This thesis addresses the research question of how demand requirements for eco-responsible and local products may impact the food supply distribution configuration. In other words, how to configure urban food systems to satisfy a demand for eco-responsible food products. Therefore, the purpose of this research is to explore how to estimate the relationship between a demand for eco-responsible and food distribution configuration considering economic and environmental issues.The thesis is a compilation of three phases:•Eco-responsible food demand: It seeks to identify the product's environmental quality criteria that impact product demand and how these demand's characteristics can be used to describe the requirements of logistic schemes for sustainable distribution.•Food supply chain configuration: Considering these new requirements, this phase aims to describe the food supply chain strategies that achieve a sustainable food distribution addressed in the literature, and to analyse how these strategies identified impact logistic decisions in the supply chain.•Food supply chain assessment: It attempts to analyse the estimation of economic and environmental indicators that may represent the impacts generated in the configuration of the different food distribution schemes proposed.The results highlight a framework proposal, aiming to understand how changes in a current food distribution system can be identified and quantified (in a logic of before-after scenario assessment). This framework includes: (i) Logistic decisions to be considered in the distribution system at strategic and tactical level. (ii) Food system characterization to define an initial situation (stakeholders, demand and supply characterization), and the demand and supply estimation; (iii) Scenario construction to analyse scenarios to be tested; and (iv) Scenario assessment to identify and assess economic and environmental impacts of the food distribution system, including tests and expert feedback to validate the scenarios proposed.; Cette thèse questionne la façon dont les exigences de la demande de produits écoresponsables peuvent influencer la configuration de la distribution de l'approvisionnement alimentaire. En d’autres termes, elle interroge la configuration des systèmes alimentaires urbains pour satisfaire une demande de produits alimentaires écoresponsables. Par conséquent, son objectif est d'explorer comment estimer la relation entre une demande écoresponsable et une configuration de distribution alimentaire en tenant compte des enjeux économiques et environnementaux. La thèse compile trois phases : (1) demande alimentaire écoresponsable : identifier les critères de qualité environnementale du produit qui ont un impact sur sa demande et comment les caractéristiques de cette demande peuvent être utilisées pour décrire les exigences des systèmes logistiques pour une distribution durable. (2) Configuration de la chaîne d’approvisionnement alimentaire : compte tenu de ces nouvelles exigences, cette phase vise à décrire, à partir de la littérature, les stratégies de la chaîne d'approvisionnement alimentaire qui permettent d'atteindre une distribution durable, et analyser l'impact de ces stratégies sur les décisions logistiques dans la chaîne d'approvisionnement. (3) évaluation de la chaîne d'approvisionnement alimentaire : Identifier et construire des indicateurs économiques et environnementaux que représentent les impacts générés dans la configuration des systèmes de distribution alimentaire proposés.

Purpose Urban logistics is a subject that interests both city planners and researchers. Although many works are found in non-food distribution, food-based logistics is less studied in an urban context, and sustainability issues of urban food systems remain little analysed, but it is a crucial element for local public authorities. This paper proposes a methodology for assessing scenarios of advanced urban food logistics; more precisely to answer the question of how school canteen distribution scenarios can be assessed in an economic and environmental viewpoint. Methods To deal with those issues, the paper proposes to develop a scenario assessment framework combining a demand estimation model, a transport supply estimation method and a set of evaluation indicators (for both economic and environmental impacts). The demand estimation model generates first a number of meals per canteen then transforms it into a food quantity, based on carrier’s information and other practice’s feedbacks; the transport estimation is made with a combination of route construction algorithms that reproduce the logic of current Transportation Management System (TMS). The economic evaluation is made via direct operational costs estimation (both fixed and variable) and the environmental evaluation using COPERT V for direct emission’s assessment. Results Three scenarios are assessed: the current situation with the operational warehouse, the use of an alternative platform in another location and the combination of both. To address the application issues, the proposed framework is compared to the use of disconnected commercial tools on the three scenarios. We observe that the first two scenarios are close in terms of travelled distances, times and costs. The third scenario, which involves two platforms, results on higher distances and times, and consequently on higher costs and higher for some of the environmental emissions. That scenario does not allow, with the considered demand, economies of scale (i.e. using less vehicles or in a more consolidated way). When comparing the two assessment methods, the proposed framework results on slightly higher travelled distances and times, but the same number of vehicles. However, results can be considered equivalent since the gap between the two assessment methods is in general around 5% for most indicators. Conclusion It can be observed that the location of the platform is a key element, not only related to travelled distances, but also to the infrastructures used and their accessibility to the delivery destinations. However, this first assessment shows the interests and opportunities of food city supply solutions and merits further developments. The proposed framework allows to assess food distribution scenarios representing current practices, and would be extended to represent different alternatives of food distribution. Con el objetivo de caracterizar el comercio detallista tradicional de alimentos en el municipio Trujillo y formular estrategias para mejorar el proceso de distribución, se realizó un estudio de los establecimientos comerciales registrados en la Alcaldía, sobre una muestra de 70 locales agrupados por tipos y categorías en: polivalentes y especializados. Los datos obtenidos mediante encuestas y entrevistas a comerciantes se analizaron con métodos estadísticos descriptivos no paramétricos. Entre otras características, la edad del 63% de los comerciantes está entre 30-50 años, 99% son venezolanos y de sexo masculino el 86%; hasta la secundaria el grado de instrucción del 59%. El 63% tiene entre 6-25 años de experiencia como comerciantes; y dependen el 84% económicamente de esta actividad. En cuanto a los establecimientos se definen como pequeñas empresas de carácter familiar, constituidas jurídicamente como persona natural (54%); donde el 93% carece de una estructura organizativa; el 96% considera importante la planificación. La funcionalidad del sistema esta determinada por las relaciones entre el comerciante-proveedor y comerciante-consumidor. Se plantean estrategias de organización y de apoyo institucional para mejorar el proceso de distribución de productos alimentarios. With the objective of characteristizing the traditional retail food marketing system in Trujillo Municipality and formulating strategies to improve food distribution, a study was carried out on a radomized stratified sample of 70 commercial establishments registered in the Mayors office and grouped by type and category as polyvalent or specialized. The data were obtained through surveys and interviews with merchants was analyzed with descriptive statistical, non parametric methods. Among other characteristics, 63% of the merchants were between the ages of 30 and 50, 99% were Venezuelans , 86% masculine , 59% has secondary instruction, 63% had between 6 and 25 years of experience as merchants, and 84% depend totally on their retail activity. In relation to the establishments, they are small and medium sized family businesses,; constituted legally as natural persons (54%), 93% do not have an organizative structure, 96% consider planning to be important. The functionality of the system is determined for the relationships between merchant-supplier and merchant-consume.. The strategic proposals are proposed for organization and institutional support, in order to improve the distribution of food products.
