biomass sources are still incipient in the sector, restricted to just 9.5% of the cases for thermal energy generation and no cases for electricity. Regarding the energy efficiency analysis, the results suggest dairies are more scale efficient than pure technical efficient. However, the dairies present a low energy efficiency level. There is no evidence that inefficiencies are differently distributed according to their size. These findings are important for government agencies, industry associations, scientists, universities and research institutes. High inefficiencies, regarding the use of electricity and thermal energy, are a key issue in sustainable bioenergy production.

A cultura da palma representa mais de um terço da produção mundial de óleos vegetais. O processamento dos frutos da palma demanda grande quantidade de eletricidade e vapor, entretanto, gera biomassa residual com elevado conteúdo energético. Devido a essas características, a cogeração é empregada para reduzir custos operacionais. O objetivo desse estudo foi avaliar os custos de produção de vapor e eletricidade via cogeração de resíduos da palma utilizando a metodologia SPECO. A unidade de cogeração foi dimensionada para atender a demanda energética de uma planta de extração de óleo com capacidade de processamento de 50 toneladas de cachos de palma por hora. Os custos obtidos para o vapor e eletricidade foram, respectivamente, de 12,18 R$/ton e 124,12 R$/MWh. Ao se comparar o custo de produção da energia com o custo de sua compra, constatou-se que a implantação da cogeração pode gerar uma economia anual de R$ 4.795.083,92 para a unidade de processamento de palma deste estudo. The palm culture represents more than one third of global vegetable oil production. The palm processing demands large amounts of electricity and steam, however, produces biomass with high energetic potential. Because of these characteristics, cogeneration is applied in order to decrease operational costs. The goal of this study was to evaluate the production costs of steam and electricity produced by cogeneration of palm residues, utilizing SPECO methodology. The cogeneration plant was dimensioned to supply the energetic demand of a mill which process 50 tons of palm bunches per hour. The costs obtained for steam and electricity was, respectively, 12.18 R$/ton e 124.12 R$/MWh. When a comparison is done between production cost and purchase price of electricity, results shows that cogeneration could generate an economy of R$ 4,795,083.92 per year for the palm mill of this study.

Governança Corporativa tornou-se fundamental diante do cenário internacional de grandes escândalos corporativos e particularmente no Brasil em razão das crises econômica, política e ética. Entre os aspectos relevantes que mudaram o comportamento dos executivos, está a responsabilidade civil e criminal prevista em razão de eventuais fraudes cometidas pela alta administração e a necessidade de adoção de práticas de governança corporativa. O objetivo principal desta pesquisa foi demonstrar por meio de análises quantitativas e testes de hipóteses se os diferentes níveis de governança corporativa definidos pela Bovespa/B3 (Nível 1, Nível 2 e Novo Mercado) tiveram efeito no desempenho das empresas no período de 2008 a 2018, considerando o ambiente de crescimento e de crise vivenciado no Brasil. Na busca de sucesso empresarial e financeiro as organizações necessitam melhorias constantes na gestão, para continuarem no mercado de forma competitiva. Portanto o presente relato técnico teve como objetivo diagnosticar e sugerir melhorias em uma empresa do ramo do transporte com sede na cidade de Cascavel - PR. Para tanto, realizou-se reuniões com os proprietários para levantamento de informações da empresa, juntamente com a análise do balanço patrimonial e demonstrativo contábil. Constatou-se que a empresa necessitava de uma estruturação no orçamento para o ano de 2018 e organização estrutural para criação de valores. Foram propostas duas intervenções, a primeira refere-se à elaboração do modelo de gestão Canvas para estruturação do planejamento estratégico, sendo uma ferramenta gerencial que de forma compartilhada desenvolve um modelo de negócio de forma dinâmica e a segunda intervenção foi a elaboração do orçamento empresarial para o ano de 2018, para melhor organização financeira da empresa. Com tais propostas espera-se contribuir para melhoria nos processos de gestão da empresa e maior competitividade no mercado.

O Brasil destaca-se pela sua produção de cana-de-açúcar. O açúcar mascavo é um nutritivo e saudável subproduto, obtido artesanalmente por agricultores familiares. Entretanto, como resultado de sua produção artesanal, o açúcar mascavo apresenta diversidade na cor. O objetivo deste estudo foi analisar a cor do açúcar mascavo e sua aceitação no mercado de Viçosa, Minas Gerais. Foram realizadas análises colorimétricas (CIELAB) e os resultados avaliados mediante análise multivariada, medidas de dissimilaridade e similaridade, e técnicas de agrupamento (programa GENES). Para a análise colorimétrica foram avaliadas duas amostras de açúcar mascavo comercializadas pela Associação Riobranquense de Produtores de Rapadura, Açúcar Mascavo, Aguardente e Melado (ARPRAM), onze obtidas de seus associados e seis amostras de marcas comerciais. Para teste de aceitação da cor pelos consumidores foram escolhidas três amostras representativas das cores: escura, semi-escura e clara. Para esta avaliação foi usada uma escala hedônica de nove pontos. Das 19 amostras analisadas, 13 apresentaram diferenças de cor visível. As amostras com maior dissimilaridade foram as de um produtor e da ARPRAM, apresentando distância euclidiana média de 16,47. As amostras com maior similaridade foram obtidas de um associado da ARPRAM e de uma marca comercial com distância de 0,44. Não houve diferença significativa no teste de aceitação de cor das amostras de açúcar mascavo. Com a análise colorimétrica foi comprovado que não há uniformidade da cor entre as amostras produzidas e comercializadas pela ARPRAM, bem como as obtidas comercialmente. Entretanto, para o consumidor as diferenças na cor não influenciam na aceitação do açúcar mascavo.

In order to model and analyze the techno-economic feasibility of a whey processing unit for the production of whey protein concentrate (WPC) integrated with processing of lactose, the present study utilized the software SuperPro Designer® for modeling of the processes, including risk analysis and study of reduced pollution impacts. Six models were constructed for the production of WPC and processing of lactose, which were (1) WPC 34, (2) WPC 34 and lactose powder, (3) WPC 34 and hydrous ethanol fuel, (4) WPC 80, (5) WPC 80 and lactose powder, and (6) WPC 80 and hydrous ethanol fuel. The economic evaluation was performed by analysis of the Payback Period (PP), Net Present Value (NPV), Breakeven Point (BP) and Internal Rate of Return (IRR). Probability distributions obtained by fitting of historical data for whey prices and the final products were used to perform the risk analysis, submitted to a Monte Carlo simulation using the @Risk software. The project showed to be feasible due to the elevated IRR and NPV values, coupled with low BP and PP. When evaluating the individual production of ethanol, it was verified that the production cost of this product was superior to the sale price, making independent production of ethanol from lactose present in the whey uneconomical. Plants with production of lactose powder were more economically attractive and also presented greater reduction of Biochemical Oxygen Demand (BOD) and Chemical Oxygen Demand (COD). The financial indices suggested greater feasibility of WPC 80 compared to WPC 34.

Colombia se está iniciando en bioenergía y necesita de políticas e infraestructura para la producción de biocombustibles. En los últimos años, los biocombustibles vienen avanzando apoyados por la adopción de decretos de ley que permiten la introducción de biocombustibles, mezclados, en primera instancia, con combustibles fósiles como la gasolina y el diésel. Este artículo de “revisión de tema” presenta el comienzo y desarrollo de los biocombustibles en Colombia y la situación actual de la producción, las empresas y las entidades que lideran este proyecto, con el fin de adoptar una fuente de energía renovable y sostenible. En el análisis de este tema sobre biocombustibles en Colombia se apunta un claro comienzo a la independencia de combustibles fósiles, con la premisa de una matriz energética sostenible que asegure el crecimiento de la industria, el desarrollo social y la preservación del ambiente. Por otro lado, se observa la tendencia mundial a la adopción de biocombustibles principalmente en países dependientes del petróleo, siendo los suramericanos como Brasil, Colombia y Argentina los abanderados en estas propuestas. Colombia presenta, a su vez, recursos en este ámbito en disponibilidad de tierras, mano de obra, políticas internas de consumo y producción, que coexisten con dificultades en desigualdad social, conflictos internos, monopolios y trabas políticas que podrían impedir inversión privada y extranjera

A industria de laticinios e de grande importância para o Brasil devido ao suprimento de produtos de alto valor nutricional e a geracao de emprego e renda nos meios rural e urbano. Assim, este trabalho teve como objetivo caracterizar estabelecimentos de laticinios do Brasil, com registro no Servico de Inspecao Federal (SIF), quanto a aspectos produtivos, gerenciais e mercadologicos. De um universo de 1.188 laticinios com SIF, foi feito contato com 377 gestores destes estabelecimentos e enviados questionarios para 292 deles, entre novembro de 2014 e janeiro de 2015, obtendo-se um total de 68 respostas. A partir dos questionarios respondidos, foi realizada uma analise exploratoria, calculando-se estatisticas descritivas das frequencias observadas das variaveis, procedendo-se teste de medias e teste de associacao, quando aplicavel. Verificou-se que a amostra e representativa da populacao de estabelecimentos de laticinios no que diz respeito a distribuicao regional doBrasil. Os estabelecimentos respondentes sao, basicamente, micro e pequenas empresas, com baixa capacidade de processamento. Observou-se que a ociosidade e um problema com grande presenca junto aos micro e pequenos estabelecimentos, fruto da operacao reduzida e da dificuldade de aquisicao de leite. Observou-se tambem que estes estabelecimentos estao direcionados ao atendimento de mercados regionais e nacional, com principalmente queijos frescos e de media maturacao. Verificou-se que os gestores tem experiencia previa tanto na funcao quanto no setor, sendo esta ultima, aparentemente, mais valorizada pelas empresas. As principais dificuldades apontadas pelos gestores estao relacionadas a concorrencia desleal, oscilacoes de mercado e a falta de mao de obra qualificada

Process of palm demands large amounts of eletricity and steam, howeverproduces biomass with high energy potencial. Because of this features, cogenaration can beaplied in order to decrease operational costs. The goal of this study was evalueted the steamand eletricity production costs produces by cogenaration of palm residues utilizing SPECOmethology. The cogeration plant was dimensioned to suply energetic demand of a mill wichprocess 50 tons of palm bunches. The costs obtained for steam and eletricity was,respectivelly, 12,18 R$/ton e 124,12 R$/MWh. When a comparison is done betweenproduction cost and purchase price of eletricity, results shows that cogeneration couldgenerate an economy of R$ 4.795.083,92 per year for the palm mill.KEYWORDS: Exergy; Exergoeconomic; Thermoeconomic; Palm; Cogeneration. A cultura da palma representa mais de um terço da produção mundial de óleosvegetais. O processamento dos frutos da palma demanda grande quantidade eletricidade evapor, entretanto, gera biomassa residual com elevado conteúdo energético. Devido a essascaracterísticas a cogeração é empregada para de reduzir custos operacionais. O objetivodesse estudo foi avaliar os custos de produção de vapor e eletricidade via cogeração deresíduos da palma utilizando a metodologia SPECO. A unidade de cogeração foidimensionada para atender a demanda energética de uma planta de extração de óleo comcapacidade de processamento de 50 toneladas de cachos de palma por hora. Os custosobtidos para o vapor e eletricidade foram, respectivamente, de 12,18 R$/ton e 124,12R$/MWh. Ao se comparar o custo de produção da energia com o custo de sua compra,constatou-se que a implantação da cogeração pode gerar uma economia anual de R$4.795.083,92 para a unidade de processamento de palma.

Os produtores familiares do município de Visconde do Rio Branco, por tradição, vêm produzindo açúcar mascavo e necessitam fortalecer sua distribuição no mercado. Como um aporte a isso, este trabalho objetivou avaliar as diferentes formas de distribuição do açúcar mascavo pela ARPRAM (Associação Riobranquense de Produtores de Rapadura, Açúcar Mascavo, Aguardente e Melado), identificando os principais atributos inerentes, as facilidades e dificuldades e propondo alternativas para melhorar a eficiência desse processo. Para isso, nos procedimentos metodológicos, a pesquisa se caracterizou como exploratória e descritiva; as técnicas adotadas foram a pesquisa bibliográfica e o estudo de caso. Foram entrevistados o presidente da ARPRAM e 28 representantes do mercado atacadista e varejista. Foi possível identificar os canais atualmente utilizados pela ARPRAM, os principais intermediários inseridos na distribuição do açúcar mascavo e os requisitos exigidos por cada intermediário. Com base em tais informações, concluiu-se que os principais canais de distribuição do açúcar mascavo utilizados pela ARPRAM são realizados por intermediários atacadistas e por pequenos supermercados locais, através de vendas diretas. Entre os principais indicadores para que os intermediários aceitem o açúcar mascavo estão a qualidade, o preço, a cor, a confiabilidade na entrega e o volume disponível. Uma possível ameaça para a ARPRAM é a existência no mercado de grandes distribuidores de açúcar mascavo no setor atacadista, conformando suas próprias unidades de produção, razão pela qual a Associação deve-se fortalecer com o trabalho conjunto de seus associados, a organização de sua gestão e a padronização do açúcar mascavo, entre outros. Based on this information, it is concluded that the principal distribution channels of brown sugar, used by the ARPRAM, are through mediators as well as local small markets through direct sales. The principal approach to accept this product is the quality, the price, the color, the delivery dependability, and the available volume. A possible threat for ARPRAM is the existence of great distributors in the market of the wholesale section, forming their own production units. Therefore, the Association should strengthen their associates’ united work, the organization of its administration, and the standardization of this product.

This study sought to use four different hedonic scales for assessment of consumer behavior in sensory acceptance tests of strawberry yogurt. Two nine-point structured scales were used (unipolar and bipolar), along with two unstructured linear scales measuring nine centimeters (hybrid and traditional). For each of the scales the assumptions of homogeneity of variances and normality of experimental errors were evaluated. Also assessed was the discrimination power of the products on the different scales, using the Duncan’s multiple range tests. For this purpose, four different brands of strawberry yogurt were evaluated with regards to sensory acceptability by 400 consumers, where each group of 100 volunteers used a different type of scale to express their opinions about the products. Normality of the errors was verified using the Kolmogorov–Smirnov test and homogeneity of variances of the errors by Levene’s test. For all scales assessed the normality and homogeneity of the experimental errors were observed ( p > 0.05), but the unipolar structured scale presented poorer performance with respect to the normal errors. Contrarily, the unstructured scales underperformed in relation to the homogeneity of variance of the error. According to Duncan’s test for the products within each scale, the bipolar structured and traditional unstructured scales showed higher discrimination of the products. The structured bipolar scale and unstructured traditional scale showed satisfactory performance for assessing sensory acceptability of consumers, since they allow higher discrimination of products and met the assumptions of the analysis of variance.

Objetivando avaliar a atividade logística nas empresas do setor laticinista atuantes nas regiões Zona da Mata e Campo das Vertentes no estado de Minas Gerais, foram promovidas pesquisas com 40 indústrias que representam o setor avaliado. Os questionários respondidos pela gerência das empresas continha variáveis que possibilitaram caracterizar as empresas quanto à sua produção, logística de captação e distribuição, gestão interna, além de mercado e comercialização. O uso da análise estatística multivariada fatorial foi de grande relevância ao possibilitar a construção de um índice que representou o desempenho logístico de cada uma das empresas, sendo também utilizada para realizar o agrupamento dessas indústrias em 4 grupos que continham características similares. O índice logístico (IL) mostrou que as empresas estudadas da região precisam melhorar as atividades que constituíram sua medida, a fim de tornar os aspectos logísticos um meio de vantagem competitiva. Além disso, os grupos formados também possibilitaram avaliar que não é suficiente atuar na melhoria de apenas uma parte das atividades logísticas, mas sim no conjunto de variáveis que pode influenciar positivamente no resultado final no quesito competitividade e liderança logística. In order to evaluate the logistics activity in the dairy companies operating in Zona da Mata and Campo das Vertentes in Minas Gerais, Brazil a research has been promoted on 40 industries that represent the sector assessed. The questionnaire answered by company employees, contained variables that allowed obtaining information about company identification, gathering and distribution logistics, internal management, marketing and commercialization. Factorial statistical analysis was very important to enable the construction of an index representing the logistics performance of each company and was also used to perform the grouping of these industries into 4 groups containing similar characteristics. The index logistics (IL) showed that companies in the study area still need to improve their activities which were measured to make the logistics a competitive advantage. Moreover, the groups formed also allowed to evaluate that is not enough the improvement at only a part of logistics activities, but is necessary to improve the set of variables that can positively influence the final result in the logistics competitiveness and leadership.

The research in question sought to examine the perceptions of representatives and creators of the National Production and Use of Biodiesel Policy (PNPB), focusing on the social construction process of the Centers for Biodiesel Project. Specifically, the objective was to examine the process of social management and governance practices of this project, considering the decision and relational spaces. Methodically made use of literature and semi-structured interview, with subsequent analysis of content. The results indicated drift in relations between the local production arrangements and Biodiesel plants. The Brazilian biodiesel is produced mainly from soybeans, given the reality of farmers, low educational level, training, capitalization and institutional fragility. It was found consistency between the perception of socio-institutional leaders and the data from the literature; identifying that, despite the advances of PNPB, social inclusion goals were not met. wonders about the continuity of the Centers for Biodiesel Project, is for having achieved your goals or limited human and financial resources. It was concluded that the social construction of the project was permeated by a productive logic, with limited appreciation of the knowledge and experiences of farmers, their natural resources, technological, organizational, socio-political and cultural.

The cost of raw milk supply is very important for the dairy industries. The quantification and management of these costs can help industries to become more competitive in the market. In this context, the objective of this study is to estimate the cost of the raw milk supply by studying the situation in seven dairies located in the Zona da Mata of Minas Gerais, Brazil. These costs were calculated from information provided by the industries related to fuel consumption, maintenance, manpower, depreciation, cleaning, insurance among others, distributed between fixed and variable costs of companies. The cost of milk supply in the seven companies varied in the range of R$ 0.023 to R$ 0.138 per liter of collected raw milk. These costs can be reduced by increasing the transport capacity and storage tanks within the properties, and by optimizing the collection. Os custos de coleta do leite cru são de suma importância para os laticínios. A quantificação e gestão destes custos podem auxiliar as indústrias a se tornarem mais competitivas no mercado. Neste contexto, o objetivo deste trabalho é estimar os custos de coleta do leite cru a partir do estudo em sete indústrias de laticínios localizadas na Zona da Mata mineira. Estes custos foram calculados a partir de informações fornecidas pelas indústrias relacionadas a consumo de combustível, manutenção, mão de obra, depreciação, lavagem, seguro entre outras, distribuídos entre custos fixos e variáveis das empresas. Os custos de coleta de leite nas sete empresas mostraram-se bem variados, na faixa de R$ 0,023 a R$ 0,138 por litro de leite coletado. Estes custos podem ser reduzidos com o aumento da capacidade de transporte e de armazenamento nos tanques dentro das propriedades, e com aotimização das linhas de coleta.

Resumo: Pretende-se identificar o risco envolvido no plantio da cultura da mamona, utilizando o Metodo de Monte Carlo, e avaliar a evolucao da producao desta cultura apos a implantacao do Programa Nacional de Producao e Uso de Biodiesel PNPB. A analise foi feita utilizando-se o custo de producao da cultura da mamona na regiao de Irece-BA, alem das series historicas de produtividade e de precos no estado da Bahia. O estudo analisou quatro modelos, os dois primeiros tendo como base o ano de 2007, e os dois ultimos o ano de 2010. Os modelos 1 e 3 consideraram a mao-de-obra familiar no custo de producao e os modelos 2 e 4 nao. Tanto os modelos 1 e 2 quanto 3 e 4 apresentaram baixa produtividade, com maior frequencia de distribuicao na faixa de 500 a 700 kg ha -1 . A atividade apresenta alto risco e nao oferece uma garantia de renda aos produtores. Assim sendo, observa-se uma probabilidade da margem bruta ser negativa de 70% para o modelo 1 e 60% para o modelo 3. Para o modelo 4 obteve-se 57% de probabilidade de projetos terem um retorno inferior a R$ 500,00, enquanto o modelo 2 apresentou um risco de 79%, considerando a mesma margem de lucro. Observa-se que apesar da melhora, os modelos tiveram comportamento semelhante, mostrando que a introducao do PNPB nao permitiu significativa reducao do risco do plantio dessa cultura agricola.

O entendimento das necessidades dos clientes e a utilização de tecnologia dos alimentos podem tornar uma ideia em um produto inovador. O objetivo deste trabalho foi estudar, por meio de uma pesquisa de mercado, a oportunidade de um novo produto e, posteriormente, elaborar uma salada de frutas frescas, utilizando técnicas de processamento mínimo com métodos combinados. A pesquisa de mercado foi realizada na região metropolitana de Belo Horizonte - MG para estudar o mercado potencial e avaliar a aceitação de uma salada de frutas pronta e embalada. No processo de desenvolvimento do produto, foram selecionadas três formulações, para avaliação sensorial, avaliadas a cada sete dias, durante 21 dias de armazenamento. Na análise de mercado, o produto salada de frutas foi aprovado, enquanto ideia, sendo considerada como ótima e original. Os clientes potenciais se apresentam como abertos a novidades de mercado e a novas marcas. Considera ainda como atributos de decisão de compra, em ordem de prioridade: preço, referência, necessidade, composição e ingredientes, valores nutricionais. No desenvolvimento da salada de frutas, todos os três tipos foram aceitos em análise sensorial com até 21 dias de armazenamento.Understanding the customers' needs and the use of food technology can make an idea become an innovative product. The goals of this study were to investigate, through a market research, the opportunity for a new product, and, subsequently, prepare an acceptable and fresh ready-to-eat fruit salad using minimal processing and combined methods. The market research was carried out in the metropolitan region of Belo Horizonte - MG, Brazil to study the potential market and to assess the market opportunities for a packed, ready-to eat fruit salad. After the development of the product, three types of fruit salad were prepared and a sensory evaluation was carried out every seven days during 21 days of storage. The market research revealed that the fruit salad, as a potential product, was approved and considered excellent and original. The potential customers claimed that they are open to market novelties and new brands. They established the following as product attributes for purchasing decision in order of priority: price, reference, need, composition and ingredients, and nutritional values. It can be said that all three types of fruit salads prepared were accepted as a result of the sensory analysis of samples stored for up to 21 days.

O consumidor vem apresentando cada vez maior consciência na escolha de sua alimentação, porém com menor tempo disponível para preparar refeições saudáveis. Diante disso, o mercado de hortaliças minimamente processadas tem aumentado rapidamente, proporcionando o surgimento de produtos convenientes, ou seja, produtos frescos que podem ser preparados e consumidos em pouco tempo. Assim, neste trabalho estudou-se o comportamento de compra e o perfil dos consumidores de hortaliças minimamente processadas em supermercados de Belo Horizonte. Foram aplicados questionários aos consumidores de cinco estabelecimentos que vendiam hortaliças minimamente processadas (HMP) e os entrevistados foram escolhidos aleatoriamente no momento das compras, durante o mês de novembro de 2004. Foram entrevistadas 246 pessoas, das quais apenas 23% consumiam HMP. Os principais motivos para consumir foram comodidade e praticidade (46%), pouco tempo para o preparo (21%) das refeições e higiene (11%) dos produtos, e para não consumir foram preço elevado (31,9%), gosta de preparar e/ou escolher (23%) e desconfiança (17,8%) dos produtos ofertados. Os maiores consumidores são as pessoas com maior escolaridade e nível de renda mais elevado. A sobrevalorização dos HMP em relação aos produtos comuns variou de 2,4 vezes (batata) até 39,5 vezes (cenoura), sendo a média de sobrevalorização encontrada no mercado para as onze HMP de 10 vezes.Consumer's food consciousness has increased, however, time for preparing healthy food has decreased. Therefore, the market of minimally processed vegetable has increased rapidly, giving rise to the appearance of fresh products that can be prepared and consumed faster than conventional foods. Thus, the objective of this work was to establish the behavior and profile of minimally processed vegetable consumers in supermarkets of Belo Horizonte, Minas Gerais State, Brazil. Based on the answers to a survey, the consumers profile was traced, highlighting preferences, habits, complaints and demands. The survey was conducted with consumers of five supermarkets which sell minimally processed vegetables (MPV). Consumers were chosen randomly when they were buying in November 2004. Of two hundred and forty six interviewed persons, 23% were consumers of MPV. The main reasons for consumption were: easiness and feasibility (46%); short preparation time (21%) of meals and hygiene (11%) of the products; and the main reasons against consumption were: the high price of the precuts (31,9%); easy to prepare and/or to choose (23%) and distrusting (17,8%) the offered products. The major consumers were those with a better education. Comparing the overrating of MPV with other vegetables, a variation of 2,4 (potato) to 39,5 times (carrots) was found. On average the overrating found in markets for eleven MPV was of 10 times.

In AD, an imbalance between Aβ production and removal drives elevated brain Aβ levels and eventual amyloid plaque deposition. APP undergoes nonamyloidogenic processing via α-cleavage at the plasma membrane, amyloidogenic β- and γ-cleavage within endosomes to generate Aβ, or lysosomal degradation in neurons. Considering multiple reports implicating impaired lysosome function as a driver of increased amyloidogenic processing of APP, we explored the efficacy of targeting transcription factor EB (TFEB), a master regulator of lysosomal pathways, to reduce Aβ levels. CMV promoter-driven TFEB, transduced via stereotactic hippocampal injections of adeno-associated virus particles in APP/PS1 mice, localized primarily to neuronal nuclei and upregulated lysosome biogenesis. This resulted in reduction of APP protein, the α and β C-terminal APP fragments (CTFs), and in the steady-state Aβ levels in the brain interstitial fluid. In aged mice, total Aβ levels and amyloid plaque load were selectively reduced in the TFEB-transduced hippocampi. TFEB transfection in N2a cells stably expressing APP695, stimulated lysosome biogenesis, reduced steady-state levels of APP and α- and β-CTFs, and attenuated Aβ generation by accelerating flux through the endosome-lysosome pathway. Cycloheximide chase assays revealed a shortening of APP half-life with exogenous TFEB expression, which was prevented by concomitant inhibition of lysosomal acidification. These data indicate that TFEB enhances flux through lysosomal degradative pathways to induce APP degradation and reduce Aβ generation. Activation of TFEB in neurons is an effective strategy to attenuate Aβ generation and attenuate amyloid plaque deposition in AD.SIGNIFICANCE STATEMENTA key driver for AD pathogenesis is the net balance between production and clearance of Aβ, the major component of amyloid plaques. Here we demonstrate that lysosomal degradation of holo-APP influences Aβ production by limiting the availability of APP for amyloidogenic processing. Using viral gene transfer of transcription factor EB (TFEB), a master regulator of lysosome biogenesis in neurons of APP/PS1 mice, steady-state levels of APP were reduced, resulting in decreased interstitial fluid Aβ levels and attenuated amyloid deposits. These effects were caused by accelerated lysosomal degradation of endocytosed APP, reflected by reduced APP half-life and steady-state levels in TFEB-expressing cells, with resultant decrease in Aβ production and release. Additional studies are needed to explore the therapeutic potential of this approach.

Epidemiological studies show that patients with type 2 diabetes (T2DM) and individuals with a diabetes-independent elevation in blood glucose have an increased risk for developing dementia, specifically dementia due to Alzheimer's disease (AD). These observations suggest that abnormal glucose metabolism likely plays a role in some aspects of AD pathogenesis, leading us to investigate the link between aberrant glucose metabolism, T2DM, and AD in murine models. Here, we combined two techniques – glucose clamps and in vivo microdialysis – as a means to dynamically modulate blood glucose levels in awake, freely moving mice while measuring real-time changes in amyloid-β (Aβ), glucose, and lactate within the hippocampal interstitial fluid (ISF). In a murine model of AD, induction of acute hyperglycemia in young animals increased ISF Aβ production and ISF lactate, which serves as a marker of neuronal activity. These effects were exacerbated in aged AD mice with marked Aβ plaque pathology. Inward rectifying, ATP-sensitive potassium (K(ATP)) channels mediated the response to elevated glucose levels, as pharmacological manipulation of K(ATP) channels in the hippocampus altered both ISF Aβ levels and neuronal activity. Taken together, these results suggest that K(ATP) channel activation mediates the response of hippocampal neurons to hyperglycemia by coupling metabolism with neuronal activity and ISF Aβ levels.

The paracellular pathway through the tight junction provides an important route for transepithelial chloride reabsorption in the kidney, which regulates extracellular salt content and blood pressure. Defects in paracellular chloride reabsorption may in theory cause deregulation of blood pressure. However, there is no evidence to prove this theory or to demonstrate the in vivo role of the paracellular pathway in renal chloride handling. Here, using a tissue-specific KO approach, we have revealed a chloride transport pathway in the kidney that requires the tight junction molecule claudin-4. The collecting duct-specific claudin-4 KO animals developed hypotension, hypochloremia, and metabolic alkalosis due to profound renal wasting of chloride. The claudin-4-mediated chloride conductance can be regulated endogenously by a protease-channel-activating protease 1 (cap1). Mechanistically, cap1 regulates claudin-4 intercellular interaction and membrane stability. A putative cap1 cleavage site has been identified in the second extracellular loop of claudin-4, mutation of which abolished its regulation by cap1. The cap1 effects on paracellular chloride permeation can be extended to other proteases such as trypsin, suggesting a general mechanism may also exist for proteases to regulate the tight junction permeabilities. Together, we have discovered a theory that paracellular chloride permeability is physiologically regulated and essential to renal salt homeostasis and blood pressure control.

In sporadic Alzheimer's disease (AD), impaired Aβ removal contributes to elevated extracellular Aβ levels that drive amyloid plaque pathogenesis. Extracellular proteolysis, export across the blood-brain barrier, and cellular uptake facilitate physiologic Aβ clearance. Astrocytes can take up and degrade Aβ, but it remains unclear whether this function is insufficient in AD or can be enhanced to accelerate Aβ removal. Additionally, age-related dysfunction of lysosomes, the major degradative organelles wherein Aβ localizes after uptake, has been implicated in amyloid plaque pathogenesis. We tested the hypothesis that enhancing lysosomal function in astrocytes with transcription factor EB (TFEB), a master regulator of lysosome biogenesis, would promote Aβ uptake and catabolism and attenuate plaque pathogenesis. Exogenous TFEB localized to the nucleus with transcriptional induction of lysosomal biogenesis and function in vitro. This resulted in significantly accelerated uptake of exogenously applied Aβ42, with increased localization to and degradation within lysosomes in C17.2 cells and primary astrocytes, indicating that TFEB is sufficient to coordinately enhance uptake, trafficking, and degradation of Aβ. Stereotactic injection of adeno-associated viral particles carrying TFEB driven by a glial fibrillary acidic protein promoter was used to achieve astrocyte-specific expression in the hippocampus of APP/PS1 transgenic mice. Exogenous TFEB localized to astrocyte nuclei and enhanced lysosome function, resulting in reduced Aβ levels and shortened half-life in the brain interstitial fluid and reduced amyloid plaque load in the hippocampus compared with control virus-injected mice. Therefore, activation of TFEB in astrocytes is an effective strategy to restore adequate Aβ removal and counter amyloid plaque pathogenesis in AD.

Experimental work has established that vertebrates can have a large impact on the abundance of arthropods in temperate forest and grasslands, as well as on tropical islands. The importance of vertebrate insectivory has only rarely been evaluated for mainland tropical ecosystems. In this study, we used exclosures to measure the impact of birds on arthropods in Guatemalan coffee plantations. Variation in shade management on coffee farms provides a gradient of similar habitats that vary in the complexity of vegetative structure and floristics. We hypothesized that shaded coffee plantations, which support a higher abundance of insectivorous birds, would experience relatively greater levels of predation than would the sun coffee farms. We found a reduction (64–80%) in the number of large (> 5 mm in length) but not small arthropods in both coffee types which was consistent across most taxonomic groups and ecological guilds. We also found a small but significant increase in the frequency of herbivore damage on leaves in the exclosures. This level of predation suggests that birds may help in reducing herbivore numbers and is also consistent with food limitation for birds in coffee agroecosystems. However, the presence of shade did not have an effect on levels of insectivory.

Sugarcane industry is one of the most important agribusiness sectors in Brazil, which receives foreign investments for expansion, due to great international interest. However, its expansion has been subject to control and restrictions related to sustainability imposed by foreign institutions and governments in developed countries. The present work aimed to assess the progress of ethanol plants from the region of Triângulo Mineiro, located in the state of Minas Gerais, and their sustainability. It also provides information that can support local development and industry structure, based on the discussion of important issues to business, government and society. To obtain all the necessary information, a survey questionnaire was prepared and applied in the sugar ethanol plants and associations of sugarcane producers. This survey instrument included questions pertaining to current sustainability requirements, and questions to characterize producers and industries in this meso-region. The results revealed that companies and farmers are aware of the international and national agreements regarding sustainability and they are trying to meet all the requirements stated by those policies. The study not only demonstrates the evolution of the sector, but also the high level of the sustainable practices being adopted.

O entendimento das necessidades dos clientes e a utilização de tecnologia dos alimentos podem tornar uma ideia em um produto inovador. O objetivo deste trabalho foi estudar, por meio de uma pesquisa de mercado, a oportunidade de um novo produto e, posteriormente, elaborar uma salada de frutas frescas, utilizando técnicas de processamento mínimo com métodos combinados. A pesquisa de mercado foi realizada na região metropolitana de Belo Horizonte - MG para estudar o mercado potencial e avaliar a aceitação de uma salada de frutas pronta e embalada. No processo de desenvolvimento do produto, foram selecionadas três formulações, para avaliação sensorial, avaliadas a cada sete dias, durante 21 dias de armazenamento. Na análise de mercado, o produto salada de frutas foi aprovado, enquanto ideia, sendo considerada como ótima e original. Os clientes potenciais se apresentam como abertos a novidades de mercado e a novas marcas. Considera ainda como atributos de decisão de compra, em ordem de prioridade: preço, referência, necessidade, composição e ingredientes, valores nutricionais. No desenvolvimento da salada de frutas, todos os três tipos foram aceitos em análise sensorial com até 21 dias de armazenamento. Understanding the customers' needs and the use of food technology can make an idea become an innovative product. The goals of this study were to investigate, through a market research, the opportunity for a new product, and, subsequently, prepare an acceptable and fresh ready-to-eat fruit salad using minimal processing and combined methods. The market research was carried out in the metropolitan region of Belo Horizonte - MG, Brazil to study the potential market and to assess the market opportunities for a packed, ready-to eat fruit salad. After the development of the product, three types of fruit salad were prepared and a sensory evaluation was carried out every seven days during 21 days of storage. The market research revealed that the fruit salad, as a potential product, was approved and considered excellent and original. The potential customers claimed that they are open to market novelties and new brands. They established the following as product attributes for purchasing decision in order of priority: price, reference, need, composition and ingredients, and nutritional values. It can be said that all three types of fruit salads prepared were accepted as a result of the sensory analysis of samples stored for up to 21 days.
