International audience; Building inclusive businesses with small-scale producers in the agro-food sector presents challenges, most notably in terms of governance and sustainability. These issues were explored through a Danone Egypt Ecosystem Project that sought to promote a replicable business model of milk collection centers to secure a dairy plant's sourcing while contributing to the socio-economic development of smallholders. Quality management was used to link a value chain approach and a localised agri-food system approach. The study showed that an inclusive business relying on non-inclusive coordination had limited efficiency. Decreasing power asymmetries and distances between partners seems central to ensuring sustainability.

Description of the subject. Today, the dairy sector is facing economic, social and environmental challenges. Agroecology seems to be one way of meeting those challenges. However, dairy market demand in terms of volume and supply periods may not be in line with an agroecological transition. Breeders must respond to the production conditions fixed by dairies. Objectives. We analyzed to what extent dairy farming practices are changing in two agropastoral territories after a change in the dairy process or supply period, and whether changes in practices induce a stronger uptake of agroecological practices or, on the contrary, a shift towards more conventional intensification of those practices. We were thus able to see if and how these livestock farming system dynamics contribute to and fashion agroecological transition in dairy production, in response to changes in local contexts. Method. To highlight the evolution of breeders' practices, we interviewed 41 dairy ewe farmers in the South of France and dairy cattle farmers in Western Burkina Faso. We then proposed a normative approach to evaluate to what extent changes in practices corresponded to an agroecological transition. For that purpose, we proposed a grid to analyze local practices in combination with agroecological principles. We evaluated practices before and after changes to the supply period or the dairy market.Results. In each of the territories studied, four trajectories emerged, some of which were part of an agroecological transition. The results showed that the market plays an important role as a driver of transition, in particular in situations of organic production, or limited access to inputs. Other drivers, such as resource management schemes, lead to changes in practices on rangelands towards a reduced use of pastoral resources. Conclusions. A simulation tool like DairyPlant can support small-scale dairies' thinking.DairyPlant helps dairy processors to select their best product portfolio.DairyPlant can be used to evaluate the use of payment systems based on milk quality. Simulation tools can be helpful for supporting stakeholders in better planning and managing dairy supply chains and exploring alternative ways of organizing chains. This paper presents a support approach dealing with two strategic issues that dairy processors face in interactions with their suppliers and buyers: (i) selecting their product portfolio according to market opportunities and (ii) designing milk payment systems encouraging dairy farmers to supply good quantity and quality milk throughout the year. This approach is based on the design of a spreadsheet application called DairyPlant developed with Excel?. DairyPlant calculates the daily profit obtained by a dairy processing unit and the gross revenue obtained by each of its suppliers according to its product portfolio, its milk payment system and its suppliers' individual milk quantity and quality profile. Calculations take into account the processing yield defined by the software user for each marketed and intermediate product. Payment systems may include a base price and up to three quality components. The approach was tested in two small-scale dairy plants in the Mantaro Valley (Peru). For each plant, this included technical and economic data collection, construction of a reference scenario closed to the current plant situation, and simulation and evaluation of alternative portfolios or milk payment systems. Based on these simulations, dairy processors realized that (i) they could increase their total profits by modification of their current portfolio toward higher value products on the assumption that milk delivered to the plant attained a given quality; (ii) they did not adequately compensate farmers who delivered good quality milk but overpaid some who delivered poor quality milk; (iii) their profits could be increased by adoption of a payment system based on milk quality. Advantages and limits of DairyPlant are discussed in the light of an extended use of the support approach in other locations.

The changes affecting farming, operating between local and global, are important concerning milk processing. How these changes express themselves locally? What consequences concerning strategies of processing firms and concerning livestock farming systems? Developing diachronic studies we analyze interactions between marketing strategies of milk processing factories, livestock farming systems and consequences of these changes at local scales. Comparing contrasted situations (France, South America, Vietnam and Senegal), we found mostly two contrasted dynamics: (1) a process of globalisation (concentration of operators, increasing importance of long food chains, location of farms in high productivity areas, intensification of farming practices); (2) a process of strengthening relationship between product and local specificity (emphasizing local image and the link between product and the 'terroir', handicraft processes of transformation), increasing of local marketing channels, farming practices valorizing a diversity of local resources. Intermediating between production and distribution, dairy factories are at the core of these two dynamics. We will present the methodologies employed to characterize the studied situations. From examples we will illustrate how these two dynamics are emerging and operate. We will discuss then how in a same place complementarity, tensions or exclusions may appear between these two dynamics.
