Abstract

The Auerbach siderite–goethite ironstone deposit evolved during the Cenomanian in a fl uvial-lacustrine depositional environment on the Jurassic karstifi ed carbonate platform. Long-lasting normal faulting controlled the subsidence of the Fe sinkholes, protected the ironstone deposit from erosion and was responsible for the precipitation of Fe phosphates (vivianite, rockbridgeite, phosphosiderite, ferroan variscite, cacoxenite, oxi-beraunite), Al phosphates (wavellite, crandallite s.s.s.) and churchite-(Y) as it was active into post-Coniacian times as pathway for low-temperature hydrothermal solutions. Based upon mineralogical studies involving SEM-EDX, XRD, IR spectrometry, DTA and chemical studies by means of XRF, fi ve mineral assemblages were established: 1. sedimentary-diagenetic, 2. early hydrothermal, 3. late hydrothermal/epithermal-reducing to oxidizing, 4. late hydrothermal/epithermal-oxidizing, 5. supergene/weathering. Mineral assemblage 1 evolved during the Cenomanian, mineral assemblages 2 through 4 from the Coniacian through the Neogene and mineral assemblage 5 during the Pliocene. The Auerbach Fe-P mineralization within well-dated Cretaceous platform sediments is taken reference to chronological constrain similar Fe-P mineralizations in pegmatites and vein-type deposits in the basement. Minerostratigraphic comparisons between Fe-P mineralization in well-dated sedimentary host rocks and equivalent Fe-P mineralization of unknown age in the basement are performed using the crystal morphology of marker minerals such as apatite, vivianite and strengite. Fe-P mineralizations in the basement tend to evolve more complex crystal morphologies than equivalent minerals in carbonate rocks, with a simple parent ore and undergoing only monophase minero-tectonic processes. “Telescoping” of phosphate minerals is typical of these mineral assemblages, characterized by a small-scale fl uctuation of the redox conditions in the phreatic-vadose hydrological system at temperatures < 100 °C. This epithermal phosphate mineralization is genetically bound to NW to NNW trending faults and related to the Alpine unconformity as a horizontal reference plane.

An oil of the piperitone type of Eucalyptus dives produced from trees cultivated in South Africa was analyzed by GC and GC/MS. Seventy-three constituents were characterized with piperitone ranging from 29.2% to 64.9%, depending on whether the oil was produced from dried or fresh leaves. Two novel constituents such as p-menth-5-en-2-one and p-menth-6-en-3-one were characterized as minor constituents of the oil; the former being found in nature for the first time. Abstract

The article focuses on the study that investigates the chemical and biochemical changes in the curing process of Madagascan vanilla conducted by Federal Research Institute of Wood Chemistry in Hamburg, Germany. According to the study the process is labored and time intensive, however, it is extremely important in determining the quality of cured beans. The study determined that the final product of the process is cured and dry bean that has developed the common vanilla flavor.

Abstract

This article focuses on the Maillard reaction observed while processing foods. Processed flavors contain a huge variety of volatile organic compounds which yield characteristic flavor types, like roasted, fried, caramel or popcorn. Therefore, systems like fried meat products represent an interesting counterpart in order to study the formation of certain potent aroma compounds, e.g. thiazolines and thiazolidines. Maillard reaction products especially yield a variety of nitrogen- and sulfur-containing compounds.

45. Stereoselective Enzymatic Synthesis of cis-Pellitorine, a Taste Active Alkamide Naturally Occurring in Tarragon

Abstract

The alkamide cis-pellitorine [(2E,4Z)-N-isobutyldeca-2,4-dienamide] that occurs naturally in tarragon was prepared in yields up to 80% by lipase-catalyzed conversion of ethyl 2E,4Z-decadienoate, the so-called pear ester, and isobutylamine both with and without the use of cosolvents. Of 13 different commercial enzyme preparations tested (lipases, proteases, esterases), only the lipase type B from Candida antarctica has a suitable activity. The reaction of the different geometric isomers of ethyl 2,4-decadienoate to the appropriate pellitorines shows a remarkable selectivity: the 2E,4Z ester is converted between 1.4 and 3.9 times faster than the 2E,4E isomer, and the relative yield of cis-pellitorine compared with trans-pellitorine is 5.7 to 16.3 times higher. In contrast to the better known trans-pellitorine, which at 10 ppm is only slightly tingling and numbing, cis-pellitorine shows very interesting pungent and warming sensations after tasting trials already in low concentrations of 10 ppm. Abstract

The 3-methyl-4-(tricyclo[5.2.1.02,6]dec-4-en-8-ylidene)butan-2-ols (=Fleursandol®; rac-10), a new class of sandalwood odorants, were synthesized in their enantiomerically pure forms by use of tricyclo[5.2.1.02,6]dec-4-en-8-ones 17 and ent-17 and (tetrahydro-2H-pyran-2-yl)-protected 4-bromo-3-methylbutan-2-ols 22 and ent-22 as starting materials (Schemes 4;2–4). Only four of 16 possible stereoisomers of rac-10 possess the typical, very pleasant, long-lasting sandalwood odor (Table 4;1). The (2S,3R,4E,1′R,2′R,6′R,7′R)-isomer ent-10a is by far the most important representative, with an odor threshold of 5 4;μg/l in H2O.
