15. Novel cookies formula with Malva parvifloraL. leaves powder as functional food: Evaluation of functional and technological properties

Abstract

This study aimed to evaluate the protective effect of adding different concentrations of malva leaves powder (MLP) and assess the nutritional quality of cookies. The MLP had a potent content of protein, crude fiber, and ash. Additionally, eight fatty acids and seventeen phenolic compounds were identified. The antioxidant activity, total flavonoids, and total phenolic content of MLP were assessed. The quality characteristics of cookies, such as physical properties and sensory and antioxidant activity, were evaluated. The increased incorporation of malva leaves resulted in a progressive reduction in cookie samples' spread ratio and diameter. Color values of L* and b* of cookies samples incorporation with MLP were found in the range 66.47 to 47.84 and 25.24 to 14.34, respectively. The incorporation caused a greenish color in cookies at concentrations different from those in the control samples. Antioxidant analyses of cookies increased significantly with increasing the incorporation of MLP. The highest acceptance of cookies supplemented with MLP was noticed in 10% of supplementation; meanwhile, the lowest acceptance in sensory evaluation was in 30%. In conclusion, fortifying cookies with MLP. increased the bioactive compounds with acceptable impacts on their rheological and sensory attributes.

Abstract

This study aimed to assess the protective effect of encapsulating humic acid‐iron complexed nanoparticles (HA‐Fe NPs) inside glucanmannan lipid particles (GMLPs) extracted from yeast cell wall against aflatoxin B (AFB1) toxicity in vivo. Four groups of male Sprague‐Dawley rats were treated orally for 2 weeks included the control group, AFB1 treated group (80 µg/kg b.w); GMLP/HA‐Fe NPs treated group (0.5 mg/kg b.w), and the group treated with AFB1 plus GMLP/HA‐Fe NPs. GMLPs are empty 3–4 micron permeable microspheres that provide an efficient system for the synthesis and encapsulation of AFB1‐absorbing nanoparticles (NPs). Humic acid nanoparticles (HA‐NPs) were incorporated inside the GMLP cavity by complexation with ferric chloride. In vivo study revealed that AFB1 significantly elevated serum alanine aminotransferase, aspartate aminotransferase, creatinine, uric acid, urea, cholesterol, triglycerides, LDL, malondialdehyde, and nitric oxide. It significantly decreased total protein, high‐density lipoprotein, hepatic and renal CAT and glutathione peroxidase content and induced histological changes in the liver and kidney (p ≤ 0.05). The coadministration of the synthesized formulation GMLP/HA‐Fe NPs with AFB1 has a protective effect against AFB1‐induced hepato‐nephrotoxicity, oxidative stress and histological alterations in the liver and kidney. Abstract

The objectives of this study were to isolate and identify the actinomycetes strains from the soil and marine sediments and to evaluate the antimicrobial, antioxidant and cytotoxic activity of their bioactive secondary metabolites. Eight actinomycetes strains were isolated from soil and marine sediment samples collected from different areas in Egypt. Only three actinomycetes exhibited a wide spectrum of antimicrobial activities. They were active in vitro against microbial pathogen viz: Staphylococcus aureus, Escherichia coli, Salmonella typhi, Aspergillus parasiticus, Fusarium solani and Fusarium oxysporum. These promising isolates were selected and identified using molecular identification technique and identified as Streptomyces spp. The crude extracts from the three Streptomyces exhibited potent antimicrobial activities against a set of microbial pathogens as well as antioxidant and anticancer activity in human hepatocellular carcinoma cell line (HepG2). The crude extract of Streptomyces isolate D showed antitumor activity with lC50 0.85 µg/ mL. Forty compounds were identified from the two most promising ethyl acetate extracts of culture broth of Streptomyces sp. (D-EGY) by Gas Chromatography-Mass Spectrometry analysis. It could be concluded that the streptomycetes isolated from the Egyptian environment are promising candidates as antimicrobial, antioxidant and anticancer.

Abstract

The Aspergillus genera are one of the most abundant and widely distributed fungi. Among the Aspergillus genera are A. parasiticus, A. flavus, which produces aflatoxins, A. ochraceus, and A. niger that can produce ochratoxin A. Therefore, the aim of this study is to perform molecular identification and differentiation using the ISSR technique to the Aspergillus species, and study the ability of fungal isolates to produce mycotoxins. The ISSR markers are used in the analysis of the genetic similarity of Aspergillus isolated from peanuts. Data show the ability of the isolated A. flavus, and A. parasiticus to produce aflatoxins, whereas A. ochraceus produced ochratoxin A. To analyze the genetic similarity among the different fungal isolates, a total of 165 full bands were scored from the amplified products with the ten ISSR primers; 116 bands were polymorphic, and forty-one were unique bands with an average range size of (143-1939) bp. The similarity matrix between the isolated fungi revealed that the isolates A. parasiticus and A. niger showed the highest similarity (59 %). The ISSR molecular markers are an extremely valuable means to characterize the genetic similarity of the Aspergillus genera. [ABSTRACT FROM AUTHOR]

27. Application of Some Plant Essential Oils to Control FusariumIsolates Associated with Freshly Harvested Maize in Egypt

Abstract

Abstract:Maize (Zea maysL.) is a very versatile grain that serves as starting raw material for food and feed products, whereas fungal infection with Fusariumspecies have a negative effect on the yield and quality of the crop. Thus the aim of the current study was to isolate and identify fungi associated to maize grains collected from Cairo and Giza governorates, Egypt, and to evaluate the antifungal effect of some essential oils on the Fusariumisolates. Giza governorate showed higher percentage of infection ranging from 91.7 to 100 % compared to Cairo governorate which ranged from 33.3 to 83.3 %. Seven genera were isolated on Potato Dextrose Agar medium, and the most prevalent fungi were Aspergillus(55.6 %), followed by Alternaria(15.0 %), Penicillium(10.9 %) and Fusarium(5.7 %). On PCNB Fusariumselective medium, five genera were isolated and Fusariumwas the most predominant fungi (85.4 and 74.8 %) followed by Aspergillus(7.6 and 10.9 %) from Cairo and Giza governorates respectively. Ten Fusariumspecies were identified including, F. avenaceum, F. moniliforme, F. semitectum, F .solani, F. oxysporum,and F. graminearum.Antifungal activity of essential oils against the Fusariumisolates showed that rocket had high antifungal activity followed by tea tree and rosemary essential oils respectively. Inhibitory Concentration at 50 % (IC50) and Minimum Inhibitory Concentration (MIC) ranged from 0.044 to 0.049 % and 0.087 to 1.00 % for rocket essential oil, and from 0.049 to 0.282 % and 0.455 to 0.616 % for rosemary essential oil, and from 0.043 to 0.170 % and 0.192 to 0.361 % for tea tree essential oil respectively. It could be concluded that essential oils can be applied as bio control agents to prevent the growth of toxigenic and non-toxigenic species of Fusarium.
