This study focuses on the rheological analysis of cassava and chonta chichas (Manihot esculenta Crantz and Bactris gasipaes) produced in the Province of Pastaza, aiming to preserve and disseminate the cultural and nutritional heritage of these traditional beverages. The research emphasizes the integration of ancestral knowledge into modern production practices, exploring sensory characteristics that could influence consumer preferences and production standardization. In Pastaza, it has been observed that traditional production methods, such as chewing cassava and chonta to initiate fermentation, expose the product to microbial risks, making it potentially unpalatable and unsafe for consumption. To address these issues, this work incorporates neutrosophic theory to manage the uncertainties in sensory evaluation and applies Neutrosophic C-means clustering to analyze the data obtained from both expert assessments and instrumental measurements. This approach aims to enhance our understanding of how variations in the production process affect the beverage's properties and to develop a standardized production protocol that ensures both the safety and quality of the chichas. Through empirical data and rheological studies, this research seeks to contribute significantly to the sustainable preservation and enhancement of traditional beverage production. Abstract Tongba, chhyang, nigar and raksi are popular traditional drinks served in Nepal, northern and north eastern part of India and Tibetan plateau which are claimed as medicinal and considered as elements of high altitude ethnopharmacology. In this research, kodo (finger millet) based traditional beverages such as tongba, chhyang, nigar and raksi samples, collected from Singalila ridge of the Himalayas, were analysed through various qualitative and quantitative biochemical parameters. Total phenolic content (gallic acid equivalent) was estimated in a varied range from 936.26 ± 6.87 µg/mL (nigar) to 96.36 ± 1.22 µg/mL (chimphing raksi) while highest free fatty acid was measured in khokim raksi (2.11%). Antioxidant activity was evaluated using in vitro assays (DPPH assay, iodometric assay and in vitro anti-lipid peroxidation assay); antibacterial assay was conducted using well diffusion method. Tongba was found to be the most potential sample in antioxidant assays with a DPPH scavenging value of 85.31 ± 1.54% while nigar was the sample with most promising antibacterial activity. Furthermore, special emphasis was given on GC-MS based metabolite profiling and metabolomic elucidation. Responsible candidates detected by GC-MS analysis were discussed to correlate results of preliminary biochemical screenings and in vitro bioactivities. In vitro gastrointestinal digestion was carried out to figure out bioaccessibility of the bioactive groups of compounds in simulated human GI tract where DPPH assay, total phenol content and lipid composition (acid value) were considered as parameters. Most of the bioavailable bioactive antioxidants and phenolics were estimated to be decreased in the gastric phase reflecting the highest rate of digestion in the stomach while breakdown of lipid composition was dominated by the intestinal phase. Overall results suggest that antioxidative phenolics and fatty acids from these beverages possess bioactivities in their bioavailable form which may be associated to their ethnomedicinal properties. Some biotechnological strategies have succeeded in the attempt to imitate natural fermentation, and bioprocesses have been efficiently designed when the product is the result of a unique biological reaction. However, when the process requires more than one biological reaction, few bioprocesses have been successfully designed because the available tools to construct multi-strain starter cultures are not yet well defined. In this work, a novel experimental strategy to construct multi-strain starter cultures with selected native microorganisms from natural fermentation is proposed. The strategy analyses, selects, and defines the number and proportion of each strain that should form a starter culture to be used in directed fermentations. It was applied to evolve natural fermentation to directed fermentation in distilled agave production. The results showed that a starter culture integrated by Kluyveromyces marxianus, Clavispora lusitaniae, and Kluyveromyces marxianus var. drosophilarum in proportions of 35, 32, and 33%, respectively, allows obtaining fermented agave juice containing a 2.1% alcohol yield and a distilled product with a broad profile of aromatic compounds. Hence, the results show, for the first time, a tool that addresses the technical challenge for multi-strain starter culture construction, offering the possibility of preserving the typicity and genuineness of the original traditional product. We are in the midst of an unprecedented public and planetary health crisis. A major driver of this crisis is the current nutrition transition—a product of globalization and powerful multinational food corporations promoting industrial agriculture and the consumption of environmentally destructive and unhealthy ultra-processed and other foods. This has led to unhealthy food environments and a pandemic of diet-related noncommunicable diseases, as well as negative impacts on the biophysical environment, biodiversity, climate, and economic equity. Among migrants from the global south to the global north, this nutrition transition is often visible as dietary acculturation. Yet some communities are defying the transition through selective resistance to globalization by recreating their traditional foods in their new home, and seeking crop species and varieties customarily used in their preparation. These communities include Zapotec migrants from the Central Valleys of the southern Mexican state of Oaxaca living in greater Los Angeles, California. Focusing on the traditional and culturally emblematic beverage tejate, we review data from our research and the literature to outline key questions about the role of traditional foods in addressing the public and planetary health crisis. We conclude that to answer these questions, a transnational collaborative research partnership between community members and scientists is needed. This could reorient public and planetary health work to be more equitable, participatory, and effective by supporting a positive role for traditional foods and minimizing their harms. Abstract Ethiopia is a multiethnic country with diverse cultural practices to prepare foods and beverages having significant contributions in socioeconomic development. Contrary, comprehensive documentation of the products, associated knowledge, and their sociocultural roles is incomplete. In this survey, thirteen typical traditional foods (two fermented and eleven non-fermented) and five traditional beverages (four fermented and one non-fermented) were listed referring the local community of East Tigray. The noted traditional foods/beverages are known for their social and cultural values in the local community, and they are exercised following celebrity events. They are prepared often from barley (Hordeum vulgare), peas (Pisum sativum), wheat (Triticum aestivum), buckthorn (Rhamnus prinoides), maize (Zea mays), sorghum (Sorghum bicolor), and teff (Eragrostis tef). Some of the dishes/drinks such as Ambasha, Ebist, Gaa’t, Tihelo, Beso, Zikizuko, Abaekah, Duqua, Suwa, Mes, and Tahetah are well-acknowledged for their health and economic benefits. Others, like Birkuta and sola, are used to survive a long journey and looming drought. To conclude, this article presents a list of traditional foods and beverages which are potentially applicable in modern food or beverage industries and can contribute for global healthy diet.

In the present study, antimicrobial effects of traditional beverages produced from grapes such as traditional grape pickles, grape juice, home-made hardaliye, and commercially produced hardaliye were investigated using microdilution method against Staphylococcus aureus ATCC 6538P, Escherichia coli ATCC 25922, Salmonella Typhimurium NRRL B4420, Bacillus cereus ATCC 10876, Saccharomyces cerevisiae NRRL Y-12632, Lactobacillus acidophilus La-5 and L. rhamnosus LGG. In addition, total phenolic content was measured by the Folin-Ciocalteau method, and antioxidant activities of grape products were evaluated using DPPH assay. Results showed that grape containing beverages have antimicrobial effects on S. aureus, E. coli, S. typhimurium and B. cereus at various minimum inhibitory concentration (MIC) values in the range of 4.53-150 mg/mL. The lowest MIC value of 4.53 mg/mL was obtained against E. coli for home-made hardaliye. MIC values of the traditional grape pickles were determined as 4.69 mg/mL and 9.38 mg/mL against S.aureus and E.coli, respectively. On the other hand, traditional grape pickles showed weak inhibitory effects against B.cereus with MIC value of 150 mg/mL. The bactericidal effect of these grape products was not detected for any of the test microorganisms however traditional foods produced by using grapes were showed inhibitory effects at different concentrations against tested microorganisms except for probiotics and the yeast. The total phenolic contents of the grape products were within the range of 865.27-2193.08 mg gallic acid equivalent (GAE)/L. Free radical scavenging activities of grape samples ranged from 46% to 90% and the grape juice was found to have the highest antioxidant activity. In conclusion, grape beverages have the potential to act as a antimicrobial and antioxidant agents for use as a natural antimicrobial and antioxidant product in the food industry.

This study determined the state of the art and microbial makeup of Bukuri and Cabbage-Shameta , two traditionally fermented beverages commonly made from grains and cabbage seeds in Wollega Zone, Oromia Regional State, Ethiopia. Samples of the beverages and survey data on product features, raw materials used, and preparation techniques were collected from expert women. Physicochemical (pH and titratable acidity) and microbiological analyses (aerobic mesophilic bacteria, lactic acid bacteria, Enterobacteriaceae, yeasts, and molds) were performed. A new method was used to determine the arts of its production and the dynamics of microorganisms in the beverages in the laboratory. The results revealed that both beverages contained high levels of aerobic mesophilic bacteria, lactic acid bacteria, and yeasts, while having low levels of Enterobacteriaceae and molds. Moreover, both beverages demonstrated low pH and high titratable acidity. Laboratory fermentation of both beverages indicated comparable changes in microbes and acidification over time. As the fermentation time increased the Enterobacteriaceae significantly decreased to the extent of elimination, and the number of lactic acid bacteria and yeast increased. Therefore, it could be concluded that both Bukuri and Cabbage-Shameta are acidic, low-alcohol beverages with almost no pathogenic microorganisms as the pH of the product lowered, making them safe for public health. A review of up to 90 articles on the microorganisms associated with important artisanal or traditional beverages in Nigeria was carried out. This resulted in an overview of the prevalent microorganisms associated with soymilk, nono (fermented cow milk), tiger nut milk, yoghurt, kunu, zobo, palm wine and the local beers pito and brukutu. The bacteria genera, namely Bacillus, Escherichia, Lactobacillus, Staphylococcus, and Streptococcus, were detected in all nine beverages. On the contrary, this survey resulted in finding that the genera Saccharomyces, Aspergillus, Candida, and Penicillium were the eukaryotic microorganisms isolated in all beverages. The occurrence of fungal isolates, which can be responsible for producing mycotoxins, is a concern and shows the need for post-production tests. Overall, there is a low prevalence of bacteria associated with hygiene, especially the Escherichia genus in alcoholic beverages such as palm wine, pito and burukutu, which may be due both to a low acidity and high ethanol content. However, the prevalence of hygiene indicator genera was higher in nonalcoholic drinks, probably because of incorrect practices during processing. The magnitude of the production and sales of unregulated local beverages in Nigeria has reached the stage where significant regulation and food safety standards are required to safeguard public health. Evaluation of the levels of essential and non-essential metal concentrations in Ethiopian traditional fermented alcoholic beverages (Tella, Tej, Birz, Korefe, Keribo and Borde) was conducted using atomic absorption spectrophotometer (AAS) after HNO3/H2O2 digestion process. A total of 10 bulk samples were collected randomly from vending houses at five different sub-cities of Addis Ababa, the capital city of Ethiopia (Lideta-Kolfe, Bole-Kirkose, Yeka-Gullele, Arada-Addis Ketema and Akaki-Kaliti-Lafto) and from five nearby towns (Sebeta, Dukem, Sululta, Sendafa, and Burayu) of Oromia Regional State. The considered metals include: Ca, Mg, Fe, Zn, Cd, Cr, Cu, Ni, Pb, Co and Mn to ascertain their levels. With 88–96% recovery Ca, Mg, Fe, Zn, Cu, Cd, Pb and Mn were detected at varying concentrations in the beverages, while Co, Ni and Cr were below detection limits. All the beverages were rich in Ca, Mg and Zn. Among the trace metals found Zn was the first. The levels of the trace metals were generally low, and within statutory safe limits set by World Health Organization (WHO). Mineral concentrations were found to be significantly different among the beverages studied (p < 0.05). The levels of metals in the Ethiopian fermented beverages were found comparable with the reported ones.

Traditional beverages can be made from the spices and can be processed further as instant powder drinks such as bandrek drink. The expiration date statement on the food packaging is a mandatory according to the Food Act No.7/1996 and the Government Regulation No. 69/1999 about Food Labelling and Advertising. The aim of this research was to estimate or to predict the shelf-life of instant bandrek drink produced at Sinarsari village and nutmeg syrup at Dramaga village, Dramaga district, Bogor regency. Shelf-life estimation of the two products was done by accelerated shelf-life testing method. Instant bandrek was predicted to have shelf-life for 341 days (11 months) when stored at 80% RH, 30 °C, while the nutmeg syrup would be expired in 34-47 days when stored at 30 °C.

Background: Traditional fermented alcoholic beverages are indigenous to a particular area and are prepared by the local people using an age-old techniques and locally available raw materials. The main objective of this work was the direct determination of ethanol in traditional fermented alcoholic beverages using mid infrared spectroscopy with partial least squares regression, verifying the robustness of the calibration models and to assess the quality of beverages. Results: The level of ethanol determination in Ethiopian traditional fermented alcoholic beverages was done using mid infrared spectroscopy with partial least squares regression (MIR-PLS). The calibration and validation sets, and real samples spectra were collected with 32 scans from 850-1200 cm. A total of 25 synthetic standards (calibration and validation sets) with ethanol (2-10% w/w) and sugars (glucose, fructose, sucrose and maltose) (0-5% w/w) compositions were used to construct and validate the models. Twenty-five different calibration models were validated by cross-validation approach with 25 left out standards. A large number of pre-treatments were verified, but the best pre-treatment was subtracting minimum + 2nd derivative. The model was found to have the highest coefficients of determination for calibration and cross-validation (0.999, 0.999) and root mean square error of prediction [0.1% (w/w)]. For practical relevance, the MIR-PLS predicted values were compared against the values determined by gas chromatography. The predicted values of the model were found to be in excellent agreement with gas chromatographic measurements. In addition, recovery test was conducted with spiking 2.4-6.4% (w/w) ethanol. Based on the obtained recovery percentage, 85.4-107% (w/w), the matrix effects of the samples were not considerable. Conclusion: The proposed technique, MIR-PLS at 1200-850 cm spectral region was found appropriate to quantify ethanol in fermented alcoholic beverages. Among the studied beverages ( Tella, Netch Tella, Filter Tella, Korefe, Keribo, Borde and Birz), the average ethanol contents ranged from 0.77-9.1% (v/v). Tej was found to have the highest ethanol content whereas Keribo had the least ethanol content. The developed method was simple, fast, precise and accurate. Moreover, no sample preparation was required at all. However, it should be noted that the present procedure is probably not usable for regulatory purposes (e.g. controlling labelling). Shalgam is a traditional Turkish beverage produced by lactic acid fermentation. Shalgam is also sold in markets in some European cities. In shalgam production, bulgur flour (formed during the crushing process, it is the part that remains under the sieve after breaking the outer shells of boiled dried wheat for processing), salt, water, purple carrot, turnip, and sometimes red beet is used. The traditional method of production can take 10–12 days. Commercial production takes 4–5 days. Shalgam is a probiotic food and a good source of nutrients. It helps regulate the pH of the digestive system. It contains β-carotene, group B vitamins, calcium, potassium, and iron. People also use it as a medicine because of its antiseptic agents. Shalgam consumption should be increased and become worldwide.

The purpose of this review to provide an updated review on the safety and quality issues related to traditional beverages (TBs) namely Kunu zaki (KZ) and Zobo (Sorrel) drink (ZD). Recent findings have shown that Ochratoxin A has been detected in KZ, and Bacillus species were detected in ZD. However, Addition of DaniellinTM to KZ can reduce Ochratoxin A to a minimum level, and boiling and subsequent chilling at 4-5 °C of ZD can eliminate the Bacillus species. Hence safety and quality of beverages are the public health importance and have a profound impact on the economy of the society. TBs, such as KZ and ZD, are gaining acceptance in Nigeria and in many parts of the globe due to their affordability. Most people consume the TBs for nourishment, quenching thirst, especially in homes, restaurants, schools, tertiary institutions and joints where all sorts of soft drinks are sold. Therefore, the safety and quality of these home-based beverages is the great importance to the public health because the majority of the populace has direct access to them, but their production is not directly monitored by the government agency controlling the production and distribution of foods. This review aims to detail past, current and future studies and assessments for ascertaining the safety and quality of TBs, including processing, microbial and chemical methods and examinations. An introduction is presented in which the editor discusses various reports within the issue on topics including alcohol and public health in Africa and discusses the history of alcoholic beverage in Africa during colonial times and the marketing of alcohol in African countries.
