5. MICROBIAL, PHYSICOCHEMICAL AND SENSORY CHARACTERISTICS OF SALAMI PRODUCED FROM WILD BOAR (SUS SCROFA).

Abstract

The wild boar (Sus scrofa) population in central Italy has strongly increased in the last decades. The meat of the game is characterized by high-quality value and the manufacture of food products from game meat could represent a remarkable added value for the local market promoting local gastronomic specialties and traditions. Adult animals were hunted with the waiting method and the carcasses were processed into the game processing center. Five batches of salami were produced with different amounts of wild boar meat and pork meat. The microbiological, physicochemical, rheological, and sensory evaluations were performed. The microbiological analyses indicated that the salami is safe to consume as Listeria monocytogenes and Salmonella spp. were undetectable in the end products. The Enterobacteriaceae count was below 3 log CFU.g-1 attesting to the adequacy of hygienic characteristics of the process. The chemical composition analyses showed lower lipid content in comparison to pork salami, while the rheological characteristics were equivalent among products. 11. Morphometric discrimination between Martes martes and Martes foina in Italy: the use of the baculum

Abstract

Martes martes and Martes foina are the only two Italian species of the genus Martes. As they are very similar in morphology and coloration, their taxonomic identification may represent a hard task. We aimed to assess the reliability of baculum length as a diagnostic tool for Italian martens. A sample of 53 adult males belonging to the genus Martes was collected. The identification of individuals as pine- or stone marten followed a 2-step procedure: i) morphometric analysis and ii) cross-checking with genetic analysis. According to the diagnostic ranges of baculum length reported in the available literature, 21 individuals were classified as stone marten and 15 as pine marten, while 17 specimens remained unidentified. Using a “Baculum Index”, defined as: (Head Length + Body Length) / Total Baculum Length, the sample was split into two distinct groups: 21 individuals fell into the 6.24-8.10 range and 32 fell into the 9.52-11.17 range. Genetic analysis led to the same results. While baculum length is insufficient to identify Italian marten species with certainty, the Baculum Index showed to be a reliable diagnostic tool.

Abstract

A non-invasive genetic approach has been recently employed in the population genetics of wild species, using faeces that could be easily collected, particularly of elusive or endangered species. However, faeces of pine (Martes martes) and beech marten (M. foina) can be morphologically similar and could be confused with those of polecat (Mustela putorius) and red fox (Vulpes vulpes). On this basis, a rapid, simple and inexpensive RFLP protocol using a cytochrome b (Cyt b) gene fragment of mtDNA, isolated from faecal samples, was performed to distinguish the above-mentioned species.
